EDITOR’S LETTER vacation days I love to travel. In fact, I always have some sort of trip penciled in my calendar. My wanderlust started early: We Orrs were Texans on the move. That’s us (below left) at a family reunion at Aquarena Springs in San Marcos, Texas. You can tell by the way my dad is holding me (the little scampy one) that I was eager to go see the “mermaids” who swam in the crystal clear springs drinking bottles of Coke while holding their breath underwater. For my family, travel has always meant the excitement of getting away from home and the humdrum demands of ordinary life while educating ourselves about the world around us. But vacations do something else. They knit families of every type and composition together. I’ll always cherish a trip to Yellowstone National Park as an adult with my aging father shortly after Mom died. Though we were still a bit in shock, we marveled in childlike wonder at the otherworldliness of all the sulfurous geysers, fumaroles, and bubbling mud pits. Though he isn’t able to travel now, my dad will always be the leader of our pack, whether it’s a fishing trip in Alaska, getting lost on a Swiss mountain road, or trying to figure out how a mermaid can drink underwater. Perhaps the best part of travel is returning home, opening the front door, and noticing how the house smells comfortingly familiar yet somewhat different. We arrive back lighter and more carefree. We notice the particular way the afternoon sun lights up the living room and how badly the throw pillows on the couch need a refresh. Did the house change while we were away? No, we did.

is known for its quirky midcentury modern homes, and Dallas transplants Melissa and Todd Bellaire had their hearts set on one. But a competitive housing market turned their attention to a new development with an urbanist design concept—one that pushed homes closer to the street and to each other. They liked the idea of this town-in-a-town with front porches, foot traffic, parks, and young families. But to make a new build feel like home, they’d need to tweak the standard builder fare, and with lots selling fast and a baby on the way, the clock was ticking. Within a year, they had chosen a lot, picked a plan, researched style ideas, and brought in designer Amity Worrel to help choose finishes and furnishings that could stand up to kid life. “We also liked that her aesthetic challenged us,” Melissa says. “She showed us things we would never have thought of, but we really love.”

When this creative mom turned an old TV cabinet into a new kind of entertainment center for her sons, she thought of everything—even the kitchen sink. Just for fun. What better reason to create a play kitchen? Carrie Spalding of Roanoke, Virginia, did it for next to nothing by reconfi guring a $15 entertainment center she found on Craigslist and making it look like a mini kitchen with paint. The payoff was son Griffi n’s reaction when he fi rst saw it: ”Total delight,“ Carrie says. ”He immediately got to work—stirring things on the stove, ‘running water,‘ putting things in the oven.“ She was sure he would love it (and that eventually his brother, Asher, will too), but Carrie admits she had an ulterior motive: “I knew I would have a blast fi guring out how to make a tiny sink, stove, and backsplash.“ And she did. REWORK A T V CAB I N ET The entertainment center Carrie found was sturdy and had a TV shelf that was a good counter height for kids. It was built as a series of boxes, so Carrie could move and remove pieces to create an oven, fridge, and storage cabinet. She made appliance doors from ¾-inch plywood and a new back from hardboard, a fiberboard sold at home centers.

I figured out that making something yourself is usually cheaper. But I also love the creative process—the feeling of satisfaction and the ability to create something that is exactly what you want.

PAI NT TH E COU NTE RTOP To create the look of granite, Carrie primed the counter and painted it black. Then she dabbed on crafts paint (two shades of gray plus silver) using a synthetic sea sponge and fi nished with a

polycrylic sealer. “It looks just a like a real counter,” she says. “My husband asked where I bought it.”

PAI NT TH E APPLIANC E S After priming the appliance doors, Carrie spray-painted them silver, but it wasn’t shiny enough to mimic stainless steel. Her fix: Krylon Original

Chrome spray paint. She taped off a square for the cooktop and sprayed it chrome, too, then finished all the shiny surfaces with polycrylic sealer.

PAI NT TH E BAC KS PL AS H Before attaching the hardboard back to the unit, Carrie painted it the cabinet color. She made a plastic stencil of eight 2½×5-inch subway tiles and applied aqua paint with a foam roller.

I N STALL HARDWARE Carrie reused the TV cabinet hinges on the refrigerator and bought a new hinge for the bottom of the oven door. To complement the cooktop burners (four CDs, painted and glued on), Carrie chose actual replacement cooktop knobs (they twist!). The handles for the oven and fridge are cabinet pulls.

HISTORY LESSON In the late 19th century parlors and sitting rooms were the social spaces in homes—if you had the time and resources to be social. Living rooms started showing up in the early 1900s as people had more leisure time and spending money. Family rooms came on the scene in the 1950s as parents discovered that spending time with the kids was actually a good thing. Living rooms hosted formal occasions, and family rooms were more casual and fun. Dens, other midcentury rooms, tended to be small, quiet, knotty pine-filled spaces for reading or working.

hey could have saved for years to replace the cabinets in their suburban Boston kitchen. But an affordable facelift gave Nina and Mack Hendrick faster results and more satisfaction. Before painting the cabinets, they read online tutorials, watched videos, and tested several techniques. Their fi nal process involved sanding, applying DryDex Spackling to fi ll the grain of the oak cabinets, priming, and spraying on coats of a self-leveling, water-base enamel. The result: like-new cabinets for less than $300. Nina and Mack also built an island using a marble slab found on Craigslist and taught themselves to tile the backsplash. “By saving on big-ticket items,” says Nina, who writes a design blog at ninahendrick.com, “we were able to get our dream kitchen for hundreds instead of thousands.”

Houston decorator and prop stylist Becki Griffin outfitted this “boy cave” for her 16-year-old twin sons. An affordable sofa with chaise (Ektorp from IKEA), above, has plenty of room for the boys to stretch out or pile on with friends for movie night. The gray slipcover “hides most of the dirt my boys bring home,” Becki says.

Instead of splurging on custom built-ins, Becki lined up four inexpensive bookcases (Billy from IKEA). The shelves hold mementos, movies, video games, and books. To give the display a focal point, she removed two shelves so she could fit larger items like globes and a dartboard. Clip-on lights at the top of each bookcase add ambience.

“Decorating around a TV is a challenge for everyone,” Becki says. “They’re just so big!” To make this 50-inch flat-screen disappear, left, she coated the wall with flat black chalkboard paint, hung papier-mâché trophies, and used chalk to draw a “mount” around each one. The dark wall gives a movie-theater experience.

JAMIE’S BURGER BASICS Jamie Purviance knows grilling. As a top barbecue expert and Weber’s master griller, he’s written more than a dozen cookbooks on the subject. ”The key to a great burger is quality meat and maintaining juiciness,” he says. Here’s how to get there:

RECIPE BLUEPRINT THE GRIND “Ground chuck (about 18 percent fat) is better for burgers than ground round (about 12 percent). Use 11⁄2 lb. to make four burgers. You want meat that’s been ground in the past 24 hours. Avoid packages that have any browning or look smashed. You can ask your butcher to grind some chuck for you to ensure freshness.” EXTRA FLAVOR “Sometimes I also like to throw in a little Worcestershire and grated onion to taste, or even some roasted chiles or bell peppers. Anything that adds moisture to the meat will improve both the taste and the juiciness.”

A LIGHT TOUCH “I salt and pepper the meat first along with any flavor additions (this ensures the patty is seasoned throughout), and then use my hands to just incorporate. Avoid overmixing—your burger will have a pasty consistency.”

GREAT SHAPE “The ideal patty thickness is 3⁄4 inch. Thinner, and it’s likely to dry out before developing a nice crust on the outside; thicker, and the crust might blacken before the center reaches medium doneness.”

Direct medium-high heat (400º to 450ºF) gives the surface of the burger that delicious crust and excellent grill marks. Make sure the grate is really clean to avoid sticking.

The more you flip your burger, the less flavor it develops, so aim for just once. And don’t press down on the burgers with a spatula—you’ll squeeze out all kinds of flavorful juices.

KEEP A LID ON IT

Keeping the lid on the grill makes a better burger. It not only adds a more intense smokiness, but also keeps moisture trapped inside so there’s less risk of drying out the burger.

large handfuls hickory or mesquite wood chips 1 recipe Kentucky Bourbon Sauce, below 1 1⁄2 lb. ground chuck (80 percent lean) 4 oz. smoked cheddar cheese, shredded or sliced 4 hamburger buns, split 8 slices cooked bacon

1. Soak wood chips in water at least 30 minutes. Prepare Kentucky Bourbon Sauce. 2. Meanwhile, mix ground chuck, 1 tsp. kosher salt, and 1⁄2 tsp. black pepper; form four 3⁄4 -inchthick patties. Make shallow indentations in centers of patties. Chill until ready to grill. 3. Prepare grill for direct cooking over mediumhigh heat (400º to 450ºF). Drain wood chips; add to charcoal or to smoker box of a gas grill, following manufacturer’s directions; cover. When smoke appears, grill patties over direct medium-high heat, covered, to medium doneness (160ºF), 8 to 10 minutes, turning once. During last minute, place 1 oz. cheese on each patty and toast buns, cut sides down, over direct heat. 4. Build burgers on buns with lettuce, tomato, bacon slices, and Kentucky Bourbon Sauce. KENTUCKY BOURBON SAUCE In a heavy medium saucepan warm 2 tsp. vegetable oil over medium heat. Add 2 slices bacon, cut into 1 ⁄2 -inch pieces; cook until crisp, 3 to 5 minutes. Drain; reserve drippings in pan. Add 1 finely chopped yellow onion (2⁄3 cup) to pan; reduce heat to medium-low. Cook until soft and golden brown, 8 to 10 minutes, stirring occasionally. Stir in 1 clove garlic, minced; cook 1 minute. Add 1 ⁄4 cup bourbon; increase heat to mediumhigh. Boil 1 minute. Add 1 cup ketchup, 1⁄4 cup water, 3 Tbsp. cider vinegar, 3 Tbsp. unsulfured molasses (not blackstrap), 2 Tbsp. dark steak sauce, 1 Tbsp. spicy brown mustard, 1 tsp. liquid smoke, and 1⁄2 tsp. hot pepper sauce. Bring to boiling over medium-high heat. Reduce heat. Simmer, uncovered, 20 minutes or until reduced to 2 cups, stirring occasionally. Remove from heat; stir in cooked bacon. Look for slender, bright green beans that are crisp and blemish-free. Avoid bulging, leathery-looking beans—they’re old! Store beans unwashed in a plastic bag in the fridge for up to a week.

Stack beans on a cutting board with the tough stem ends on one side; press with your palm. Using a chef’s knife, make one cut to remove stems. (The skinny, tapered tips are tender and fine to eat.)

Preserve surplus beans at their freshest. First blanch whole or cut beans: Boil them 3 minutes, then submerge in ice water. Drain and transfer to freezer containers, leaving a 1⁄2 -inch headspace.

SESAME GREEN BEAN TART Let 1 rolled refrigerated piecrust stand according to package. Unroll; sprinkle with 1 Tbsp. sesame seeds. Gently roll over crust with rolling pin. Press into a 10-inch tart pan with removable bottom; trim edge. Line with double thickness of foil; bake at 425°F 8 minutes. Remove foil; bake 6 minutes. Remove. Reduce heat to 375°F. In a skillet cook 6 slices bacon until crisp. Remove; reserve 1 Tbsp. drippings in skillet. Add 1 lb. green beans, cut into 3- to 4-inch pieces, and ½ tsp. salt. Cook over

medium-high heat 5 minutes, stirring occasionally. Stir in 1 bunch sliced green onions. Transfer to crust. In a medium bowl whisk together 2 Tbsp. gochujang and 2 Tbsp. water. Whisk in 5 eggs and 1 tsp. sesame oil. Pour into crust. Bake 20 minutes or until set. Crumble bacon over tart. Top with sesame seeds. MAKE S 6 servings.

CHOPPED GREEN BEAN SALAD WITH MANCHEGO Cut 1¼ lb. green beans into 1-inch pieces; cook in a large pot of salted boiling water 4 minutes. Transfer to ice water; drain. In a blender combine ⅓ cup red wine vinegar, ⅓ cup minced shallots, ½ tsp. salt, and ¼ tsp. black pepper. Add 4 oz. finely shredded Manchego or Parmesan and ⅓ cup extra-virgin olive oil. Blend until smooth. In a

bowl combine beans, dressing, 2 cups cooked farro, 3⁄4 cup toasted almonds, 3⁄4 cup golden raisins, and 2 oz. chopped Manchego or Parmesan. Season to taste. MAKE S

ITALIAN SAUSAGE & TWO-BEAN SKILLET In a large skillet heat 1 Tbsp. extravirgin olive oil over medium heat. Add 4 uncooked Italian sausage links (1 lb.); cook 10 minutes, turning occasionally. Add 2 peeled, sliced shallots and 1 Tbsp. minced garlic; cook 30 seconds. Add 2 cups reduced-sodium chicken broth. Bring to boiling; reduce heat. Simmer, covered, 5 minutes. Add 12 oz. green beans and one 15-oz. can rinsed, drained cannellini beans; return to simmer. Cover; cook 5 minutes or until green beans are crisp-tender and sausage is done (160°F). Stir in 8 oz. halved cherry tomatoes and ⅓ cup chopped Italian parsley. MAKE S

Everyone is always amazed I have white couches, but they’re covered in outdoor Sunbrella fabric so you can get out pretty much anything. I love juxtaposing rustic and modern. Something about a metal credenza with a rustic wood mirror feels both wrong and so right.


he first weekend we spent at the new house, we could not believe how amazing this small moment was: We had cooked and eaten breakfast together, then at some point the kids wandered off to play. My husband, Mike, and I were left to sip our coffee at our own pace. We were in one room while Mazzy (6) and Harlow (3) were in another, and everyone was fine. In our New York City apartment, there is no separation—our living, dining, playroom, and kitchen are all one space, so we are always on top of each other. We needed more room, but after doing a lot of research, we realized we could basically buy this house out east on Long Island for the cost of a two- to three-bedroom upgrade in Manhattan. My designer, Lisa Hershmann, had the great idea to use decals from Urban Walls to liven up the closets: white triangles on teal for the coat closet, bubblegum-pink flamingos in the girls’ closet, and gold apples in the laundry room.

This is the room that sold us on the house. The way it juts out makes it feel like the creek wraps around it. It’s our quiet family spot. Mazzy loves art, so Mike set up an easel and encourages her to paint the landscape. It’s pretty adorable.

MOUNTAIN H. serrata

The national hydrangea test garden at Heritage Museums & Gardens in Sandwich, Massachusetts, grows more than 155 species and cultivated varieties of hydrangeas, including some of our favorite new varieties, opposite. Breeders are achieving longer bloom seasons, heat- and cold-tolerance, and compact growth. Dig into this FAQ to demystify this wonderfully diverse shrub.

All hydrangea blooms naturally change hue as they age, but only bigleaf and mountain types can be altered with soil amendments. For blue flowers, add a soil acidifier to reduce the pH level to 5.0 or lower. For pink flowers, neutral to alkaline soils (pH 6.5 and higher) are best. Look for specially formulated products at your garden center, and follow the instructions on the label.

WENTY YEARS INTO HER CAREER AS A GRAPHIC DESIGNER, DAYTON, OHIO, NATIVE THEO STEPHAN FELL HARD FOR THE FLOWERY PASTURES OF CALIFORNIA’S SANTA YNEZ VALLEY. She skipped the what-if game and put down roots by purchasing a 3-acre plot of land that had a fixer-upper house with a carport shed attached. Next Theo planted a few olive trees in the backyard, slowly adding guava, pomegranate, persimmon, and Meyer lemon trees. She named her new farm-to-be Global Gardens. What started with a few trees is now a thriving farm-to-bottle organic olive oil business and booming weekend farm stand, not to mention a happy life for Theo and her two daughters, Sunita (21) and Anita (20). “They’re Nepalese and I’m Greek. Together we’ve created a global-minded, farm-centric lifestyle that we call ‘Caliterranean’ and it influences everything—how we live, work, entertain, and even how we make our delicious products.” Theo says one of the highlights of living at Global Gardens is the rustic luncheon she and her daughters create every year to celebrate the farm’s olive harvest. “We set the table smack-dab in the middle of the olive garden and make sure the menu is our signature low-fuss comfort food,” Theo says. “We serve everyone’s favorite foods, starting with a Calitini cocktail, aka our version of a martini because it combines our vinegars and a classic martini.” Delicious starters include a savory-sweet Kalamata baklava and goat cheese-stuffed nasturtium flowers. While everyone nibbles, Theo puts the finishing touches on the main attraction—her famed short rib sandwiches. The short ribs get a bright kick from homegrown garlic and fig-infused balsamic vinegar, roasting away while the trio sets the table. No family celebration would be complete without their zucchini olive oil cake. Adds Theo, “It’s pure bliss “We hug our olive trees! They’ve been so good to our family,” says Theo Stephan, to us and gets topped with olive top left, with daughters Anita and Sunita. ver hear the one about the shoemaker’s children going barefoot? Estee Stanley can relate. She’s designed houses for and dressed A-listers—Jessica Biel, Lea Michele, and Ellen Pompeo are on speed-dial—and just opened Au Fudge, a family-friendly eatery in L.A. But making her own screen porch ready for summertime chilling kept getting back-burnered by her crazy schedule. So Estee collaborated with The Studio at One Kings Lane, the decor retailer’s in-house design service for regular folks (no Walk of Fame star required). They took a look at the long, narrow space, listened to how she wanted to use it, and assimilated her boho-vintage taste. “I wanted it to feel loungey, with multiple seating areas and a game table,” Estee says. That’s exactly what she got. Two separate seating areas each have a low-slung sofa for lounging (or a killer nap) plus comfy but lightweight chairs that can go where they’re needed. Indigo blues, pinks, oranges, and rattan talk to each other across the room. In the center of it all is a round table that can host party snacks, dinner, or a hard-core card game. “This is going to be Party Central this summer,” Estee says. Q

Using clean hands, work dressing into kale 15 seconds. Using vegetable peeler, cut ribbons from carrots. Add farro, carrots, nuts, berries, and cheese to kale in bowl. Add remaining dressing; toss. of a 16-oz. pkg. frozen phyllo dough (14×9-inch rectangles) 2 cups finely chopped pitted Kalamata olives 1 1⁄2 cups finely chopped, salted pistachios (6 oz.) 4 oz. feta cheese, crumbled (1 cup) 1 Tbsp. minced fresh garlic 2 tsp. dried oregano, crushed 3 ⁄4 cup extra-virgin olive oil 1 orange, zested and juiced 1 ⁄4 cup Sauvignon Blanc or other dry white wine 3 Tbsp. honey

1. Thaw phyllo dough according to package directions. Preheat oven to 325°F. For Kalamata filling, in a large bowl combine olives, pistachios, feta, garlic, and oregano. Brush bottom of 13×9-inch baking pan with some of the olive oil. Unroll phyllo. Layer five sheets in prepared pan, brushing each sheet with some of the olive oil. Sprinkle with one-third of the Kalamata filling (about 11⁄3 cups). Repeat layering with phyllo sheets and Kalamata filling two more times, brushing each sheet with some olive oil. 2. Top with remaining phyllo, brushing each sheet with olive oil. Drizzle with any remaining oil. Using a sharp knife, cut stacked layers into 32 pieces. Bake for 40 to 45 minutes or until golden brown. Cool slightly in pan on wire rack. 3. Meanwhile, in small saucepan combine orange zest and juice, wine, and honey; heat through. Pour over warm baklava; cool 2 hours. Recut into bars. Makes 32. 1. In bowl combine dried tomatoes, garlic powder, oregano, dill, rosemary, 1 ⁄2 tsp. kosher salt, and 1⁄2 tsp. black pepper. Sprinkle short ribs with mixture. 2. Heat oil in a 5- to 6-qt. Dutch oven over medium-high heat. Add beef ribs, in batches if necessary, and cook about 8 minutes or until browned on all sides. Add broth and vinegar. Arrange onion over ribs in pot. Bring to boiling. Cover; reduce heat. Simmer about 21⁄2 hours or until ribs are tender and meat pulls away from bone. Remove meat; discard bones. Meanwhile, prepare Garlic Mash. 3. Transfer meat and onion to cutting board; cover to keep warm. Skim fat from cooking liquid. 4. Thickly slice rib meat across the grain. Spread Garlic Mash on cut side of each roll bottom. Top with meat, a drizzling of pan juices, onion, blue cheese, and basil. Add roll tops. Serve with remaining pan juices for dipping. Makes 6 servings. Garlic Mash Preheat oven to 400°F. Slice off top third of 3 garlic bulbs; discard. Place bulbs on a piece of foil; drizzle with 1 tsp. extra-virgin olive oil each. Close foil around garlic to form a tight pouch. Place on a baking sheet and roast about 45 minutes or until tender; cool slightly. Remove garlic from foil; squeeze garlic cloves from skins and mash with a fork. Preheat oven to 450°F. Place jalapeño on baking sheet lined with foil; roast for

TOTAL TIME 2 hr. 21⁄2 cups coarsely shredded unpeeled zucchini (1 large) 21⁄3 cups sugar 3 ⁄4 cup Arbequina olive oil or other extra-virgin olive oil 4 eggs 2 ⁄3 cup unsweetened vanilla almond milk 2 tsp. vanilla 4 cups cake flour 21⁄2 tsp. baking powder 1 recipe Cream Cheese Frosting, right Fresh figs and olive leaves (optional)

1. Preheat oven to 350°F. Grease and flour three 8-inch round baking pans; set aside. Spread shredded zucchini on a plate. Blot dry with paper towels. 2. In a large mixing bowl whisk together sugar and oil. Add eggs, almond milk, and vanilla; whisk to combine. Add flour, baking powder, and 1 tsp. kosher salt; whisk to combine. Stir in zucchini. Pour into prepared pans (2 cups per pan). Bake 30 minutes or until a toothpick inserted near center comes out clean. Cool in pans on wire rack 10 minutes. Remove from pans and cool completely. 3. To assemble, place one cake layer on a serving platter. Frost top lightly with some of the Cream Cheese Frosting. Repeat with cake layers and frosting.

Five years ago, graphic artist Joel Anderson and his son Nathan set out to create posters for all 59 national parks. “It all started with Nathan’s high school graduation trip to Yellowstone,” Joel says. “We saw one of the 14 prints commissioned by the Works Progress Administration under President Roosevelt, were inspired by the simple, iconic imagery, and thought, Let’s pick up where they left off.” They’ve visited 15 of the parks in the process. “We want the posters to inspire people to enjoy and protect the parks,” Joel says. “As American citizens, this is our heritage.” Find the Anderson Design Group’s posters and

The book tells the story of a girl named Jane, who (begrudgingly) takes a family road trip to see the national parks. “Every summer for the last 30 years, my childhood girlfriends and I have taken a trip to a national park,” Mrs. Bush says. And this year, along with First Lady Michelle Obama, Mrs. Bush is the co-chair of the NPS centennial. “We thought it was perfect timing for the book to help inspire families to find their magic in the outdoors,” Jenna says. DRESS IN LAYERS

The temperature can change drastically depending on elevation and time of day, so check the weather and be ready with three layers. THE FIRST: a short-sleeve inner layer (backpack straps can chafe if you wear a tank top). Opt for silk, a synthetic (like nylon, polypropylene, spandex, or rayon), or merino wool, which will wick sweat away from your body. NEXT: a long-sleeve middle layer of wool or fleece for warmth if needed. THIRD: a waterproof, breathable jacket with a hood (can double as a windbreaker). For your bottom half, pants that can convert to shorts are best, and don’t forget a hat and sunglasses.

TRAVEL LIGHT

For a day hike, you’ll want a daypack, which holds only what you need for the hike, instead of a full-on backpack. It should have a hip belt so the weight isn’t only on your shoulders. To put the pack on so the weight is distributed evenly, loosen all straps, then tighten the waist belt and shoulder straps.

DO I NEED TREKKING POLES? If you plan to hike only once or twice, probably not. But if you hike monthly or plan to hit the trails daily on a vacation, Grierson says go for the poles. “They give you better balance and footing, reduce stress on your joints, and can help you feel like you’re not working so hard,” she says. Another plus: Using poles can increase your calorie burn by up to 20 percent.
