Oh spring—how we’ve missed it! It seems so long since we’ve carried an umbrella, seen green grass, or even thought about donning anything except our subzero-appropriate outerwear. The winter was hard in so many ways; sometimes it felt like our very souls were hibernating and hiding away from the world. That’s why we’ve called this issue Spring to Life. The dawning season has us eager to get moving, get motivated and get sorted, so we’re following our own advice and inspiration from these pages. And we’re IHHOLQJ SUHWW\ GDUQ FRQ¿GHQW WKDW \RX¶OO EH ZLWK XV First up, we’re healing our winter-weary skin. Have a look at our “Dry Skin No More” story on page 18 for ways to soothe and hydrate if the cold weather’s done a number on your dermis, too. Then we’re considering updating our look with one of the fresh new styles in “Good Hair Days Ahead” on page 22 (buh-bye toque-head!). We’re also taking charge of our eating habits and working to reduce food waste in our kitchens (see “Reduce Your Food-Print,” on page 38), then

putting that knowledge into practice with our yummy ideas for leftover Easter ham (“Ham It Up,” page 82). After that, we’re going to perfect a few gentle yoga moves to keep the old physique in working order ³+HOOR 6XQVKLQH ´ SDJH $QG ¿QDOO\ ZH¶UH JRLQJ WR PDNH WKH PRVW RI WKRVH ¿UVW PLOG GD\V WR RYHUKDXO our garage storage capabilities with some of the tips in “Storage Wars,” on page 62. Canadian Living (CL): If you had to choose only one Biossance product to use, which one it would it be? Reese Witherspoon (RW): I’d probably say the 100-percent Squalane Oil because it has a clean formula and its texture is light—I use it every day. I like it because it’s the basis of Biossance products, it’s very moisturizing and ethically sourced. CL: How has your approach to skin care changed over the course of your career? RW: I’ve had struggles with brown spots, hyperpigmentation and dry skin, and makeup sometimes irritates it if I wear it too long. I’m very conscious of making sure I remove my makeup properly, and adequately cleansing and moisturizing my skin is more important than ever. I really like the Squalane + Omega Repair Cream because it’s deeply nourishing but not too thick or greasy. CL: You’ve said that Biossance’s sustainability practices drew you to working with the company. Tell us a little more about that. We recently sat down with Reese Witherspoon, the beloved powerhouse actor, producer and Biossance global brand ambassador, to talk all things skin care, sustainability, and of course, her favourite products from the line.

CL: What beauty advice would you give to younger generations? RW: I think whatever skin-care routine you adopt in your 20s, it really shows up later in your 40s. If you’re diligent about sunscreen, it’ll improve pigmentation later on, and if you’re diligent about moisturizer, your skin will be supple. But my advice is to really care for yourself and do something positive for yourself every day—for me that starts with skin care.

CL: Is there a self-care or wellness ritual that you swear by? RW: I’m pretty set in my skin-care routine. I wash my face every morning and use the Squalane + Vitamin C Rose Oil, then I apply the Squalane + Omega Repair Cream and finish off with SPF. I apply sunscreen again four or five hours later. Always sunscreen! A good skin-care routine is a great way to start the day.

DRY SKIN NO MORE

You may be feeling the drying effects of cold weather on your skin long after winter’s over. Read on if you’re in need of some rehydration. DO YOU HAVE DRY SKIN? “Dry skin produces less sebum than normal or oily skin types and does not contain the lipids necessary to retain moisture and maintain a strong skin barrier that helps protect against external aggressions,” explains Shannon Hoover, field executive education manager at Clinique Canada. How can you tell if your skin fits that description? The expert recommends washing your face with a mild cleanser, then observing the appearance of your skin and how it feels after 30 minutes. If you feel tightness or some discomfort and if your skin is rough or scaly, you’re experiencing typical signs of dry skin. “If your skin is rough, it may also appear dull or lacklustre due to the layer of dead cells on its surface, which

prevents light from reflecting evenly,” she adds. The main causes of dry skin— which can affect the face and the rest of the body—can be chalked up to heredity, hormonal changes, harsh soaps, washing too frequently, over-exfoliating or showering in scorching hot water. And the bad news is that dryness tends to worsen in colder months due to freezing temperatures outdoors and dry air caused by indoor heating, which absorbs moisture from our skin!

IS YOUR SKIN DRY OR DEHYDRATED? It is important to differentiate between dry skin and dehydrated skin in order to find a routine that suits your needs. “Dry and dehydrated skin types have similar CANADIAN LIVING APRIL 2022 | 19


symptoms, such as tightness and scaling, but what sets them apart is the root cause of these symptoms,” says Regine Berthelot, lead esthetician and global spa training manager for skin-care brand Caudalie. Dehydration, which can affect any skin type—yes, even people with oily skin— indicates a lack of water in the epidermis (which is often a sign that you’re not drinking enough water). On the other hand, dry skin is caused by a lack of natural oil and inadequate sebum production.

DAILY CLEANSING, YAY OR NAY? Should you avoid using cleansers daily to protect your skin? Not necessarily. Hard water, too frequent exfoliation or overcleansing can promote or exacerbate skin dryness, but you still need to get rid of the dead cells and impurities that accumulate during the day because they can damage the skin and block the penetration of hydrating products. So rather than avoiding soaping up in the shower, which is where many of us take our much-needed “me” time, Lauren Ireland, cofounder of the brand Summer Fridays, advises avoiding extremely hot water—which tends to irritate the skin and make it even drier—in the bath and to use gentle cleansers for the face and body. Above all, moisturize after getting out of the shower by applying a body butter, lotion or cream while the skin is still a little damp, which helps with absorption.

TRY THE “MOISTURE SANDWICH” METHOD Applying skin- and bodycare treatments to damp skin is also the principle behind the “moisture sandwich” trend. Inspired by a K-beauty technique, the method consists of wetting the skin using a mist or water, then applying a light cream or serum directly to the damp skin, which allows it to absorb

more easily. Then layer on a richer cream or an oil to seal in the hydration. “Applying products in this order, from lightest to heaviest in consistency, is a good rule of thumb,” says Hoover. “And make sure to use products that are formulated to your skin type for the best results.”

THE IMPORTANCE OF CERAMIDES “Hyaluronic acid is dry skin’s best friend,” says Hoover. It draws water from the environment and binds it to the skin, helping it stay hydrated and plump for longer periods of time. If this active ingredient has already found its way into your beauty kit, it can now share the spotlight with another effective key ingredient: ceramides, which are fatty acids used in skin-care products to protect and repair dry skin. Ceramides make up about 50 percent of the outer layer of our epidermis and have great potential to help retain hydration. Found naturally in the skin, these fatty acids ensure longterm hydration while strengthening the skin barrier against external aggressors, such as pollution. However, dry air, very hot water or even the cold of winter can deplete our natural reserves of ceramides, causing skin dryness, redness and irritation. Fortunately, you can incorporate treatments rich in ceramides into your routine to help combat this depletion.

On any given Sunday—my grocery shopping day—I open my fridge to take stock of the good, the bad and the ugly. Although some weeks are better than others, I often find mushy fruit in the crisper or abandoned leftovers stashed in the back of the fridge. Swallowing my guilt, I toss the forgotten food into the respective compost and garbage bins, and then head to the store to begin again, hopeful that the coming week will bring better results.

If this sounds like a familiar pattern, that’s because it is. According to a 2017 study by the National Zero Waste Council (NZWC), 63 percent of the food Canadians throw away could have been eaten at one point. The NZWC also reports that the average Canadian household wastes about 140 kg of food per year, equivalent to $1,100. To put that into perspective, 140 kg is roughly 1,215 medium-sized apples, or 280 standard-sized loaves of bread. While throwing out last week’s lasagna might seem fairly harmless in the moment, once that IRRG PDNHV LWV ZD\ WR WKH ODQG¿OO WKH DFWLRQ PD\ have some alarming repercussions. “If there’s no composting system in place and SHRSOH DUH SXWWLQJ WKHLU IRRG ZDVWH LQ WKH ODQG¿OO that’s a major issue,” says Tammara Soma, assistant professor and co-founder of the Food Systems Lab at Simon Fraser University. “Decomposing food generates methane, which is a contributor to greenhouse gas emissions and climate change. Methane is much more potent than carbon dioxide, and because of that, it’s dangerous.” 0HWKDQH LV RIWHQ ÀDJJHG DV D E\ SURGXFW RI DQLmal agriculture, but it comes from many sources. $V RUJDQLF ZDVWH EUHDNV GRZQ LQ WKH ODQG¿OO LW releases methane gas into the atmosphere. Over a 20-year period, methane traps 84 times more heat than carbon dioxide, contributing to the warming of the planet. The environmental toll climbs even higher when the resources required to produce food are considered.

“The true cost [of food waste] includes the cost of the water, labour, transportation and energy use,” says Soma. “There’s greenhouse gas from producing and transporting the food, cooking the food, storing the food, and if you factor in the plastic packaging, which is made from fossil fuel, it’s endless. Then, when that food ends up in a bin, it’s even worse.”

Soma notes that fruits, vegetables and prepared foods like leftovers are the most commonly wasted foods. An important distinction to make, though, is the nonedible parts of fruits and vegetables like banana peels and avocado pits, versus the edible parts. Edible food is considered avoidable waste. So if the food we’re wasting is largely avoidable, the question is, how do we create lasting habits to break this cycle? When it comes to having a meaningful impact on climate change, individual action can sometimes seem futile. But Joanne Gauci, senior advisor for the National Zero Waste Council and Metro Vancouver, says food waste is one area ZKHUH LQGLYLGXDO DFWLRQ LV H̆HFWLYH “We sometimes say ‘leftovers can change the world,’ because it really gets to the sentiment that if you make some small changes at home and are mindful about using up food, you can have a sig-

We need to move toward creating equitable and resilient food systems, and preventing food waste is one step in that direction.”

When we read this debut novel, we were riveted by the heartbreaking depictions of young Canadian women who were placed in postwar homes for unwed mothers and compelled to give up their babies for adoption, or opted instead for backstreet abortions. To learn more about this period in our history, we spoke with the book’s author, +HDWKHU 0DUVKDOO ZKRVH VHQVLWLYH ¿FWLRQDO WDNH RQ WKHVH UHDO OLIH events illuminates the power of women, and of motherhood.

Canadian Living (CL): Looking for Jane links two parts of our history—the real-life underground networks organizing safe abortions before they were legal, and the maternity homes set up after the Second World War, where unwed mothers were placed to wait out their pregnancies and then give up their babies for adoption. The novel is told through three main characters: Evelyn, who, in 1961, stays in one of the homes and subsequently becomes one of the doctors working with the abortion collective (the Jane network); Nancy, who becomes pregnant as a teenager in 1981 and decides to seek an abortion, then later works with Evelyn in the Jane network; and Angela, who finds a misdirected letter in 2017 and sets into motion a chain of events that changes all the women’s lives. Heather, these are some big topics to tackle in any novel, let alone a debut, no? 44 | CANADIAN LIVING APRIL 2022

Heather Marshall (HM): They are. When I started thinking about this book, I thought it was about abortion, and then while I was writing I con sidered it more and I thought, “No, this is about motherhood.” The book covers pretty expansive WHUULWRU\ DQG DERUWLRQ LV GH¿QLWHO\ RQH IDFHW RI WKH story and propels the plot in a big way, but ulti mately Looking for Jane is about motherhood and choices—wanting to be a mother and not wanting to be a mother and all kinds of grey areas in between. That was what I wanted to explore. Choices around motherhood are not black and white; it’s a massive decision one way or the other, whether you choose to have children or not, whether you want to have them and can’t, or don’t want to have them and end up pregnant. Looking for Jane is about a lot of huge questions in women’s lives.

CL: How did the book come about, and why do you think this story is important to tell? HM: For a while it was two stories I’d been working on in my head—one on the Canadian maternity homes and the other about the legalization of abortion—and then I realized that they were actually two sides of the VDPH FRLQ ZKLFK LV WKH RQJRLQJ ¿JKW IRU ZRPHQ WR have agency over their own bodies. The story dropped into my head almost fully formed, and I wrote it, well, because I believe it needed to be written. I hope this novel can help to shine a bit of light into the dark space surrounding the history of reproductive rights in Canada and, in doing so, start some conversations. CL: What does the title mean? HM: Looking for Jane refers to a composite of underground abortion networks that worked to give women a safe option before abortion was legal. In my research, , IRXQG D UHIHUHQFH WR DQ RUJDQL]DWLRQ ZLWK WKH XQṘcial nickname Jane that operated in Chicago, and the idea grew from there. In the novel, Nancy is told that if she ever needs a safe abortion, she should call around WR GRFWRUV¶ ṘFHV DQG DVN IRU -DQH (YHQWXDOO\ VKH¶OO ¿QG VRPHRQH ZKR ZRUNV ZLWK WKH QHWZRUN CL: The women’s experiences at the maternity homes are harrowing, from being cut off from their families to giving birth in basically a hospital closet to having to return to the home to work as cleaners and then being told to forget the whole thing ever happened! There was such shame and abuse. HM: ([DFWO\ 0DQ\ RI WKH KRPHV ZHUH UXQ E\ UHOLgious organizations and sort of subsidized by the government, and those conditions were pretty standard as far as I found. I gave my characters a reasonably

sympathetic nurse in the book, but I read horrible accounts of nurses being despicably mean to these girls. It’s just horrendous, frankly. I scaled back some RI WKH DZIXO WKLQJV , UHDG DERXW EXW WKH ¿UVWKDQG accounts contain terrible stories about the treatment RI WKHVH \RXQJ ZRPHQ (YHQ DIWHU JLYLQJ ELUWK WKH\ ZHUH H[SHFWHG WR ZRUN DV HVVHQWLDOO\ FOHDQHUV DQG FRRNV WR µSD\ R̆ WKHLU VWD\¶ IRU D VXEVHTXHQW WKUHH months. Statistics Canada notes that between 1945 and 1971, almost 600,000 babies were born to unmarried mothers, their births recorded as ‘illegitimate.’ One researcher estimated that more than 300,000 mothers in Canada were forced or coerced into surrendering their babies for adoption within this system. CL: So was it the federal or provincial government that was responsible for these homes? HM: The program fell under social programming, and generally social programs are administered by provinces but with federal funding in the form of transfer payments. It was around the 1960s that the federal government started to commit funds to establish something called the Canada Assistance Plan, and that was to help provincial social assistance programs that included these maternity homes. So the federal government paid the provinces, who then sort of outsourced the program to (mostly) churches to administer. CL: You’ve said that you never learned about Canada’s maternity home system in school, and I’m sure many people will say the same. Is there a lot of information out there about these homes? HM: I think even in the past couple of years there’s more than there was when I started writing Looking for Jane. It was all so secretive for so many years,

CL: You wrote some evocative scenes about the fight for women’s rights in the ’70s and ’80s, including a description of the 1970 Abortion Caravan in Ottawa and a fictional meeting between Dr. Henry Morgentaler and Evelyn. They had such realistic flavour. great way to wake up the body, sun VDOXWDWLRQV R̆HU the perfect morning practice. This series of poses, also known as Surya Namaskar, is suitable for advanced yogis and beginners alike. Sun salutations are a common part of Vinyasa yoga styles, someWLPHV FDOOHG ÀRZ \RJD 7KH VHTXHQFH R̆HUV DQ LQWURGXFtory moving meditation that connects movement with the breath and helps prepare the body for other postures. Flow through these eight poses to complete a sun salutation. Repeat the sequence ¿YH RU VR WLPHV WR VWDUW WKHQ increase the number of repetitions as you become more comfortable and build up strength. We’ve indicated where to link your breath to the movements in the steps that follow. Take as many breaths as you need between postures. Most importantly, listen to your body and do what feels right for you.

Relax your shoulder blades down your back and turn the palms to face forward. 5. Take a few deep breaths here.

Modification: Only bend as far as your body allows; release if you experience pain. BENEFIT: Many of us have tight hamstrings; this pose helps to stretch out this large group of muscles.

1. Inhale: With hands placed on the floor or on your knees or thighs, lift the upper body into a “flat back,” so that the spine is aligned from the hips to the head. 2. Exhale: Release into Standing Forward Bend Pose.

Check that your shoulders aren’t hunched forward by your ears; draw the shoulder blades down the back. 3. Take a few deep breaths here and enjoy the restorative effects of this posture. 4. Modification: Move from Upward-Facing Dog Pose through to Tabletop Pose on your hands and knees, then proceed into Downward-Facing Dog Pose. Placing your hands on yoga blocks can help support this posture by alleviating pressure in the wrists. BENEFIT: This posture works the whole body, but it’s particularly helpful for stretching the FDOYHV DQG VWUHQJWKHQLQJ WKH PXVFOHV RI WKH IHHW

VIEW FROM THE TOP This wide-open modern condo was decorated with luxe features and strategically placed furniture pieces to help define each space within it.

1. Sofas, armchairs and ottomans surround a square coffee table to enclose the living room. 2. A large rug is used to delineate the sitting area. 3. Placed behind the sofa, a black sideboard creates a break in the space, dividing the sitting area from the dining zone. Two tall table lamps help form the impression of a wall. 4. A single wall of cabinets with open shelving and a mounted TV offers effective and discreet storage, as well as a place to display objects while keeping them out of the way. 5. A large elegant table is the centrepiece of the dining zone; its position—offset to the kitchen island— works to make this area appear independent. 6. Careful lighting choices are the final touch. A black industrial-look chandelier over the dining table and white pendant lights in the kitchen clearly separate the two spaces.

MADE TO BE MODERN This space was refreshed to brighten up the home, but it needed some thoughtful design to avoid an awkward layout. 1. A partial wall with an integrated doublesided electric fireplace creates room for a TV and separates the living space from the dining area. 2. The wooden railings and floors imbue this open space with organic texture and provide contrast to the white walls. 3. In the entryway, a wardrobe unit separates the area from the living room. It’s an ingenious alternative to storing coats on hooks and shoes on the floor along the wall. 4. The large dark rug is placed in line with the fireplace wall to define the edge of the sitting area. 5. Shutters were removed from the upper windows to let in loads of natural light. 6. Dark-toned furniture in both the living and dining zones keeps the look grounded.

Black, green or oolong, tea plants belong to the species Camellia sinensis, which originated in China where it has been cultivated for more than 4,000 years. Different growing conditions and processing techniques are responsible for creating the distinct varieties. TIP

The secret to a perfectly runny caramel centre? Make sure the caramel spread is very cold. Place it in the refrigerator at least 2 hours before preparing the recipe. This prevents the caramel from mixing with the chocolate batter while it bakes.

Remove bowl from pan; let cool slightly. Meanwhile, in large bowl, using electric mixer on medium speed, beat eggs, egg yolks and sugar until thickened, 5 to 10 minutes. boneless chicken breasts, skin removed salt and pepper 1 tbsp vegetable oil 1 small onion, chopped 2 cloves garlic, chopped 1 fresh jalapeño pepper, seeded and chopped (optional) 1 tbsp chili powder 1 tsp ground coriander 1 tsp cinnamon 1 tsp dried oregano 1 1/2 cups strained tomatoes (passata) 1/2 cup sodium-reduced chicken broth 3 tbsp raisins 3 tbsp slivered almonds 30 g 70% dark chocolate, chopped 8 6-inch corn or flour tortillas, hot Lime-Marinated Slaw (recipe, this page) 1 small red onion, thinly sliced 1/4 cup crumbled feta cheese 3 tbsp coarsely chopped fresh cilantro lime wedges (optional) Season chicken with salt and pepper. Place chicken in large saucepan and cover with water. Bring to boil over medium-high heat. Reduce heat to medium-low; simmer until chicken is no longer pink inside, 10 to 15 minutes. Transfer chicken to cutting board and let stand for 5 minutes. Using two forks, shred chicken; set aside. Meanwhile, in separate saucepan, heat oil over medium heat. Add onion and garlic, and jalapeño, if using; cook, stirring occasionally, until softened, 8 to 10 minutes. Add chili powder, coriander,

cinnamon and oregano; cook, stirring constantly, about 30 seconds. Stir in passata, broth, raisins and almonds. Season with salt and bring to boil. Reduce heat and simmer 10 minutes. Remove saucepan from heat; stir in chocolate until melted. Transfer mixture to blender; purée until smooth. In serving bowl, mix reserved pulled chicken with mole sauce. (Make-ahead: Can be stored in airtight container and refrigerated for up to 2 days or frozen for up to 3 months.) Spoon chicken mole onto hot tortillas and top with Lime-Marinated Slaw, sliced onion, feta and cilantro. Serve with lime wedges, if using. DID YOU KNOW? Mole (pronounced moh-lay) is a traditional Mexican sauce made with cocoa, chilies, seeds and a variety of other ingredients depending on the region. Dried ancho peppers are typically used to prepare this recipe. Here, we offer a simplified version using fresh jalapeño peppers, which are available at most grocery stores. For a more authentic take on chicken mole, replace the jalapeños with 2 dried ancho chilies, rehydrated for 30 minutes in boiling water and then drained.

In small saucepan, combine cream, ginger, lime zest and juice and Cajun seasoning. Season with salt and pepper. Heat over medium heat until small bubbles form on side of saucepan. Pour over reserved chocolate and let stand for 1 minute. Using whisk, mix until chocolate is melted. Set aside. Sautéed Shrimp In small skillet, heat oil over medium heat. Add shrimp; cook, turning halfway through cooking time, until beginning to turn pink, 2 to 3 minutes. Season with salt and pepper. Add garlic; cook, stirring constantly, until shrimp are pink and opaque throughout, about 1 minute. Transfer Sautéed Shrimp to serving dish. Drizzle with half of the White Chocolate, Lime & Ginger Sauce. Sprinkle with additional grated lime zest. Serve with remaining sauce on the side. Chocolate Cream 6 oz 70% dark chocolate, chopped 1 1/2 cups 35% whipping cream 1 cup 2% milk 6 egg yolks, beaten 1/3 cup packed brown sugar 1/2 tsp vanilla Spiced Pear Topping 2 tbsp unsalted butter 3 tbsp packed brown sugar 3 ripe but firm pears, peeled and finely diced 1 tsp chopped fresh ginger 1/2 tsp cinnamon 1 star anise chopped almonds (optional) grated dark chocolate (optional) Chocolate Cream Cups Place chocolate in heatproof bowl. In small saucepan, heat cream and milk over medium heat until bubbles form around side of saucepan. Pour over chocolate and let stand for 1 minute. White Chocolate Whipped Ganache 90 g white chocolate, chopped 3/4 cup 35% whipping cream Cocoa Shortbread Crust 1 1/4 cups all-purpose flour 1/3 cup cocoa powder, sifted 2 tbsp icing sugar 1/2 cup cold unsalted butter, cubed 1 egg yolk Dark Chocolate Filling 1 1/2 tsp unflavoured gelatin 180 g dark chocolate, chopped 1/3 cup granulated sugar 1 1/2 cups 35% whipping cream, divided 2 tbsp chocolate shavings White Chocolate Whipped Ganache Place chocolate in heatproof bowl; set aside. In small saucepan, heat cream over medium heat until small bubbles form on side of saucepan. Pour over reserved chocolate and let stand 1 minute. Using whisk, mix until chocolate has melted. Cover surface of white chocolate mixture directly with plastic wrap. Let cool to room temperature; refrigerate for at least 6 hours. (Makeahead: Can be refrigerated overnight.) Cocoa Shortbread Crust Meanwhile, LQ IRRG SURFHVVRU FRPELQH ÀRXU FRFRD powder and icing sugar. Add butter and pulse until mixture reaches consistency of coarse bread crumbs. In small bowl, combine egg yolk and 1 tbsp cold water. 3RXU LQWR ÀRXU PL[WXUH DQG SXOVH MXVW until combined (do not overmix). Press dough evenly into bottom and side of 9-inch springform pie plate.
