SINCE CHILDHOOD, I have plastered my walls with tears from my favorite magazines to make wallpaper. I would stare at the imagery for hours while reading (and rereading!) the issues cover to cover and escaping into the pages. At 11 years old, magazines took me on visual journeys through stories of travel, geography, art, and culture as I learned about beauty that exists across the world.

Although my taste has shifted from ’80s Calvin Klein ads and Revlon campaigns, I continue subscribe to and read magazines to feel inspired and expand my horizons. It has always been my dream to curate a magazine, and now that I am in my 40s, I am hoping my “timing is everything” motto is true. And here we are with issue No. 1. As you’ll see, this issue revolves around joy. If there are two lessons the past year has taught me, they are that happiness is a choice at every age and stage of life, and it isn’t always on tap. Sometimes you have to fight for it.

But your own happiness is a worthy battle. If you take on the hardest challenges you face and crumble, how do you pick yourself up and become a champion for personal joy? My other questions are, how do you fuel up for that? How do you find your joy and happiness to power up and take on the world every day? Hopefully you’ll find some of the answers to these big questions (and smaller ones too, like what to feed your friends or which lipstick might lift your spirits) in these pages. I hope this magazine can be the escape for you that it is for me because this whole magazine is about YOU and made for YOU. “If you're feeling overwhelmed by the state of the world and wondering how to help, look around where you are right now. You’ll probably see your work appear,” says Anja Tyson. For her, this happened during New York City’s first lockdown in 2020 when she launched neversleeps.nyc, an online resource connecting individuals with ways to help their communities. Created on a Friday night using a free WordPress template, the website gets its name from its hometown and Tyson’s allhours schedule. As a single mom with a full-time career as a sustainability consultant in the fashion industry, Tyson maintains the site on nights and weekends. “I really believe in the importance of building community and sharing resources,” she says. STYLISHLY SUSTAINABLE: FLAMINGO ESTATE Atop the highest hill in the Los Angeles neighborhood of Eagle Rock is a pink paradise called Flamingo Estate. Its resident, Richard Christensen, has taken advantage of year-round good weather and outside space to create an ecological urban utopia. A multi-tiered, sprawling garden is home to 150 new botanical species, an orchard, a vegetable garden, and some very hard workers—honeybees. Angelenos can partake in the Estate’s CSA of locally-grown, organic fresh produce. WATERING CAN-DO ATTITUDE: GARDEN MARCUS If Garden Marcus (real name: Marcus Bridgewater) was a plant, he’d be a sunflower, or perhaps a cheerful red radish. And thanks to TikTok and Instagram, we can all experience his useful gardening tips—and feel-good presence—every single day. His horticulture love story started when he inherited 16 plants from a family friend. Now his home in Houston bursts with greenery that spills into his backyard where he grows cucumbers, propagates pineapples, and lovingly tends to his compost. GARDENING AS ACTIVISM: FREEDOM GARDENS If plant knowledge is power, then a veggie patch is liberation. Founded by landscape artist Lily Kwong to empower communities to grow their own food, Freedom Gardens acts as a collective, harnessing the expertise and telling the stories of farmers and home-growers all over the country, as well as offering free online classes on everything from choosing the right kind of soil to harvesting your crops. When it comes to show-stopping floral design, Michael and Darroch Putnam have artistry down to a science. In Flower Color Theory, the New York-based creative couple shares their approach to using classic color schemes as a springboard for bringing original looks to life. Here are their top tips for experimenting with style at home.

CUE THE COLOR WHEEL “For us, color is the key element in an arrangement,” they write in their new book. “We always ask ourselves what color palette we want to work in before designing. Using basic color theory is a practical approach when starting out.”

SAY YES TO THE SEASON Bring whatever is happening outdoors in. Think bright yellow sun, blue skies and white clouds, and put it all in one vessel. “Yellow sunflowers, white cosmos, and blue delphinium are a great combination that feels warm and inviting,” says Michael. Their summer picks: garden roses and sunflowers. “Both have come a long way through cultivation, and you can find unique colors at most grocery stores, flower shops, and farmers markets.”

KEEP THEM FRESH Dehydration causes flowers to wilt and change in color. To keep your blooms looking their best, it all comes down to care:

START SMOOTH Start with clean, dry feet. Then smooth out the rough bits with a foot file that has a gentle metal grate. “Super smooth feet are always the best part of a pro pedicure,” says Tuttle. SHAPE UP Clip your nails to the length you like, and finish shaping them with a nail file. Tuttle recommends keeping your old polish on at this point to help guide you.

PEDI IS A VERB GIVE YOURSELF A SUMMER-PERFECT PEDICURE AT HOME BY ANNA GOLINO

When it comes to living her best nail life, Olive & June founder Sarah Gibson Tuttle keeps no secrets. After mastering the at-home manicure and introducing The Mani System, the next logical step was to take on pedicures. In late 2020, she launched The Pedi System, a foot and nail care essentials kit. Here, she shares her step-by-step process for giving yourself a pedi you’ll be proud of.

RETHINK THE SOAK Arguably, one of the best parts of a salon pedicure is the foot soak, but it could be the culprit behind chips and smudges. “Water expands your nail plate, and any excess moisture has an impact on polish’s staying power.” Instead, soak for 15 to 20 minutes the day before you plan on giving yourself a pedi. GET COMFY “I knew there had to be a better way than spending an hour hunched over trying to paint your toes, so we developed The Posey,” Tuttle says of the dual-angled foot stand that does double duty as tool storage. “When you anchor your heel on the grip pad, it keeps your foot stable, giving you more control,” she says.

PRIME TIME “Proper prep is what separates a polish change from a pedicure,” says Tuttle. To check all the boxes, first use a polish remover to wipe away any old polish or excess oils, then apply cuticle remover and push back the cuticles. Use a buffer to smooth ridges and erase tiny hangnails, then use a cleanup brush dipped in remover to wipe the nail plate clean. POLISH IT OFF Taking your time is the key to a flawless paint job. Pop on toe separators and paint 2 to 3 thin, even coats of polish, letting each coat dry for a few minutes in between. “For me, the ultimate tell is a clean line at the base of your cuticle,” says Tuttle, who erases stray polish and straightens edges with a cleanup brush dipped in polish remover. Apply top coat to seal the deal. EXTRA CREDIT Once polish is fully dry, apply a light hydrator like Olive & June Foot Serum all over your feet. “A good pedi is more than just polish on your toes,” says Tuttle. “Keeping your feet moisturized gives your skin a healthy glow.” KEEP IT UP To make your pedi last, moisturize daily, apply fresh top coat every few days, and gently file your heels once a week before a bath or shower. “Take the time to give yourself a pedi every two weeks. ROLL MODEL “Roller skating is the best feeling in the world,” says Kamry James. When she began to offer online lessons as a way to raise donations for Black Lives Matter and the ACLU, James noticed she wasn’t the only one who felt this way. To support the existing and expanding community of Black, Brown, and nonbinary skaters, James founded Sista Skate with Kelsey Guy and Frances McGee in 2020. “I realized teaching allowed women from all over the country to not only escape, but to truly bring healing to their lives.” Now their Los Angeles-based organization works to uplift skaters everywhere through connection, classes, and workshops. James says, “Whether it is on the rink, the boardwalk, your neighborhood, or the skate park, skating gives our communities the access to self-expression through empowerment.” Join the movement @sistaskate_

FIND YOUR FLOW WITH KEON SAGHARI “I had a vision of myself roller skating at the beach,” says movement artist Keon Saghari, also known as NeonKeon. “The energy behind that thought contained an overwhelming sense of freedom,” she says. To make her vision a reality, Saghari picked up a pair of skates and headed out to practice at Venice Beach. Three years in, she’s known for her smooth choreo, token curls, and easy California style. In January, Saghari launched Find Your Flow, an online group class where everyone’s invited to roll along. “I feel honored and motivated to return the support I’m receiving from my community with love and effort,” she says. “The notion that I’m providing something that is providing people an opportunity to explore joy is, simply put, joyous.” Join the fun @neonkeon

New to the world on wheels? Follow Saghari’s tips on getting started. WATCH & LEARN Get acquainted with the history of roller skating, especially in the minority communities that created the culture. Saghari recommends watching Roller Dreams, a documentary that sheds light on Venice Beach skate culture in the 1980s. “It’s a productive way to acknowledge the richness of the craft,” she says. THE DO’S “Keep your chin up, shoulders back, and spine long and tall,” says Saghari. Looking down means falling down, and that’s not the fun part. And if you are transitioning from rink skating to the road, you may need different wheels, and you will need to adjust your movement.

THE DON’TS “A lot of times people want to straighten their legs and lift up,” she explains. “Avoid that as much as possible.” Instead, stay grounded by centering yourself on your legs and skates, which will make it easier to find your balance and move. RELY ON THE RHYTHM It’s all about the bounce. “Whether you are bouncing your hips, your knees, your shoulders, your hair—it doesn’t matter,” says Saghari. “Find the groove in the music to establish the bounce, which basically acts as a shock absorber. I AM AN OPTIMIST. Optimism is my outlook. It is my constant magnet, forever drawing me to hope. Happiness, on the other hand, feels like it’s been a bit more elusive. It can be a downright slippery little sucker if you know what I mean. In my teens and 20s, I was happy because I was convinced I was immortal. Drinking, eating anything I wanted, and never sleeping. Going to every concert I could. Dropping everything and traveling anywhere at a moment’s notice. Doing donuts in the parking lot? Yes, please. Jumping out of a plane? Me first. No one could tell me otherwise. I didn’t think—I knew for absolutely certain— that I would always have my health. My problems could seem really big, like they were insurmountable, but I really just believed that I was never leaving this beautiful planet. A lot of my happiness came from thinking that I had all the time in the world.

AND THEN I HAD TWO BEAUTIFUL DAUGHTERS, AND EVERYTHING CHANGED. All of a sudden, my mortality came right into focus. I care about these two girls, my Olive and Frankie, much more than I care about myself. The fear of not being here on this earth to take care of them became a reality for me. That “blissful ignorance” style of happiness I used to believe in was no longer available to me. But what’s interesting is I realized my happiness was more important than ever. I needed to be strong to raise my girls and give them everything they need and deserve. I wanted everything to be as good for them as I could possibly make it. I wanted life to look and function a certain way for them—a way that I had never known, but I could appreciate fully.

When my plans fell apart, for what was not the first nor the last time, I felt like all of the promises I had made to myself in honor of my daughters were being broken. And in that time, I felt really broken myself. I couldn’t even figure out what happiness really meant or how to get it, let alone keep it. All I could do was put one front in front of the other. I don’t know why, but it feels like it is completely taboo to feel like you don’t know what your next move is supposed to be. My children are my North Star. I have always known in my heart that if I did what I thought would be in their best interests, everything else around me would be OK. And to my surprise, it was. As their well-being guided my decisions, we began moving in a new direction, literally and figuratively. We headed from Los Angeles to New York, where their father and I would work tirelessly to create a co-parenting dynamic that would nurture them. And we continue to give it our all. It took years, but life finally started to fall into place. The kids started going to school, life began to resume, and I started to work a little bit again. Over time, the rhythm of life felt less like a crazy interpretive jazz number and more of a sweet beat. It is possible that it was the sound of my heart actually settling from the stress and the nerves that I had experienced in the last few years. Even so, I must admit that I felt like a failure because I couldn’t actually get to the state of happiness. I could be happy with my kids. I could be happy

with my friends. But I knew I wasn’t truly happy inside. But I reached the point where enough was enough. I had life on the outside in a good place, so it was time for my interior life to catch up. All of a sudden, I started to be really honest with myself. What were my coping mechanisms? What was I relying on that wasn’t working for me anymore? Which of my behaviors weren’t doing me right? If the choices are to stay the same or take the journey to your better self, is there really much of a choice at all? I just want to ask anyone who has been kind enough to take the time to read this right now: Do you have that little inner voice, a Jiminy Cricket conscience like mine that kept repeating that something needed to change? With time and effort, I have finally found my way to a new, more authentic happiness and to a little more peace. At this point in my life, happiness is believing that I can handle whatever comes my way. The false sense that I had my very own cloak of invincibility has been replaced by knowing I have earned the capability of making it through the day. Some days are great—too good to be true—and others are just really crappy. Either way, it’s going to be OK.

I have accepted that being optimistic is who I am, and I will constantly strive for happiness. Happiness is more of a hard-fought battle. When I win and I actually feel that true state of joy, I cherish it because I know that at some point—maybe not tonight, tomorrow, or even next week—I’m probably going to have to go and fight for it all over again. True, the usual state of my juggling act of kids/ work/life tends to skew to the rather frenzied side, but no matter how bad things get, I always remain positive. I may be a lot of things, but “stuck” is not one of them. I will always find my way, even if I need more patience with myself about what time frames are realistic for growth and change. There are truly no shortcuts, and I’m not sure if I believe the easy road would be worth taking because I might miss some very important parts of the ride. All of our happiness comes and goes. When you are holding it, hold on tight because it is not to be taken for granted. It’s a fleeting manifestation of your own hard work. Every day is a true gift. My happiness lies in waking up and knowing that I took it for granted in my younger days, but I don’t now. Growing up is not overrated. It’s actually awesome.

As a 46-year-old woman, a mother of two young girls, and a professional person just doing my best, I’ve come to understand myself a little deeper. Maybe my feet are a little more anchored to the ground, but it doesn’t have to make my head any less in the clouds. I do appreciate my mortality and every day I get to be on this planet. I’ve learned that five minutes alone can change your state from codered-stress-level-11 to sailing the calmer seas. Now I reach out when I need to. Speaking to someone smarter than me, seeking solidarity, or asking for advice really helps. And it benefits everyone around me too.

ALL THE FEELS TALKING TO YOURSELF WITH JONATHAN VAN NESS

Jonathan Van Ness has a way with words. As a host of Netflix’s Queer Eye and of his own podcast, Getting Curious (which has more than 200 episodes to dive into), he shines his light to go deep, connect on a meaningful level, and bring out the best of the shows’ subjects and guests.

MAKE NICE WITH YOUR NERVES “When we feel nervous, part of that feeling is our nervous system trying to tell us something,” he explains. “The first part of moving through that is to listen to it. What is the fear? What are you afraid of? And then I feel it. We feel a sense of strength when we can feel anxious about something but it didn’t make it impossible to move forward.”

But the person he is in constant communication with? Himself. An advocate of self-acceptance and self-love, Van Ness has made mindfulness, mantras, and positive self-talk part of his mental health and well-being tool kit. Here, he shares how you can too. SHUSH THE CYNIC When starting a dialogue with yourself, don’t talk yourself out of it. “The hardest thing for me was figuring out how to quiet my inner critic. I would hear that little voice say, This is so stupid. I can’t believe I’m really doing this,” says Van Ness. “But then I realized that inner critic is something we’re used to hearing. That means there’s another part that can be our internal cheerleader.”

PAUSE FOR POSITIVITY Choose to course-correct the convo in your head. “My old cat Larry has been sick, and I started to think maybe it’s because he doesn’t like living between houses, or maybe it’s my lifestyle choices,” says Van Ness. “I stop and turn that negative thinking into positive self-talk: I know how much I love Larry. He has everything he needs. I remind myself I have done all I can in this moment.”

FOLLOW YOUR FEELINGS “When you’re down, you don’t always know what you need. In those moments, ask yourself about the last time you thought something was really cool but didn’t try it.” For Van Ness, that has led to figure skating, gardening, and needlepoint. “Find an aspect of whatever it is that you can do.” PRACTICE MAKES PROGRESS “I’m a short meditator—only 2-5 minutes—but I do it every day. If there’s something really bothering me, I’ll incorporate a mantra. They’re a special tool when I’m feeling flummoxed,” he says. Try these on for size: I am capable. I accept myself completely. Spiced, Grilled, and Swaddled Chicken Thighs with the Works SERVES 4

pounds boneless, skinless chicken thighs (about 6 small)

cup distilled white vinegar

½ cup sugar 1

tablespoon vegetable oil, plus more for the grill

PICKLE THE RED ONIONS Slice 2 red onions crosswise into ⅛ -inch-thick rings. In a small saucepan, heat 1 cup white vinegar, 1½ cups water, ½ cup sugar, and 1 tablespoon salt over medium heat, stirring often to dissolve. Once the vinegar mixture comes to a simmer, remove from the heat and immediately add the onions. Let cool to room temperature. The onions can be made up to several days in advance; they only get better with time.

MAKE THE GARLIC YOGURT Finely grate 1 garlic clove into a small bowl and stir in 1 cup plain yogurt. Season with salt and set aside for serving. MARINATE THE CHICKEN Finely grate 4 garlic cloves into a large bowl. Stir in ¾ cup plain yogurt, the juice of 1 lemon, 1 tablespoon vegetable oil, 2½ teaspoons salt, 1 tablespoon smoked paprika, 1 tablespoon cumin, ¾ teaspoon cinnamon, and ½ teaspoon cayenne pepper and whisk well to combine. Add 2 pounds boneless, skinless chicken thighs to the marinade and turn to coat. Let sit at room temperature for at least 30 minutes while you prepare a grill for medium heat (or heat a cast-iron grill pan over medium heat). If you’re going to marinate them longer (which Baz says you totes should; they only improve with time), cover and keep chilled in the refrigerator for up to 6 hours and pull them out 30 minutes before cooking.

underneath and naturally releases from the grates, 5 to 6 minutes. Pay attention to the hot spots of your grill or grill pan, and move the thighs around accordingly to ensure even browning. Flip the thighs and cook until just cooked through, 4 to 7 minutes longer. (An instant-read thermometer should register 165°F in the thickest part of the thigh.) This will vary depending on how large your chicken thighs are, so keep an eye on temperature more than timing in this case! Let the chicken thighs rest on a plate while you grill the pitas. WARM THE PITAS & SERVE Warm the pitas on the grill while the chicken rests, about 1 minute per side. Cut a lemon into 4 wedges and pick the leaves from 1 bunch of mint. Slice the chicken against the grain into ½-inch-thick strips and serve on a big platter alongside the pitas, pickled onions, garlic yogurt, lemon wedges, and mint for a build-yourown kind of situation.

GRILL THE CHICKEN Once the grill is preheated to medium (you should be able to hold your hand over the grate for about 5 seconds before it gets too hot), lightly oil the grill grates. Remove the chicken from the marinade with tongs, letting any excess drip back into the bowl, and transfer it to the grill. Cook, undisturbed, until it’s nicely charred

Pick up The Pepper Thai Cookbook: Family Recipes From Everyone’s Favorite Thai Mom, and by some culinary miracle, you will find them there, right in Pepper Teigen’s introduction to her Crispy Shrimp Toast recipe. While her lifelong love affair with food and cooking (while growing up in Isaan, Thailand, she made and sold coconut pancakes before school) gives her a major advantage in the skills department, you can make this recipe at home.

Crispy Shrimp Toast SERVES 4 MAKE THE TOAST In a medium bowl, combine the shrimp, egg, cilantro stems, garlic, white pepper, and salt.

Cut each shrimp toast in half again into smaller triangles, if you like, and serve warm with Tangy Cucumber Salad.

Stir until combined. Gently flatten each slice of bread with your hands. In a large skillet, heat the oil over medium-high heat until shimmeringhot. Line a plate with paper towels and have nearby.

MAKE TANGY CUCUMBER SALAD In a small saucepan, combine the sugar, vinegar, 1 tablespoon water, and a pinch of salt. Bring to a gentle boil over medium-high heat, stirring until the sugar dissolves. Remove from the heat and let it cool completely.

Spread 2 tablespoons of the shrimp mixture all the way to the edges on one side of each slice of bread, then press a few cilantro leaves and chile slices into the shrimp so they stick.

Working in batches, place the shrimp toasts filling side down in the pan and cook until browned and crispy, about 2 minutes. Use a spatula to carefully flip over, then cook on the other side until browned, another 2 minutes. Transfer to the paper towels to drain and cool slightly.

In a medium bowl, combine the cucumbers, shallot, bell peppers, and chiles. Add the cooled syrup and toss. Refrigerate for up to an hour, or let it sit on the counter for 10 to 15 minutes before serving (don’t wait too long or the cucumber will lose its crunch). Sprinkle with cilantro leaves before serving, if desired.

LAUREN GALLUCCI AND CLAIRE THOMAS SAY CHERRY TOMATO TARTE TATIN Sweet Laurel, Los Angeles’ gluten-free, dairy-free, refined sugar-free (and paleo- and keto-friendly, of course) bakery, is exploring the other side of the palate with a new cookbook, Sweet Laurel Savory: Everyday Decadence for Whole-Food, Grain-Free Meals. Here, their version of a French classic showcases summer’s finest flavors. Master this never-fail tart dough, and you’ll be set for life in the snack department.

Cherry Tomato Tarte Tatin SERVES 8-10

⅔ pint cherry tomatoes 4

tablespoons olive oil, plus more for greasing

fennel bulbs, stalks removed and bulbs sliced

3 garlic cloves, minced ½ teaspoon grated nutmeg Himalayan pink salt and freshly ground black pepper 1 recipe Savory Tart Dough (recipe below) Arrowroot powder, for dusting SAVORY TART DOUGH (makes one 10-inch crust) 1¼ cups almond flour 1

cup arrowroot powder, plus more for dusting

½ cup cassava flour ½ teaspoon Himalayan pink salt ½ cup unsalted ghee or melted coconut oil 2

tablespoons hot water (110˚to 120˚F)

Preheat the oven to 425°F. Place the tomatoes on a baking sheet, drizzle with 3 tablespoons of the olive oil, and toss to coat. Roast for 15 minutes, or until softened and starting to brown. Remove from the oven and set aside to cool slightly. Reduce the oven temperature to 375°F. Meanwhile, in a large skillet, heat the remaining tablespoon of olive oil over medium heat. When the oil is shimmering, add the fennel and cook for 5 minutes, until the fennel is starting to brown. Add the garlic, nutmeg, and a pinch each of salt and pepper, and cook for about 10 minutes more, until the fennel is tender. Remove the skillet from the heat. Lightly coat a 9-inch cast-iron skillet with olive oil. Arrange the roasted cherry tomatoes in the skillet in an even layer, being careful not to overlap them. Place the tart dough on a sheet of parchment paper. Lightly dust the top of the dough with arrowroot and place another sheet of parchment on top. Using a rolling pin, roll out the dough into a round about ⅛ inch thick, sprinkling with more arrowroot as needed to prevent sticking. Trim the dough so the round is a little bigger than the top of the skillet. Place the dough

over the tomatoes and gently tuck the edges inside the pan. Bake for about 35 minutes, until the crust is golden brown. Remove the tart from the oven and let cool to room temperature. Run a knife around the edge, then invert the tart onto a serving tray. Serve warm or at room temperature. Store leftovers, wrapped in plastic wrap, in the fridge for up to 1 week. SAVORY TART DOUGH In a large bowl, sift together the almond flour, arrowroot, cassava flour, and salt until combined. In a food processor, combine the flour mixture, melted ghee, and hot water and process until fully incorporated. Add the egg and pulse just until a dough begins to form. The dough should be moist to the touch but not sticky or wet. Place a large piece of parchment paper on a flat surface and sprinkle it with arrowroot. Turn out the dough onto the parchment. Pat the dough into a ball, then flatten the ball into a ½-inch-thick disk. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes, up to 5 days before using, or store in the freezer for up to 3 months. Thaw frozen dough in the fridge overnight before using in any tart recipe.

Ice 2⅓ cups all-purpose flour 2¼ tsp. Diamond Crystal kosher salt FOR THE FILLING 4-5 apples (he likes a mix of Honeycrisp and Granny Smith), cored and diced into 1-inch chunks (about 5 cups) ⅓

MAKE THE HAND PIE DOUGH Place the cubed butter in a bowl and in the refrigerator while you prepare the dry ingredients. Fill a tall glass with ice and add at least ½ cup water. In a large bowl, whisk together the flour and salt. Working quickly to keep the butter as cold as possible, toss the butter in the flour mixture and then use your hands and fingers to work the butter pieces into the flour. Continue until all the butter has been thoroughly incorporated and the butter pieces are the size of small peas. Measure out ½ cup of the

ice water and drizzle 3 tablespoons of it into the flour. Using your hands as paddles (do NOT knead or squeeze), simply toss and combine until the flour has absorbed the water. Repeat this process, adding the water 1 tablespoon at a time, until the dough starts to form a ball. Once the dough comes together and feels supple and tacky (but not sticky), knead it three or four quick times to pull it all together. Divide the dough into two equal parts and flatten each into 5-inch-diameter discs. Wrap each portion tightly in plastic wrap and refrigerate for at least 3 hours or overnight.

little flour over the dough. Roll each disc of dough until it is ¼ inch thick. Using a 6-inch round cookie cutter or an upturned soup bowl, cut out 12 rounds. Arrange the pastry rounds on parchment-lined baking sheets. Brush the edges of each round with the egg wash. Spoon ¼ cup chilled apple filling onto the center of each dough round. For each pie, fold the dough up and over the filling to make a half-moon and press lightly to seal the edges. Brush the tops of all of the pies with egg wash and sprinkle each pie with a pinch of sugar. Refrigerate the pies, uncovered, until chilled, at least 15 minutes or up to a few hours.

MAKE THE FILLING In a large bowl, toss together the apples, apple juice, and lemon juice. In another bowl, whisk together the granulated sugar, brown sugar, cornstarch, and salt. Add the sugar mixture to the apples and toss. Add the vanilla and cinnamon and mix thoroughly. Pour the apples into an 8-inch x 8-inch baking pan. Bake for about 20 minutes. Stir the apple mixture to ensure that all the pieces are evenly cooked. Then continue to cook until the apples are softened, but still a little firm at the center, about an additional 25 minutes. Remove the apple mixture from the oven and set aside to cool for 30 minutes before refrigerating for at least 2 hours (or overnight) before filling and forming pies.

Bake the hand pies until they are golden brown, 28 to 32 minutes. Remove from the oven and allow to cool for as long as you can stand to wait. Eat warm or at room temperature. The pies can last a couple of days unrefrigerated and up to 5 days in the refrigerator.

It’s the only way to force those shelves to do their job. Next, pick a direction: north/south or east/west? Then arrange all of the books the same way. Put the smaller books at the top and the larger, heavier ones at the bottom. Make it look as clean and architectural as you possibly can.

Dear Douglas, Because I work so much on Zoom, I have had a lot of trouble associating it with anything recreational. Seeing people on a screen is totally associated with business, not pleasure. Dear Lucy, It’s my pleasure to introduce what I call “the snack cabinet.” When my kids were old enough to tear the corner of a single-serving package of trail mix by themselves, I realized they were ready to fetch their own snacks. I cleared out a cabinet in my kitchen (but it could be a drawer or a dedicated bin in the pantry, as long as they can access it on their own), and filled it with healthy-ish bites: dried seaweed, dried fruits, crackers, raisins, and stuff like that. Stock it with things that already have your parental stamp of approval, and let them help themselves. It empowers them and makes me really happy. Now the only thing I have to worry about is if they are going to ruin their dinner. xo Drew
