behind the scenes Long before I ever imagined working here, I took a tour of the GH Institute. I grew up reading Good Housekeeping and knew that GH tested the products featured in the magazine. But until I actually saw the Labs in person, I had no idea of the scope of the research done here. One of the first rooms on the tour was the GH Beauty Lab, where the chemists were busy testing hair dyes and conditioners. They explained that real hair samples are used to test anything you and I might end up buying or using. They went on to show how they followed packaging instructions and assessed the results: Did color hold up after washing and blowdrying? Was the hair’s texture silkier, smoother, shinier? Could it be combed easily? All these qualities were tested using equipment like the friction-testing Instron, a shine cylinder and more. (Discover the hottest new top-tested products for you in our 2021 Beauty Awards, page 19.) By the end of my tour, I’d seen how ovens were tested — multiple sheets of cookies baked in each oven to check for evenness — and looked inside the climate-controlled room, where the temperature and humidity could replicate that of any part of our country to make sure fridges and other appliances would perform in all atmospheric conditions. I’d seen luggage that had been put through the wringer (almost literally!) and towels that had shrunk, losing inches after just five washes. As you can imagine, I was super-impressed. But that’s not all! When I became editor, I realized I hadn’t seen one of the most important steps of testing, you! After every item is put under the scientific “microscope,” we send the most promising products out to members of our GH+ Club, who help us by doing the final testing in their own homes. This part of the process allows us to provide much more depth in terms of how each product will work (or not!) for you and your family. Obviously every issue of Good Housekeeping is full of products that have been through our rigorous process, but this month we are celebrating our at-home reader testers. 4 Tips for Tidier Spaces

Can I disinfect soft surfaces like sofa pillows and upholstery?

A: Not so easily. EPA-registered spray disinfectants kill bacteria and viruses on hard, nonporous surfaces, like countertops. As for those that can also be used on porous surfaces, like fabrics, they sanitize — this means pathogens are greatly reduced, but not totally eliminated. Things are changing, though. Disinfectants for porous surfaces are now being registered with the EPA for presoaking laundry at home. On items you want to de-germ that can’t be presoaked, like upholstery and mattresses, the easiest way to reduce bacteria is with a product like GH Seal star Microban 24 Hour Sanitizing Spray. Apply an even coat, let set 60 seconds and air-dry. Regular washing with a deep-cleaning detergent removes respiratory viruses like SARS-CoV-2, or you can sanitize laundry in the washer and dryer; your model may offer this cycle, but if not, add a laundry sanitizer like Lysol or Clorox in the rinse cycle.

My nightmare started with a group of young men punching my boyfriend, Kristian, who is Filipino American, in the face. Then the mob circled around my Filipino mother, stabbing her. In my dream, I tried to pick up my phone to call for help, but my hands were stuck. My eyes were fixated on my mom, my ears throbbing from yelling and screaming, but I stood frozen. I woke up shivering, in a helpless panic.

say to one another regarding the situation, our fear or our frustrations. It left me wondering why we have a hard time discussing this terrifying time for our own community when we have been so quick to speak up regarding other social justice movements. Let me be clear: The discrimination Black people face is rooted in an excruciatingly painful history and continues to be perpetuated through systemic racism. I don’t want to take anything away from that, or from the mistreatment other marginalized groups face. But Asian Americans have been dubbed the “model minority” — the nonwhite group perceived as most successful — and that makes it easy for society to downplay racism and violence toward the AAPI community. Few talk about the “perpetual foreigner” stereotype that forever deems Asian Americans “other” and unwelcome in the United States. And no matter how hard Asians work, our pay still lags behind that of our white counterparts. In 2019, for example, the average AAPI

woman was paid 8% less hourly than the average non-Hispanic white man, according to the Economic Policy Institute. None of this is new. Asian Americans have faced discrimination at least since the 1850s, when Chinese laborers came to the U.S. during the California Gold Rush and provided cheap labor. The term “yellow peril” was coined because white laborers feared that the newcomers would dominate the workforce and compromise their own livelihoods. This sentiment led to the passage of California’s Foreign Miners Tax of 1852 , which enacted unfair taxation on Chinese miners, and the national Chinese Exclusion Act of 1882, the first law to limit immigration based on race. It also restricted citizenship for Chinese resident aliens and further encouraged resentment toward Asians, which persists today. The latest wave of hate crimes is reminiscent of the history of discrimination against the AAPI community and compounds the trauma so many of us have experienced throughout our lives.

Fortunately, these terrible things didn’t actually happen. But the hateful acts of discrimination toward the Asian American and Pacific Islander (AAPI) community in the past few weeks and months is far from fantasy. In New York City in Februar y, a stranger shoved a Chinese woman into a newsstand box while she was waiting in line outside a bakery. In the same month, in separate attacks within hours of each other, two elderly Asian women were struck in the head on the subway. On the West Coast, an 83-year-old Filipino woman was randomly punched on a San Diego trolley, and a short time later, an elderly Asian man was pushed while walking in San Francisco, his hip broken in the assault. Asian people have been targeted and killed too, including a Filipino Navy veteran in California and several people in Atlanta. As a Filipino American, these stories, combined with fears about my own safety and that of my loved ones, have left me feeling incredibly lonely. So many devastating hate crimes have happened within such a short amount of time, but almost no one — not my friends or even my family — is talking about them. Sure, a handful of Asian-American influencers are starting to speak up, and I see some Asian friends sprinkling related posts between funny memes and cheese board photos. But offscreen, we have little to

WHY ASIANS STAY SILENT

Family Time “Before she retired, my mom was a nurse who ran after patients all day and my sisters and me at night,” says Shanon (above, with her mother and her sisters). “My work ethic comes from her.”

Maybe we don’t speak up because many of us, as children of immigrants, were taught to keep our opinions and feelings to ourselves. “Work hard,” my dad would tell my two sisters and me when we were in elementary school. “Don’t complain about things that aren’t worth complaining about,” my mom chimed in. This was the way to success and achieving the American dream. We were lucky to be in the United States, away from poverty and corruption in our motherland overseas. It’s hard to talk about the pain, the fear, the discomfort and the confusion we’re all feeling. Asian families typically don’t talk about their emotions at home because their parents don’t teach them how. But Asian Americans have always been subjected to ridicule. A lot of Asian kids, whether they’re immigrants, children of immigrants, adoptees or only partially Asian, can recall at least one instance in their lives when another kid pulled their eyelids back and lobbed a “Ching-Chong” jeer.

I was born and raised in New Jersey, but I have always been that one brown girl with black hair in a sea of blue-eyed white classmates and colleagues. I’ll always remember the girl who constantly told me my Filipino lunch “stunk up the place,” how older white men have told me I have an “exotic look” and the countless times someone has asked me whether I’m Chinese or Japanese. Growing up, I felt embarrassed about my parents’ cooking, which I adored, and asked for money to buy lunch at school. To this day, I’m still confused about whether or not I should thank those men for calling me “exotic,” given that they say it in such a polite tone. And I actually feel as if I am giving the wrong answer when people ask if I’m of this or that heritage, because the truth is probably something they’re not familiar with. Frankly, it can be much easier to laugh quietly along w it h t he com menter s t ha n to say anything at all. Perhaps some Asian Americans stay mum because they feel that the fight isn’t theirs. Non-Asians might not know this, but there has always been a very real M AY 2 0 2 1 G H

Show Your Support Let people in the AAPI community know that their fear, trauma and voices are valid. Here’s how to be an ally: Check on your Asian friends , colleagues and neig hbors . It’s a sensitive topic, so it might be difficult to find the right words. A simple “Hey, I heard about the recent hate crimes, and I just want to let you know I’m here for you” is better than nothing at all.

Start the conversation with your non -Asian friends and family.

It’s crucial for everyone to elevate these stories. This isn’t an Asian fight — it’s a human fight. constantly worried about protecting their elders — and themselves — from getting punched on the way to work or having their livelihoods compromised through their having to close up shop because of prejudice. Given these immediate fears, you might understand why speaking out isn’t high on the agenda for them. That’s why it’s absolutely crucial for everyone, regardless of cultural identity, to bring attention to the stories of the incidents happening now. Most of the people who actually speak up about the topic are Asian, so we’re left with a constant echo chamber that bounces our voices back to other Asians. But we all have to remember that this isn’t an Asian fight: This is a human fight.

Awareness is key. Ask your parents whether they’ve heard about the recent wave of anti-Asian hate crimes, or bring it up while in conversation with friends.

Speak up when you hear microagg ressions . Examples include someone asking an Asian person where they’re from or complimenting them on their “perfect English.” This insinuates that the Asian person doesn’t belong. Using words like “Oriental” and “exotic” to describe someone or something Asian is outdated, inappropriate and downright offensive. As for saying all Asians look alike, just don’t go there. If you ever witness these or similar incidents in public or at your workplace, speak up for the person being targeted. There is strength in numbers.

Amy Orr was watching TV one night some time ago when she felt a stabbing pain in her upper abdomen. Still hurting a few days later, she went to the emergency room, where doctors suspected gallstones. But tests were inconclusive, so they gave her pain meds and sent her home. The pain vanished that night, but it showed up again and again for months. She wound up at the ER dozens of times, and nobody could figure out why. As time went on, she lost more than 70 pounds and so much muscle she could barely walk. “I was crying all the time because it was debilitating in every way: physically, mentally and emotionally,” recalls Amy, a 36-year-old editor in Waterloo, Canada. “I was so afraid it would never go away, that I would just have this crushing pain for the rest of my life. And it was especially upsetting to feel like my doctors didn’t care.” After a year of torment, another set of physicians finally diagnosed the infected gallbladder others had missed. Amy had surgery, and the pain ceased. Unfortunately, that wasn’t the end of Amy’s troubles. She often had nightmares about being stuck in situations in which she was being hurt in ways she could not control. She became obsessive about regulating her diet, sleep and exercise in the hope that taking charge would ward off pain. And any pain — even a paper cut—launched her into a shaking, hyperventilating panic attack. “When I mildly burned my hand on the stove, my husband had to stop me from calling an ambulance, as I thought the pain from my hand meant the abdominal pain had come back and I was going to die,” Amy says. “My reactions were irrational.” When she told her therapist, the woman said Amy was suffering

from post-traumatic stress disorder, or PTSD. “I thought, No, that’s very dramatic. You only get that from being in war or being violently attacked,” Amy says. But as her emotional issues intensified, she realized she could trace them to her year of pain and anxiety. After months of therapy, which involved becoming aware of her PTSD symptoms and relearning how her body functioned, she was able to get back to normal.

Trauma is more common than you think Trauma has always been part of life, but with mass shootings, horrific hurricanes and the #MeToo movement that brought sexual assault into the mainstream conversation, we’re seeing how intense emotional experiences can haunt people years later. Many experts think the COVID-19 pandemic and other scary current events will have long-lasting traumatic effects as well. The influential reference on psychiatry known as the DSM-5 essentially says that only people who are seriously injured, have a near-death experience, witness a death or experience sexual violence can have PTSD. However, many of those who study trauma know that it can result from many different

situations. Any event (or series of events) that leads you to view your life in terms of “before” and “after” can cause severe mental-health effects, says Rachel Yehuda, Ph.D., a professor of psychiatry and neuroscience at the Icahn School of Medicine at Mount Sinai. And something like that is likely to happen to each of us at some point, says James Gordon, M.D., founder and executive director of the Center for MindBody Medicine and a clinical professor of psychiatry and family medicine at Georgetown Medical School. “Being in a stressful or abusive relationship or work environment is traumatic. So is losing someone you love, having a serious illness or facing discrimination,” says Dr. Gordon, the author of The Transformation: Discovering Wholeness and Healing After Trauma. “Sometimes you move through a trauma with no residue, but other times your reactions continue long after the threat is over.” Years ago, people who faced harrowing shocks were expected to “get over it.” Soldiers came

back from war and never talked about what they had seen. Women who’d delivered stillborn infants were advised to quickly have another child. Now there’s a growing realization that to recover properly, you must allow both your mind and your body to process what happened and accept that in some ways you may be changed by it forever, Yehuda says.

How trauma affects your body Some symptoms of trauma, such as anxiety, nightmares, insomnia and/or depression, can show up immediately. But if not properly treated, a traumatic experience can put you at risk for chronic physical diseases as well. In fact, a study in JAMA Internal Medicine found that women whose first sexual experience was being raped were more likely to suffer from endometriosis and pelvic inflammatory disease later in life than other women. Dr. Gordon has seen trauma survivors develop heart disease, autoimmune disorders and digestive problems they might

Being in a stressful not have gotten otherwise. Plus, people who live through a distressing ordeal are more likely to abuse drugs or alcohol, suffer from an eating disorder or even die by suicide. All this is because trauma has a powerful impact on the nervous system. We’re all familiar with the fight-or-flight responses to stress that help us either battle or bolt from an enemy, but a traumatic event ramps this up to an extreme level. Later, as you remember the situation or if there are ongoing incidents (e.g., seeing an abusive boss every day), the body revs back up, which can lead to inflammation and other damage. If neither fighting nor fleeing is possible, experts now know that another possibility is freezing. Picture a mouse who bolted away from a cat but now is caught in its jaws. The freeze response produces painnumbing endorphins and helps the animal (and us humans) psychologically detach or dissociate from the terror. This is why you might hear someone say they “left their body” during a horrific situation. Excessive stress responses during a trauma can also prevent the memory of that episode from being stored in the usual logical way. Instead, fragments are input piecemeal. This is why someone describing a sexual assault may not remember what they were doing right before the attack, but can describe in detail the pitch of the assailant’s voice or how their breath smelled, says Dr. Gordon. It’s also why similar sensations (like minor pain, in Amy’s case) can make the brain overreact.

In his book The Body Keeps the Score, psychiatrist Bessel van der Kolk, M.D., the founder and medical director of the Trauma Center in Brookline, MA, says that such protective amnesia likely explains why so many adults suddenly remembered having been abused by priests when they were children after the church scandal went public. Rachel (last name withheld), a yoga instructor in her 50s, is familiar with this kind of repressed memory. Throughout her life, Rachel had occasionally felt depressed, though she kept telling herself her life was good. She also frequently felt insecure and irrationally unconfident about her body and had difficulty trusting people. Two years ago, after she inexplicably burst into tears in a doctor’s office, she decided to see a therapist. That

was when she began to recall how her mother had raged at her without warning, screamed at or struck her and regularly called her a failure and a disappointment. “It’s taboo to think badly about your mother, so I didn’t,” Rachel says. Over time, working with the therapist and writing down her story to take possession of it, she was able to release her depression and self-doubt. This doesn’t happen overnight — and it may take trial and error to find the right treatment—but effective therapies are available. It’s also important to remember that although overcoming trauma can be painful, it shouldn’t be a burden you carry alone. With help, one day you will probably look back and think, I survived that, and I am strong and can handle whatever comes my way. M AY 2 0 2 1 G H

Myths A B O U T Your Eyes Don’t believe these common misconceptions about vision. Experts weigh in to help you see the truth clearly. by K ATE RO CKWOOD

myth carrots are the key to seeing better. Nope: There’s no one specific food that will improve your vision, but there are a wide variety of dietary considerations, says Chris Easley, O.D., of the Milan Eye Center in Alpharetta, GA. Carrots are well known for containing carotenoids, which studies show can reduce your risk of developing cataracts and macular degeneration. However, there are other carotenoid-rich foods. Broccoli, leafy greens, corn and eggs are high in lutein and zeaxanthin, carotenoids that have been found to help with visual acuity (like the ability to distinguish small letters at a distance), help stave off macular degeneration and reduce eye stress from glare and bright light. On top of all that, omega-3 fatty acids (found in foods like salmon, sardines and mackerel) are important for good eye health, adds Easley.

myth If you’re seeing fine, it’s OK to put off an eye exam. It’s actually a bad idea. Issues like glaucoma, macular degeneration and diabetic retinopathy can sneak up without

symptoms, which is why regular eye exams are necessary to spot problems before they get too bad, says Raman Bhakhri, O.D., an associate professor at the Illinois College of Optometry in Chicago. All three diseases can cause irreversible harm to eyes, but catching them early can potentially stop or delay damage. Eye exams also offer clues about the health of your blood vessels, nerves and connective tissue, which can give warning signs of brain tumors, skin cancer, diabetes and high blood pressure. Aim to get a comprehensive exam at least every two years between ages 40 and 64 (depending on risk factors like diabetes or high blood pressure) and every year once you turn 65.

myth To remove eye debris, you should make yourself Cry. Shut off the waterworks — crying is not the best or fastest way to get an irritant out of your eye. If blinking and naturally occurring tears don’t take care of an eyelash or a fleck of dirt, says Bhakhri, you need to step up your efforts, especially if you’re experiencing heavy tearing, redness or light sensitivity from something in

your eye. Immediately flush the eye with medical-grade eyewash (a sterile saline solution found at drugstores) if you have it, or else with clean water. If you get it out and your eye is no longer red, watery or irritated after 20 minutes, you’re probably in the clear, but see an eye doctor especially if the redness returns, your eye hurts or you have trouble seeing. If something is actually embedded in your eye or you get a chemical in it, seek medical care immediately.

myth The point of sunglasses is to prevent squinting. Avoiding crow’s feet is just a bonus of wearing shades. The health-related reason to do so is that over time, UV exposure accumulates, which increases your odds of cataracts, macular degeneration and skin cancer around your eyes, Bhakhri says. In fact, up to 20% of cataracts may be caused by UV exposure, and according to the Skin Cancer Foundation, eyelid skin cancers make up 5% to 10% of skin cancers. There’s a lot of hype and confusion around the sweet stuff, which many of us think of as those plain white crystals in a bowl. In fact, sugar comes in many different forms and goes by dozens of aliases. You probably know we eat too much sugar, but are some types worse for your health? And how much is too much in a healthy diet? Here’s what you need to know about living the sweet life.

Sugar 101

Don’t overthink it

All sugars are simple carbohydrates that provide the body with a quick and easy source of energy. Some occur naturally, meaning they are part of foods — fructose, for example, is in fruit and root vegetables, and lactose is in dairy products. Because of what they’re within, naturally occurring sugars come bundled with lots of good-for-you nutrients (like vitamins, minerals and fiber). Added sugars, on the other hand, are ones food manufacturers put into products to improve their flavor or extend their shelf life. While they have the same molecular makeup as naturally occurring sugars, because added sugars are primarily found in heavily processed foods and drinks (which tend to be nutrient-poor), they’ve become public enemy number one in recent years. They also don’t fill you up or offer other nutritional benefits, so it’s easy to eat way too much overall. In the standard American diet, top sources of added sugar include soda, candy, cakes, cookies, pies and fruity drinks like ades and punches.

My biggest pet peeve as a dietitian is when people get preoccupied with the amount of sugar in, say, grapes or carrots. Practically all produce is packed with fiber and water that keep you full as well as tons of vitamins and minerals that are good for you, so don’t even think about sugar content when it comes to these foods. The only type of naturally occurring sugar most of us should limit is that from fruit juice, which often is heavily processed and usually is stripped of the fruit’s satiating, energy-stabilizing fiber. When experts advise people to eat less sugar, they’re talking about added sugar. The American Heart Association (AHA) recommends no more than 25 g (6 tsp) of added sugar daily for women, but American adults consume an average of 77 g per day. This excessive consumption can lead to blood sugar spikes, weight gain and increased risk of chronic disease. Note the word “excessive” — no one is saying that a treat every so often is bad. With sugar, moderation is what’s important.

Sneaky Names for the Sweet Stuff

Here are some simple solutions to help you enjoy sugar in moderation: DON’T

DO

Keep an added-sugar log for a week. This can help you identify the biggest sources of it in your diet — just look for “added sugars” listed under total sugars on the nutrition facts panel. Swap in naturally occurring sugars whenever possible. Instead of jelly on your PB&J sandwich, for instance, mash up 1⁄2 cup of raspberries for a sweet jam-like spread. Scan the ingredients. Ingredient lists go in order of weight, so look for sugar to be toward the end. Care for your whole self. Eating three balanced meals daily, drinking enough water, getting seven to nine hours of sleep and moving your body can keep your blood sugar levels stable, helping to ward off sugar cravings.

Assume “organic” is healthier for you. An option like organic coconut sugar may retain a few more vitamins and minerals than refined sugar, but it’s still just sugar, with the same gram count as any other kind. Go cold turkey. Reducing your intake of added sugar is great for your health, but aim to do so gradually and sustainably. There’s no need to quit entirely. In fact, if you restrict yourself too much, it could eventually backfire and lead you to overeat “forbidden” sugary foods. Overdo it on artificial sweeteners. They are typically 200 to 600 times as sweet as regular sugar, which can hyperstimulate your taste buds. A little bit is OK, but practice moderation with the artificial stuff too.

Look for “100%.”

Get wise to marketing.

When a bread’s label shows 100% whole wheat, 100% whole grain or 100% sprouted grain, you can feel confident that no refined flours are masquerading. This applies to burger buns, sandwich thins and wraps too.

Never trust labels that say “made with whole grains” or “multigrain.” These terms can be code for hidden refined flours and fillers. “Harvest” or “country” options might sound healthy but often shroud sneaky sources of added sugars.

Check fiber. Fiber is the second most important thing to look for on a bread label. I never buy bread that has less than 2 g of fiber per slice. Foods that are higher in fiber promote healthy digestion and will help keep you feeling full and satisfied.

Scan sugar and sodium.

Don’t assume that “light” bread is healthier. A “light” loaf might have fewer calories per slice, but that’s often because it’s sliced thinly. Always check how much one slice weighs in grams when comparing to other varieties.

Avoid bread with more than 2 g to 3 g of sugar or 140 mg of sodium per slice. And be careful with dark slices: Companies often add molasses or caramel coloring to make breads appear more nutritious and hearty.

Both! My favorites are pillows that blend pieces of foam with clusters of soft fiber, because they have a supportive yet plush feel. Most important, buy a pillow that cradles your neck properly to stay aligned with your spine. Choose higher pillows for side sleepers, flatter styles for stomach sleepers and in-between ones for back sleepers.

For the bed you sleep on daily, I recommend a duvet and a duvet cover. It’s easier to wash just the cover instead of the entire comforter on a regular basis. Plus, comforters tend to be more styledriven, whereas duvet inserts are focused on quality construction and offer more choices of fill materials and warmth levels.

No need to choose! It’s a great time to buy a mattress because there’s been so much innovation. I’m a big fan of newer hybrid models that combine metal coils with memory foam or latex. Coils provide support and airflow, while foam offers comfort. After sleeping on one, I will never go back to a bed that is either 100% coils or all foam.

The first question I pose to anyone when they ask me for a vacuum cleaner pick is, what surfaces will you be cleaning? For mostly carpeted homes with few stairs, you want an upright. These are the best deep cleaners. If you’ll be vacuuming mostly bare floors and low-pile carpets or area rugs and stairs, a canister wins: It has better versatility.

Picking up dirt is only half the story with vacuums. If you want to make sure all that grime doesn’t just get recirculated, you need a vacuum with a HEPA (highefficiency particulate air) filter. It will keep dust trapped inside, not spew it into the air where it can trigger asthma and allergies or settle back onto floors and furniture.

GH Cleaning Lab tests show that both clean equally well, but I still prefer a vacuum with a bag. A key benefit: You avoid the potentially messy dust-and-dirt bomb of emptying a bagless model. A bagged machine also stays cleaner. Just remember to keep extra bags on hand so you never run out.

Let measurements be a guide, but be prepared to try on multiple band and cup sizes before you find your best fit.

Some people still prefer an underwire, but it’s not shocking that others have ditched it as part of their work-from-home routines. A: If you’ve ever tasted a steak that practically melted in your mouth, chances are it was cooked sous vide. And though the term, French for “under vacuum,” may sound elaborate, the style is simple enough for home cooks to master and guarantees that you’ll rarely dry out a protein. All you need is a little time — and a sous vide machine. The steps are straightforward: First, place your sous vide in a large pot of water and set the temperature. Put meat, fish or veggies in a bag along with spices, herbs or other aromatics. Remove as much air as possible from the bag, then seal it and submerge it in the preheated water. Items inside the bag cook gently while the seasonings and natural fats impart delicious flavor. A quick sear after cooking will give protein a rich crust that enhances its overall texture. Sous vide may not be suitable for a quick after-work dinner, but the mouthwatering results are worth showing off any time you can plan ahead. A: The best choice depends on what you want to cook. If you’re looking to quickly air-fry vegetables or fries, go for a traditional basket-style air fryer, which has a drawer with a removable basket or tray inside that’s perfect for items needing to be tossed during cooking. This type can also be used for proteins, but its surface area is usually smaller than that of an air fryer oven or an air fryer toaster oven. If you’re keen on frying different foods at the same time — say, salmon and Brussels sprouts — opt for an air fryer oven, which has multiple racks. In our tests, this set’s ability to heat evenly and maintain temperature was so exceptional that it’s our go-to pick in the Lab. Its flush rivets make cleanup fast and easy. It fell short of the quickest boiling time by only a few seconds.

Our analysts noted that the “Deep Cut” skillet heated evenly and seared a nice steak, while the short, wide saucepan brought water to a boil quickly, likely because of its shape. Long handles stayed cool enough to touch for all tests and were comfy to grab.

Eggs released from the slick surface with barely a push from the spatula, and sauce did not stick to the bottom or sides of the saucepan in our scorch test. Our experts found good browning on steak. Cleanup required just a wipe.

1. Cut cauliflower into florets, discarding tough inner core and leaves. Working in batches, transfer cauliflower to bowl of food processor. Pulse until cauliflower resembles rice, about 15 sec. (be careful not to overprocess, or cauliflower will get mushy). Set aside, then repeat with remaining cauliflower (you should have about 4 cups total). 2. Heat 1 Tbsp oil in large cast-iron skillet on medium-high. Add pepper, scallion whites and ginger and cook, stirring, 2 min. When Mrs. Schueler, a fourth-grade teacher from Indiana, checked her screen in August to see whether all her students were present, she quickly realized she had an extra attendee. The students had been taking a break, and when they returned, a feline was perched on one child’s head. “It was a really cool cat, but I said, ‘Right now it’s time to learn, so let’s take the cat off your head,’ words I never thought would come out of my mouth,” she says. She let everyone have a giggle, though, as “taking a moment to acknowledge the laugh builds class community.” VIDEO-BOMBED!

While some children steal their teachers’ hearts with a furry friend, what happens when a kid takes over the

teacher’s screen? Mrs. Keckler, an elementary school teacher in Kentucky, says one of her fourth graders politely asked in September to share something with the rest of the class. Wanting to encourage connection among classmates, she agreed. Then, Mrs. Keckler says, “up popped Rick Astley.” The class had been “Rickrolled.” (“Rickrolling” is an Internet joke in which pranksters trick others into watching Rick Astley’s 1987 music video “Never Gonna Give You Up.”) Mrs. Keckler’s student had figured out how to screen-share to offer the class some ’80s nostalgia. “I thought it was the funniest thing!” she says. “We have to show the students we like to laugh too.” DISTRACTED DANCER

Sometimes teachers don’t have a choice and kids just act like kids. Mrs. Jones has been a dance teacher for close to 30 years, and when the pandemic began, she moved her classes online — but she didn’t count on having one of her dancers move entirely off camera. To limit distractions inside, the dance student decided to take her device outside. “The next thing I know, she’s off playing basketball,” Mrs. Jones says. She watched her student doing cartwheels, shooting hoops and chasing the family dog. “My dancer completely forgot she was on Zoom,” she says. “I was calling out, and finally she returned, but it was hysterical to watch feet run past the camera!”

DISCO BALL BACKGROUND

When Mr. Risenhoover is faced with the zaniness online teaching throws his way, sometimes he just rolls with it. During another class, he was giving instruction and looked up to see “a disco ball and flashing lights in one student’s room.” Finding that “pretty funny,” he continued with the lesson. When he glanced up again, a second student had lights flashing. Eventually all five students joined in, and it was disco dance party time. “School is a lot more than facts and figures,” Mr. Risenhoover explains. “It’s also the social part. Learning has to occur, but whenever events like that happen, I try to take advantage of it.” It can be hard for kids to engage socially in a virtual space, which is why when the funny happens, teachers like Mr. Risenhoover support the connection it creates. As Mrs. Schueler, who had the unexpected cat-as-ahat student, says, “Acknowledging the humor helps me get to know the kids on a personal level through the computer.” This serves to create a trusting environment in which teachers are helping their students have laughter in their lives at a time when they particularly need it.

During the pandemic, our intrepid teachers have sharpened their number 2 pencils and gamely created lesson plans for in-person students, remote learners or a combo. This has doubled the workload, not to mention the stress level, of many educators. Luckily, it hasn’t dampened their senses of humor. Videoconferencing platforms like Zoom and Google Classroom have been a staple for remote learners, and as the school year winds down, teachers are celebrating their virtual classrooms by pausing to enjoy funnier moments students have brought to this space.

Basketball playing isn’t the only danger of moving a class outside. When his class met on National Camp at Home Day, Mr. Risenhoover, a high school teacher in Texas, asked his students to find a “favorite place outside that’s safe and distant, with strong access to Wi-Fi.” When class resumed, Mr. Risenhoover says, “I look at my screen, and I see that a student is in his hot tub.” Most of the other students had chosen outdoorsy locations like porches, backyards and even a swing. “Since the rules were to show up in your favorite place outside with Wi-Fi, he met the criteria,” says Mr. Risenhoover. The class noticed the student’s unusual location, but everyone “just carried on” with the lesson, he says. “It’s not what you would expect, but the first thing I thought was, I would have done that.”

PROTECT YOUR PET FROM PESTS Even indoor cats and four-legged city slickers can pick up fleas and ticks. Here’s what to know and how to take preventive steps. by LIZZ SCHUMER PESTS CAN BE FOUND IN URBAN AND SUBURBAN AREAS TOO. Ticks hang out in tall grass, piles of leaves and even overgrown suburban gardens. Fleas can hitch a ride home on your pet from the groomer or doggy day care and can linger on your clothing. “Plus, most ticks spend at least some of their lives on wildlife hosts, such as rodents or deer, which are increasingly found beyond forests and wilderness,” explains Christine Cain, D.V.M., an associate professor of dermatology at the University of Pennsylvania School of Veterinary Medicine. Because completely preventing pets’ exposure can be difficult, experts recommend pest protection for all dogs and cats, even if they never set paw outdoors. COMMIT TO REGULAR TREATMENT. Both fleas and ticks can appear pretty much any time, not just in the summer, says Erika de Papp, D.V.M., of MSPCA-Angell in Boston. “Ticks are active at any temperature above freezing, and even if you have only a few days above, you can still see them,” she explains. “From my perspective, there’s no downside to consistent treatment all year.”

BE WARY OF OTC AND NATURAL PEST REMEDIES. Good over-the-counter wearable, topical and oral treatments exist, but it’s best to trust your veterinarian’s recommendation about treatment. Tell them if your pet swims or is bathed often, as that can make topical products less effective. If you live in an area with a known high tick prevalence, your vet may even advise doubling up on products. Resist the allure of home remedies, though. “It is important for pet owners to remember that ‘natural’ does not always mean ‘safe’ or ‘effective,’ ” Cain cautions. Treatments like apple cider vinegar and brewer’s yeast are just plain ineffective, while essential oils can irritate pets’ skin, eyes or digestive tracts. CHECK FOR TICKS OFTEN. Even after a walk around the block or an afternoon on the porch with your pet, check them (and yourself!) for ticks. Inspect their face, ears, legs, armpits and groin, as well as between their toes, for a black dot about the size of a pencil mark. If you find one, the CDC recommends using fine-tipped tweezers to grasp it as close to the skin as possible. Steadily pull it up and off your pet without twisting or squeezing. After you remove the tick, clean the area and your hands with rubbing alcohol or soapy water. Then dispose of the tick by dousing it in rubbing alcohol, placing it in a sealed container, wrapping it with tape or flushing it down the toilet.
