The bohemian meets industrial decor provides an inviting communal dining atmosphere.
The best way to sample the region’s viticulture is by stopping by the Williamsburg Winery. If spirits are your preferred indulgence, Copper Fox Distillery has tours every halfhour offering single-malt whiskey, barrel-aged rye and 90-proof gin. Craft beer connoisseurs can get their fill at our favourite spot, the centrally located Virginia Beer Company. Arrive early on a Sunday afternoon and snag the perfect seat to enjoy the live band and nosh on some incredible local food truck fare.
Historic triangle
Bounded by the York River to the north and James River to the south, Williamsburg, Jamestown and Yorktown make up Virginia’s Historic Triangle. Each township has a storied heritage: The last (and epic) battle of the American Revolution took place in Yorktown, prominent figures such as George Washington and Thomas Jefferson lived in Williamsburg and, of course, it all started with the first permanent English colony in Jamestown.

bunch asparagus, trimmed and cut in 2-inch pieces 1½ cups sugar snap peas ⅔ cup fresh or frozen peas 350 g fresh cheese-filled tortellini (about 4 cups) 1 150 g pkg soft herb-andgarlic cheese (such as Boursin), crumbled ⅓ cup 10% cream ¾ cup finely grated Parmesan cheese (approx) ¼ tsp pepper 1 tbsp finely chopped chives (optional) pea shoots (optional) In large pot of boiling salted water, cook asparagus, snap peas and peas until tender-crisp, about 2 minutes. Using slotted spoon, transfer to bowl of ice water. Drain; pat dry. Halve snap peas crosswise. In same pot, cook tortellini according to package directions. FEAR FALLACIES FAILURE — THE OTHER ‘F’ WORD Simply put, we regard mistakes as signs that we are flawed, that we should be ashamed. Who wouldn’t be afraid if we viewed mistake-making as being right up there with the mortal sins? Reframe: We need to fail to learn and grow.
EXPECTATIONS — OUR OWN AND THOSE OF OTHERS We hold ourselves to high standards and mistakenly believe others hold us to those standards, too. We think anything less than perfect is failure.
APPROVAL — OR RATHER DISAPPROVAL. We fear losing the approval of others, of displeasing them and thus losing our place, our sense of secure belong-
ing (in a friendship group, family or workplace). So we keep our true selves hidden and wear the masks we think will win approval.
RIDICULE — THE FEAR THAT OTHERS ARE LAUGHING AT US. We have a very misplaced idea that others are watching and judging—just waiting for an opportunity to mock our missteps and profit from our misadventures. Do those people exist? I guess. Many of us live not just with fear but from fear. You may be a former dancer whose fear of appearing less than perfect prevents you from setting foot in a studio; maybe you’re someone whose fear of being hurt has robbed you of relationship after relationship; or perhaps your fear of being laughed at by peers sidelines you from trying a new class. In small measures, fear keeps us safe. I’m glad for the fear that cautions people not to walk on a frozen pond or to think twice before picking a ¿ght with a boss. But living from a place of fear is a dĭerent matter altogether. When our fears become irrational or overstated, they become emotional thugs, beating the boldness out of us and demanding we shrink from opportunities, relationships and a life fully lived. We live from fear when we make decisions out of fear, decide what we will do or not do out of fear. When we live from fear, we don’t risk, and when we don’t risk, we don’t grow. That’s too high a price to pay. If fear is the thief, then the ransom is personal potential. So, what are we afraid of anyway? If we are to stop living from fear, ¿rst we must root out the source of these traitors. A few of you have fears born of trauma and you beat them back bit by bit, heroically, just by surviving, by taking another breath. But all of us have fears born merely from living with the painful misperceptions that seem to be woven into the very fabric of our culture. At right, I use the apt acronym FEAR to spell out the common misconceptions that are fertile ground for the fears that bind us. Kicking these faulty beliefs to the curb— accepting ourselves as we are, allowing ourselves to be imperfect and make mistakes and believing the best in others—will allow us to Àourish, rather than fear.

Canada’s credit-rating system can be seen as a confusing labyrinth of information and myths. But credit is essential and it shouldn’t be ignored. Good credit is what allows us to secure loans, rent property, start a bank account, get a credit card and more. That’s why it’s important to understand how the credit-rating system and credit scores work, and what steps you can take to maintain a good credit rating. Here are 10 familiar misconceptions.

Taking the REINS
How one woman used the majesty of horses to battle her anxiety and bolster the mental health of others.

rin Gallant can’t remember a time when she didn’t ride horses. “Growing up, I thought everyone had a horse,” says the St. -ohn’s, 1Àd., native, who was introduced to the majestic creatures at the age of two, got her ¿rst pony at eight and started riding in competitions at 13. When she was 15, she began sŭering from anxiety and panic attacks. Caring for and riding horses became not just a sport but also a form of therapy. “Horses don’t judge,” she explains. “And the farm is a calm and quiet place where I can just be me.” In 2013—when Gallant was 32—the death by suicide of Alison Walsh, a young member of the St. John’s riding community, hit close to home. Gallant wanted to help Walsh’s family, so she ŏered to take care of Tinker, the young woman’s white half-Arabian mare. By then, Gallant was a certi¿ed riding coach and a recreational therapist and had been working with people with autism and other developmental dĭerences. She wondered if Tinker and her other horses could bring some peace and stability to those struggling with mental health issues. She started ŏering equineassisted therapy sessions in partnership with a women’s centre and First Light (formerly the Native Friendship Centre). And that’s how, that same year, Spirit Horse was born. Gallant estimates that more than 500 people have been through the program since then. Dealing with issues such as addiction, trauma, anxiety, domestic abuse, depression and posttraumatic stress disorder, most are referred through the health-care system or community partners, though there are some self-referrals, too. In the barn, patients meet nine horses, Tinker among them. Respond to the stately beasts vary: Some people ¿nd the horses’ physical presence calming; others ¿nd it unsettling. Gallant lets everyone take things at their own pace. Slowly, the barn becomes a safe space where building trust with the horses through grooming and planned exercises becomes a transformational experience.

In 2017, Jennifer Mercer entered Hope Arena (Spirit Horse’s facility), while struggling with severe depression triggered by a job loss due to chronic health problems. She was bedridden most days and, though she was seeing a psychiatrist, she felt hopeless and desperate. “Initially, when I arrived, I was afraid of horses. For the ¿rst six weeks, I just got to know them and groomed them. Then I started leading them around the ring and developed a connection with them—they make me feel so comfortable. I found when I was with horses, I forgot all about my problems,” she says, mentioning a time when a horse was mimicking her actions. “Seeing the horses mirroring my behaviour helped me become really aware of myself and my movements. It’s so hard to put the experience into words—it’s just magical.” The use of horses for therapeutic purposes dates back millennia to ancient Greece. Horses have supported people with physical disabilities, notably polio and cerebral palsy, and mental health challenges, such as depression and anxiety, as well as children living with autism. The therapy is sometimes referred to as equine-facilitated wellness. The Canadian Therapeutic Riding Association de¿nes it as “a range of counselling, education and personal development approaches, strategies and techniques that bring humans and equines together in healing and learning environments.” Gallant’s approach is peerbased, meaning she brings her lived experience of mental health challenges to each session, which allows her to meet people wherever they’re at emotionally. The changes some people experience are signi¿cant. “I’ve come such a long way in the past year,” says Mercer. “I have more self-con¿dence,
self-worth, hope. This time last year, I was in bed and couldn’t get out, and now I’m in school. I still have struggles, but just being in [the horses’] presence helps me.” A couple of years ago, Gallant received a $300,000 donation from the MerB’ys. (You might have heard of them: They’re a group of bearded Newfoundlanders who don mermaid tails and pose for an annual fundraising calendar.) She used the funds to kick-start a pilot project in two local prisons: the maximumsecurity Her Majesty’s Penitentiary and the Clarenville Correctional Centre for Women. Gallant takes two of her horses into the yard, and small groups of inmates spend a few hours each week working with them on things like problem-solving and facing fears. It’s the ¿rst program of its kind in Canada. “For someone who’s incarcerated to feel trusted and to feel that they can trust—it’s a pretty powerful moment,” says Gallant. She recalls a moment at Clarenville when Tinker and Roxy, another one of Erin’s horses, completely changed the dynamic. Gallant had challenged the group of women to get the horses, who were grazing at the other end of the yard, to come to them. Sounds easy, but it wasn’t. The women were boisterous and chatty, and the horses were having none of it. After awhile, one of the women posited that the horses may respond if they all became quiet. Sensing the shift, the horses perked up and made their way over. The power of that bond, that shift in self-awareness, wasn’t lost on anyone, least of all Gallant. “Some very powerful and wild things happen sometimes when the horses’ actions reÀect back to us what’s going on in our lives,” says Gallant. Her goal is to make that impactful experience available to as many people as she can. CANADIAN LIVING MAY 2019 | 47

Do I have a gluten sensitivity or celiac disease?
Dr. Zenlea says “Celiac disease is an autoimmune ailment that affects approximately one percent of Canadians. Though its cause is not fully understood, environmental triggers and genetic susceptibility are probable contributors. When someone with the disease ingests gluten—the protein found in wheat and rye, among other grains—the body has an autoimmune response that damages the small intestine. While celiac disease is confirmed by a small bowel biopsy and a blood test, having a gluten sensitivity is completely subjective. A food intolerance simply means that when you have a certain food you experience a symptom—typically bloating or diarrhea in the case of gluten. Someone with celiac disease might feel completely fine after eating gluten, but measurable damage occurs in the small intestine, which can result in malabsorption of certain vitamins and minerals, like iron and vitamin D. Interestingly, celiac disease is totally treatable by elimination of gluten from one’s diet. After strictly cutting out gluten— including hidden sources found in cosmetics—a person’s bowel can eventually return to normal.” 50 | CANADIAN LIVING MAY 2019

Dr. Warden says “Although your fertility is dropping during perimenopause, you’re not fully protected from an unplanned pregnancy until you reach menopause, which means going 12 months without a period. If you don’t want to get pregnant, there are many options for women approaching menopause, including hormonal methods, such as combination estrogen-progesterone and progesterone-only contraceptives, and non-hormonal methods. If you’ve been taking or are interested in estrogencontaining methods—which may also help with menopause symptoms like hot flashes—your health-care provider will assess your risk of blood clots and stroke, since estrogen can increase it. Non-estrogen contraceptives include intrauterine devices (either progesterone- or copperbased), a progesterone-only pill, a progesterone injection or barrier methods, such as condoms and diaphragms. (Note that only condoms provide some protection against sexually transmitted infections).”

Position racks in upper and lower thirds of oven; preheat to 375°F. Place coconut on folded damp kitchen towel. Using corkscrew, screw hole into each of the 3 small “eyes” in end of coconut; using paring knife, make holes larger. Place coconut upside down over large liquid measure to drain coconut water. Bake coconut on lower rack until shell cracks, about 15 minutes; cool slightly. Reduce oven temperature to 275°F. Place coconut on cutting board lined with kitchen towel; using hammer or mallet, pound until shell opens. Using paring knife, separate coconut meat from hard outer shell. Line 2 baking sheets with parchment paper. Using vegetable peeler, shave edge of coconut to create strips (you will get about 4 cups). Place 1 cup of coconut shavings on each prepared pan; spread in single layer. Bake until coconut is golden brown and crispy, switching sheets halfway through, 20 to 25 minutes. Repeat with remaining coconut. It’s not something I’m proud of, but
I may shop online too much when I’m down, worried and having trouble sleeping. Given that I’ve been diagnosed with depression, anxiety and insomnia, it’s easy to see how this has turned into a decidedly expensive tendency. Some weeks, I ¿nd myself apologizing to my mail carrier (Marianne—we’re on a ¿rst-name basis) for the sheer volume of parcels she brings to my door. Logically, emotionally shopping is a habit I know I need to quit. I can’t ăord it, it’s not an example I want to set for my daughters, and, while I do get that feel-better rush (two, actually—one when I put an item in my cart, another when Marianne rings my doorbell), I’ve fallen into a pretty pitiful pattern of buying, regretting, promising (to return it), procrastinating and wasting. (Good-bye, money I’ll never recoup.) Depending on the study I consult (and there are too many to count), I could break free of making purchases tied to my melancholy in a mere three weeks. But anyone who’s ever tried to make a positive change or defeat a harmful ¿xation knows that old habits die hard. While some routines are easy to fall into or out of (I stopped biting my nails when I started getting them done— simple ¿x), forming or kicking most habits requires dedication, ĕort and action—more than investing in a monthly gel manicure. Scienti¿cally speaking, habits are neural pathways that have been wired in unison, says Dr. Shimi Kang, an author and psychiatrist based in Vancouver. “Neurons that ¿re together wire together. To change a habit, we must dissociate the ¿ring and eventually rewire the experience to something dĭerent.” Take nail biting. “Most of our actions each day require that we have learned things to the point of making them automatic,” says Norman Farb, a psychology professor at the University of Toronto. “It comes down to who has practised biting their nails. Every time an action is practised, the likelihood of performing it in the future increases, particularly if you were rewarded with a successful outcome.” If nibbling my nails is soothing when I’m worried about (insert anything here), next time I’m anxious, I’m more likely to gnaw away. Habits that involve pleasure and reward (which triggers the release of dopamine, a feel-good neurochemical) are harder to squash. “Anything that ŏers immediate pleasure—alcohol, drugs, food, shopping—are powerful when it comes to forming habits, and can quickly lead to
addiction, which is a medical condition that can be understood as a very strong self-sabotaging habit,” says Dr. Kang. It makes sense that the more we do something, the faster it becomes routine, so the time to make a change is now. Feeling uncertain? “Fluctuation of motivation is normal,” says Dr. Kang. “It’s OK not to be 100 percent ready to change; you just need to be prepared to try something new. Here’s how to get there. Figure out your stage of change. There’s precontemplation (when you have a Àeeting idea of changing a habit), contemplation (when it’s on your mind a lot) and action (when you’re ready to do it). If you’re in the action stage, decide why conquering a habit or getting one to stick is important by listing and ranking your reasons to change out of 10, says Dr. Kang. Among other reasons for reining in my online spending (read: guilt), I’d rank ensuring debt doesn’t swallow us up whole as a solid 11. If this remains my focus, I’m much more likely to stay motivated and maintain my action. Watch out for triggers. The tricky part, says Dr. Kang, is that it takes time for new neural pathways to build up and old ones to unwind. So it’s important to “develop awareness of the feeling or experience that triggers the habit,” Farb explains. “What does it feel like right before I reach for that cigarette? Is there something familiar I can recognize? Is there a pattern to the habit being triggered?” When you know this, you can explore ways to respond dĭerently to those feelings or experiences. Instead of ordering athleisure wear and cactus decor, Dr. Kang suggests I take a warm bath, meditate with use of an app or read a favourite book. “The more subtly and quickly you can recognize a situation that generates a feeling of craving or aversion, the more latitude there is to modify the response to that feeling,” adds Farb. “And every time you do something other than the habitual response, you make it a little easier to choose dĭerently again in the future.” Be patient. You’re not going to wake up tomorrow and suddenly be able to walk 10,000 steps a day when you’ve basically been sedentary for ages. And the word “like” isn’t suddenly going to, like, disappear from your vocabulary. “After the action stage is the maintenance stage, and then there’s often a relapse,” Dr. Kang warns. “But just because you’ve tried two or three times, doesn’t mean you can’t do it. Most of us will go through the cycle four to seven times before we actually make the change.” Finally, good news for my credit card bill.

Apply the spray adhesive to one side of the cardboard and place the sized gift wrap on top, smoothing out any air bubbles. Spray the back of the cardboard and place it inside the shadow box, pressing down firmly to ensure adhesion.

the drill bit through the pilot holes to pierce the cardboard and gift wrap. Screw the hooks into the holes on the front side of the shadow box.

EAT, COOK, LOUNGE. Sabrina and John Beggs’s Oshawa, Ont., home had a dedicated room for each of these functions. Practical, right? Not so, says the couple, whose kitchen, breakfast nook and family room felt like a labyrinth of disjointed spaces. Enter designer Christine Elliott, who in 2017, took down two walls to make family life more Àuid for the busy professionals and parents to now-three-year-old Britley. Postreno, the trio can engage in dĭerent activities in a single space in unity, says Elliott. “John and Britley can have a dance party in the family room while I do dishes,” ȧrms Sabrina. “Or John can prep food while I feed Brit. And we’re all together, all part of the interaction.” The esthetics are just as tailored to the Beggses. “Sabrina is fun, trendy and has a great sense of style,” says Elliott, who created a look best described as classic with a kick: The custom white kitchen cabinetry is tastefully traditional, yet the crisp pale-blue island base and the electric-blue rubber-necked faucet are playful; and the brushed-brass hardware and pendant lights are beautiful but brazen. In the family room, the marble-look ¿replace surround and built-ins Àaunt eternal elegance, yet the textiles—from the graphic rug to the denim-toned sofa to the mix of patterned toss cushions—tell a far more youthful story. Sometimes called summer snapdragon and native to Mexico and the West Indies, angelonia are destined to become a new favourite. Growing 60 centimetres tall by 30 centimetres wide, they Àower continuously from early summer to autumn. Angelonia are tolerant of high heat and humidity; they don’t require deadheading and are deer-resistant. Bearing 30-centimetre-tall Àower spikes reminiscent of small orchids, angelonia are gorgeous in containers, Àowerbeds or as cut Àowers, providing a reliable vertical accent.

A-PEEL BLACKEYED SUSAN VINE
(Thunbergia alata [A-Peel Series] cvs.) New for 2019 and discovered by Quebec-based plant breeder Denis Levac is Tangerine Slice A-Peel (‘DL1501’). It bears bicoloured red and orange Àowers with black centres and heart-shaped leaves on a vigorous twining vine that blooms continuously from early summer to frost without deadheading. Grow it up trellises, let it spill out of hanging baskets, use it as an annual groundcover or—our preference—pot it up in a 40- to 50-centimetrewide container and let it roam free. Fast growing A-Peel series thunbergia cultivars spread up to 2.4 metres in every direction and are happiest in average garden loam in a part shade to full sun location (feed container plants with a half-strength all-purpose fertilizer every three weeks). Other cultivars in the zingy series include yellow Lemon A-Peel (‘Lemon Star’), Orange A-Peel (‘Orange Wonder’) and rosy orange Apricot A-Peel (‘VOLTHU1007’).

BERRIED TREASURE STRAWBERRY
(Fragaria ×ananassa [Berried Treasure Series] cvs.)
Bred by a Dutch strawberry connoisseur, these exciting new everbearing varieties combine large, long-lasting Àowers with deliciously sweet berries from late spring to frost. Intended primarily for containers (where their showy semi-double flowers and dark red berries can be fully appreciated), they also perform well as edging plants in Àowerbeds. Heat-tolerant and disease-resistant, they bear flowers that attract honeybees. Growing 30 centimetres tall by 50 centimetres wide, Berried Treasure strawberries produce short, 20-centimetre-long runners and prefer a full sun location in rich soil. Water regularly and feed container plants with an all-purpose fertilizer at half-strength every 10 days; deadhead any withered, nonfruiting Àowers. Usually treated as an annual, these plants are hardy to Zone 5, and containers may be overwintered in an unheated porch or garage. A perfect gateway plant for kids, Berried Treasure Red (‘Summer Breeze Deep Rose’) bears dark rose-red blooms, while Berried Treasure Pink (‘Summer Breeze Pink’) produces pale pink petals; keep an eye out for Berried Treasure White in 2020.

ROCKIN’ SALVIA

Sprinkle chicken with ½ tsp of the salt and the pepper. In large Dutch oven or heavy bottom pot, heat oil over medium heat. In batches, brown chicken, Àipping once, about 4 minutes; transfer to plate. Add onion; cook, stirring, until softened, 3 to 4 minutes. Stir in garlic, bay leaves and oregano; cook for 1 minute, scraping up any browned bits and adding water 1 tbsp at a time if browning too quickly. Return chicken and juices to pot. Add tomatoes, broth, chipotle chilies and remaining ½ tsp salt; simmer over mediumlow heat until chicken is tender, about 30 minutes. Transfer chicken to bowl; let cool enough to handle. Using 2 forks, shred chicken, discarding skin and bones. Return chicken to pot. Add vinegar; cook over medium-low heat, stirring, until sauce is absorbed, about 5 minutes. Serve in tacos, tamales or on tostadas.
Place corn husks in large heatproof bowl. Add boiling water to cover; let stand until softened, about 30 minutes. Drain; pat dry. Meanwhile, in bowl of stand mixer fitted with paddle attachment, beat together lard, baking powder and salt on medium speed until light and Àŭy, 3 to 4 minutes. Reduce speed to medium-low. Using paring knife, score into 14 wedges. Using fork, prick each wedge twice. Bake until ¿rm and light golden brown, 55 to 60 minutes. Cut through score lines. Let cool completely in pan on rack. Transfer to rack. Rosewater Glaze In bowl, whisk together icing sugar, rosewater and 1½ tbsp water until smooth, adding an additional ¼ tsp water as needed to reach desired consistency. Dip toothpick into food colouring then into glaze; stir until combined. Repeat, if needed, to tint glaze pale pink. Using spoon, drizzle glaze individually over shortbread, spreading to edges with knife; sprinkle rose petals over glaze. Let stand until set, about 1 hour. For three shades of pink, divide the tinted glaze into three small bowls. Add ½ drop food colouring to the first bowl and 2 drops to the second bowl, stirring each to combine. In bowl, whisk together Àour, poppyseeds, baking powder and salt. In large bowl, rub sugar with lemon zest until fragrant; using electric mixer, beat in butter on medium speed until Àŭy, about 3 minutes. Beat eggs into sugar mixture, 1 at a time; beat in lemon juice. Reduce speed to low; beat in Àour mixture, alternating with milk, making 2 additions of Àour mixture and 1 of milk. Scrape batter into prepared pan, smoothing top. Bake until cake tester inserted in centre comes out clean, about 70 minutes, covering with foil if browning too quickly. Let cool in pan on rack for 10 minutes. Invert onto rack; peel ŏ parchment paper. Invert again. Let cool completely.
