There’s a quote by one Gregory F. Lenz that states: “Welcome sweet November, the season of senses and my favorite month of all.â€? Now, that got us thinking about November, and has inspired us to take a new look at a time that traditionally conjures up images of grey days, cold winds, bare earth and denuded trees. So often, this month seems betwixt and between: Halloween and Thanksgiving have passed for another year, and it’s still (for some) a bit too soon to embrace December’s imminent holiday extravaganzas. 8 READ MORE CANADIAN FICTION The winner of the Scotiabank Giller Prize ($100,000 in recognition of excellence in Canadian fiction) will be announced November 9. Canadian recipe developer, culinary teacher, writer and cookbook author Claire Tansey’s happy place is her kitchen. In her newly released cookbook, Dinner, Uncomplicated: Fixing a Delicious Meal Every Night of the Week, Claire’s tips, tricks and tons of delicious recipes alleviate the oh-so-common dinnertime scramble so that your kitchen can be your happy place, too. Here, we’ve excerpted a helpful page from her book! Do you know what type of meal planner you are? That’s right, there’s more than one way to plan your meals (including not really planning them at all). This was a lightbulb moment for me. The best way to map your meals for the week depends on your personality, your day-to-day schedule and responsibilities, your family structure and so much more. My best way isn’t yours, and vice versa, and the secret to making meal planning work is to do it however is best for you.

1 The Classic: Wakes up Sunday morning, consults Paprika, Pinterest or cookbooks, writes up the week of meals and an airtight shopping list. Shops, then sticks to the plan. Great for: Organized people with predictable schedules. Not great for: Anyone who has a problem with authority (hi!).

2 The Camper: Assigns a theme or protein to every night of the week, just like at summer camp! Taco Tuesdays, Chicken Wednesdays, Vegan Thursdays, and so on. The recipes can change from week to week but the themes or proteins repeat. Great for: People who like a bit of structure but don’t want to plan every meal in detail. Not great for: Anyone who really dislikes repetition.

3 The Batcher: Spends a day making a few key dishes in large quantities, then freezes them in meal-sized portions. Pulls a frozen pouch out of the freezer every morning. Great for: People who love to spend one entire day a

week in the kitchen. People with chest freezers. People with long commutes or who have very little prep time for dinner. People who often eat out of sync with the rest of the household. Not great for: People with tiny freezers. People who easily tire of the same meal.

IRISH STOUT ONION SOUP MAKES 4 SERVINGS HANDS-ON TIME 20 MINUTES TOTAL TIME 1¼ HOURS

2 tbsp salted butter 4 onions, halved and thinly sliced 1 tbsp maple syrup 1 tbsp balsamic vinegar salt and pepper 1 clove garlic, finely chopped 1 tsp chopped fresh thyme 1 tbsp all-purpose flour 3 cups sodium-reduced beef broth 1 cup Irish stout or dark beer 2 tsp Dijon mustard 8 slices baguette bread (¾-inch thick slices), toasted 1½ cups grated aged Cheddar cheese In large saucepan, melt butter over medium heat; cook onions, stirring often, until softened, about 10 minutes. Add

maple syrup and vinegar; cook, stirring occasionally, until onions are tender and golden, about 10 minutes. Season with salt and pepper. Add garlic and thyme; cook, stirring, for 30 minutes. 6SULQNOH ÀRXU RYHU RQLRQV PL[ WR coat well. Add broth, beer and mustard, scraping up browned bits from bottom of pan. Bring to boil; reduce heat and simmer for 10 minutes. (Make-ahead: Can be refrigerated for up to 3 days or stored in airtight container and frozen for up to 3 months.) Preheat broiler. Divide onion soup among ovenproof bowls. Arrange 2 slices of bread in each bowl; top with cheese. Sprinkle with pepper. Bake until cheese is melted and golden, about 2 minutes. PER SERVING about 345 cal, 16 g pro, 20 g total fat (12 g sat. fat), 25 g carb (3 g dietary fibre, 11 g sugar), 60 mg chol, 675 mg sodium, 1 mg iron.

ingrowns 101 We’ve all had them, and no one likes them. Ingrown hairs can be uncomfortable—even downright painful—and make you want to cover up what you’d hoped would be a smooth, hair-free area. We got the lowdown on how to deal with and avoid getting those unsightly, bumpy nuisances on your skin. TEXT MARIÈVE INOUE

Q What is an ingrown hair? Hair becomes ingrown when it fails to pass through the surface of the skin. It continues to grow beneath the skin and usually appears as a small bump surrounded by inflammation. Ingrown hairs form naturally, but there are several factors that can increase the chance of developing them. For example, curly, or even just frizzy hair will be more likely to curl inside the follicle. Or if your cell turnover is naturally slower or your skin is dehydrated, the buildup of dead cells can make it harder for the hairs to pass through the skin. Shaving also increases the likelihood of developing ingrowns because cutting off the tip of the hair makes it harder for it to come out through the opening in the follicle. In fact, ingrown hairs are often found in areas where shaving is common, such as the face, bikini area and legs. Waxing can cause 22 | CANADIAN LIVING NOVEMBER 2020

a similar effect, but that’s because the procedure often removes a layer of skin, and while that layer rebuilds itself, the hair follicle is creating a new root, which then must pass through the new layers of skin.

“Using retinol on the body is often overlooked; but retinol is not only the most recognized anti-aging ingredient, it’s also one of the best for preventing and treating ingrown hairs. It boosts natural cell renewal and can help dislodge dead cells and ingrown hairs, says Jennifer Chiang, who is a Canada-based Regional Manager of Science Training and Communications at skin-care brand SkinCeuticals. “Plus, its anti-inflammatory properties can help reduce pigmentation on the affected area.” Combined with gentle exfoliation and daily hydration, its use can greatly reduce the frequency and severity of ingrown hairs.

Q How do I treat it? If you notice an ingrown hair, your best bet is to gently exfoliate the area and apply a non-irritating moisturizer to help it loosen. Ideally, wait until you see the tip of the hair on the outside of the skin before removing the hair with tweezers, even if it takes several days. If the hair doesn’t come through, it’s best not to try dislodging it manually, as infection can occur. Instead, continue to moisturize and soothe with ingredients such as hyaluronic acid, aloe vera and colloidal oatmeal to restore the skin’s hydration barrier and reduce inflammation around the hair.

To maintain its protective barrier function, the skin needs a combination of both water and oil. Although your skin makes sebum—a naturally produced oil, which gives additional protection—it loses lipids with age or as it resists external aggressors like wind, sun and pollution. Younger skin has greater resiliency but as we age, the skin becomes less elastic and loses precious moisture. Emollient properties of oil to the rescue! DRY SKIN For dry skin, the richest and most occlusive oils are best. They help to keep skin hydrated by acting as a sealant and reducing water loss. Avocado, sesame, macadamia, walnut and coconut oils are filled with oleic acids and omega fatty acids, as well as good fats that help revitalize the skin. NORMAL SKIN Even balanced skin can benefit from using oil—this skin type can profit from any oil, without the risk of clogged pores or irritation. ACNE-PRONE SKIN

The secret for combo skin is to find an oil low in saturated fat to avoid highlighting the T-zone, but rich enough in omega fatty acids to soften the dry areas. For oilier skin, look for a light texture that penetrates the dermis quickly, and ingredients with antibacterial properties to prevent breakouts. Some good options include sea buckthorn, chia seed, sunflower and marula oils.

Dry or dehydrated skin will sometimes try to protect itself by overproducing sebum, leading to blockages and inflammation. If you’re dealing with breakouts, try an oil with antibacterial and anti-inflammatory properties to slow down sebum production while also promoting healing and reducing blemishes. Pumpkin seed, orange, myrrh and squalane oils are filled with antioxidants and vitamins that help prevent and repair skin lesions.

If you have a reactive skin type it’s best to opt for the purest oil possible, since every ingredient added carries the risk of a reaction. Try to avoid essential oils and artificial fragrances, which are known irritants. Your best bets are argan, sweet almond and borage oils that contain the fatty acids necessary to strengthen the skin’s moisture barrier, as well as antioxidants that can help reduce any inflammation.

Oil... on oil? It might seem counterintuitive, but applying an oil to oily skin can actually help balance natural oil production. Jojoba oil molecules are structurally similar to that of sebum, making the skin believe that it has enough, which then limits natural oil production. Other oils, such as grapeseed, have a natural astringent effect that mattifies the skin. Opt for light-textured oils like hemp or safflower that absorb quickly.

GIVE IT TIME It doesn’t take just one spritz to reveal all the subtleties in a perfume. According to Ruby Brown— Canadian fragrance designer and founder of rubybrown.com—finding the right perfume should be done in two stages. First, you need to identify your favourite olfactory family. “There are seven,” she explains. “Floral, by far the most popular, amber, citrus, woody, chypre, leather and fern.” Then you’ll be ready to smell some targeted blends.

APPLY IN THE RIGHT SPOTS It’s no myth: pulse points are the places to go when it comes to applying fragrance. (Pulse points are wrists, behind the ears and inner elbows.) Why? “By releasing more heat, these areas allow a better diffusion of the perfume,” says Brown. Just be sure to avoid applying perfume on sensitive areas of the skin or spots that are exposed to the sun.

KNOW THE OLFACTORY PYRAMID To find out how a perfume is composed, we look at the olfactory pyramid, or the three layers of notes that go into its development. “The top notes come immediately to the nose,” says Brown. “Then the heart notes, which appear after about 30 minutes, then the base notes or, in other words, the trail.” The lesson to be learned? You must let the scent develop on the skin for at least half an hour before knowing if you’ll like it for the long haul.

If you feel that your fragrance doesn’t last very long, chances are it’s because you have dry skin. Apply an unscented moisturizer to the area before spritzing or dabbing on your perfume. In winter, Brown recommends “perfuming your hair, or even clothes made from natural fibres, which are good at capturing scents.”

YOUR PREFERENCE MIGHT CHANGE While many things influence the way a fragrance develops on the skin, hormones are often to blame. “Pregnancy, menopause, your period and even certain medications can have an effect on the perfume we wear,” says Brown, who reports that many women have told her that the perfume they wore their whole life no longer suited them after they’d had a child.

TIMING IS EVERYTHING The nose is always better prepared in the morning. First spray the fragrance on a paper card, then, if the notes appeal to you, give it a try on your body. However, Brown recommends, test a maximum of three scents at a time.

DISCOVER THE RIGHT FORMULA There are different formulations and applications for fragrances, such as eau de cologne, eau de toilette and eau de parfum. Among those three, there are no bad choices. “The same formula but with different concentrations of raw materials is often used to create each type,” says Brown. Thus, the eau de toilette is lighter than the eau de parfum. As for solid formulas, “you won’t find the same complexity, but they’re a great alternative for dry skin.”

Brown says that “an already complex quality scent is not meant to be mixed.” She suggests to those who wish to experiment with layering fragrances to stick to simple marriages in the same olfactory family.

STORAGE IS KEY Like a good wine, perfume bottles should be stored in a dark and dry place. In short, far from the bathroom! “A perfume has no expiration date and will keep for years in a drawer or closet,” says Brown.

Sustainability is a holistic term that covers the management of the ecological, economic and social resources required to meet our needs without compromising the needs of future generations. But when it comes to environmental sustainability, what does all the jargon PHDQ" Âł(FR IULHQGO\ ´ IRU LQVWDQFH LV GHÂżQHG DV QRW environmentally harmful, but it’s a bit of a misnomer. So few products and services in the modern world have no environmental impact—almost everything we GR RU FRQVXPH KDV VRPH QHJDWLYH H̆HFW Âł*UHHQ´ UHIHUV WR DQ H̆RUW RU HQG UHVXOW WKDW SUHVHUYHV HQYLURQPHQWDO quality, as in recycling, biodegradable products or non-polluting actions. It’s always important to read labels carefully and look out for trustworthy symbols,

Without naturally occurring heat-trapping gases like water vapour, carbon dioxide (CO2) and methane, the Earth would be too cold to sustain life. But three of the gases that cause the most concern are CO2, methane and nitrous oxide because of their association with human activity. The problem with these gases is that they are being released at a higher rate than can be removed or absorbed by natural processes. Reducing your emissions is as easy as eating more meat-free meals, choosing local products, decreasing transport, using energy wisely and consuming less—it might just save you some money, too!

The Plastic Problem Plastic is produced from oil or natural gas and requires immense energy inputs, resulting in high GHG emissions. Plus, plastic can take centuries to break down, and never truly disappears; instead, it disintegrates into smaller and smaller microplastics. We’re all familiar with the phrase “reduce, reuse, recycle.â€? But did you know there’s a reason they’re OLVWHG LQ WKDW RUGHU" 7KH SRLQW LV WKDW ZH VKRXOG ÂżUVW try to reduce consumption, then reuse where possible, and only when things can no longer be used should WKH\ EH UHF\FOHG RU VHQW WR ODQGÂżOO In Canada, only nine percent of plastics are recycled, ZLWK WKH UHPDLQGHU GXPSHG LQ ODQGÂżOOV RU LQFLQHUDWRUV or, worse still, tossed away as litter. And more than a whopping 40 percent of plastics are used only once! Unfortunately, recycling isn’t always as simple as looking for a symbol on your products. Curbside recycling collection varies from place to place, so make sure to check with your municipality to see what items can and can’t be recycled. For instance, black plastic food containers are not recyclable because there’s no stable market for black plastic, meaning it’s costly to sort DQG ÂżQDQFLDOO\ LQḢFLHQW ZKHQ WKHUHÂśV OLWWOH UHZDUG One of the most compelling reasons to practice the WKUHH 5V WKRXJK LV WKH *UHDW 3DFLÂżF *DUEDJH 3DWFK² D FROOHFWLRQ RI PDULQH GHEULV LQ WKH 1RUWK 3DFLÂżF 2FHDQ (consisting mostly of plastic from land-based activities).

In Deep Water Only three percent of the world’s water is fresh (drinkable), and humans are using it faster than nature can UHSOHQLVK LW :DWHU VFDUFLW\ D̆HFWV PRUH WKDQ SHUcent of people worldwide. Canada is often considered a freshwater-rich country: In an average year, Canadian rivers discharge close to nine percent of the world’s renewable water supply, while we have less than one percent of the global population. Managing water resources is challenging both nationally and within individual provinces and territories since about 60 percent of fresh water drains north (away from the most populous areas), and EHFDXVH QDWXUDO ÀXFWXDWLRQV LQ UDLQ DQG VQRZIDOO FDQ FDXVH VKRUWDJHV VRPH \HDUV DQG ÀRRGLQJ LQ RWKHUV In Canada, there are more than 100 areas, predominantly in First Nations communities, that don’t have clean drinking water. Many of these locales have faced this issue for years or decades. Even within the Great Lakes basin, the world’s largest freshwater lake sysWHP VRPH R̆ ODNH DUHDV H[SHULHQFH SHULRGLF DQG chronic water shortages. Overall, residential water use has been declining, which is good, but the average Canadian still uses a staggering 329 litres of water a day—about 35 percent of that is showering and bathing. Reducing water consumption can help prevent local shortages, and can also lead to savings on your water and heating bills.

Waste Not, Want Not Worldwide, 1.3 billion tonnes of food are wasted every year, while almost 2 billion people go hungry or are undernourished. Besides squandering money, time, energy, and resources like water, unused food WKDW HQGV XS LQ ODQG¿OOV LV RQH RI WKH PDLQ VRXUFHV of greenhouse gases. About 20 percent of Canada’s PHWKDQH HPLVVLRQV FRPH IURP ODQG¿OOV $FFRUGLQJ WR one report by Second Harvest, an agency that works to reduce food waste, more than 50 percent of all food produced in Canada is lost or wasted. The cost of avoidable food losses (food that ends up in the compost or garbage, often because we buy too much, cook too much or don’t store it properly) exceeds $49 billion nationally and more than $1,000 per household each year. Unavoidable food losses include waste that can’t be sold or eaten, such as bones, vegetable peels, HJJVKHOOV WHD EDJV DQG FR̆HH JURXQGV There are four Rs you can follow to limit food waste in your home. Reduce the amount of food you purchase by planning meals and only buying what you can eat before it spoils. Reuse food by freezing leftovers or using scraps LQ GL̆HUHQW ZD\V IRU H[DPSOH XVLQJ vegetable scraps to make soup stock. Recover food by donating to food programs that help people in your community. And lastly, recycle food with a backyard composter or participate in organic waste collection programs.

Measuring your Ecological footprint One way to gauge your impact on the earth is to calculate your ecological footprint. The concept, developed by Mathis Wackernagel and William Rees at the University of British Columbia more than 25 years ago, is used to help individuals, local leaders and countries consistently and effectively measure their resource use and impact. Your footprint is measured in global hectares (gHa) and calculates how much land is needed to sustain your lifestyle by looking at how you consume resources and gener-

ate waste (in areas like food, buildings, consumables, waste, transportation and water). The ecological footprint spurred the development of the broader footprint movement, like the carbon footprint, which measures the total GHG emissions that are associated with consumption, including a service or product’s manufacture, use and end-of-life processes. This measure can also be used by individuals, events, organizations and the like to measure their impact on the earth in tonnes of CO2 emitted.

ONION While still not well-known as a superfood, onions are among the oldest and most widely cultivated plants in the world. Onions are just one species within the genus Allium, which includes garlic, leeks, chives and shallots. Up to 4,000 years ago, ancient medical texts from Egypt, Greece, Rome, China and India cited the therapeutic applications of Allium vegetables. • QUALITY QUERCETIN: Onions contain some of the highest concentrations of quercetin, a type of flavonoid with antioxidant properties. Studies suggest that this bioactive substance may be beneficial against a variety of diseases, including cardiovascular disease, diabetes, cancer and asthma. A study by the University of Guelph found that red onions grown in Ontario boast some of the highest levels of quercetin compared with onions grown in other parts of the world. Onion skins contain the highest amount of this potent antioxidant, so peeling may significantly reduce its quantity. Try throwing quartered onions with the skin on into your stock, or bake them in their skins to savour all that goodness.

• SUPER SULPHUR: Organosulphur compounds are largely responsible for the strong taste and smell of Allium vegetables. When cut, onions produce a sulphur-based gas that reacts with the water in your eyes to form sulphuric acid, causing tears. Sulphur is essential for all life—it’s one of the most common minerals in the human body, as well as the fifth most common element on Earth. Organosulphur compounds are associated with strong anticarcinogenic properties because of their role in activating several enzymes that detoxify potentially cancer-causing substances. Unlike quercetin, the sulphur compounds of onions are richest in the fleshy layers, and many of their health benefits are available only once the onion tissues are chopped.

• SKIN DEEP: Onions can also be applied topically. Studies show that onion extract applied to the skin may improve the appearance of scars and stretch marks. Onion juice is reported to be an effective topical therapy for alopecia areata (hair loss). Sure, we’ve all experienced skin that gets a bit itchy, red and uncomfortable from overwashing hands, but DWRSLF GHUPDWLWLV D N D HF]HPD LV YHU\ GL̆HUHQW “Eczema is considered to be a medical and genetic issue that is inheritable—and we know that there’s a problem with the skin’s ability to act as a barrier,â€? says Dr. Sandy Skotnicki, a Toronto-based dermatologist at Bay Dermatology Clinic and author of Beyond Soap $Q HF]HPD Ă€DUH XS FDXVHV SDLQIXO cracked and blistered skin. Physically, it feels like 1,000 itchy, throbbing paper cuts. But it’s not just painful; eczema pervades my life. Although eczema is common, it’s rarely talked DERXW LQ WHUPV RI ERG\ LPDJH DQG KRZ LW D̆HFWV mental health. According to a 2017 report from the Eczema Society of Canada, nearly three-quarters RI DOO HF]HPD VX̆HUHUV VXUYH\HG ORVW VOHHS HDFK month due to the skin condition—which of course impacts focusing in class or at work and performLQJ HYHU\GD\ WDVNV DQG FDQ VLJQLÂżFDQWO\ GHJUDGH RQHÂśV TXDOLW\ RI OLIH ,W DOVR VKDNHV \RXU FRQÂżGHQFH As a child, the social stigma and the deep shame left marks on me. I couldn’t maintain eye FRQWDFW ZLWK DQ\RQH ZKHQ , KDG D EDG Ă€DUH XS IRU IHDU RI WKHP VWDULQJ DW P\ LUULWDWHG LQĂ€DPHG and sometimes bleeding skin. Kids can be cruel,

but I was recently reminded that adults can be just as cutting. A few months back, in those carefree pre-COVID WLPHV D IHOORZ ÂżWQHVV FOXE PHPEHU FRPPHQWHG ORXGO\ RQ D SDUWLFXODUO\ SDLQIXO Ă€DUH XS WKDW , had all over my arms, upper back and legs. First, she shrieked “What is that?â€? then followed up by DVNLQJ LI P\ ÂłUDVK´ ZDV FRQWDJLRXV , ZDV PRUWLÂżHG I wish I’d served her a snappy yet educational retort like: “Eczema is not a rash nor is it contagious; it’s an incurable genetic skin condition.â€? Instead, I just sighed and said, “No. It’s eczema,â€? and brooded away. It’s frustrating because even at 34 years old, the shame of living with this skin FRQGLWLRQ VWLOO D̆HFWV P\ HPRWLRQDO DQG PHQWDO states—and I know I’m not alone. People with eczema are more likely to experience mental health issues like depression and anxiety. In 2019, The Journal of Allergy and Clinical Immunology published a study conducted in the United Kingdom that followed 500,000 adults with atopic eczema and more than 2.5 million without atopic eczema over 18 years to track if they were diagnosed with depression or anxiety. The results of the study found that people with eczema were more likely than those without it to develop depression (a 14 percent greater risk) and anxiety (a 12 percent greater risk), while the risk of depression increased to 26 percent greater with the severity of eczema.

unsalted butter, divided brown sugar large Golden Delicious apples, peeled and diced 1 2-inch piece fresh ginger, peeled and finely chopped ½ tsp ground cardamom 4 eggs, separated ½ cup granulated sugar 2 cups 2% milk ¾ cup all-purpose flour In nonstick skillet, melt 2 tbsp of the butter; stir in brown sugar, apples and ginger. Cook, stirring often, until apples are golden brown, about 10 minutes. Sprinkle with cardamom; set aside. In small saucepan, heat remaining butter over low heat until melted; set aside. In large bowl, using electric mixer on medium speed, beat egg yolks, granulated sugar and 1 tbsp water. Beat in melted butter, PLON DQG ÀRXU VHW DVLGH Preheat oven to 300°F. Line 8-inch square cake pan with parchment paper; set aside. Using clean mixing bowl and beaters, beat egg whites on medium speed until soft peaks form; fold gently into egg yolk mixture (do not overmix, batter will be lumpy). Place apples in bottom of prepared pan; spoon batter over top. Bake for 55 minutes. Let cool on rack to room temperature. Refrigerate for three hours before serving.
