MAKES 12 MUFFINS PREHEAT THE OVEN TO 200 CELSIUS MIX TOGETHER FLOUR BAKING SODA, BLACK SALT, BAKING POWDER IN ONE BOWL. IN A SEPARATE BOWL MIX TOGETHER THE VANILLA EXTRACT, GRANULATED SUGAR, LEMON ZEST (GRATE THE LEMON) AND COCONUT OIL. ( THE COCONUT OIL ONCE WARMED UP WILL BE EASIER TO MIX. HEAT IT USING A MICROWAVE) MIX TOGETHER THE TWO BOWLS NOW. IN ANOTHER BOWL, MIX THE COCONUT MILK, THE JUICE OF THAT 1 LEMON, WHICH WILL CURDLE TO PRODUCE A BUTTERY MIX. THEN MIX IT ALL TOGETHER, AND FOLD THE BLUEBERRIES IN BAKE FOR 20-25 MINS

Liz trudged through the kitchen door with bags hanging from every extremity.
