I
t was a quiet Saturday morning in the Tennessee countryside. We had rented an 1860s farmhouse in the small town of Centerville for the weekend, and as my children sat on the screened porch in their pajamas sipping their sugary cereal milk from the bowl— sensible breakfasts have no place on these sorts of weekends—we were startled by a snort straight out of critter central casting. Where had this tiny pig come from? Who, if anyone, did he belong to? What did he want? Was he even a he? My children, as you can imagine, squealed and hurried to the screened door in absolute delight, as I made sure the pig didn’t wiggle its way into the rental. “We need to feed it slop!” my daughter, Emmy, enthused before pausing to ask, “Wait, what is slop?” We named our new friend Charcuterie “Cutie” Patootie. Cutie’s frenetic comings and goings were the highlight of the weekend, despite the fact that he (she?) frequently gnawed at my floral dresses. This, of course, only added to the hilarity. Those two days shine firefly-bright in my memory, because I felt like a fully present parent, wallowing in the whims and wonders of the weekend like, well, a pig in a mud puddle. We played tug-ofwar. We worked puzzles. We had a water balloon fight. We made s’mores. We fed a feral pig milk from a baby bottle, and I delighted in the joy and absurdity of the moment instead of worrying about all of the obvious concerns related to interacting with our filthy little friend.
That’s the beauty of escaping to the country, whether it’s for a weekend or forever. There’s a certain kind of carefree feeling that prevails in a place so intertwined with the beautiful unpredictability of nature, allowing us to be better, more present versions of ourselves. The homes in this issue span many looks and locales, but each of them conjures a kicked-back, easygoing, come-as-you-are calm that speaks to those of us who crave the sort of fresh perspective that comes with fresh air.

For example, The New York Times Monday puzzle is the outlet’s easiest, with Saturday being the toughest. (Some say it’s Sunday, but the newspaper insists otherwise.)
Fill-in-the-blank questions tend to be the simplest for most grammar gamers. Solving those clues first will provide letter leads for the more difficult crossword doozies.
Plural clues often equate to answers that end in “s,” even if you can’t yet guess the rest of the word. Fill in each “s” accordingly to get a head start on other head-scratchers.

his may be a slightly controversial opinion among the up-and-at’em, hospital-corner contingency, but in this prioritizeproductivity world, lazing about is far too underrated an art form, and a disheveled duvet is its canvas. (Sleep-averse skeptics, take note: A woman’s unmadebed-turned-art installation sold for $4.3 million at a Christie’s auction in recent years.) A taut topper with shipshape shams says: “Sorry, we’re closed— please go about your errands.” But a crumpled comforter and lazy linens whisper an all-day open invitation to linger a little longer, whether conquering crosswords, getting lost in literature, or drifting off to dream in the delightfully dappled daylight. When Saturday saunters in, resist the urge to “make” anything other than pancakes, and revel in the relaxed rebellion of a half-undone bed. Because pillow primping can wait ’til Monday morning, and 43-across (three letters, starts with “n” and ends with “p”) is calling. If you don’t know the answer, you can just sleep on it.

The pantry’s drawers (below) were salvaged from an old country store and came with bin pulls already installed on the diagonal. “It’s a more natural way to pull out a drawer,” says Helen.

Country Cred: Farmers have been donning straw hats since man first invented the plow. Styles with large brims shield faces and shoulders from the sweltering sun, while taller, cowboy hat-like crowns help to keep air circulating and heads cool during long afternoons on the tractor. Hat Couture: The wider brims on hats associated with gardeners and beachgoers trace back to a French noble named Madame Bergeret, who was painted holding a floppy sun hat by François Boucher in 1766. Just over 100 years later, John B. Stetson created an equally lasting legacy while passing out his hats to cowboys across the Wild West. Americans weren’t introduced to the short-brimmed straw hat we know as the Panama style until 1906, when The New York Times published a now-iconic photo of President Teddy Roosevelt wearing one at the Panama Canal. Movie star Clark Gable subsequently became the face of this hat style, as he was spotted wearing one for scenes on the set of Gone With the Wind.

Dream Weavers: The materials used to make straw hats are unique to the regions and artisans crafting them. Ecuadorian weavers behind the Panama hat prefer their country’s indigenous toquilla fibers, which have become the industry favorite. Softer materials, such as seagrass and raffia, are preferred amongst weavers who like a looser hat construction. In traditional European weaving practices, straw made from wheat and rye was used, as farmers often had an abundance of these materials right outside their doors. Pride of Plaits: Artisans must first strip, boil, dye, and dry the natural fibers used to make hats before they are ready for braiding into plaits. Weavers then stitch together strands of delicate plaits to create a material strong enough to withstand daily use. Once constructed, finishers shape and treat the piece. Embellishments such as ribbons or feathers are added after the hat is pressed and ironed.

Today, they can often be found for less than $10 apiece. Libbey glassware (yellow gingham) was produced in the early to mid-1900s in Ohio and can be identified by a cursive capital “L” insignia. How “Breakfast in Bed” Came to Be In the early 1900s, upperclass wives often took the first meal of the day in their sleeping quarters. A simple breakfast plus coffee or tea was delivered on a tray, while husbands dined separately in drawing or dining rooms. As societal norms relaxed in the 1950s and ’60s—and it became acceptable to appear at the table in your pajamas— breakfasting as a family became an important bonding ritual. Lifestyle glossies subsequently co-opted breakfast in bed as a tradition for special occasions (read: Mother’s Day!), while hotels also latched on to the idea as a signature of luxury.
Before Scotsman Alan MacMasters invented the electric toaster in 1893, bread was crisped over an open flame using a long-handled fork. Drawer-operated devices from the 1920s and ’30s (top center and bottom left) required manually flipping the slices; the pop-up model we know and love today (top left and bottom right) was patented by Minnesotan Charles Strite in 1921, but it didn’t become commonplace until the 1940s and ’50s. Avid collectors appreciate the pieces for the story they tell

of changing industrial design trends. Art Deco styles (center) are particularly coveted and typically pull in between $20 and $90 per item. (Costs increase with age; rare porcelain Toastrites top the $2,000 mark.) Looking to add more color to your assortment? Consider seeking out toaster covers. These cloth pieces protected the appliances from dust and dirt and were thought to add a dose of homespun charm to the increasingly modernized kitchen space.
Often hand-embroidered from store-bought patterns, pre-1970s covers go for somewhere between $20 and $40 a pop.

Calling all animal enthusiasts! Search for eggcups shaped like chickens, rabbits, and even elephants.
Popularized by Louis XVI, eggcups are a long-standing Western breakfast table staple. Used to serve a soft-boiled egg, the pedestalfooted single cup is the most common variety, while figural pieces riff on the style with whimsical shapes. Double cups (blue stripe, below) can also hold a poached egg in their larger bowls. Prices vary based on age, rarity, and material, but budding pocillovists— the official name for eggcup collectors—can find ceramic pieces for $8 to $15, or expect to pay up to $45 for jadeite cups (top left).

Pour Form The pairing of pancakes with syrup can be traced to early colonists. (Europeans are said to have procured the amber liquid from Native Americans to sweeten bland pancake precursors such as hoecakes.) These lever-operated dispensers, however, are a more modern invention. Proliferating in the 1950s alongside the diner boom, clear vessels with plastic lids can be found for $12 to $25. Early Depression glass versions (bottom right) typically fetch higher—up to $55—as do those with Bakelite handles (center).

Perfect Blend Though canned coffee was first introduced in 1813, the vacuum-packed for freshness approach—note the Natco and Acme tins—is credited to Californian R.W. Hills in 1900. Coffee brands have come and gone through the decades, but their legacy lives on in punchy graphic tins that can be picked up for $25 to $50. 20 years old, Herman Joseph Justin founded his men’s footwear business in 1879 inside a Spanish Fort, Texas, barbershop. Cattlemen sought his hand-sewn leather boots for their quality and comfort, as well as his signature stitching across the boot’s shaft. As the company evolved, so did its designs to include more colorful stitching, silver conchos, and 30-plus leathers. By 1915, Justin boots were sold around the world, with sales staying strong through the Great Depression and into the emergence of dude ranching in the mid-’30s (Roy Rogers and Gene Autry were both customers!). Justin remains a beacon in Western footwear today. WHAT IT’S WORTH:

Handcrafted Wood Sign Antiques Roadshow appraiser Andrew Brunk of Brunk Auctions tells the show’s executive producer, Marsha Bemko: “Signs like these for local post offices are hard to date exactly, but most are from the middle part of the 20th century.” He adds that, yes, many were handcrafted and the variation in the way the letters are cut on your sign supports the idea that your husband’s grandfather likely

Though not marked, she speculates this early version was made by Ohio Art, who improved on the handles and added their mark to a later example from the late 1940s. “This was just the beginning of youngsters sporting a colorful lunch container at school,” says Marsha. “By the 1950s, lithographed lunch boxes showcased characters from cartoons, TV Westerns, and more.” WHAT IT’S WORTH:

WHEN LELA ROSE ran across a
rickety wooden wagon on her rural Texas property, it served as good an excuse as any to whip up a cocktail. Multiple cocktails, in fact, as the wagon ultimately inspired a cheeky drink-devoted Instagram series called “Off the Wagon,” in which the designer (lelarose.com) re-created her most tried-and-true tipples from the world’s biggest bar cart. Of course, Lela has always taken a “go big or go home” approach to hospitality, and the same applies at home, where she loves showing city slickers the fun-loving facets of country life. She typically rolls out her own welcome wagon with thoughtful details spanning the pretty (flower crowns!), the practical (flyswatters!), and the personalized (colorful ribbon to coordinate one’s clothing with their sun hats! pg. 19). Still, Lela knows Mother Nature makes for the ultimate hostess: “The beauty is all around you—in the birds, in the wildflowers, and in the sunset,” she says.

Painterland’s 5,500 acres are home to hundreds of dairy cows, including Guernseys, Holstein-Friesians, Ayrshires, Milking Shorthorns, and Swiss linebacks.
A
mong Stephanie and Hayley Painter’s fondest memories are the still summer afternoons on their family’s Tioga County, Pennsylvania, dairy farm, Painterland. “Our grandpa would take all the kids on his four-wheeler up to the top of the hill,” Hayley says. “Grandma would pack sandwiches, and we’d have a picnic overlooking the rolling green landscape. You could see cows grazing for miles around.” The sisters are the fourth generation to live on the farmland their great-grandfather first moved to in 1941. Once Hayley graduated from college in 2018 (Stephanie is two years older), the pair knew dairy would be the focus of their careers. “We wanted to create a company around the premium milk our family farm produces,” Stephanie explains. “Yogurt was a perfect fit.” In 2021, they partnered with a tenth-generation Pennsylvania yogurt maker to create Painterland Sisters. The burgeoning brand produces Skyr, a nutrient-rich Icelandic style of yogurt, made from whole milk sourced directly from Painterland’s dairy cattle. The sisters work hand in hand with the rest of their extended family, consulting one another over the daily hearty farm breakfast. “We all pitch in,” says Hayley. “Farming is hard work, but there’s also a lot of play. We’re all so proud of this land, of what we make, and of our family.”

Come summer, farm chores focus on haying and baling grass for the animals to eat during the winter, but tending to the cattle is a year-round duty. “We’ve been feeding calves and milking cows since we could walk,” says Stephanie.

A New Leash on Life An inside cat’s hard-earned love of the great outdoors lives on in the memory of writer Leigh Flayton.
I
adopted 11-year-old Mertis, an American domestic shorthair with woeful green eyes and a fabulous underbite, on a cold January day from a Manhattan animal shelter, where she had lived for six years. I’d been searching for an older (read: lazy) cat who might be happy in my small studio, and when I spotted her on the shelter’s website, I hoped she would be a good fit. What I found instead was an animal suffering from cage rage. When we first met, with Mertis sprawled atop a filing cabinet, she swiped at me, drawing blood. Still, and much to the surprise of the shelter staff, I adopted her. Who needed a home more than this poor feline, who for years had watched countless puppies and kittens come and go while she was always left behind? When the two of us arrived at my apartment, Mertis morphed into an entirely different being. From the moment she hopped out of her carrier, she was cozy and warm. She immediately—and happily—adapted to her new surroundings. I quickly fell in love. That summer, I took her to a friend’s farm in Upstate New York—a world of lush, rolling hills, hovering bees, fluttering butterflies, and a pond filled with bubbling fish. would enjoy the life of an outdoor cat, at least for the few days we were there, and appreciate this expansion of her little world. Each morning, I walked Mertis outside on a leash—yes, I am that person—and she was changed once more. As we strolled around the pond, she bathed in the wind, sniffed every scent, and luxuriated in sights and sounds she’d never known. She was kitten-like in her curiosity and playfulness, stalking and chasing and behaving as the living thing she was born to be. This transformation wasn’t lost on me. After we returned to the city, I’d sometimes take Mertis—still on a leash, of course—to the backyard of my building, where she would revel in the few dirt patches and trees, the sunshine, and the occasional breeze. She took her time to savor it all—and so did I. I didn’t have Mertis long. (She lived to 14, a perfectly respectable age for a cat.) I wanted more time with her, naturally, but felt lucky that we could give each other a few good years. And though I still live in the city, whenever I find myself outdoors, I try to do what Mertis did: raise my face to the sun, embrace the wind, and revel in the tiny wonders of the world around me. —Leigh Flayton is a playwright living in New York City.

path that leads to The Grateful Farm mimics the way weekends unfold here: There are no hard stops and starts, and clocks don’t mark time as much as the chicken’s chatter, signaling sunrise or sundown. These easygoing transitions are exactly what Caitlin “Cait” Hoyt and her husband, Brian Walden, had in mind when they bought a converted 1925 dairy barn in New York’s Hudson Valley a couple of years ago. With Brian’s three children in tow, the couple imagined spending weekends blurring the lines between inside and out and welcoming extended

family and friends for cookouts and sleepovers. “Their intent was to entertain—not in a silver tray sort of way, but with pitchers of drinks and bowls of popcorn,” says designer Lori Paranjape (mrsparanjape.com). The main barn and outbuildings had been previously remodeled, so the focus became infusing the interior with a style that was livable and durable. The countryside setting served as design muse, as seen in the home’s natural textures and earthy palette. Equally important was the way rooms functioned to accommodate weekend guests and impromptu family karaoke nights. Lori turned the open area

An old calf barn is now a screened-in summer house, where modular furniture can be reconfigured for enjoying pizza dinners or napping on rainy afternoons. But the crowning glory is the barn’s hayloft, which was transformed into the ultimate party room with game tables, four beds, and a bar. “It all just feels really natural and well-loved, like the barn itself,” Lori says. “Everything is about kicking off your wellies and putting your feet up.”

Cait, a book publicist, and Brian, who works in finance, enjoy whiling away Saturdays enjoying the backyard. Modular outdoor furniture with comfortable deep cushions (modway .com) can be moved and reconfigured as the couple’s visiting company swells. A low stacked stone wall—a hallmark of the area’s vernacular—borders the patio, which steps down to an outdoor dining table shaded under a sprawling oak tree.
No-Fuss Finishes
A flagstone walkway through the garden leads to the converted barn’s wide doubledoor front entry. The barn’s exterior is clad in the classic burnt red color historically obtained through a mixture of linseed oil and iron oxide (for similar, try Heartthrob by Sherwin-Williams).
With most of the kitchen’s classic farmhouse features already in place, including hand-hewn timbers that frame the doorway and beadboard cabinets set against textured glazed tiles, Cait and Brian put their stamp on the space with pieces with built-in patina—an old carpenter’s worktable found on Etsy and an antique runner— which enhance the room’s collected-over-time charm. “We wanted to add things that had character to them, but we didn’t want any one thing to be a superstar,” says Lori. “We looked for pieces that were even older than the house.”

Hang Time in a Hayloft The top level of the barn is now a 40- by 80-foot party room with a domed ceiling that soars to 30 feet. The open approach serves up plenty of play space with its full bar, media center, and spots for board games, Pop-A-Shot, and shuffleboard. On a whim one weekend, the couple pulled together a 3D scrapbook of the art and thrift finds collected during their travels, including beat-up old signs, concert posters, and even a cross-stitch sampler, which they hung along the wall and staircase that lead to the upstairs bunk room (right).

Double the Screened Doors The kids and the family’s company constantly flow in and out through wideopen corridors like this generous front entry, where the double screened doors are often left propped open. “The foyer ushers in fresh air and quintessential country life through the house,” says Lori. The rustic brick-lined floor is a practical transition to weather all those muddy boots. Blankets, scarves, hats, and other weekend gear stow away in baskets tucked inside the floor-to-ceiling cubbies.

Treasure Hunting: When shopping for the house, we hit every antiques store in a 50-mile radius! Hyde Park Antiques Center is a treasure trove of unique pieces. Hammertown Barn in nearby Pine Plains is also a favorite spot to pick up pieces of artwork and accents with a good vibe that add to the home’s lived-in feel. “More the Merrier” Mindset: The farm can accommodate up to 20 people for overnight stays courtesy of the guest cottage, which is a miniature rendition of the converted barn. emember that cozy Nordic concept of hygge? It applies just as much in the summertime. “Hygge is ‘to have a nice time,’ ” says Dorthe Kvist, founder of Copenhagenbased Meltdesignstudio (meltdesign studio.com). So it’s no surprise that she infused her family’s getaway home— tucked into the wild wonderland of Denmark’s Odsherred peninsula—with a particularly Danish brand of warmweather hygge. The feel-good atmosphere begins with the comforting simplicity of the real estate itself. “I paid around 30,000 euros (that’s roughly $33,000) for the house more than 25 years ago, when it was just a little brown shed,” she says. When she bought it, the original 322-squarefoot structure had no electricity and was surrounded by more than an acre of untouched land, most of which Dorthe has left natural. She and her now-husband, Jakob Kvist-Sørensen, had their first date here and have spent decades tinkering with the weekend retreat. “Many years ago, we extended the house by adding on my father’s old summerhouse where I spent most of my childhood holidays,” she says

of the 150-square-foot addition that now forms their bedroom, a bathroom, and an entrance hall. “It was originally an old hut where ice cream was sold!” They added electricity when their first child, Otto (now 19), was born, and they recently created a new 280-square-foot, two-story sunroom made from salvaged windows (the old one had a collapsing roof for a fairy-tale reason: overgrown honeysuckle). Now their one-of-a-kind retreat holds decades worth of memories, including visits from Dorthe’s now-late mother and raucous games of Mikado (pick-up sticks) with Otto and her daughter, Ella (14). “We call the house ‘the summer castle,’ with a twinkle in the eye,” she says. “It started out as a small shed that we have expanded and modernized over the years, but in our hearts, it’s a castle.”
HOW CLEVER IS THAT?
Office Lamps for Task Lighting In lieu of pendants, Dorthe opted for swing-arm desk sconces to provide adjustable kitchen lighting.
CASUAL, COLLECTED KITCHEN Well-worn woods and handwoven pendants that Dorthe bought from an “old man in a workshop” have the same fuss-free feel of an old summer camp. “We scooped up the table at a local flea market, and the chairs are from my childhood summerhouse,” she says. For the backsplash, Dorthe was drawn to the imperfections of handmade Moroccan tiles.

BREEZY GUEST COTTAGE The couple relocated and upcycled an old 13- by 11-foot allotment house (a type of self-built wooden cabin popular across Denmark as a summerhouse) into a mini cabin for visiting friends and family. The walls are lined with a floral wallpaper (osborne andlittle.com), and there’s not much else, by design. Unwinding, after all, is the whole point.

QUIRKY LITTLE CORNERS In a cozy house like this, every nook counts—like this small but mighty home office (left). “I found the desk at a local garage sale, removed the back legs, and attached it to the wall,” says Dorthe. The storage bench—which was Dorthe’s napping spot as a child in her father’s summerhouse—holds gear for the nearby beach, where the family likes to canoe and paddleboard.

Then, a morning swim at the beach, maybe a visit to the local flea market, lunch on the terrace (right), and then to the beach again. Come evening, we usually barbecue some local fish. Means of Transit: We have a bunch of old bicycles to ride to the beach or the local market. Antiques Stops: I always browse the local flea markets for vintage plates and serving dishes, jugs, beautiful vases for wildflower bouquets, and fun, unpredictable curiosities.

HEN LEA ANN AND JOHNNY WALKER went looking for the perfect piece of land to be their hobby ranch and country getaway, they found it in a 1,500-acre spread outside Fayetteville, Texas, about 80 miles from their home in Houston. But it would be another two decades before that property would host their dream house, too. Back in 2001, the property was ideal for the couple and their four sons: It had enough acreage for Johnny to raise cattle and horses, and it was only a short drive from Lea Ann’s favorite antiquing spots in Round Top and Fayetteville. The land had a house, too—a three-bedroom structure built in the 1970s that fit the family of six just fine. But as the boys grew, so did the Walker clan, which now includes three daughters-in-law and seven grandchildren. “We wanted enough space for all of the kids and grandkids to feel welcome and comfortable,” Lea Ann says. To help them create the just-right ranch house, the Walkers called on Houston architect Michael Dreef of Eubanks Group Architects (eubanks-architects.com) and designer Julie Dodson Webster of Houston-based Dodson Interiors (dodsoninteriors.com). Now the house is a haven for all of the Walkers and their friends, who spend weekends and holidays at the ranch. “This house feels most alive when it’s filled with people,” says Lea Ann. “Close friends who know where we keep the wine glasses and can watch the grass grow with us.”

old-school americana “We channeled 1980s Ralph Lauren but made it feel current,” says designer Julie Dodson Webster of the ranch house, which features liberal doses of red, white, and blue. There’s also ample Western flair courtesy of furniture, art, and accessories from Lea Ann and Johnny’s travels to Montana, Wyoming, and Idaho. The log-wrapped game room’s pair of gliders were inspired by the classic designs of American furniture designer Thomas Molesworth, known for his Western-style pieces. Surrounded by rolling hills, giant live oak trees, a lake, and several stocked ponds, the Walkers’ home has a white Austin stone exterior inspired by early Texas Hill Country architecture.

rugged materials To give the new house a rustic vibe, the homeowners incorporated reclaimed wood throughout, including in the kitchen, where the cabinets are made from wormy chestnut sourced from 200-year-old barns in Ohio. “When the pallet arrived, my husband didn’t even think it would be good for a bonfire!” Lea Ann says of the stockpile. Patterned window treatments (cowtan.com), a ceramic tile backsplash (walkerzanger.com), and iron pendants lend a hint of sophistication.

The country can look like a wild kingdom to a pooch that is used to the couch. Three tips to ensure a fun trip: 1. Protect your pet against Lyme and Ehrlichia with a tick and flea preventative; 2. Don’t allow your pet to run freely through tall grass, as this is a favorite area for snakes (bring an antihistamine along just in case); and 3. Avoid interaction with livestock such as horses, cows, pigs, and even roosters. They can find dogs threatening and will show their dissatisfaction by kicking or biting.

Strawberries There’s a reason U-pick patches are so popular, as nothing rivals fresh, peak-season strawberries. The beloved berries are best when allowed to fully ripen on the vine. You’ll know they’re ripe and ready to eat when they smell sweet. Store them unwashed in the fridge— washing them will cause strawberries to mold—for up to a week, and rinse just before using.

2. Place potatoes in a large pot and cover with cold salted water. Bring to a boil; reduce heat, and simmer until the potatoes are just tender, 10 to 12 minutes. Drain and reserve pot. Once cool enough to handle, halve potatoes lengthwise. Set a steamer basket in reserved pot and fill with 1 inch of water; bring to a boil. Add haricots verts, and cook just until tender, 2 to 4 minutes. Drain and run under cold water.
3. Place eggs in a medium pot and cover with cold water. Bring to a boil. Once boiling, remove from heat and cover pot; let sit 10 minutes. Transfer eggs to a bowl of ice water and cool completely, about 10 minutes. Peel and halve lengthwise. 4. Place lettuce on a large platter. Top with potatoes, haricots verts, eggs, tomatoes, parsley, radishes, tuna, olives, capers, and anchovies. Drizzle with half the dressing. Serve remaining dressing alongside.
PANTRY PRIMER
Crack the Can Code You’ve likely seen recipes that call for oil-packed tuna (as in the Salade Niçoise, left), but what’s the difference between it and the other canned seafood? Tuna packed in olive oil is creamier and richer than that packed in water, which has a milder flavor and fewer calories. Also worth noting: Tuna labeled “white” offers a mild flavor, while “light” has fishier notes. Chunk-style tuna is good for tuna salad, while solid tuna’s larger pieces make it ideal for pasta salads. Look for cans marked “pole-and-line” or “troll-caught,” as these support sustainable fishing practices.
Orzo Pasta Salad WORKING TIME 20 minutes TOTAL TIME 20 minutes MAKES 8 to 10 servings

1. Bring a pot of salted water to a boil. Cook orzo until al dente according to package directions. Drain and spread on a baking sheet.
Drizzle with 1 tablespoon oil and stir to coat. Cool completely in the refrigerator.
2. Whisk together lemon juice, vinegar, and remaining 5 tablespoons oil in a bowl. Season with salt and pepper. Add orzo, bell pepper, kale, shallot, Parmesan, and Feta, and toss to combine. Season with salt and pepper. Chill for 30 minutes and up to 2 days. Add more oil and vinegar before serving, if necessary.

What to Plant Now Nasturtium The edible water lily-like leaves and brightly colored flowers (which range from orange and yellow to maroon and bright red) make this a gardener’s favorite. It’s also a great companion plant for many garden vegetables, such as green beans, broccoli, and cucumber, as it draws pests away from the vegetables. Plant in mid-spring by directly sowing seeds into the ground. After 1 to 2 months, snip the edible mustardflavored leaves and flowers to add to salads, use as garnish on crudités platters, or layer on toast with ricotta.
Add onions, cover, and cook, stirring occasionally, until very tender, 18 to 20 minutes. Remove lid and increase heat to medium-high. Add sugar and season with salt. Cook, stirring occasionally, until golden brown, 20 to 30 minutes. Cool completely. Stir in crème fraîche and 1 1/4 cups each Gruyère and Parmesan. Season with pepper.
2. Preheat oven to 450°F. Lightly grease a rimmed baking sheet with oil. On a lightly floured surface, roll dough to an 11- by 9-inch rectangle. Transfer to prepared pan and drizzle with a little oil. Spread onion mixture on dough, leaving a 1/2-inch border all around. Top with remaining 1/4 cup each Gruyère and Parmesan. Bake until crust is crisp and golden brown and onions and cheese are melted and bubbly, 10 to 15 minutes. Cool 5 minutes, then cut into pieces. Garnish with thyme.

1. Stir together flour, salt, and yeast in a bowl. Add water, honey, and oil. Mix with a wooden spoon until combined. (Add a little more water if dough still has dry spots.) Cover with plastic wrap, and let rest at room temperature, 15 minutes.

1. Preheat oven to 350°F. On a lightly floured surface, roll dough into a 13-inch circle. Fit into bottom and up sides of a deepdish pie plate; crimp edges. Chill at least 30 minutes. 2. Whisk together eggs, halfand-half, scallions, tarragon, and mustard in a bowl. Season with salt and pepper. Pour into prepared crust. Sprinkle with half the Gruyère and arrange asparagus over top. Top with remaining cheese. 3. Bake, just until set, 45 to 50 minutes. Cool on a wire rack for 15 minutes before serving.

Everyday Heirlooms
The Heart of the Splatter A thoughtful gesture involving a 25-year-old set of neatly packed paintbrushes leaves a colorful legacy.
OUR MOM, JUDY, loved to paint,
and her artwork filled the Towson, Maryland, home where we grew up. Every spring— when the yard was dotted with tulips and daffodils—she could be found outdoors with her watercolors. Occasionally, she’d even pull the car off the road just to sit and paint a meadow of wildflowers. As kids, we could watch her work for hours. She saw details and captured beauty in things that other people might take for granted, whether it was the nuances of nature or the colors of the historic Victorian homes in our neighborhood. When our mom was diagnosed with rheumatoid arthritis, the illness robbed her of mobility in her hands. She was devastated. Shortly after, a package arrived unexpectedly at the home of her granddaughter, Alex, who was just 12 at the time. Mom had carefully packed her beloved paintbrushes —rolled neatly in muslin—and mailed them, essentially passing on her passion to a future generation.
