1 1/2 cup 1/4 cup 1 tbsp 1 tsp 1 tsp 1 3 1

796 ml can diced tomatoes maple syrup cider vinegar smoked paprika ground chipotle pepper salt large red onion, diced cloves garlic, finely chopped boneless pork shoulder roast (about 1.5 kg), fat trimmed 3 tbsp all-purpose flour 12 brioche burger buns Cabbage Slaw with Lime & Cilantro (recipe follows) 12 mini gherkins (optional)

In blender, purée tomatoes with liquid, maple syrup, vinegar, paprika, chipotle pepper and salt until consistency of smooth paste. Place onion, garlic and pork in slow cooker; add tomato mixture and turn pork to coat well. Cover and cook on Low until pork is very tender, 8 to 10 hours. This region of the body contains very few lipids and lacks hydration, which can cause wrinkles and blemishes to appear faster and be more pronounced than on the face. One reason for this may be our increased use of technology. According to one study, we spend an average of 3.2 hours a day looking at our smartphone screens. This results in what is called “tech neck,” which can accentuate skin folds under the chin. “The skin of the neck is more elastic than that of the face, and it’s also subjected to a greater range of motion. In addition, the cells there renew at a slower 22 | CANADIAN LIVING JUNE 2021

So what’s the best way to care for your neck and décolletage? Presumably, you can simply use the same cream you use on your face; however, some formulations are not suitable and may lead to irritation or the appearance of small pimples. “This region is very sensitive,” explains Smith, “so it’s preferable to use specially formulated products morning and night, and to cleanse the skin and apply sunscreen daily as you do for your face.” When warmer weather

arrives in the spring, it’s important to protect your neck and décolletage from UV rays that can accelerate the look of aging. “Try to avoid putting perfume on this area, too,” cautions Karine Joncas. “In conjunction with sun exposure, it can cause brown spots.” She advises taking care to nourish the delicate skin of the upper chest, especially when it comes to exfoliation. “Opt for a gentler exfoliator, such as enzymes,” says Joncas. “If you’re concerned, a good question to ask yourself is whether you’d use the product on sensitive skin.”

Too often overlooked in our skin-care routine, the neck and décolleté also need a little TLC.

At the end of your shower, try taking a blast of cold water on your neck and décolletage to firm up the skin and close the pores, which allows the skin to naturally retain some hydration. Hate the idea of getting under a stream of freezing water? Not to worry—another method is to apply your products in a sweeping motion from the bottom up to counter the effects of gravity. A technique developed by Dr. Liza Egbogah in Toronto can also help to strengthen neck muscles and reduce sagging skin, explains Chloe Smith: “While applying your skin-care products, tilt your head backward and press your tongue to the roof of your mouth for five to 10 seconds before releasing and starting over.” To each their own technique!

1 Develop a relationship with your finances. Money can feel scary and overwhelming, especially if you haven’t been taught how to manage it—which, let’s face it, is extremely common. Seaweed is a type of marine algae that comes in three forms: brown, red and green. The most widely consumed seaweeds are brown algae, which include varieties of kelp. Often incorporated into processed foods as an additive, seaweed is a high-quality ingredient, loaded with fibre, vitamins, minerals and bioactive compounds. Plus, it’s a sustainable crop that takes up no land and produces no greenhouse gases. So, give yourself—and the Earth— a “kelping” hand by adding more seaweed to your diet.

There are many important polyunsaturated fatty acids and antioxidants in seaweed that may help defend against cognitive disorders like dementia, Alzheimer’s disease and depression. Polyphenols, such as phlorotannins— exclusively produced by brown seaweed—show potential as a starting point for developing natural, marinederived alternatives to conventional medications. Phlorotannins contain disease-modifying agents that modulate central nervous system enzymes and may help regulate neurological signalling pathways. Some researchers even speculate whether seaweeds (along with other shore-based marine resources) provided our ancestors with the essential nutrients for human brain evolution and development.

The natural umami flavour of seaweed can promote satiety, regulate food intake and reduce cravings for sugar, salt and fat. But that’s not all! As an additive in processed foods—which is more common than you might think— seaweed can be used as a salt substitute, and can increase fibre and antioxidant content. Unlike table salt (sodium chloride), the potassium and magnesium salts in seaweed don’t contribute to high blood pressure and heart disease. Eating seaweed as part of a weight management strategy may reduce the risk of developing cardiovascular diseases. Alginate, a natural fibre found in kelp, can have physiological benefits when incorporated into food, including improved glycemic control and reduced fat absorption. • BANG-UP BIOACTIVITY

Seaweed has anti-inflammatory and antioxidant properties that may be of use in preventive health applications. Fucoidan, with its anti-carcinogenic effects, is the best-known polysaccharide in brown seaweeds. Traditional Japanese diets include much more seaweed than the typical Western diet, which could be why there is a lower incidence of certain types of cancers in Japan. Researchers are exploring whether dietary seaweed can help protect against hormone-related cancers, like breast cancer, as well as melanoma. Compounds derived from seaweed also show promise for the development of sunblock that protects the skin without harming sensitive marine environments. You’ve probably heard it before, and we’re here to tell you again: You really do need to wear sunblock— HYHU\ VLQJOH GD\ %XW LW FDQ EH FRQIXVLQJ WR ¿JXUH RXW whether chemical or mineral formulas are best, how to apply sunblock when you’re wearing makeup and what to do now that your face is half covered with a mask most of the time. We get it. So we asked two top dermatologists for their advice on being sun safe this summer.

How much sunblock do I need to apply? “Match the use of sunblock to your planned activities for the day,” says Dr. Monica Li, a Vancouver-based dermatologist and clinical instructor in the Department of Dermatology and Skin Science at the University of British Columbia. If you’re working mostly at your computer, and not directly in a window, but may go for a walk or run an errand, a layer of sunblock on your face and neck in the morning will do the trick, she says. For a day at the beach, Health Canada says you’ll need roughly 35 ml (or 7 teaspoons) of sunblock to cover up. That’s about 1 teaspoon, or nickel-sized amount, for each arm, each leg, the front of your torso, back of your torso and another teaspoon for your face and neck. “If you’re using a spray formulation, sunblock should be applied until an even sheen is seen on the skin,” says Dr. Li. You’ll also need to re-apply every two hours and after sweating, VZLPPLQJ DQG WRZHOLQJ R̆ “And don’t forget that sunblock is just one component of a sun protection strategy,” says Dr. Li. Think wide-brimmed hat, full-coverage sunglasses, covering up, seeking shade and extra diligence during peak hours, between 11 a.m. and 3 p.m.

What’s the right level of sunblock to use? The Canadian Dermatology Association recommends that everyone, regardless of skin tone, wear a minimum of SPF 30 daily, no matter

what’s on your agenda. Whether you’re sitting in a window with your laptop for a Zoom meeting, walking your dog or lounging on the cottage dock, your skin is vulnerable to UV damage, which can exacerbate dark spots, acne scars and hyperpigmentation, and increase your risk of skin cancer.

When I cover up, do I really need UPF-rated clothing, or will a regular T-shirt do the job? Sun-shielding shirts and bottoms are particularly important for kids, or people taking medications that increase photosensitivity. They’re also a good idea for a prolonged period spent outside, like an afternoon hike, for example. Ultraviolet protection factor (or UPF) ratings coincide closely with SPF values for sunblock, so opt for garments with UPF 30 and higher for maximum protection. That said, a regular T-shirt will also provide some protection, but how much depends on the cut, weave and even the colour of the fabric. ³)DEULFV UHDOO\ GL̆HU LQ WKHLU DELOLW\ WR SUR tect skin from solar radiation,” says Dr. Émilie Bourgeault, a Quebec City-based dermatologist and cofounder of DermaGo, a virtual dermatology clinic. For example, polyester is better than cotton, which is better than linen, she says. Brush both sides of romaine hearts and onion slices with oil. Season with salt and pepper. COCONUT & STRAWBERRY PANNA COTTA MAKES 4 SERVINGS HANDS-ON TIME 30 MINUTES TOTAL TIME 5 HOURS

hulled fresh strawberries lemon juice, divided granulated sugar, divided cornstarch unflavoured gelatin 400 ml can coconut milk vanilla beans, halved lengthwise, seeds scraped, or 1 tsp vanilla Sweetened Strawberries (recipe, this page) 1 tbsp grated lemon zest (optional) In blender, purée strawberries, 1 tbsp lemon juice and 1 tbsp sugar. In small saucepan, whisk together 2 tbsp water and cornstarch; add strawberry purée and mix well. Bring to boil, reduce heat to medium-high and cook, whisking, until mixture has thickened and is shiny, about 5 minutes. Remove from heat. 98 | CANADIAN LIVING JUNE 2021

Pour mixture into four 3/4-cup jars or cups. Refrigerate for 30 minutes. Meanwhile, in small bowl, sprinkle gelatin over remaining lemon juice; set aside for 5 minutes. In heavy-bottomed saucepan, combine coconut milk and remaining sugar; cook over low heat, stirring, until sugar is dissolved, about 3 minutes. Remove from heat, add gelatin mixture and vanilla beans, stirring until gelatin is dissolved; discard vanilla pods. Pour mixture over strawberry

purée in jars. Refrigerate for 4 hours or up to overnight. Top each portion with Sweetened Strawberries, and sprinkle with lemon zest, if desired. Sweetened Strawberries In bowl, combine 1 cup chopped strawberries, 1 tbsp icing sugar and 1 tsp each lemon zest and juice. Makes about 1 cup. PER SERVING about 110 cal, 2 g pro, 2 g total fat (2 g sat. fat), 21 g carb, (2 g dietary fibre, 17 g sugar), 0 mg chol, 20 mg sodium, 0.6 mg iron.
