The countdown is on. The holidays are upon us and, as we know, this year is different. We aren’t bustling about as much. We aren’t squeezing in as many holiday parties as possible. Maybe that’s making it hard for some of us to get into the spirit. Maybe the very sight of boxes of ornaments has you thinking, why bother? If that’s the case for you, my hope is that the beautiful homes and decorating ideas in this issue inspire you to unpack those decorations and deck the halls, walls, windows and doors. Maybe this year, more really is more. I believe that making our homes beautiful makes us feel good, and we all need more of that right now. And what’s beautiful is personal – that maxim is as true for everyday decor as it is for holiday decorating. We prove that in “1 Mantel, 3 Ways” (page 26), where the same fireplace is adorned in three totally unique ways. Compare those to the pared-back mantel in “Home for the Holidays” (page 70) and I’m sure, like me, you will see beauty in all but gravitate to the one that makes you feel most comfortable. Comfort, I think, is what it comes down to. We feel comforted in settings that reflect our tastes and our values. And comfort brings joy. So what I wish is that when you are at home for the holidays this year, that it be filled with great comfort and joy, now and throughout 2021.

INGREDIENTS MAKES 16 SERVINGS

Dark Chocolate Cake 1½ cups unsalted butter, softened 2¼ cups granulated sugar 3 large eggs 1 tbsp vanilla 2¾ cups all-purpose flour 1 cup cocoa powder 1 tbsp instant espresso powder 1½ tsp each baking powder and baking soda ½ tsp salt 2¼ cups buttermilk Peppermint Meringue Icing (makes 7 cups) 2⅓ cups granulated sugar 1¼ cups liquid egg whites 3 cups unsalted butter, softened and cubed 1 tsp peppermint extract Assembly Peppermint Meringue Icing ½ cup crushed candy canes 5 to 10 candy canes or peppermint sticks (optional)

DIRECTIONS Dark Chocolate Cake Preheat oven to 350°F. Grease and flour three 8-inch round cake pans; line bottoms with parchment paper. Set aside. In a stand mixer with paddle attachment, beat butter with sugar until fluffy. Beat in eggs, 1 at a time; beat in vanilla. In a separate bowl, whisk together flour, cocoa powder, espresso powder, baking powder, baking soda and salt. Beat into butter mixture, alternating with buttermilk, making 3 additions of the flour mixture and 2 of buttermilk. Scrape into prepared pans, smoothing tops. Bake until cake tester inserted in centres comes out clean, 30 to 35 minutes. Cool in pans for 15 minutes. Invert onto greased racks; peel off parchment paper. Let cool completely. Peppermint Meringue Icing In stainlesssteel bowl set over saucepan of gently simmering (not boiling) water, whisk sugar with egg whites until sugar is dissolved and candy thermometer reads 140°F. Transfer egg mixture to stand mixer with whisk attachment; whisk until stiff peaks form and mixture is cooled completely, about 10 minutes. (If only soft peaks form after 12 minutes, proceed with recipe as directed. It will yield slightly less icing.)

Switch to paddle attachment; beat in butter at low speed, 1 cube at a time, until blended. Increase speed to medium; beat until smooth, 5 to 7 minutes. (Mixture may look curdled but will come back together.) Beat in peppermint extract. Assembly Using serrated knife, trim tops of cakes to level, if necessary. Spread 1 tsp of the icing in centre of cake plate; top with 1 cake layer, cut side up. Spread 1Ð cups of the icing over cut side; cover with second cake layer, cut side down. Spread 1Ð cups of the icing over top. Cover with final cake layer, cut side down; spread with 1 cup of the icing. Using offset palette knife, spread thin layer of the icing all over cake; refrigerate until firm, about 30 minutes. Using offset palette knife, spread remaining icing all over cake, smoothing side and top; refrigerate until firm, about 30 minutes. Arrange 2-inch wide strips of parchment paper vertically, 1 inch apart, around side of cake. Press crushed candy canes into exposed icing on side of cake; carefully peel off parchment paper. Garnish top of cake with candy canes (if using). Store at room temperature for up to 4 hours.

tip If you’re storing meringue-based icing in the fridge, it can separate when being brought to room temperature. Here’s the fix: transfer ½ cup of the icing to a microwaveable bowl; microwave on medium until melted, about 15 seconds. Scrape into remaining icing and beat again; repeat if necessary until icing returns to original fluffy texture.

here is nothing quite like the joy of decorating for the holidays. Yet unbridled enthusiasm when decking the halls can sometimes lead to seasonal overkill – you know that feeling you get when you’re walking through a Christmas shop instead of your own home? This Toronto abode shows how designer Orsi Panos gets the balance right when festooning festively without going overboard. Hint: use plenty of natural greenery, enhance items you already own and repeat, repeat, repeat.

Faux Real

All Natural

“For the staircase, I chose an artificial green garland as the foundation because it keeps its structure, then I enhanced it with real branches,” says designer Orsi Panos. “Real branches are easy to add, impart a natural look and can be replaced if they dry out during the long holiday season.” A natural woven ribbon furthers the real feel and its gold trim has subtle seasonal glitz. The stockings are purposely not red. “I specifically chose white knit stockings, an untraditional look, to add a warm and casual holiday vibe to the staircase.”

Orsi tempered the sparkly effect of the Fraser fir tree by opting for a more pared-back tabletop arrangement. “Vases of fresh fir and cedar branches – these we snipped from the backyard – augmented with fresh floral stems can set the holiday feel.” DESIGN, Orsi Panos, Orsi Panos Interiors. Old Favourites “You don’t have to rush out and buy everything new to create a beautiful table setting,” says

Orsi, who likes to rely on her clients’ existing collections to make holiday magic. Here, she elevated the homeowners’ classic crystal stemware and everyday white dishware with a mix of materials and finishes, including softly textured place mats and showstopper mugs. “Look through your cupboards and see what works together in unexpected ways. That’s how I came across these copper beauties that layer in the festive sparkle every holiday table needs,” says Orsi. Note the fun substitution for napkin rings: an ornament take-home gift.

“Kitchens get a lot of use during the holidays, so I like to sprinkle in a bit of decor, but I always remain mindful that clients need space for baking and cooking. Hanging a wreath on the exhaust hood is a beautiful solution because it’s out of the way but also at eye level so everyone will see it when gathering around the kitchen island. I used a suction cup to secure it.”

Orsi peppered the kitchen counter and shelves with arrangements of fresh greenery but kept them small – they have a cheery impact yet won’t get in the way of holiday baking and meal prep.

“A designated coffee bar and drink station is always a good idea for holiday entertaining, people can help themselves as they wish,” says Orsi. “Pretty touches, such as fresh cedar greenery under a plate of oranges, the warm glow of a candle, and greens draped over artwork can go a long way in creating a lovely holiday mood.”

The kitchen’s bay window is testament to the power of design continuity. A simple wreath is in step with the fresh greenery found throughout the home and becomes a festive focal point thanks to the ingenious display beneath it: wrapped gifts positioned beneath a wicker bar table of fresh herbs.

et in Ontario’s Brant County, this 2,600-square-foot home was the epitome of cozy even before designer Susan Burns amped up its wintry appeal. “The owners love touch-me textures and insisted that everything in the house be ‘real,’ especially the greenery,” she says. The results showcase some of Susan’s favourite ways to get a holiday country look that would be equally at home whether your snowy abode is aglow under city or star light.

A Light Touch Into the Woods “Even if you don’t have a wood-burning fireplace or wood stove, consider a display of wood logs. They look wintry, smell great and can be piled in a basket, placed in an entryway, or even beside a gas fireplace or electric hearth. This works anywhere, even in contemporary spaces like city condos.”

“Wood stoves are a bit hard to style because what do you put on them? Fresh and green elements work well in this instance and almost anywhere else. If you’re in a more contemporary space, make sure that the vessel is a bit sleeker than this vintage pail. I think using a little less greenery is better as well, because too much can feel overdone and overwhelming.”

Country Cocooning OPPOSITE In the great room, festive flair starts from the top down. “Using fresh greens is so much easier than relying on store-bought arrangements,” says Susan. “They can be styled loosely, like on the chandelier and mantel, and are forgiving, meaning they can be messy, even a bit wild, and still work.” Blankets, piled in a basket and layered on a sofa, further the warm holiday feel, while slipcovers made from vintage grain sacks give the wing chairs a cozy, old-world feel. The overall effect invites lazy lingering and afternoon naps by the fire.

FOR BOTH STYLES Step One Cut a ¾" x 11Ð" strip of card stock.

Step Two With a pencil, draw a line to the centre of the strip. Measure 1Ð" on each side of the centre line and mark; then measure 2" further from the 1Ð" measurement and mark.

Step Three Punch a hole in the centre of your strip, for threading the twine through later.

Step Four Shape the house by folding the strip at each mark using a ruler to get sharp folds.

Step Five Glue the overlapping ends to form the base of the house using double-sided tape or hot glue. Step Six Insert the baker’s twine through the hole at the top of the roof of the house and form a loop by making a simple knot on each side of the paper.

OPTION 1 Wood Beads Leave extra string on the loop inside the house frame; thread the desired number of beads on to the extra long string and secure with a knot. Cut off the excess string.

OPTION 2 Bow Download and print the template (see link below). Cut out the three shapes making up the knot. Place shapes on the back of a sheet of glitter paper. Outline them with a thick-leaded pencil and cut out. With the largest piece of glitter paper, shape the loop around a pencil and hot glue it. Assemble the knot by hot gluing each remaining piece in place.

OPTION 3 Glittery Tree Draw a tree shape on the back of your glittery scrapbooking paper. Cut out, keeping a Ð" strip at the base of the tree to fold it so that you can hot glue the tree to the base of the ornament.

Personalized Banners Cut ¾" x 5Ð" strips of transparent paper. Place the strip on a house to fold and shape it. Cut each end as shown. Write a message or name (for gift tags) centred on the banner. Secure to both sides of the house.

A handful of gaily wrapped gifts makes an easy but impactful holiday display in the entryway.

The home’s serenity is evident as soon as you step into the foyer where a picture window frames views of a nearby nature preserve and white walls are a clean, quiet backdrop for furniture and rugs in soft cream and greige tones. “We love the warmth of this palette,” Rashell says. “It’s bright and airy, and allows the textures and layers to show through.” Magnolia leaves studding the simple evergreen wreath allude to Rashell’s passion for the Carolinas. “It reminds me of winter in the South!” The Flowerfall chandelier by Oly Studio is equally enchanting. iry, tone-on-tone interiors have an innate simplicity. They exude serenity and flow, rarely challenging the eye with a stark shift in colour or a moody corner. That said, the best ones are never simple. And the best designers carefully consider every detail and finish. That was certainly the approach when designer Rashell Gouwenberg redid her charming Langley, B.C., home last year with her business partner Gregory Funk (the pair owns Peridot Shoppe + Interiors). “You have to consider all of the layers to make a neutral space truly cozy,” she says. Something as mundane as the drapes can make a world of difference. “Gregory always says to our clients: ‘Once you have beautiful drapes, it feels like your house is hugging you.’ And it’s true: you don’t realize how much you need them until you have STYLEATHOME.COM DECEMBER 2020

“We made sure to incorporate champagne buckets, glass storage and a tray,” Rashell says, of the elements she used to press the hutch into service as a bar.

them.” Indeed, the floor-length, oatmeal-toned linen drapes that dress all the windows in the 3,600-square-foot four-bedroom home that Rashell shares with her husband and their two pooches are a soft contrast to the crisp white walls and furnishings. Injecting a softness and quiet elegance was what this “refresh,” as Rashell calls it, was all about. The couple completed a larger renovation when they moved in nine years ago. “Initially, we did a cooler palette, with greys and laminate flooring,” Rashell says. “This time around, we wanted to warm up the space – add more character and more layers.” To elevate the look, Rashell and Gregory swapped in luxe materials, like Calacatta Gold marble and pale natural oak floors, and introduced sophisticated detail with new panelling and doors, unlacquered brass hardware, textural wallpaper and those cozy drapes. The designers took inspiration from homes they’ve visited in the Southern U.S. “Gregory and I always go to High Point Market in North Carolina to find furniture for clients, and then we’ll do South Carolina, Kentucky, Tennessee or Georgia. You can definitely see the Southern states in our designs; we love the warmth of the houses, with their beautiful windows, and all their layers.”

To create an impactful display on open shelving, Rashell layered in a small lamp, artwork and beloved collectibles.


The hug analogy is a sentiment that resonates with Rashell’s approach to holiday decorating, as well. Her festive palette is muted but cheerful: parcels wrapped in Kraft paper and tied with velvety peach bows, a frosted tree laden with sparkly glass and gold baubles, and just a few splashes of bright, pure greens plucked from nature. “My Christmas decor is very much the same as my house. I don’t do any sort of colour or theme,” Rashell says. Fresh flowers and greenery are the key ingredients. For eye-catching arrangements, she calls on local florist Alice de Crom. “Alice from Floralista is amazing!” she says. But Rashell also loves to tinker with arrangements. “I always go out in the backyard and forage greenery to make tablescapes and wreaths. I feel like that can go a long way,” says Rashell, who also brings in clippings from her backyard cedars for their heavenly scent. Layering in this simple fragrant pleasure, similar to the designer’s deftly applied layers of cozy elegance in her home, elevates Rashell’s holiday decorating to another level.

Rashell injected warmth with a few details. “I used unlacquered brass and a rich marble with lots of depth to give the kitchen some weight with the all-white cabinets,” she says. She kept the holiday decor simple because the open-concept layout means the glorious Christmas tree and mantel garland are visible from the kitchen. “We always add a beautiful floral arrangement on the island.” CABINETRY, Manhattan Kitchen. Rashell has a few favourite whites, but her current go-to is Classic Grey by Benjamin Moore. “It’s creamy and has lots of depth,” she says. “We balance it with Benjamin Moore’s Simply White on the trim and woodwork.”

Quietly dramatic drapes add polish here, and in all the other rooms. “Drapes are so important. They really frame the windows and give a space warmth, especially in a neutral-toned home with so much white,” Rashell says. “We chose an oatmeal linen with a tiny sheen to it.” Rashell created a gallery wall at the head of the table with French botanicals from the late 1800s. BELOW & LEFT While the dining room is layered with a charming mix of accessories and tableware, many of the materials are transparent or translucent, so the end result is light and airy. The room is also a master class in balancing classic and contemporary elements. “It’s important to layer,” Rashell says. “We chose an oak pedestal table with the beautiful grain showing, but with contemporary lines, then paired it with traditional art, cane-back chairs and the Ralph Lauren chandelier. In open-concept spaces, one or two big, splashy accents, like the dining room’s exquisite chandelier, may be all you need for impact. “I fell in love with that chandelier in North Carolina. It’s such a piece of art, and it gives that wow factor as soon as you enter the house.”

Generous doses of cream and greige, plus textures as diverse as shaggy faux fur and patina-heavy mercury glass, fill the white living room with layers of interest. While the palette is demure, the Christmas decorations are anything but! A frosted Christmas tree fills one corner, and the glossy magnolia garland positively teems with blooms and fragrant evergreens clippings. “I wanted the space to feel super cozy,” says Rashell, who used warm colours, lots of textures and tone-on-tone materials. A higher-than-average coffee table suits the large space and is a handy spot for fireside drinks and appetizers. Rashell’s curated collections of accents are equally eye-catching. She and her husband have two dogs, including Jackson, a golden doodle. “We used durable, natural products like a wool rug and familyfriendly fabrics.” It helps that Jackson coordinates so handsomely with the existing decor. “From the minute

I saw the gorgeous front door flanked with greenery, I could envision this home sparkling at Christmas,” says Kelly Gibson, a holiday decorating expert. The modern Tudor – rich in architectural details, including pocket doors, gracious millwork and conservatory-style windows – is decidedly English. And that’s hardly a coincidence. Its owners, Andie and Michael Skene, both have connections across the pond. “I am originally from Essex,” says Andie, and Michael studied in England. So, imagine their delight when Kelly suggested that the decorating theme would be “Holiday High Tea.”

Not surprisingly, the theme dictated that the family table would be a centrepiece in the holiday home. To make it a showstopper, Kelly suspended a host of shimmering orbs and whisper-soft feathers in the light-filled space. “It took four hours for me and three other people – all of us teetering on top of the table – to toss those ornaments, which are suspended on fishing line, over the cross beams so we could tie them in place,” laughs Kelly. The

table itself was regally set with towering displays of the prettiest baked goods, and an array of fine china and dazzling crystal. Elsewhere in the home, Kelly ushered forth the scents of the season, her arms loaded with cedar boughs and fir trees. Garlands and wreaths were hung, and the living room’s flocked tree adorned with velvet petals and shiny berries. Missing nothing, Kelly topped a tumbling abundance of simply wrapped gifts

adorned with graceful bows. In the entryway, she set lights a-twinkling to create a quiet, natural and sparkly first impression. Before long, every room had assumed a tenor that was truly rich in tradition. “But not just any holiday tradition – a Skene family tradition to share with their two teenage sons,” says Kelly. “Because there is only one rule for Christmas decorating: be yourself and use what you love to bring warmth and joy to your family.”

The sitting room’s crowning glory is a flocked fir tree dressed in feminine pastels. “I am a mum of two boys, so ours is a predominantly male household,” says Andie, who appreciated the soft pink and peach palette. Kelly paired the room’s marble and wool with soft velvets and shiny metallics. “Decorate to celebrate, not to match your decor,” Kelly says. FLOCKED TREE, Hunters Garden Centre. I made it taller!” says Kelly, who placed the tree on a milk crate draped with a faux-fur throw for a snowy finish. “If you really want your gifts to pop, set them on a white tree skirt and wrap them with coloured ribbons.” Bonus tip: use wired ribbon. “It bends easily, keeps its shape, and can be used year after year.” Kelly also advises looking beyond holiday ornaments. She used large faux blooms with soft velvet-like petals. “The best part is you only need about six or eight of them to complete an entire tree,” she says. hile rough-hewn stones, finely oiled woods and sumptuous textiles abound in this rustic retreat, its starting point was a rather unlikely element: wallpaper. Wallpaper has played an integral part in designer Alyson Wood’s life – her father was a wallpaper manufacturer; her mother ran a wallpaper shop – and it led to this plum project in a way she never could have imagined. “Twenty-five years ago, I was working weekends in my mom’s store when a regular customer asked me to decorate her home,” says Alyson. Her work made an impression on that customer’s then eight-year-old son, who, decades later, contacted Alyson about a new project. “It was the most wonderful call to get,” says the designer. “This little boy is now grown up with a wife and three kids of his own, and he wants me to, once again, help decorate.” STYLEATHOME.COM DECEMBER 2020

After a few meetings, the brief to update their 1,600-square-foot Owl’s Head getaway morphed into a total gut job and year-long overhaul that would triple the floor space, bump up the two bedrooms to five, and transform the aesthetic inside and out. “It had been renovated by the previous owners,” says Alyson, but its true potential was hidden. “I wanted cozy, luscious, rich – a stone exterior, big furniture and thick wool blankets by crackling fires.” And, because this element is always important to Alyson, she wanted the home to feel more integrated with its setting. Respecting context is one of Alyson’s design specialities and it’s on display the moment you step into the front hall. “The artwork here and throughout the space is appropriate for a ski-slope home where deer actually graze. This is art that reflects where they live.” Underfoot, sturdy slate feels both natural and unexpected. “The small tiles in chevron application are more original than oversized square ones.”

In the soaring, double-height living room, Alyson cranked up the cozy with a showstopper fireplace clad floor-to-ceiling in local stone that she carefully selected with the help of a mason. “I included some yellow and beige stones to create contrast with the greys and charcoals. I’m a very monochromatic designer and feel that toneon-tone hues make spaces feel rich, calm and comfortable.” By combining a calculated balance of wood panelling with painted white walls, she kept the woodsy space feeling airy. Her kitchen design furthers the light atmosphere thanks to an

energetic mix of matte and glossy finishes and a hardworking palette, where warm whites, lush chocolate browns and moody charcoals are welcoming. “This scheme also echoes the various tones of material choices throughout the home,” says Alyson. She chose to forgo upper cabinets on one wall to better showcase the tilework, and included a farmer’s sink to give the brand-new kitchen a vintage look. “This is very much a family kitchen – everyone’s at the counter for a quick breakfast before hitting the slopes, so it had to be functional and comfortable.”

Cupcakes 1¾ cups all-purpose flour 1 cup granulated sugar 1 tbsp cinnamon 1 tsp baking powder 1 tsp pumpkin pie spice ¼ tsp baking soda ¼ tsp salt ¾ cup unsalted butter, room temperature, cut into cubes 1 egg ½ cup whole (3.25%) milk ½ cup canned pure pumpkin purée 1 tbsp pure vanilla extract Cream Cheese Buttercream ½ batch (see recipe page 94) Sugar and Spice Crumble ½ batch (see recipe page 94) Salted Caramel ½ batch (see recipe page 94) Cupcakes Preheat the oven to 350°F. Line 2 cupcake pans with 16 cupcake liners. In the bowl of a stand mixer fitted with the paddle attachment, combine the flour, sugar, cinnamon, baking powder, pumpkin pie spice, baking soda and salt on low speed for 1 minute. Add the butter and mix for an additional 1 to 2 minutes, or until the mixture has the texture of wet sand. Do not overmix. Add the egg and mix until just combined. In a measuring cup, whisk together the milk, pumpkin purée and vanilla. With the mixer on low speed, slowly pour in the milk mixture and mix until just combined. Scrape down the sides of the bowl and mix again for 10 to 15 seconds. The batter will look a little lumpy. Divide the batter evenly among the cupcake liners, filling each three-quarters full. Bake for 15 to 18 minutes, or until a toothpick inserted in the middle of a cupcake comes out clean. Let cool for 5 minutes in the pans before transferring the cupcakes to a wire rack to cool completely. Cream Cheese Buttercream Prepare ½ batch Cream Cheese Buttercream. Sugar and Spice Crumble Prepare ½ batch Sugar and Spice Crumble. Salted Caramel Prepare ½ batch Salted Caramel. Let cool to room temperature. Assembly Transfer the Cream Cheese Buttercream to a piping bag fitted with a No. 8B tip. Pipe the buttercream onto each cupcake with an even pressure, starting from the middle and swirling in a circular motion until you round the cupcake twice. Release pressure from the piping bag and pull it away for a clean finish.

Sprinkle a generous amount of Sugar and Spice Crumble on top of each cupcake. Transfer the Salted Caramel to a piping bag and cut off the tip. Drizzle each cupcake with caramel. For maximum freshness and deliciousness, serve cupcakes on the day they are made. If you want to bake the cupcakes a day in advance, store the baked, undecorated cupcakes in an airtight container at room temperature until ready to decorate and serve.

CHEWY SALTED CARAMELS MAKES 24 CARAMELS

2½ 2 ¾ 1 ½

cups granulated sugar cups whipping (35%) cream cup white corn syrup tbsp pure vanilla extract cup unsalted butter, room temperature, cut into 1-inch cubes ½ tsp fleur de sel, for garnish

Spray a 13-×-9-inch baking dish generously with cooking spray. Line it with parchment paper and spray again with cooking spray. In a large saucepan over medium-high heat, cook the sugar, cream, corn syrup and vanilla until a candy thermometer reads 245°F. Do not stir. Add the butter and stir until melted. Continue to cook the caramel until the temperature reaches 245°F again. Pour the mixture into the prepared baking dish. Let stand for 5 minutes before sprinkling with the fleur de sel. Let stand at room temperature for 2 to 4 hours, until completely set. Transfer the caramel to a cutting board by lifting the edges of the parchment paper. Pull the parchment paper away from the sides of the caramel. Using a sharp chef’s knife, cut into 24 pieces, each about 3 × 1½ inches. Wrap individual pieces in wax paper to turn them into a festive gift, if desired. Store in an airtight container in the fridge for up to 2 weeks.

CHEWY SALTED CARAMELS


FOOD SALTED CARAMEL TRUFFLES MAKES 30

Milk Chocolate Truffle Ganache ½ cup + 1 tbsp whipping (35%) cream ⅓ cup granulated sugar 1 tbsp water 1 tbsp unsalted butter, room temperature ½ tsp salt 1½ cups milk couverture chocolat Coating 4 cups milk couverture chocolate (if tempering) or milk chocolate melting wafers (if not tempering) Garnish 1 tsp fleur de sel Edible gold leaf flakes (optional) Milk Chocolate Truffle Ganache In a heatresistant medium bowl, heat the cream in the

microwave in 30-second intervals, stirring after each interval, until warm to the touch. In a large saucepan over medium-high heat, bring the sugar and water to a boil, and boil until the syrup caramelizes and turns a warm amber colour. Remove from the heat and slowly pour in the warm cream, whisking constantly to prevent the mixture from bubbling over. Add the butter and salt and whisk until fully incorporated. In a heat-resistant bowl, melt the milk couverture chocolate in the microwave in 30-second intervals, stirring after each interval, until smooth. Pour the caramel mixture over the chocolate and whisk to combine. Cover with plastic wrap placed directly on the surface of the mixture to prevent a skinfrom forming. Refrigerate until firm to the touch, about 1 hour.

Assembly Line a baking sheet with parchment paper. Once the ganache mixture is firm, remove it from the fridge and scoop tablespoonsize dollops onto the prepared baking sheet. Once all the ganache has been scooped, place the baking sheet in the fridge so that the truffles stiffen to a rollable consistency, about 30 minutes. Remove the truffles from the fridge and use your hands to roll them into balls. If your hands are usually quite warm, run them under cold water and dry them before rolling to help prevent melting. Return the rolled truffles to the baking sheet and refrigerate to harden. Temper the couverture chocolate or melt the chocolate wafers in a heat-resistant bowl in the microwave in 30-second intervals, stirring after each interval, until smooth. Pour into a deep small bowl. Remove the truffles from the fridge. Using a chocolate fork, submerge a truffle in the chocolate to cover completely. Lift it out of the chocolate and let drip, tapping the fork on the edge of the bowl to help remove excess chocolate. Return it to the baking sheet, using another fork to help it slide smoothly into place. Sprinkle with fleur de sel and gold leaf flakes, if using. Repeat until all truffles are covered. Let stand at room temperature for about 30 minutes, until the chocolate hardens completely. Store in an airtight container in the fridge for up to 2 weeks until ready to serve.

LEMON MERINGUE COOKIE SANDWICHES MAKES 12 COOKIES

Lemon Sugar Cookies 1¼ cups granulated sugar ½ cup unsalted butter 1 tbsp buttermilk 2 tbsp fresh lemon juice 1 egg ¾ tsp pure vanilla extract

1 drop yellow gel food colouring 2¼ cups all-purpose flour Zest from 2 lemons (about 2 tbsp) ¾ tsp baking soda ½ tsp baking powder ¼ tsp salt Round white sprinkles, for garnish Meringue Marshmallow Fluff ½ batch (see recipe page 94) Lemon Curd ½ batch (see recipe page 94)

Lemon Sugar Cookies Preheat the oven to 350°F. Line 2 baking sheets with parchment paper. In the bowl of a stand mixer fitted with the paddle attachment, cream the sugar and butter on medium speed for 2 to 3 minutes, until the mixture looks white, light and fluffy. In a small bowl, mix the buttermilk, lemon juice, egg, vanilla and food colouring. With the mixer on low speed, slowly pour the buttermilk mixture into the butter mixture and mix until fully incorporated. Scrape the bottom of the bowl with a spatula and mix for an additional 15 to 30 seconds, until combined. In a medium bowl, mix the flour and lemon zest. Use your hands to coat the lemon zest with flour to ensure that there are no chunks. Add the flour mixture, baking soda, baking powder and salt to the wet ingredients and mix on low speed until just combined. The dough is fully mixed when it comes together and pulls clean away from the sides of the mixing bowl. If the mixture is dry, add a teaspoon of buttermilk at a time, until you can easily scoop it. Using a medium cookie scoop, scoop the cookies onto the prepared baking sheets 1 to 2 inches apart. Using the base of your palm, flatten the cookies to the desired size and shape. Top with the sprinkles. Bake for 5 to 6 minutes, or until the edges of the cookies begin to brown. Let cool for 5 minutes on the baking sheets before transferring them to a wire rack to cool completely. Meringue Marshmallow Fluff Prepare ½ batch Meringue Marshmallow Fluff. Lemon Curd Prepare ½ batch Lemon Curd. Transfer to an airtight container and store in the fridge for up to 1 week until ready to use. Assembly Transfer the Meringue Marshmallow Fluff to a piping bag fitted with a No. 8B tip. Flip over half of the cookies and pipe the fluff onto each with an even pressure, creating a 1-inch ring. There should be a “hole” in the middle of each ring and a ½-inch ring of cookie around the exterior edge. Transfer the Lemon Curd to a piping bag and cut off the tip. Pipe a generous dollop (1 to 2 tbsp) into the middle of each fluff ring. Place the remaining cookies, right side up, on top of the filling and press down gently to help them stick. The fluff will spread slightly to the edges of the cookies. Using a hand-held torch, toast the edges of the fluff, being careful not to burn the cookies. Place the finished cookie sandwiches in the fridge to chill for easier handling. Store cookie sandwiches in an airtight container in the fridge for up to 4 days. STYLEATHOME.COM DECEMBER 2020

FOOD Preheat the oven to 350°F. Line a baking sheet with parchment paper. In the bowl of a stand mixer fitted with the paddle attachment, cream the sugar and butter on high speed for 2 minutes, until the mixture looks light and fluffy. Scrape down the sides of the bowl. Add the vanilla and beat on high speed for an additional 30 seconds. Add the flour, cornstarch, pumpkin pie spice, cinnamon and salt, and beat on low speed until combined and the mixture has the texture of wet sand. Scrape down the sides of the bowl and mix for an additional 30 seconds. Spread the mixture in an even layer on the prepared baking sheet. Bake for 5 minutes. Remove from the oven and stir. Return to the oven and bake for an additional 2 to 4 minutes. Let cool to room temperature before using. Store the crumble in an airtight container at room temperature for up to 1 week.

CREAM CHEESE BUTTERCREAM MAKES 4 CUPS

cup cream cheese, room temperature cup unsalted butter, room temperature cup vegetable shortening cups icing sugar tbsp vanilla bean paste (If you can’t find vanilla bean paste, substitute 1 tbsp pure vanilla extract and the seeds from 1 whole vanilla bean)

In a stand mixer fitted with the whisk attachment, whip the cream cheese on high speed for 3 to 5 minutes, scraping down the sides of the bowl every minute, until smooth. Add the butter and shortening and mix on high speed for 2 to 3 minutes, scraping down the sides of the bowl every minute, until smooth. With the mixer on low speed, slowly add the icing sugar and mix for an additional 30 seconds. Increase the speed to high and mix for 3 minutes, until the mixture looks light and fluffy. Scrape down the sides of the bowl. Add the vanilla bean paste and mix for an additional minute. Use immediately or store in an airtight container in the fridge for up to 1 week. Remove from the fridge 1 hour before using.

SALTED CARAMEL MAKES 2 CUPS

½ cup granulated sugar ¼ cup water ¾ cup whipping (35%) cream ½ cup unsalted butter, room temperature, cut into 1-inch cubes 1 tsp salt In a medium saucepan over medium-high heat, combine the sugar and water and cook, without stirring, until the syrup turns a deep golden brown and is bubbling slowly. Keep close watch to avoid burning it. Remove the saucepan from the heat. Very slowly, whisk the cream into the pot. The mixture will bubble a lot as you add the cream. You may want to wear oven mitts while you whisk to prevent any splatters or steam from burning your skin. Add the butter and salt and whisk until combined. Let cool for at least 30 minutes. Transfer to a squeeze bottle or an airtight container and store in the fridge for up to 2 weeks.

MERINGUE MARSHMALLOW FLUFF MAKES 6 CUPS

In a medium saucepan over medium-high heat, bring 1 cup + 2 tablespoons granulated sugar, the corn syrup and water to a boil. Cook over medium-high heat until a candy thermometer placed in the mixture reaches the soft-ball stage, or 240°F. Remove the saucepan from the

heat. In the bowl of a stand mixer fitted with the whisk attachment, whip the egg whites and the remaining 2 tablespoons granulated sugar on high speed until soft peaks form, about 3 minutes. With the mixer on medium speed, slowly pour the hot syrup into the egg white mixture so that it trickles down the inside edge of the bowl, taking care not to pour it directly on the whisk. Increase the speed to high and whip for 4 to 5 minutes, until stiff. Meringue Marshmallow Fluff is best used fresh. Store any leftover fluff in an airtight container at room temperature for up to 2 days.

LEMON CURD MAKES 2 CUPS

cup fresh lemon juice (about 3 lemons) cup water, divided cup granulated sugar cup cornstarch tsp salt egg yolks tbsp unsalted butter, room temperature

In a small saucepan over medium-high heat, bring the lemon juice and ½ cup water to a simmer. In a medium bowl, whisk together the sugar, cornstarch and salt. Add the egg yolks and the remaining ½ cup water and whisk to combine. Slowly pour the lemon juice mixture into the sugar mixture, whisking constantly to temper the egg yolks, until fully combined. Return the mixture to the saucepan and cook over low heat, whisking constantly to prevent burning and to ensure a smooth and creamy consistency. Continue whisking until the mixture thickens and lifting the whisk out of the mixture creates a thick ribbon of lemon curd. Remove from the heat and whisk in the butter until fully combined. Pour the mixture into a medium shallow dish and cover with plastic wrap placed directly on the surface of the mixture to prevent a skin from forming. Refrigerate for at least 1 hour, or until ready to use. Store in the fridge for up to 1 week.
