Most cooks have a well-seasoned cast-iron pan they think of almost like a family member. I inherited mine from my grandmother Clarice. She’s been gone for decades, but my dad always told us stories about how she cooked breakfast, lunch, and dinner in it for my grandfather and four hungry sons on their north Texas farm during the Dust Bowl years. Every time I melt a pat of butter on its pitch-black surface, I think of all the meals she would have made in that skillet: fried chicken, cream gravy, okra, steak fi ngers, succotash, cinnamon rolls, pineapple upside-down cake, scrambled eggs and ham. Something as basic as a skillet can inspire endless variations. And that idea inspired our food editors to take a fresh look at cast iron and add an element of surprise to an everyday kitchen item (p. 106). As editors, novelty or a sense of discovery determines much of what we gravitate toward in our stories. I love searching out a spice to experiment with in the kitchen (like shichimi togarashi, the Japanese chile pepper blend on p. 84 that has the added flavors of citrus and sesame) or a hellebore variety to try in the garden (p. 64). However, this month we were

equally drawn to the opposite of new: how to make even the most basic things better. We turn the spotlight on carnations—surely one of the most overlooked flowers (p. 96)—to create arrangements that will make any valentine’s heart sing. You want warm water, not hot. “Water that is 1 or 2 degrees warmer than your body temperature relaxes your muscles,” says Regine Berthelot, lead esthetician at Caudalie Vinothérapie Spa in New York City. Hot water strips skin’s natural lipids, proteins, and oils, which compromises its protective barrier and makes skin feel dry, scaly, and itchy, says dermatologist Mona Gohara, M.D., an associate clinical professor at Yale School of Medicine. Q CUSTOMIZE YOUR BREW For dry or irritated skin, pour in a capful of bath oil. “Oils are hydrating, and those that contain rose, bergamot, or eucalyptus also decrease inflammation,” Gohara says. The 10 minutes you’re reclining in a bath is the ideal time frame for a facial mask. “It takes that long for ingredients to permeate the skin,” Gohara says. Resist doing anything else. “I don’t recommend exfoliating or shaving in the bath, because you would then be soaking in what comes off,” Gohara says. Plus, you can’t get a close shave once skin has swelled. Instead, take these minutes to decompress; then splash off the mask, towel-dry, and apply moisturizer to lock in all that absorbed water.
IN THE SHOWER Q DO A DOUBLE SCRUB Start with a technique called dry brushing. Before your shower, run a stiff-bristle brush (try the Round Body Brush, $12 ; thebodyshopusa.com) gently up your legs and arms, then in circular motions on your torso, Berthelot says. If you scratch your skin at all, use a softer brush and less pressure. Then step into the shower, wet skin, and apply a salt or sugar scrub all over your body. The double scrubbing

action works wonders, but “limit it to once or twice a week max,” Gohara says. “And when you get out of the shower, slather on a heavy body cream to protect the skin barrier.” Q TREAT YOUR HAIR
Before you shampoo, reach for a hair mask or hot-oil treatment. Distribute from roots to ends, then stay out of the stream for a few minutes. The steamy air lifts hair cuticles so ingredients penetrate each strand. Rinse, shampoo to remove the heavy oil, and finish with your regular conditioner.

he Underdog. That’s what Dana and Steve Miller dubbed the rundown 1950s Dayton, OH, ranch they purchased at an estate sale in 2012. With two young boys and another baby on the way, they were ready for a change. “Our previous home was 2,700 square feet, but we lived in two rooms about 90 percent of the time,” Dana says. “We wanted a smaller house that we could mold to our family’s needs.” Because they’re both handy (Steve is an engineer by trade), the only limits on their house search were location and budget. They found their blank slate in what she says was “the worst house on the street.” “The other couple viewing the house was revolted, but we were high-fiving, knowing we found the perfect place,” Steve says. Without adding to the footprint, they got to work making the 1,600-square-foot home the perfect fit. Widening doorways to accommodate kid stampedes, vaulting the ceilings, and creating multifunctional rooms topped their to-do list. The smaller footprint brings the family together and lets them enjoy every inch of the space they worked so hard to create.

We almost always eat here unless we have guests.”

The living room’s decorating focus was centered on one key element: comfort. “Everything in the room is meant to be sat on or have feet put on,” Dana says. Unfussy wood elements that handle wear and tear repeat throughout. A cloudlike shag rug layered over sisal defi nes the gathering area and gives the kids a soft place to romp. “My kids have colorful personalities, so I want my house to be calm and relaxed,” Dana says.
Because the front door opens directly into the living room, right, Dana defined a mini entry using a few clever and functional tricks. DIY wood shelves line one wall; baskets on the bottom shelf store toys for each kiddo—Mabrey (4), Everett (8), and Layne (11)—and one for mom. Next to the door, peg hooks give guests a place to hang coats, and the bench below is a drop spot for purses and packages.

Chelsea Coulston and her husband, Matt, who is in the U.S. Navy, have lived in nine houses in six cities. Even when they bought their Jacksonville, FL, home, they knew they wouldn’t be there forever. One such piece: an industrial-style coatrack Chelsea built in a day. “We don’t have a coat closet, and we needed a dedicated drop zone,” Chelsea says. AS S E M B LE TH E LEG S Once the pipes and other parts are dry, assemble the two back legs in this order (from top down): a flange, a 3-inch-long pipe, a tee, a 5-inch-long pipe, a tee, a 2-inch-long pipe, and a cap. Connect the back legs by screwing a 36-inch-long pipe into the top tees. Assemble the two front legs in this order (from top down): a flange, a 10-inch-long pipe, a tee, a 2-inch-long pipe, and a cap.
1×4 to be used as the hook rail, then apply the stain-polyurethane. Allow to dry.

Growing edibles isn’t just for the outdoors. As a cook who relies on homegrown herbs to inspire me, I love walking across my apartment to pick a leaf or dig up a rhizome to flavor dinner—especially in the dead of winter. Growing tropical spices is as easy as planting gingerroot you buy at the local supermarket or rhizomes ordered on your laptop.

Ginger grows in tropical shade, but with impeccable drainage and consistent moisture, store-bought rhizomes can yield an indoor crop. These tips work for turmeric and galingale, too, although they both benefit from starting in larger pots.
Choose plump rhizomes, and leave them in a dry place until pale nodes, or “eyes,” appear (each node produces a stem). Cut the rhizomes into pieces, each with one or two nodes. Fill a 10-inch pot with quality potting soil; bury the rhizomes an inch below the surface. Water well. Place on a windowsill or in a bright room, avoiding direct sunlight.

However, stuff y old-fashioned rooms would not do. Interior designer Hannah Crowell came to the rescue, tasked with uniting the Georgian Revival architecture with the family’s need for kid-friendly surfaces, Ryan’s love for midcentury modern furniture, and the contemporary patterns and colors they craved. The result, Betsy says, is modern, fun, and energetic. A happy ending, indeed.

If you doubt your flower arranging skills, keep it simple. Floral designer Ariella Chezar arranges these bicolor burgundy carnations loosely in a tall vase, but leaves a few stems extra long for drama. or years, carnations have been treated like movie extras, nondescript fillers that make the scene and the stars look good. But floral designer Ariella Chezar thinks it’s time they got the lead. “Truth is, there’s no other flower that has the ruffle and texture of a carnation,” she says. “It draws you in.” Why does this ubiquitous, unassuming flower—cultivated since ancient times and available at a grocery store near you—get a bad rap? Flower snobbery, Ariella says, and typecasting. “Most people have seen carnations only in mixed arrangements, and you don’t always get to appreciate how cool the flower is.” To show off their ruffly texture and gorgeous colors (carnations come in about 250 varieties), Ariella stuffs a vase with several dozen, all in a tight palette. When she mixes carnations with other kinds of flowers (which she does spectacularly, right), she picks costars that complement rather than contrast with the humble flower that has her heart. “I’m deep in my carnation crush. I’m on a crusade to show everyone how fabulous they can be.”

Union Square, walk a few blocks up Broadway, and enter the soaring showroom of Studio Four. Part interior designer playground, part neighborhood fabric and wallpaper shop (with a weaving studio and creative lab thrown in for good measure), Studio Four was founded by Stacy Waggoner and Kate Reynolds, above, seven years ago. Back then, the wallpaper market was starting to explode, and independent designers around the world relied on social media to promote and sell their work directly to consumers. Stacy and Kate saw opportunity. They left their corporate gigs to create a global bazaar of fabrics, pillows, rugs, and wallpaper by far-flung artists and designers, with doors open to pros and DIY dabblers. “There’s nothing like discovering a boutique textile designer and bringing them into the mix,” Stacy says. Their picks come from everywhere—Australia, India, the United Kingdom, even NYC—but the connecting thread is a fondness for color, originality, and quirk. 1. Preheat oven to 425°F. In a small bowl whisk together soy sauce, 1 Tbsp. of sesame oil, sesame seeds, ginger, garlic, and 1 tsp. freshly cracked black pepper; set aside. Pat chicken dry; season with 1 ⁄4 tsp. salt. Fold legs up over breast. Tie legs together with 100% cotton kitchen string. Twist wing tips under back. 2. Heat a 12-inch cast-iron skillet over medium-high heat until very hot, 3 to 5 minutes. Add remaining sesame oil to skillet; heat 30 seconds. Place chicken breast side down in the skillet; sear 3 minutes or until golden and crusty. Turn chicken over and sear 3 minutes more. Remove skillet from heat. 3. Scatter potatoes around chicken. Pour the soy sauce mixture over chicken and potatoes. Roast 1 hour 15 minutes to 1 hour 30 minutes or until a thermometer inserted in the thighs registers 175°F, stirring potatoes and spooning the skillet drippings over chicken once or twice during cooking. If sauce evaporates during roasting, add broth. Remove skillet from oven. Cover chicken; let rest 5 minutes. Sprinkle potatoes with parsley before serving. Makes 6 servings. Gently dip fish in cornstarch to coat, then dip in eggs to moisten. Dip in panko mixture to coat. Transfer to a tray or baking sheet. 5. Carefully remove the skillet from the oven; add olive oil. Carefully arrange fish sticks in skillet. Bake 10 minutes or until browned on the bottom. Turn and bake 8 to 10 minutes more (until fish flakes when tested with a fork and sticks are golden). Remove to paper towels to drain; let stand 5 minutes. Drizzle with additional lemon juice; serve with aioli. Makes 4 servings. 1. In a 12-inch cast-iron skillet heat olive oil over medium heat for 1 to 2 minutes. Place prosciutto slices in the skillet; cook 3 minutes or until crisp on both sides. Transfer to paper towels to drain; cool and break into small pieces. 2. Add the radishes cut side down to the skillet. Cook, covered, over medium heat 8 minutes. Uncover; stir in shallots and cook 2 to 3 minutes more or until radishes and shallots are tender and browned. 3. Remove from heat. Toss in the arugula and, if using, radish tops. 1. Preheat oven to 450°F. Use a box grater to shred zucchini, broccoli stem, and carrot onto a cutting board. Using a chef’s knife, give the shredded vegetables and broccoli florets a quick chop. (You should have 2 cups total.) Transfer vegetables to a medium bowl. Toss in 1⁄4 cup flour; set aside. 2. In a large bowl stir together the remaining flour, the baking powder, baking soda, 1 tsp. salt, and 1⁄2 tsp. black pepper. With a pastry blender or your fingers, cut in the butter until the pieces resemble coarse crumbs. Fold in the vegetable mixture and the cheese. Gently stir in the yogurt until the mixture is moistened. In the bowl gently knead until it comes together as a dough. 3. Transfer the dough to a lightly floured surface. Pat the dough to a 1 1⁄4 -inch thickness. Using a 21⁄2 -inch diameter cookie cutter or glass, cut dough into rounds, flouring cutter between each cut. Repeat with scraps. 4. Arrange biscuits in a 12-inch cast-iron skillet. Bake 15 to 18 minutes or until golden. Brush with melted butter. Sprinkle with sea salt. Cool slightly before serving. Makes 9 biscuits. Add eggs, one at a time, beating after each until combined. Alternately add the flour mixture and milk, beating on low between each addition until just combined. Stir in the orange zest and the 2 tsp. vanilla; set aside. 2. Heat a 12-inch cast-iron skillet over medium heat for 1 to 2 minutes. Add the 1 ⁄2 cup butter. Stir the butter around until melted and the bottom of skillet is coated. Whisk in the brown sugar, 1 1⁄2 tsp. vanilla, and 1 ⁄8 tsp. salt. Bring to boiling; boil 1 to 2 minutes or until thickened and caramelized. Stir in the thyme leaves. Remove from heat. Lay the orange slices in one even layer in the bottom of the skillet. Spoon batter over oranges; spread evenly. 3. Bake 45 to 50 minutes or until top is golden and knife inserted near center comes out clean. Cool in skillet 5 minutes. Invert onto a serving plate; transfer any fruit stuck in skillet to cake. Cool 20 minutes. Garnish with thyme sprigs. Makes 8 servings. had been overweight most of her life, but she didn’t think it was a big deal. “For years, the doctor told me that I had a few ‘almost’ conditions: prediabetes and borderline high blood pressure. I got the same news every year, so I figured that at least it wasn’t getting worse,” she says. But when a friend died from a heart attack in early 2016, Carol panicked. “She seemed healthy and had kids around the same age as mine. When I was hugging her 17-year-old daughter at the memorial service, it hit me that this could’ve been me.” Her biggest challenge: staying active. “I’d go to the gym in spurts, but never enjoyed it.” And though she’s been wearing a step counter, she rarely got her heart rate up. “I’d go for strolls, but never broke a sweat,” she says. Knowing she’d be more likely to push herself if she had support, she joined the American Heart Association’s #GoRedGetFit Facebook page. felt chest pains one night as she was getting ready for bed last year, she knew something was off. “I went to the ER, and tests confi rmed that I wasn’t having a stroke or heart attack, but my blood pressure was sky-high.” Realizing that a stressful job environment was part of the issue, Chinasa set out to find another job. After a few months, she accepted a professorship in Atlanta (closer to her extended family) and started eating better and exercising more. Her blood pressure improved dramatically, but she knows she still has work to do. “I’m combating diseases that run in my family, like stroke and diabetes, and I’m always looking for ways to maintain a healthy weight and lifestyle.” Her biggest challenge: controlling cravings. “My downfall is sweets, especially when life gets hectic,” she admits. “I might be eating really well all day, but if I get stressed, I’ll grab something sweet.”

You don’t need a lot of time or training, says Leo Pozuelo, M.D. Pick a method—an app for a guided relaxation, deep breathing during yoga—and make time daily to practice. PREP FOR SLEEP
Keep the bedroom cool (68 is ideal), quit caffeine by 2 p.m., and go to bed and wake up at the same time. If you wake up and can’t fall asleep after 20 minutes, get out of bed until you’re sleepy. “Your bed should be associated with sleep, not lying awake,” says Fiona Barwick, Ph.D.

Pause between bites, and stop halfway through a meal to ask if you’re still hungry. Afterward, think about how you feel: energized and satisfied, or bloated and tired? Homing in on these physical feelings will help you adjust your eating without feeling deprived, explains Rachele Dependahl, R.D.N.

is a registered dietician, so she knows about eating healthy. But a recent divorce took a toll on her good habits, leading to a weight gain of nearly 20 pounds. “It was a really difficult time, and I became very stressed out so I took antianxiety medication for a bit,” Toby says. “I also started having trouble sleeping, which led to fatigue that may have changed my eating.” When a checkup revealed that her LDL cholesterol had crept up, a red light went off: “My father and brother also have high cholesterol, and my grandfather died of a heart attack when he was 60.” Her biggest challenge: getting a handle on stress and sleeping better. Recent research shows that stress and poor sleep can increase your risk of a heart attack. Although some stress is unavoidable, learning to control it means it won’t chip away at your emotional and physical health or deprive your body of the rest it needs. “I have a busy job and three kids. I can’t help but worry,” Toby says. “I’m often awake at 3 a.m. and can’t get back to sleep for about an hour and a half.”

was slim, working out three or four times a week, and eating what she thought was a not-so-bad diet. “The gestational diabetes diagnosis was alarming, and the doctor explained that it could not only impact my baby’s health, but also my heart disease and diabetes risk later in life,” Mikell says. “My grandmother and great-grandmother both died of heart attacks, and my mother has survived two.” Mikell quickly got her blood sugar under control. Now a working mom to a healthy 2-year-old son, she wants to make sure she stays on the right path. Her biggest challenge: figuring out how to eat healthy on a busy schedule. “My husband and I often pick up food on the way home from work,” Mikell says. “And now I realize it was probably too often and not all that healthy.” She also admits that she doesn’t want to spend time cooking that she could be spending with her son. “Now that I’m working full-time again, I only get to see him about two-and-a half-hours a day.”

Know how hard you’re exercising: For a rough estimate of your max heart rate, subtract your age from 220. Mother of Invention SPREADING THE LOVE In honor of orphans like her sons, Greg and Matthew, Danielle launched a nonprofi t companion. Project Left Behind (PLB) provides food, education, clothing, and more to orphans worldwide. One percent of NuttZo’s net proceeds fund PLB. “We’ve donated more than $100,000 to nine international orphanages.”

Malnourished from life in an orphanage eating nothing but porridge, Greg wore size 18-month clothing and barely reached the 5th percentile for height and weight. “He was always smiling and would play Legos for hours, but he’d only eat mushy foods—bananas, maybe pasta.” So Danielle busted out her food processor. “I knew nut butters were the most nutrient- and protein-dense food, but Greg needed a food with high amounts of alpha-linolenic acid (crucial to development) and a complete protein, meaning it has all nine essential amino acids.” She added fl axseed oil to a base of organic peanuts, cashews, and Brazil nuts and dabbed a schmear on a banana slice. Greg ate it. Then he ate some more. Within a few months, his cheeks had plumped and his hair had fi lled in. A year later, he’d hit the 15th percentile. When she and Kevin
adopted a second son, Matthew, in 2005, he, too, thrived on her superfood concoction. One night while doing dishes, Kevin complained about how hard it was to get the nut butter out of the food processor. ”’Why don’t you just buy this stuff ?’ he asked. I said, ‘You can’t.’ That was our aha moment.” Over the next year, Danielle perfected the recipe, and in 2008 she quit her job as a radio sales executive to focus on getting NuttZo into stores. After her local Jimbo’s … Naturally! started selling it, Danielle aimed big: Whole Foods Market. She road-tripped 110 miles to deliver the product to the Southern Pacifi c region buyer. His rejection led her to make NuttZo truly ready to market, complete with a tamper-resistant seal. A fellow entrepreneur clued her into pitching a local Whole Foods because managers can purchase products made within a 100-mile radius. “I went to my La Jolla store and gave my 60-second elevator pitch. The buyer bought in on the spot.” The key to her success: Authenticity and practicality. “I was solving a common problem parents have, and I had a compelling story about how it worked. My passion came through.”
