One of the best things about summer in Canada is ditching town after work on a Friday (maybe even skipping out early) and travelling to cottage country. (My sister’s cabin, which my grandfather built in the 1940s, is my fam ily’s go-to.) On the weekends I don’t manage to make it out of the city, I find ways to bring cottage style living into my day-to-day life at home. Whether I display a casual arrangement of fresh-fromthe-garden flowers on my kitchen countertop or enjoy a glass of rosé on my patio with my feet kicked up, that easy, breezy carefree lifestyle is what August is all about. This issue invites you to bring elements of cottage style home. We feature three vacation homes boasting casually chic aesthetics with dreamy views, serene palettes and sink-into-me furniture. In “Into the Light” (page 64), tour a bright country house that perfectly combines vintage, antique and modern styles. “Windows of Opportunity” (page 72) showcases a stunning getaway for an architect and his family on Keats Island, B.C. Finally, a retreat in East Hampton Village, N.Y. (see “Enter Summer,” page 82), displays the quintessential laid-back elegance the Hamptons region is known for. cup unsalted butter, softened cup granulated sugar, divided tsp pure vanilla extract, divided tsp salt cups all-purpose flour peaches, pitted and thinly sliced tsp lemon zest

tip The peaches should be slightly soft and have a sweet smell. This means they’re ripe and ready for baking.

Preheat the oven to 375°F. Spray a 13- x 9-inch baking pan with cooking spray and line with parchment paper. In a large bowl, beat the butter and 2/3 cup of the sugar with a hand mixer until light and fluffy. Add ½ teaspoon of the vanilla and the salt; mix to combine. Gradually add the flour until the mixture resembles coarse meal. Set aside 1¼ cups of

the dough for the topping. Press the remaining dough firmly into the prepared pan. Toss the peaches with the lemon zest and the remaining sugar and vanilla. Layer the peaches over the base and sprinkle with the reserved topping. Bake until golden, 50 to 55 minutes. Let cool completely before lifting the parchment paper from the pan; slice into bars to serve.

DIRECTIONS 1. Assemble the cabinet per the manufacturer’s directions. 2. Attach the legs to the base of the cabinet per the manufacturer’s directions. 3. Measure, mark and install the cabinet pulls and knobs. 4. Carefully press the kraft paper against the glass pane of one of the cabinet doors to make a template of the opening. Trace the template onto a cane sheet and cut out with the utility knife. Repeat to create two cane panels. Using a small bead of hot glue in each corner, secure each of the two cane panels behind the glass of the two door openings. 5. For stability, attach the cabinet to the wall with the supplied cabinet frame hardware.

DECORATING “The kids love animals,” says the homeowner, adding that the woodland theme evolved naturally. Propped in the corner, a birch trunk cut on site fits right in.

Use what you’ve got. That’s the motto that guided the decorating of this 3,000-square-foot cottage on Lake Muskoka, purchased in 2013. “We’re on an island,” says one of the busy Ottawa-based homeowners, “so getting things in and out is really cumbersome.” And cumbersome was not on the agenda for the summer refuge she and her husband wanted for themselves and their three kids, aged 8 to 13. Fortunately, the 1972-built cottage was well-kept, so aside from replacing the carpeted floors with more practical pine planks and giving the kitchen a facelift, the family embraced the cedar structure as it was. They also made use of the many furnishings and accessories left behind by the previous owners, but they transformed them with generous coats of white paint. “That much wood is really busy,” explains the homeowner, who painted everything from the dark cherry kitchen cabinets to the honey-hued pine dressers to tone things down. Building on the serene scene, the family stuck to a greyscale palette when furnishing the main living zones; in place of strong hues, they played with texture, emphasizing all things natural like sheepskin throws and driftwood. But colour makes a cameo in the kids’ rooms, as do special homespun touches. “At the cottage you can take more risks,” says the homeowner of the bold blue DIY stencilled canvas headboard in one room. “If it doesn’t work out, well, it’s just a cottage.” That’s a laid-back attitude befitting lakeside living.

5 EASY WAYS TO MAKE A COTTAGE YOUR OWN 1. PICK PAINT This cabin came with some furniture and accessories, such as picture frames, but most did not suit the homeowners’ calm vision. Rather than replacing them, they simply painted them white.

1. BIG BELIEVER Christine thought the antique chandelier she found in Huntsville, Ont., would be too large for the space, but her love for the dazzling light fixture encouraged her to try it on for size. In the end, it was a fitting choice, and it now lends the room old-world elegance.

2. TOAST TRADITION Christine, who is originally from England, has owned her AGA cast iron range for more than 19 years. She chose the classic Swedish cooker, a staple in many English houses, to heat the kitchen, to remind her of back home and because she insists it makes the best toast!

3. PERFECT PAIRING The island’s cast iron base was an antiques market find, while its countertop is made of old barnboard that Steve refinished.

4. RETRO REMINDER Christine wanted the appliances to be a part of the kitchen’s aesthetic, so instead of going for something sleek or modern, she bought this vintage-look European refrigerator. It’s more compact than the North American standard size and calls to mind the 1950s and ’60s.

5. WONDERFULLY WEATHERED In the 100-square-foot eat-in area, a mint green wooden table and a set of French bistro chairs have distressed finishes that add to the room’s rustic charm.

ollecting vintage pieces is a passion for homeowner Christine Murphy. That’s why it’s no surprise that the Mississauga, Ont., abode she purchased 20 years ago is a designated heritage home. Built circa 1860, it had a feature commonly found in older houses: a disjointed layout reined in most of the house, including the kitchen. Seeking a functional spacious cooking and eating area for themselves and their two children, Christine and her husband, Steve, decided to relocate the kitchen to an area at the rear of the home.

Originally built as stables, the unheated zone needed some serious work, but also offered a blank slate for Christine to showcase her style. Keeping the home’s 19th-century provenance in mind, she used reclaimed wood flooring, added retro-look appliances and displayed cherished vintage and global finds. “We love the extra space this renovation has provided us,” says Christine. “And I’m so happy to have my collectibles in view.” Comfortable and casual, character-filled yet calm, the new kitchen proves that chic doesn’t have to be sleek. Here’s how she did it.

The dining room design revolves around the grand live-edge table. “It was a wedding gift that was custom made. It’s very special to us,” says Rebecca. A floating sideboard purchased from a big-box store was beautified with panels the designer ordered from Europe. She also chose a minimal white pendant light to

keep sightlines open through the house and a print of a mountain vista to echo the surrounding West Coast landscape. WHEN INTERIOR DESIGNER REBECCA Hepburn and her husband purchased their East Vancouver home in June 2016, the 1908-built beauty had good bones – but they could tell that it hadn’t been shown much love. In fact, the 3,000-square-foot abode was desperate for some TLC. Rebecca knew embarking on a major facelift would come with challenges, but she was excited and totally in her element. “I love renovating older homes because there’s so much room for creativity and problem solving,” says the designer. To make things even more interesting, the couple, who at the time had a one-year-old and a baby on the way, would be living on-site through it all. “It was a stressful process, but we knew it would be worth it in the end, even if it meant doing dishes in the bathtub on occasion!” says Rebecca. She was ready and willing to get started, so the family moved into their new digs and the sevenmonth-long remodel commenced. Rebecca’s idea was to create a family-friendly Victorian-meets-Scandi aesthetic with a subdued palette and a few show-stopping focal points. Some structural changes would allow her to take advantage of the home’s excellent orientation and brighten and lighten the space. A wall was removed between the kitchen and the dining room, creating open sightlines from the entryway to the back of the house, and small windows in the kitchen were replaced by one large window and French doors that

lead to the backyard. Wherever possible, the designer kept original features, including mouldings and casings throughout, as well as the hardwood floors, which were bleached and refinished to retain their character. But Rebecca didn’t shy away from using modern elements like new appliances and contemporary furniture. “I wanted the juxtaposition of maintaining the 110-year-old influence and beauty of the home while bringing something new and modern to the table,” she says. In the living room, this meant keeping the style as minimal as possible while incorporating features that pay homage to the home’s heritage. “We added a vintage-look gas fireplace and a mantel that plays off the details on the baseboards,” says Rebecca. The kitchen saw the biggest change, including the addition of Corian waterfall countertops and custom white oak cabinetry. A burnt-orange-tiled floor was replaced with patterned grey and white tiles, creating a focal point that draws the eye to the back of the house. “The tiles are beautiful and they wear tremendously well,” says Rebecca, “and our kitchen sees a lot of action, so they’re perfect for us.” The designer was looking for the same family-friendly features in the dining room chairs but finding the right seating to complement the custom live-edge walnut table wasn’t easy, so she chose chairs with simple mid-century silhouettes. “Functionwise, they tick all the boxes – they’re very comfortable and easy to clean, which is super-important when you’re tidying up after little ones,” says Rebecca. The soft grey rug was used to ground and warm the space, while the ceiling was painted pale pink for a subtle surprise. For final decorative touches, she peppered the rooms with potted greenery to promote good air quality and bring in a hint of the outdoors. The artwork, too, echoes the outdoors by showcasing an organic aestheic. The project was a labour of love, and it may have taken several stressful months to complete, but the end result makes way for many years of easy breezy living to come. FOR SOURCES, SEE OUR WORKBOOK

hough its lavish oak herringbone flooring, romantic clawfoot tub and champagne-gold fixtures suggest a Parisian boutique hotel, this light and bright 80-square-foot space is actually a busy family bathroom in Burlington, Ont. In fact, it’s the only one in the home designer Staci Edwards of Switch Studio shares with her partner, Chris Jackson, and their nine-month-old son, Spencer. “You can create a room that’s pretty and practical,” says the designer, who didn’t compromise an ounce of functionality in her pursuit of a beautiful bathroom during ABOVE With double-recessed Shaker-style doors, champagne-gold hardware and cabriole legs, the custom vanity is flirty yet functional. The room got its pretty pale palette from the watercolour painting hung on the far wall, a souvenir from Crete. The sconces’ Art Deco feel, echoed in the silhouette of the toilet, contributes to the old-meets-new aesthetic.


DECORATING a reno of her entire home in 2016. The chic bathtub, for instance, had to accommodate relaxing salt soaks and baby splash time, so though it looks like a vintage cast iron piece, it’s made of low-maintenance acrylic. And the pretty pale pink stool – a custom touch courtesy of Staci’s upholstery shop (also called Switch Studio) – is covered with water-resistant fabric. Storage was a must, of course, and Staci found ways to make it look great, too. The generous tailor-made vanity is a case in point, boasting decorative details like curvy cabriole legs. The beautifully styled floating shelves (big-box buys Chris customized to fit) are not just for show: Those wicker baskets, a prop stylists’ go-to, are filled to the brim with necessities, from toiletries to Spencer’s bath toys. “And I’ve been asked if we use those folded white towels,” says Staci. “My answer is, ‘of course!’” Ditto for the hammam-style towels hung on the wall hooks below them. This hard-working bathroom may not come with room service or a view of the Eiffel Tower, but it caters to this family’s many needs, including acting as a quiet end-of-the-day retreat for Staci. And that’s très magnifique. W

hen her mother, Shirley Kent, decided to leave her spacious country home outside of Forest, Ont., on the banks of Lake Huron, designer Amy Kent was charged with creating a simpler, more compact space that would nevertheless reflect her mom’s sense of style. “She has four granddaughters and entertains a lot,” says Amy. “We wanted to give her the means to carry on her lifestyle on a smaller footprint.” A few kilometres down the beach, another house had a story to tell. When mother and daughter first viewed the 1970s log home on a freezing cold winter day, all the windows were boarded up. “We had to use flashlights inside, and when the light beam shone on the fieldstone fireplace and the cedar floor, we were sold,” recalls Amy. Amy and Ryan Martin, her business partner at Croma Design in Toronto, were charmed by the quirky nature of the cottage. “Apparently it came in a kit with planed cedar logs that you put together yourself, like Lego,” says Amy. “It came from Michigan; there are only a few of them in Ontario.” Amy and Ryan had new windows installed to let the light stream in, cleaned and gently oiled the warm cedar flooring, and painted all the walls and ceilings pure white. To give Shirley, an avid cook, a spacious kitchen, they expanded it to include the old dining area, tucking the new one into the spot once occupied by the sunroom. The existing master bedroom was converted into a bedroom for Shirley’s granddaughters, complete with a dual set of bunk beds.

BELOW This glass-fronted heirloom cabinet exhibits artifacts like arrowheads and tools unearthed in the area by Amy and her brother. The nautical print is part of a collection Shirley started with her late husband.

The small bench in the entryway, with its original worn paint, was found in the garage of Shirley’s previous house. “It predates all of us,” says Amy. TOTE, Old Faithful Shop.

The original 1,100-square-foot cottage received a 900square-foot addition, which seamlessly joins the main house across a central porcelain-tiled entry hall. “It creates some of the grandness felt in my mom’s previous home,” Amy says. The new wing includes a large master bedroom with an ensuite and a dressing room, plus a kids’ bathroom, laundry room and serving pantry. Set on on a bluff overlooking the lake, the home is surrounded by two acres of nature, and from the deck that wraps around three sides of the cottage, the family can take in quiet views of the water and admire the sunset. “It feels wonderful to be here,” Shirley says. “Outside, there are lots of birds and bunnies and a beautiful crabapple tree. And inside, Amy and Ryan have given me a house that really flows.” Out of the darkness, they found light – from every angle, windows frame the beautiful vistas. Shirley trusted the designers would do it right, and Amy says the house played a part, too. “There were so many lovely surprises.”

“Low-pulse.” There couldn’t be a better way to describe this relaxed boat-access cottage in the spectacular setting of Keats Island in B.C.

And the person who coined the term is homeowner and architect Jim Bussey, whose playful approach and creative point of view were key to building such a charming and convivial space. “There’s a very low-pulse atmosphere here,” reiterates Jim, owner and president of the Vancouver architectural firm Formwerks, who purchased the heavily treed empty lot four years ago. “I wanted to create something that was friendly, homey, inviting and very relaxing. But I didn’t want to have a place that was schlumpy or dumpy. I wanted something classic and chic yet extremely comfortable.” When working with clients, the Formwerks team prides itself on truly listening to the homeowners’ wants and needs. So when it came to designing Jim’s own STYLEATHOME.COM AUGUST 2018

Used in lieu of pendant lights and statement pieces, minimalistic suspended track lighting is practical and unobtrusive. “I didn’t want to distract from anything else in the space,” says Jack. cottage, which he shares with his wife, Jenna, their five grown children and their beloved Yorkshire terrier, Chloe, he was cognizant of listening to himself. “I had to project myself onto a screen, so to speak,” Jim says. What he saw was inspiration from the past, present and future: spending childhood days at his parents’ cottage in Ontario; enjoying time with his Keats Island neighbours (when this lot came on the market, he was specially invited to join the close-knit enclave of six properties); and creating a place for hosting business get-togethers, as well as relaxing with a good book. “If you compile notions of past experiences and future desires, you get a backdrop you can respond to,” he says. It’s a creative process that, after six months of construction, resulted in a modern 1,200-square-foot structure that’s striking – obviously the home of an architect – but simple and not overbearing. “I didn’t want it to be an example of cold austere modern architecture. It had to have warmth and comfort built into it,” he says.

Vertical cedar siding emulates a weathered look. “We wanted the cottage to look like it had been there for a long time, even though it’s brand new,” says Jim. LOUNGERS, CB2.

Working with Jim to inject character was Jack Brown, Formwerks’s director of interior design. “We wanted a rustic cabin feel,” says Jack, “with nothing too polished or city-like.” Achieving that rustic-chic balance meant combining an uncomplicated open floor plan, clean lines and a minimalistic sensibility with character-filled elements like shiplap wall panelling, exposed ceiling beams, wide-plank hardwood floors and salvaged windows and doors. “I was renovating a client’s 100year-old house in Vancouver and all these doors and windows were coming out. So I thought I’d repurpose them and refresh their existing offbeat colours – buttery yellow and turquoise,” FOR SOURCES, SEE OUR WORKBOOK

says Jim. (Serendipidously, Jim’s contractor also offered a set of old leaded glass windows in the same buttery hue that were used for the kitchen cabinetry.) The bright colour scheme keeps things fresh and relaxed, while layers of soft elements and textiles add to the coziness. An eclectic mix of accents – a comfy sectional from a past project, artwork found at flea markets and colourful quilts picked up while on vacation – lends a laid-back vibe. But, perhaps most importantly, those elements reflect Jim and his family, who are interesting, relaxed and well-travelled. “It was really important to capture who they are,” says Jack. AS IN THE OLD FABLE OF THE GRASSHOPPER AND THE ANT, sometimes it takes a lot of hard work throughout one season to thrive in the next. Such was the case for interior designer Susana Simonpietri of Chango & Co., who was hired in winter to design a vacation house in East Hampton Village, N.Y., and to have it ready by the start of summer for the owners – a young family of three – to enjoy. “The plan was to bring modern touches to the otherwise traditional home,” says Susana. “The family wanted a house that felt comfortable and classic Hamptons, but they also needed it done fast...in four months, to be exact.” The 4,500-square-foot five-bedroom late-19th-century home boasts traditional details like original mouldings and existing hardwood floors that Susana left intact. However, the designer had the walls painted white for a crisp envelope in which she could create a fresh beachy character befitting the best of the Hamptons. “I love using white in coastal homes,” says Susana. “It instantly lends a cool airy feeling to counter all the summer heat.” Hits of sandy beige pay homage to the beach town setting, but the serene palette is livened up with a few restrained splashes of red, notably in the

vintage living room rug. But mostly, it’s all about the blue. “The blues are reminiscent of the clear sky and undulating sea that are synonymous with the local landscape,” says the interior designer. From the cobalt blue modern artwork and denim-look striped toss cushions in the living room down to the inky backdrop of the kitchen’s Moroccan rug, the striking hue makes a chic statement in almost every room.

Lest things get too cool, Susana also effortlessly layered in natural materials: Linen, wood, jute and braided rope serve up soothing beachy beauty. The dining room is especially cozy with its textured wall covering and weathered wood dining table. Add in the low-hanging pendant lights and warm neutral tones, and it’s an elegant yet intimate place to savour a good dinner.

ABOVE “Upstairs, there’s a special hallway rotunda teeming with sunlight,” says Susana, who embraced the light and decorated minimally to honour it. The circular rug boasts an artistic weave, and a vase of fresh cherry blossom branches adds all the eye candy needed.

“We really thought about the materials we used to make the home comfortable and livable for the family,” Susana says. “We wanted to create a space where they can come in and relax after a day at the beach, host dinner for visiting friends or have fun while escaping the heat.” And considering the family’s big summer plans – to come here every weekend – it was great that, with some hard work, Susana finished in time so they could start enjoying the long lazy days of the season.

APPLE, HONEY & WALNUT CAKE

APPLE, HONEY & WALNUT CAKE SERVES 8

to 5 medium dessert apples (roughly 1¼ lbs) 3 large eggs ⅓ cup liquid honey ½ cup plain whole-milk yogurt 3 tbsp + 1 tsp extra-virgin olive oil 1¾ cups self-rising flour Scant ½ cup walnut pieces 2 tbsp salted butter 3 tbsp light brown sugar Preheat the oven to 350˚F. Line the bottom of a 9-inch springform pan with parchment paper and set aside. Core the apples and roughly slice them lengthwise into half moons. Roughly chop half of the apple slices, and save the rest for decoration. In a medium bowl, using a hand-held mixer, whisk the eggs and honey vigorously for 2 to 3 minutes, until pale and fluffy. Add the yogurt and stir with a wooden spoon until well combined. Drizzle in the olive oil and stir until well combined. Sift the flour into the bowl and mix until there are no lumps. Toss in the chopped apples and walnuts, and give everything a good stir. Spoon the batter into the prepared springform pan and use the back of the spoon to smooth the batter out before arranging the remaining apple slices overtop. Scatter a few pieces of butter over the top of the cake, then sprinkle with the brown sugar. Bake for about 45 minutes, until golden brown on top and a toothpick inserted into the middle comes out clean. Eat warm or at room temperature. (The cake will keep in an airtight container for a few days.)

2¾ cups bread flour + more for dusting ¼ cup granulated sugar + 1 tbsp for sprinkling 2 tsp instant yeast Generous pinch of salt 1 cup + 2 tbsp cold salted butter ½ cup cold whole milk 2 large eggs 2 heaping tbsp apricot jam Place the flour, ¼ cup sugar, yeast and salt in a food processor and pulse for a few seconds

to combine. Chop the butter into pieces and add to the food processor. Pulse for a few seconds, until the mixture resembles coarse meal. Transfer the mixture to a medium mixing bowl; set aside. In a small bowl, whisk together the milk, 1 egg and 3 tablespoons of cold water. Make a well in the centre of the flour mixture and pour the milk mixture into it. Stir with a table knife to bring together into a lumpy sticky dough. Shape the dough into a ball, place it back into the mixing bowl, cover with plastic wrap and refrigerate for at least 4 hours or up to overnight.


Roll out the dough on a lightly floured work surface into a long thin rectangle approximately 8 inches by 16 inches. Fold the top third down and the bottom third up, as if you were folding a letter. Turn the dough so the short end is facing you and roll out again into a long thin rectangle. Repeat the rolling, folding and rotating process three times. (If the dough gets too warm and sticky, wrap it in plastic wrap and chill in the fridge for a short while; try to handle the dough as little as possible.) Transfer the dough to a baking sheet, cover with plastic wrap and refrigerate for another 4 hours or up to overnight. Roll out the dough on a lightly floured work surface into a long thin rectangle roughly ¼ inch thick. Cut it into 6 triangles, each approximately 5 inches wide at the base and 9½ inches long on the sides. Spoon 1 teaspoon of apricot jam onto the base of each triangle, leaving a 1-inch border along the edges. Resist the urge to overfill or the jam will spill out of the brioche as it cooks. Fold the bottom edge of the triangle over the jam, tucking it under, and roll the pastry up as tightly as you can, stretching the tip of the triangle over so it is tucked under the body of the brioche. Gently curve the sides of the pastry around into the shape of a croissant, pinching where needed to seal. Repeat with the remaining pastry triangles. Place the brioche on a baking sheet lined with parchment paper, cover with a clean damp tea towel or plastic wrap and leave in a warm place for 1 hour, until doubled in size. Preheat the oven to 425˚F. Lightly beat the second egg with a fork and brush over the top of the brioche with a pastry brush to glaze. Sprinkle liberally with the remaining tablespoon of sugar. Bake the brioche for about 20 minutes, until nicely golden. Remove from the oven and allow to cool slightly, then transfer to a wire rack. Let cool for at least 15 minutes before serving. Eat while warm (sheer decadence) or at room temperature. (The brioche will keep in an airtight container for a few days.)

SUGAR BUNS SERVES 16

1 cup salted butter, chopped ¼ cup whole milk 1 tbsp wildflower honey 6 large eggs 4 cups bread flour ½ cup granulated sugar, divided Generous pinch of salt 2 tsp instant yeast In a small saucepan, warm the butter, milk and honey over low heat until the butter is just melted. (The liquid should be lukewarm, not scalding.) Meanwhile, use a fork to lightly beat 5 of the eggs in a small bowl; set aside. Sift the flour, ⅓ cup of the sugar and the salt into a large bowl, then stir in the yeast. Pour the milk mixture and the beaten eggs into the flour mixture, stirring until the ingredients come together to form a dough. Turn the dough out onto a clean, lightly floured surface and knead until smooth and elastic, 8 to 10 minutes. Wash and lightly grease the dough bowl with oil. Form the dough into a ball and transfer back to the bowl, rolling it around the sides to lightly coat it with oil. Cover with plastic wrap or a clean damp tea towel and set somewhere warm to rise until the dough is doubled in size, 1 to 1½ hours. Line a baking sheet with parchment paper. When the dough has risen, knock it back with your knuckles and shape into eight smooth balls, each roughly the size of a large apricot. Arrange the balls on the baking sheet with a bit of space between them, as they will puff up as they rise and bake. Cover with plastic wrap and set somewhere warm to rise until nearly doubled in size, 45 minutes to 1 hour. Preheat the oven to 350˚F. In a small bowl, lightly beat the remaining egg and use a pastry brush to glaze the top of each bun. Sprinkle the tops of the buns generously with the remaining sugar. Bake for 20 to 25 minutes, until the buns are lightly golden on top and sound hollow if you tap them on the bottom. The buns are best eaten on the day you bake them.
