It happens every year: At the height of summer, my work life is suddenly consumed with talk of twinkle lights, evergreen boughs and brilliant baubles. When I first started in the magazine world, where content is produced several months in advance, this off-season focus on the holidays was jarring. But over the years, I’ve come to embrace and even await it. Who doesn’t want the good vibes to last and last? In that vein, I proudly present our annual Holiday Decorating issue, dedicated to my fellow early celebrators. Tastefully trimmed, our feature homes promise to inspire with unique covetable Christmas looks. In an expansive yet intimate Blainville, Que., home, designer Jean Stéphane Beauchamp sets the mood using sophisticated colour and handmade touches (see “Festive Special,” page 84), while designer Denise Ashmore highlights the natural side of the season in her own modern-meets-earthy Vancouver space (“Winter Wonderful,” page 70). IMPORTANT? My entire business is based on handmade – I can’t imagine doing it any other way. Customers connect to the human touch in our products. The slight variations and irregularities possess warmth and character.
Q TELL US A BIT ABOUT YOUR PROCESS. Each piece begins with clay imported from Limoges, France. Our team adds pigment developed and mixed
in-house in slip form for colour depth. Next, they cast, hand fettle and trim each piece. Clear glaze is then applied to the interior, while the exterior maintains an eggshell finish after firing, a process by which we heat each piece to 1,230°C to vitrify it. From start to finish, each item takes 48 hours and goes through 10 pairs of hands.

cups all-purpose flour tsp baking powder cup unsalted butter, softened cup granulated sugar tsp coconut extract large eggs cups 3.25% milk 400-ml can coconut milk 300-ml can sweetened condensed milk tsp vanilla bean paste or seeds from 1 pod cup whipped cream, for serving cup toasted coconut shavings, for garnish
DIRECTIONS Preheat the oven to 350°F. Butter and flour a 9-inch square baking pan and line the bottom with parchment paper. In a large bowl, stir together the flour and baking powder; set aside. In a stand mixer, beat the butter and sugar until fluffy; add the coconut extract. Add the eggs one at a time, beating well after each addition. Add the flour mixture to the butter mixture in two additions, beating until just combined. Scrape the batter into the prepared pan, smoothing the top. Bake until the top is golden and a cake tester inserted into the middle comes out clean, 27 to 30 minutes. Poke the cake all over with a bamboo skewer; let cool for 15 minutes. In a medium bowl, stir together the 3.25% milk, coconut milk, condensed milk and vanilla bean paste. Pour half of the milk mixture over the top of the cake. Let the liquid absorb, then pour the remaining milk mixture overtop. Let the cake cool completely and refrigerate until ready to serve. Add a dollop of whipped cream and garnish with toasted coconut shavings after plating. It’s even better the next day! STYLEATHOME.COM NOVEMBER 2018

Check in to your hotel, then set out on foot to experience that California sunshine firsthand. People say no one walks in Los Angeles, but strolling the streets of the city of Beverly Hills is a pleasure. Make your way to the Golden Triangle, the city’s unsurpassed shopping district bordered by South Santa Monica Boulevard, Wilshire Boulevard and Canon Drive, with Rodeo Drive at its heart. Here, crazy-expensive boutiques like Harry Winston, Chanel and Cartier sit side by side with more mainstream fare, such as Saks Fifth Avenue, Z Gallerie and Paper Source. I spent more than an hour browsing through & Other
Stories, a scrumptious fashion and accessories store owned by the H&M Group. Stop in at some of the many gourmet food shops in the area, and savour everything from cheese and macarons to cupcakes and candy. Still hungry? Grab a table at Sharky’s Woodfired Mexican Grill for a leisurely lunch and watch the haute world go by. When you’ve had your fill of seeing and being seen, head back to your hotel for a dip in the pool and then dress up for dinner (nothing too fancy – California is very casual). End the day with a drink at the one-year-old Waldorf Astoria’s The Rooftop by JG (3) bar, which offers spectacular views over Beverly Hills and Los Angeles as the sun sets.
DAY 2 Start your morning in healthy California style with a cycling tour of Beverly Hills led by the pros at Bikes and Hikes LA. The electric Celebrity Bike Tour covers all the city’s best spots, from Greystone Mansion, with its incredible gardens and grounds, to the whimsical storybook Spadena House (affectionately known as the Witch’s House) to the Pacific Design Center. For lunch, make a reservation at the not-to-be-missed iconic Beverly Hills Hotel (2) (don’t forget to take a selfie underneath its famous sign (1)). Order either the signature McCarthy Salad (5) poolside at the Cabana Café or a burger and fries in the Polo Lounge or on the patio.

BOLD Holidays – or Beverly Hills Open Later Days – starts in November; enjoy special events and longer shopping hours. The whole storied hotel is beyond lovely; it’s the perfect place to imagine yourself rubbing shoulders with past celebrity guests like Frank Sinatra and Elizabeth Taylor – that’s if you’re not already spotting current stars at a neighbouring table.

Stroll across the street from the hotel through the tranquil Will Rogers Memorial Park, and then continue walking down North Beverly or North Canon Drive underneath the iconic palm trees (8). Both roads meet Santa Monica Boulevard at Beverly Gardens Park, a long strip of verdant green space dotted with fountains and paths. Across the road is the Beverly Hills Civic Center, housed in a chic Spanish Revival meets Art Deco meets Post Modern complex of buildings adorned with stairways, balconies,
gardens and palm trees. Take a few minutes to contemplate city hall’s grand eight-storey tower, with its blue-, green- and gold-tiled dome and gilded cupola (6). When you’ve worked up an appetite, walk over to Citizen (9), a quirky ’60s-inspired eatery. Opt for a cocktail (I’m partial to the Violette) in the open air lounge before ordering your meal. Follow up all that good food with a relaxed ramble back to your hotel.
DAY 3 Another sunny California morning beckons. Style lovers will want to rent or hire a car to tour the design district in West Hollywood, just east of Beverly Hills. Start off along Melrose Avenue, stopping in to view the exhibits at the Museum
4 of Contemporary Art (MOCA Pacific Design Center) and browsing at spots like the Jasper Showroom, an outpost of Michael Smith’s design empire, and Rose Tarlow Melrose House, to see the venerable designer’s furniture and textiles. If you’re here on a Sunday, don’t miss Melrose Trading Post, an outdoor market held on the grounds of Fairfax High School. Once you’ve had your fill of vintage treasures, head south to scope out Heath Ceramics (7) on Beverly Boulevard. I was in this store for at least an hour, figuring out how many pieces I could fit into my carry-on to take back home. (The answer? Three.) Go next door to Rolling Greens Home & Garden (4), hands-down my favourite shop here – its lush decor had me all in a swoon. When you

Hop in your transport and head west along Beverly Boulevard to Robertson Boulevard; in the area you’ll find RH Modern, Restoration Hardware’s contemporary design extension, as well as a number of other modern furniture stores. Carry on to Mayfair House for upscale accessories, Ann Sacks for oh-so-chic tiles and Foundry for luxury lighting. Stop for a blood orange lemonade at – where else? – Lemonade. You’re now on the border of Beverly Hills, so make your way back to your hotel and relax by the pool until it’s time to pack up your purchases and head home.

than a long-time friend to capture your essence in decor? This lucky homeowner had her former elementary school buddy, designer Jessica Waks, to call on when she and her husband bought this midtown Toronto new build in 2015. “They like to entertain, so having a beautifully appointed formal living and dining space was important to them,” says Jessica. “The house has handsome finishes and amazing ceiling height, but it was very neutral. My job was to add personality and colour befitting this vibrant and stylish young couple and their two kids.”
STAR OF THE SHOW Loaded with treats, presents and cocktail-making accessories, the marbletopped gold-toned console is primed for pre- and postdinner entertaining. A DIY Star of David wreath (made with twigs, faux greenery, floral wire and spray paint) is a festive focal point that draws the eye to this welcoming vignette.

Offering extra seating, the X-base benches below feature navy piping that relates to the blue tones of the sofa and rug. “We really put a lot of thought into the selections, and I think it shows,” says the designer.
OFF THE WALL “It’s fun to look beyond typical store-bought paper,” says Jessica, who used remnants of a blue leopard-print Thibaut wallpaper in addition to retro-feel metallic gift wrap. “Gold satin ribbon ties it all together,” she adds.

TRADITIONAL TASTES A Parsons-style table, contemporary artwork and a mod chandelier lend the dining room’s more traditional elements a fresh feel. To tie the holiday decor into the space’s existing scheme, Jessica cleverly utilized a length of the same Beacon Hill fabric that edges the custom drapery as a table runner.
For the palette inspiration, Jessica looked no further than her pal. “She’s a striking redhead who wears jewel tones so gracefully,” says the designer. “So I joke that we chose her favourite hues – the ones she’s been dressing in since we were 10 – which are deep blues and greens.” An opulent sapphire and emerald scheme quickly emerged, displayed on classic furnishings, such as spotted wood-framed slipper chairs and nailhead-trimmed rounded dining chairs. Mid-century-feel
PERFECT MATCH In luxe aged brass, the standout linear hanukiah suits the space’s traditional-with-a-twist decor well. “And the blue-flecked candles reminded me of the spotted slipper chair fabric, so we had to use them!” says Jessica.
GOLD, GLITTER, GELT Hanukkah-themed sugar cookies and prettily decanted gelt (foil-wrapped chocolate coins) complement the room’s chic scheme.
LIGHT MY HANUKIAH “Elegant ready-made Hanukkah decor is not always available at stores,” says Jessica. “So it forces you to think outside the box and make special sophisticated elements by hand.” Bedecked in kraft paper, bits of wallpaper (the same style used to wrap some of the gifts) and washi tape, matchboxes strike a pose by the hanukiah.

LAVISH LIVING The living room is dressed to impress with jewel tones and gold touches, making easy work of holiday decorating.
elements like the owners’ existing Parsonsstyle dining table and a mod chandelier introduce a current feel, while a healthy dose of gold – particularly in the form of geometric brushed brass table bases – brings on glamour. With Hanukkah on the horizon, this social family had a few dinner parties already on the agenda, so Jessica popped back into the stylish picture to imbue a jubilant vibe. The holiday’s typical palette consists of blues and metallics, so picking up where the interior’s year-round look leaves off was simple. Thanks to a handful of DIY projects, a select few on-theme accessories and a stunningly set table, the homeowners are ready to greet guests – Jessica surely among them.
SPIN MASTER “They’re old souls who really appreciate the allure of a formally set table,” says Jessica of the homeowners. Layered gold and navy china, crystal stemware and simple low white floral arrangements make for an elegant tablescape. Placed casually on each salad plate, cloisonné dreidel ornaments are special touches befitting the old-world aesthetic.

Stacy chose plates with touches of blue to complement the navy and white plaid patterns found throughout this tablescape. Party favours sit pretty alongside sprigs of greenery on top of the salad plates. The simple kraft paper wrapping lets the ribbon take centre stage.

doesn’t need to be red and green,” says designer Stacy Begg, who was tasked with creating a subdued holiday scheme in the living and dining rooms of her clients’ Toronto home. The space boasts a classic envelope with traditional mouldings, dark hardwood flooring and a wood-burning fireplace. The furnishings, such as the mid-century-style dining table and sleek yet comfy seating in the living room, offer a casual contemporary vibe. Stacy wanted the holiday decorations to provide a similar balance of modern and traditional, plus a touch of Canadiana, so she used a stylish mix of plaid patterns and seasonal greenery. Here’s how she pulled together the polished festive look.

SEEING DOUBLE “Toss cushions are an easy way to lend a certain mood to a space, as they can easily be switched out seasonally,” says Stacy, who selected plaid-patterned toss cushions for the pair of contemporary armchairs in the living room. The idea was to play off the blues in the artwork (curated by Katie Dobbie of Lady Galt Vintage) for a seamless look.

CHRISTMAS VACATION The living room boasts a cottage-in-the-city vibe, and that’s the aesthetic Stacy was going for. “I wanted the space to look rustic so the homeowners feel like they’re spending Christmas at an escape outside of the city,” says the designer. She achieved this with more plaid in a mix of large- and small-scale patterns.
HOLIDAY GLOW Placed in front of the wood-burning fireplace, an upholstered bench is the perfect perch for warming toes. Stacy spread evergreen boughs across the mantel and dotted them with blue ornaments. “And, of course, there’s nothing like clementines to signal the season,” says Stacy, referring to the coffee table arrangement of sweet citrus fruit.
GREAT SCOT In a chic glass vase, eryngium flowers nod to the thistles of Scotland, a country that’s well-known for its beautiful tartans.
ALL WRAPPED UP Plaid gift wrap keeps the rustic theme going under the Christmas tree. And kraft paper-clad parcels are blank canvases for patterned ribbons to shine. The large satin bows are consistent with the space’s other pops of blue.

LIVING LARGE With its soaring 22-foothigh ceiling and weathered wood doors, this spacious old barn was made chic and cozy with a low-slung sectional and a modern fireplace. Masters of DIY, the homeowners created the coffee table out of a pallet and casters, and the pendant light shades out of wire fencing. “They only cost me three euros,” says one of the homeowners.

SETTING PRETTY Sometimes, simple makes the best statement. This minimal setting sans tablecloth and placemats lets the table itself shine. Made of old Indian railway ties, the surface’s unique patina – protected by a sheet of glass – tells a story and adds interest and texture to the dinner table.

tep into this stunning
converted barn in the French countryside and you’d be hardpressed to picture what it was like when livestock lived inside. Original relics like exposed beams, a soaring ceiling and monumental doors are there as reminders of the home’s history, which feels like a distant memory. The place is now hospitable and homey, pretty and polished, modern and chic. Would you ever guess that when the barn was bought, it was uninhabitable for humans? The beaten-earth floor was covered in straw, and the walls weren’t well insulated. But the owners, a young couple (she’s in marketing; he’s in finance), saw its potential. They bought the barn one January and aimed to renovate it for the following Christmas. That’s already an ambitious goal for any overhaul, but

Blush is not a tone commonly seen at Christmastime, but based on how it’s used here, it feels like it should be. Employed in diminutive doses to a similarly muted palette with metallic touches and lots of light, the feminine hue takes on an elegant warmth that glows.
A tray full of pillar candles of varied sizes and heights makes for an easy festive coffee table display featuring everyday items that everyone has on hand. The flames complement the tree’s twinkle lights, and small sprigs of greenery complete the look.
A rustic console in the dining room gets the star treatment. Celestial silhouettes, tree frames and casually strewn string lights come together in a pretty yet unassuming arrangement that can serve as a backdrop for a holiday drinks station near the dining table.

KITCHEN CRAVING In this ultra-rustic space, the streamlined kitchen feels extra modern. Sleek black everything – cabinetry, countertops, appliances and faucet – are striking against the dining area’s homey elements, from the rough-hewn wooden table to the woven pendant lights to the spotted faux cowhide.
this pair also vowed to do the majority of the work on their own (with a little help from family and friends). With a young daughter in tow, they sacrificed evenings and weekends to sanding, refinishing, painting and decorating – at times balancing precariously on scaffolding while wielding large power tools. “It was petrifying,” says one of them. Furnishing the converted barn was no easy feat either, as the pair was determined to do so on a dime. Much of the decor was sourced from flea markets and antiques shops, plus the couple handcrafted a lot themselves. “I prefer to spend money on the bones of the house, like the kitchen and stairs, rather than the decor,” one explains. But the couple’s mettle and determination paid off. They finished well before Christmas and had time to settle in, get comfy and consider their seasonal decor. Now comes the next challenge: hosting their first holiday dinner for their whole family...all 23 of them.

The elements of this stunning tablescape are simple: Fragrant eucalyptus boughs line the centre; white tapers stand tall in short black pinch bowls; and each place setting is minimally adorned with a rosy pink napkin and a sprig of greenery.
On the kitchen counter, nuts and sweets sit on cake plates and cutting boards ready for snacking. Since the cooking area is open to the dining zone, this is the perfect staging space to set up munchies and refreshments prior to serving a big dinner.
It’s amazing what a strand of string lights can do. These homeowners don’t hesitate to set them out anywhere – hiding among presents, nestled in a centrepiece or hanging from a pedestal and statue. Perfect imperfection is key to making this look work.

How much does designer Denise Ashmore love the holidays? “Let’s just say that, when this house was being built, I had extra square footage added to the living room to make sure I had enough room for a big tree!” says the principal of ProjectTwentyTwoDesign. “Hey, when you’re a designer, you think about these things.” It’s no wonder, then, that when winter rolls around, her 2,820-square-foot four-bedroom Vancouver home takes on a spectacular holiday glow the whole family – which includes husband Paul Rapp and their two teenaged kids, Owen, 16, and Aida, 14 – helps deliver. “We don’t use Christmas colours; we just put twinkling lights everywhere, indoors and out,” says Denise. “The house becomes a big box of light.” Indeed, the Ashmore-Rapp clan adorns every single room, bedrooms and bathrooms included, with symbols of the season. Though the family goes all out come the holidays, the look isn’t over-the-top glitzy. It’s warm, natural and relaxed, with subtle Scandi-chic nods that perfectly accent the home’s modern architecture. In fact, the flourishes are so well suited to this space that the home remains decorated this way right through to the end of January. “For our family, this is a celebration of winter, not just Christmas Day,” says Denise. And with stylish details like these, it’s no surprise she’s happy to live with this look all season long.

LEFT On the patio just off this cottage’s living area, the picnic table is a popular perch, especially over the holidays. “When it’s cold, we sit out here wrapped in blankets with mugs of hot chocolate and enjoy the peace and quiet,” says homeowner Carrie McCarthy, pictured with her nine-year-old son, Leighton Thorn, who calls the spot his happy place. STEP INTO CARRIE MCCARTHY’S Scandi-white cottage on South Pender Island, B.C., and you might assume she’s a staunch minimalist – but you’d be wrong. “I love abundance and classic red and green for Christmas in the city,” says the designer and stylist, who lives in Vancouver with her husband, real estate developer Cameron Thorn, and their nineyear-old son, Leighton. “But the island is so light and serene. It makes sense that the cottage decor reflects that.” Carrie’s less-is-more approach extends beyond the decor to the very cottage itself. In 2006, when she and Cameron bought the two-and-a-half-acre lot – dreamily set on the edge of a mountain road overlooking a valley – they planned on building a 2,400square-foot second home. “I thought it would be a good idea STYLEATHOME.COM NOVEMBER 2018

to start small,” she says. “So we built this open-plan 850-squarefoot guest cottage to start with, and we’re still here.” The family ferries to the idyllic retreat year-round, but during the holidays, the getaway becomes more than a respite from the city. “South Pender Island is a magical place to spend Christmas,” says Carrie. “It’s so quiet, restful and unbelievably peaceful, offering the kind of serenity only nature can.” It was fitting, then, that nature was the starting point for decking out the space for Christmas. “I love a real tree and we always forage one from our property,” says Carrie, referring to the charming scrawny firs that dot her land. And her hunter-gatherer approach to decorating extends inside. “Each year, I walk around the cottage, see what’s in storage and try to use things we already have, like an old tray or pottery, in different ways.” She layers in thrift store
In the airy double-height living area, defined by a striking streamlined wood-burning fireplace, a black chandelier makes a bold statement. Throughout the open-concept main level, a polished concrete floor adds unexpected warmth – literally. “It’s heated and can be controlled remotely, so it’s toasty when we arrive,” says Carrie. finds and ornaments that range from vintage to homemade, including treasured ones created by her father-in-law. All of these details set the stage for the family’s annual Christmas Eve traditions: “We have hot chocolate and mulled wine and unwrap one present before bed. In the morning, we open stockings, go for a hike, return for breakfast, then unwrap gifts.” A log fire is lit, CBC radio plays and the Monopoly board is set up and ready for a day of family time before friends arrive for dinner. “This kind of simplicity is the ultimate luxury,” says Carrie, “especially at Christmas.” Just don’t call her adept mix of minimalism and merrymaking a lesson in design. “There are lots of rules in design, and I say, ‘break them!’ I still love the chintz, dark wood and rich colours of our Vancouver home, but Christmas needs to be authentic, and that’s just what our serene little cottage is.” STYLEATHOME.COM NOVEMBER 2018

rédérick Lebeau and Julie Arcand loved their little house so much that they decided to replicate the aesthetic when they moved to a bigger home in June 2017 that has room for their growing family. Now, they’re preparing to celebrate Christmas at their expansive yet cozy new home in the city of Blainville, Que., about an hour from Montreal, along with their young daughters Jeanne, 3, and Marion, 1. To the new house (twice as big as the old at 3,000 square feet) they brought their best ideas from the previous place, including hiring designer Jean Stéphane Beauchamp, who had helped realize their first renovation.

The designer was tasked with reproducing some of the elements he had brought to their first home and toning down the more formal look of this 2003-built house, with its high ceilings and extensive mouldings. “Everything here was dark and formal,” says Julie, “and we told Jean Stéphane we wanted the place to feel like the old one, like a small home and not a big house.” The intimacy of the updated space is especially felt during the holiday season, when the main floor, where the living, cooking and dining areas flow seamlessly, is ready to welcome family and friends. Against the backdrop of the couple’s favourite paint colour, Farrow & Ball’s Cabbage White – “a beautiful off-white with a hint of blue-green,” says Jean Stéphane – the rooms are filled with whimsical decorations that complement the year-round decor. “There’s a soft neutral palette,” says Jean Stéphane, “with bold blue, green and pink accents throughout.” The Christmas decorations are simple and often handmade, like the icy blue satin Christmas stockings hanging on the mantel and the linen and silk heart ornaments on the tree, all stitched by Jean Stéphane. To

reinforce the homey atmosphere, the diminutive Christmas tree is anchored in a basket of pinecones, while multitoned evergreen boughs and eucalyptus branches festoon the treads of the classic staircase and fill vases that are peppered throughout the rooms. The look is contemporary yet cozy, urban yet comfortable, colourful yet serene. During the holiday season, “we enjoy bringing a lot of people together to celebrate with us,” says Julie. And now that the family has plenty of room to do so, they truly feel at home.

SNAPPY GINGERSNAPS MAKES 5 DOZEN COOKIES
¾ cup unsalted butter, melted and cooled to room temperature 1¼ cups packed demerara or dark brown sugar ¼ cup fancy molasses 1 large egg 1 large egg yolk 2¼ cups all-purpose flour 2 tbsp ground ginger 2 tsp baking soda 1 tsp cinnamon ½ tsp fine sea salt ½ tsp freshly ground black pepper Granulated sugar, for rolling
Preheat the oven to 325°F and line two baking trays with parchment paper; set aside. Whisk together the melted butter, demarara sugar, molasses, egg and egg yolk in a large mixing bowl. In a separate bowl, stir together the flour, ginger, baking soda, cinnamon, salt and pepper. Add to the butter mixture and stir until blended. Use a small ice cream scoop or two teaspoons to shape the dough into balls. Roll each ball in granulated sugar to coat and place on the prepared baking trays, 1½ inches apart. Bake until the cookies brown around the edges, 20 to 25 minutes (they will puff up while baking but then collapse as they cool, developing a lovely crackled surface). Let cool on the trays on a wire rack.

Or portion out and chill the dough on baking trays, then freeze the scoops in resealable bags for up to three months. Let the frozen dough thaw on a baking tray for 30 minutes before putting the portions in the oven. You can freeze the baked cookies, but they will lose a little of their crunchy exterior once thawed.
CHOCOLATE COCONUT OATMEAL CHEWS MAKES 3½ DOZEN COOKIES

cup unsalted butter, at room temperature cup packed dark brown or demerara sugar large egg, at room temperature tsp pure vanilla extract cup cocoa powder cup all-purpose flour tsp cinnamon tsp baking soda tsp salt cups old-fashioned rolled oats (not instant) cup chocolate chips (any type) cup flaked sweetened coconut cup dried cranberries
Preheat the oven to 350°F and line two baking trays with parchment paper; set aside. Cream the butter and brown sugar by hand until well combined (the mixture will not be creamy or fluffy). Beat in the egg, then stir in the vanilla. Sift the cocoa, flour, cinnamon, baking soda and salt over the bowl and stir into the butter mixture. Stir in the oats until they are well coated with batter; stir in the chocolate chips, coconut and cranberries. Use a small ice cream scoop or two teaspoons to drop the batter onto the prepared baking trays, 2 inches apart. Gently press down on the cookies with the palm of your hand to flatten. Bake until the cookies lose their shine at the edges, about 12 minutes. Let cool completely on the trays on wire racks.

Cream the butter and brown sugar in a large mixing bowl by hand for about 1 minute, until lighter in colour and smooth. Beat in the egg, then the molasses. In a separate bowl, sift together the flour, ginger, cinnamon, baking soda, salt, cloves and nutmeg. Add all at once to the butter mixture, stirring until thoroughly blended, then stir in the granulated sugar just until combined. Use a small ice cream scoop or two teaspoons to shape the batter into balls. Roll the balls in the icing sugar to coat and place them on the prepared baking trays, 2 inches apart. Gently press down on the cookies with the palm of your hand to flatten. Bake until the cookies have puffed up and appear set at the edges, 10 to 12 minutes. Carefully smack the trays down on the countertop to deflate the cookies (and get the crackle effect). Let cool on the trays for about 5 minutes, then transfer to a wire rack to cool completely.
LEMON TWINKLE COOKIES MAKES 2½ DOZEN COOKIES
½ cup unsalted butter, at room temperature ½ cup granulated sugar ½ cup icing sugar, sifted 2 large egg yolks 1 tsp pure vanilla extract Finely grated zest of 1 lemon 3 tbsp freshly squeezed lemon juice 2 oz white couverture (baking) chocolate, melted and cooled to room temperature 1½ cups all-purpose flour 2 tbsp cornstarch ½ tsp each: baking soda and baking powder White decorator’s or sanding sugar, or granulated sugar, for rolling
Preheat the oven to 325°F and line two baking trays with parchment paper; set aside. In a large mixing bowl, cream the butter, granulated and icing sugars by hand or using an electric mixer on medium speed. Beat in the egg yolks, vanilla and lemon zest, then the lemon juice. (If the mixture looks a little curdled, sift ½ cup of the flour into the mixture to smooth it out.) Stir in the melted chocolate. In a separate bowl, sift together the flour, cornstarch, baking soda and baking powder. Add all at once to the butter mixture and blend by hand or on low speed until combined (the dough will be soft but still manageable for scooping). Use a small ice cream scoop or two teaspoons to shape the dough into balls. Roll the balls in the decorator’s sugar to coat thoroughly and arrange them on the baking trays, 2 inches apart. Gently press down on the cookies with the palm of your hand to flatten. Bake until cookies can be gently lifted from the trays, 12 to 14 minutes. Carefully smack the trays down on the countertop to deflate the cookies (and get the crackle effect). Let cool on the trays for about 5 minutes, then transfer to a wire rack to cool completely.

Preheat the oven to 325°F and line two baking trays with parchment paper; set aside. Melt the chocolate in a metal bowl set over a saucepan filled with 1 inch of barely simmering water, stirring gently. Set aside. In a large bowl, using an electric mixer or a stand mixer fitted with the whip attachment, whip the eggs with the granulated sugar, vanilla and vinegar until light and frothy, about 3 minutes (it doesn’t have to hold a “ribbon”). Whisk in the melted chocolate (it’s okay if it’s still warm). Sift in 1 cup of the icing sugar, the cocoa powder, cornstarch, baking powder and salt and stir by hand until well combined. Stir in
the chocolate chips. The batter may seem very soft at first, but it will firm up. Place some of the remaining icing sugar in a shallow dish. Use a small ice cream scoop or two teaspoons to drop spoonfuls of batter directly into the icing sugar, rolling to coat fully and evenly. Arrange the balls on the prepared baking trays, 1½ inches apart. Gently press down on the cookies with the palm of your hand to flatten. Bake until the cookies are fully puffed up, 10 to 12 minutes. Carefully smack the trays down on the countertop to deflate the cookies (and get the crackle effect). Let cool on the trays for about 5 minutes, then transfer to a wire rack to cool completely.
