Regular readers will know that
I’ve always been partial to wearing red lipstick in honour of my
late mother’s favourite shade. In fact, the colour inspired the name of one of the shades (Mary’s Lipstick FD088-3) in our Style at Home Country Colour Collection with Beauti-Tone Paints. However, I’ve just become smitten with this new lipstick
The first time I saw a room painted all in black I was in my early 20s. The glamorous mother of a university boyfriend had coated the walls of her small dining room with a dark chalky hue and balanced it with crisp white crown moulding and trim. I was awed by how surprisingly bright and inviting the space was, as if the black walls allowed the rest of the room to shine – colours seemed to have more depth and wood tones appeared richer. The trick was in all the natural light that flooded the space: There was a wall of windows on one side and then two open doorways connecting the area to a sunny living room on one end and an allwhite kitchen on the other. Since then, I’ve periodically come across black rooms – and not always in a teenaged boy’s ode-to-the-Rolling Stones man cave! But with the variety of paints and decorating techniques out there, not to mention the rise of sites like Pinterest that offer everyone a window on gorgeous design all over the world, it’s no surprise to me that today’s designers and homeowners have become more and more empowered to use black walls to define a space. Of course, there’s no question that painting a room in a moody raven’s wing tone takes a skilled hand – no decorating endeavour is more daring, but when it’s done successfully, there’s also none more elegant. When the Style at Home design team was compiling the best baths in Canada to feature in this issue’s special section (see “4 Spa-Worthy Bathrooms Bursting with Panache, page 86), one thing we kept seeing was the use of black – not just in fixtures, but in trimmings, tiles and wall paint as well. We’re thrilled at how these rooms have pulled off this risky colour and how the confidence to use black has led to spaces with new dimension and drama. We can’t wait to hear what you think. I just loved the July issue, in particular the article “How Canadian Are You?” I’m a hobby watercolour artist and started doing a series of paintings of laundry on the clothesline after first doing one for my girlfriend’s new laundry room. Place the blueberries and ½ cup maple syrup in a small saucepan and cook over medium heat until the berries pop and the mixture is saucy. Continue to cook, stirring occasionally, until the sauce is thickened, 15 to 20 minutes. Stir in the vanilla extract and Maldon sea salt; remove from the heat and set aside to cool. Heat a grill to medium heat. Halve the peaches, discarding the pits. Stir together the melted butter, cinnamon and remaining maple syrup in a small bowl. Brush the peach halves with the cinnamon mixture and place cut side down on the grill. Cook for about 5 minutes, then turn and cook until the fruit softens and begins to caramelize, another 3 to 4 minutes. Remove from the heat and drizzle with remaining cinnamon mixture. To serve, place two peach halves cut side up in a bowl. Add a scoop of frozen yogurt; drizzle with the blueberry maple sauce. Top with a dollop of whipped cream and a handful of crumbled gingersnaps.

“This corner of the room is perfect for hanging out with friends or reading,” says Tara. The dramatic fabric on the sofa incorporates some solid colour among the interesting patterns at play. The designer’s attention to detail is on display in the bolster cushion, upholstered to match the drapery, and the ottoman’s legs, which are the same shade as the walls.

traying from tradition is something any designer savours. So when Tara Fingold’s clients bought this house and entrusted her with decorating their young daughter’s bedroom, she assessed the space with gusto. “I wanted something really fun and playful, and my clients were open to skipping run-of-the-mill pink.” With a brief that upended colour expectations for a girl’s room, Tara devised a fierce palette. “A patterned pomegranate fabric I chose for the drapery became the starting point,” she says. It fuelled everything from the teal walls and eggplanthued sofa to the pretty fabric on the custom bed frame. “Lots of colours in both vivid and pale tones, and plenty of mixed-scale prints create energy here,” says Tara. “Mixing and matching is always better than just plain matching.” It’s an ethos evident in the room’s furniture choices as well. Tara mixed in existing items like the sofa and ottoman, which she usurped from the living room. “I had them reupholstered, which was more cost-friendly than buying new furniture.” These pieces also underscore Tara’s belief that kids’ spaces don’t have to be kid-centric. “You don’t need to furnish a little one’s room with baby-specific designs,” she says. “In fact, I think children prefer proper furniture.” In this case, that’s definitely true. Because the clients were living elsewhere during the project, the room redesign became an unintentional surprise. “When we finally revealed it, the daughter was ecstatic. There may be grown-up elements here, but this is definitely a little girl’s room.” With not a pink wall in sight.

UPHOLSTERED FURNITURE IN THE BATHROOM? “YOU BET,” says Toronto designer Margie Doyle White. In fact, it was a fabric swatch that inspired the look of Raewyn Fahlenbock’s now impossibly pretty master ensuite. “Upholstery – whether in an armchair or a Roman shade – lends softness,” explains the designer. “The oversized hydrangea print fabric that covers the bathroom’s slipper chair is one of my all-time favourites,” says Margie, who used it here to provide a comfy perch at the makeup vanity. “It dictated the overall mood of the room.” Which is a good thing, because before Margie arrived, the 300-square-foot space was in a really bad mood. “It had no sparkle, no colour, two single vanities placed oddly far apart and a shower stall,” she says. Noticeably absent: a tub. “While her husband prefers a shower, Raewyn loves to indulge in a relaxing bath, so we knew that had to be incorporated in the redesign.” So, everything was ripped out for a clean (pun intended) start. Because the room is long and narrow, Margie aimed for an expansive feel. “I didn’t want the tub and shower stacked on one side. I wanted to make the room feel wider than it is.” So she established symmetry by placing custom vanities – one with hisand-hers sinks, the other a makeup station – on opposite walls, visually widening the space. This set-up is echoed in the placement of the spiffy new show-stopping tub, which is positioned opposite the shower. “These are all big items,” says the designer, “but placed this way, they balance one another out.” That elegant balance runs

DECORATING through the room’s colour palette, from the pale wall paint that recalls the magical light of dusk to the mix of watery-hued tiles in unexpected applications, particularly the mosaic ones used in the niche above the double-sink vanity. “These delicate beauties were a huge splurge!” says Margie. “They look like individually applied mosaics, but they’re actually sheets of tiles that are applied like wallpaper.” Luckily, their budgetbusting price tag was tempered by the affordable piece that started it all – a pretty floral fabric swatch that cultivated a bouquet of a bathroom.

You’d never know the cabinetry in this space isn’t brand new, but thanks to a pro paint job, homeowner Janet Hamilton now has a high-end kitchen for thousands of dollars less than a new one would have cost. The 9-by-3-foot island is wrapped in cedar planks that she stained grey. This is where she hangs with her partner, and the four kids they have between them.

LEFT Janet did the backsplash tile work herself. “It’s easy to do a brick pattern like this,” she says. “But for pro-looking results, splurge on a quality tile cutter.” White walls and herb pots offset the muted grey cabinetry and the warm tones in the countertop. “White makes a grey kitchen look bright and clean,” says Janet. here goes the neighbourhood! Or so it seemed when Janet Hamilton and her 15-year-old son, Josh (now 17), pulled into the driveway of their newly purchased 1960s brick bungalow in Burlington, Ont., – in a 30-foot-long RV. For 10 days and nights, the beast, crammed with home furnishings and accessories, just sat there in the driveway. Nobody had said anything, but everyone was definitely thinking: Who ARE these people?! “Our last house had sold, but this one was still being renovated. So, you’ve got to do what you’ve got to do!” says Janet with a laugh. Looking back, she can’t believe she drove the mammoth RV at all. “I had zero experience!” she remembers, recounting how she navigated the quiet, narrow residential streets at a crawl. “I still don’t know how I pulled it off!”

artichokes, look just as wonderful here as a magenta dish filled with oranges would. BOTTOM “A clutter-free kitchen makes me feel at peace,” says Janet. “I only keep the things I really need. All those books about organizing are right!” A large island with stools makes this the perfect kitchen for having company while cooking. And if wine is desired, the bar area is nearby. “It makes the room feel like there’s always a party about to happen,” says Janet.

cabinets,” says Janet, “or the uppers a hue that varies from that on the lowers.”
4. Finish Matters
“Use semigloss paint on cabinets for a durable washable surface.”
5. Change It Up “Since the cabinetry is getting pulled out anyway, why not come up with a new layout?”
6. Employ Whites, Plural “Whites needn’t match,” says Janet. “The trim, cabinets, backsplash, millwork, island and shelves can be different whites. In fact, using more than one white adds character.”
But living on-site turned out to be a benefit. “I could hop out of the RV and into the house to look in on the renovations. Overseeing a project is important,” says Janet. “As a woman, it can be hard to speak up, but you’ll be living there long after the project is done and the workmen have left, so it’s no time to be quiet.” Creating a family-friendly kitchen that still felt cool was Janet’s biggest priority. Walls were removed between the former cramped pink kitchen and the tight dining room to transform the area into an open-concept living space. From there, Janet purchased maple cabinets complete with storage drawers at Habitat for Humanity ReStore for $2,500. They were an eyesore, but as the owner of Paint It Like New!, a furniture-painting company, Janet knew she could give them new life. She coated them in a warm mushroom grey at her shop and then retrofitted them into a cook-friendly arrangement. “Brand new, this would have cost $50,000,” she says. For texture, Janet panelled the island with greystained cedar planks. “After I finished, the contractor told me I needed to be able to access the plumbing. Uh-oh!” But then she got inventive: She cut a square hole and made a matching panel that could easily be removed. “It’s held on with magnets!” she says with a triumphant grin. It’s that kind of ingenuity – along with her talent for rejuvenating secondhand finds – that helped Janet get the kitchen of her dreams, with no compromises necessary. FOR SOURCES, SEE OUR WORKBOOK

“TRADITIONAL” DOESN’T HAVE TO MEAN SAFE. IN SHIRLEY MEISELS’S world, subtly feisty flashes of colour and offbeat furnishings tie traditional rooms together. “My style is firmly modern with an eclectic twist,” says Shirley, the seasoned designer behind Toronto’s MHouse. “I tend to use black and white as neutrals, and then I add pops of colour.” Shirley brought that signature sass to a client’s 2,000-square-foot house in Toronto’s Allenby neighbourhood. The 1940s abode was not only dated (think dowdy taupe rooms), but strangely enough, there was a barrier plunked in the middle of the house: “The staircase to the basement was right in the centre of the kitchen,

rendering the space useless,” says Shirley. So the stairs were moved out of the kitchen, the electrical was updated and worn walnut-stained floors were replaced with stunning white oak. Modern furnishings, white paint and an inviting palette of mauve, pale blue and white finished the look. “It now feels light and fresh, and there’s improved flow,” says Shirley. Here’s what lends this timeless look an au courant vibe that flirts with tradition.
A warm two-toned walnut overhang is a clever departure from the customary single-material island. The raised ledge lets the piece offer the best of both worlds: a breakfast-barheight station for eating and a standard island surface for doing prep work.

ood things happen when you stop overstuffing your surroundings. That’s one of the take-aways from Jennifer Ferreira’s gorgeously refined home. “I love keeping things minimal and edited, which, to me, is the highest form of elegance,” says the designer. Her house in Toronto’s Wychwood Park neighbourhood, where she lives with her husband and two sons, brilliantly illustrates her purge-to-perfection ethos. Step onto the come-hither white oak herringbone floors that flow through the main floor – which Jennifer expertly kitted out with bursts of black and a select mix of dynamic furnishings – and you’ll be instantly seduced. A jumble of belongings would mask the individual components, “but a purged space allows you to appreciate details like the beautiful brass hardware, the architectural lines and even the shape of a chair,” says Jennifer, who wanted to create a timeless tailored look. “My style is classic at heart, but I love to mix different eras and aesthetics with a modern edge.”

Bold black makes an impact in the lively living room via the dramatic abstract artwork, Hermès throw, Mariano Fortuny photography lamp and drapery trim. “The kitchen is relatively small – just 110 square feet – but it doesn’t feel that way because of the mobile island,” says Jennifer, who designed the piece to be easily pushed aside to gain space when company’s over. Cloaking the range hood in subway tile, a look inspired by Jennifer’s grandparents’ farm in Lisbon, gives the modern space a charming vintage vibe. But when Jennifer and her husband initially toured the 1,800-square-foot three-bedroom home, it needed love. “It was dark and looked so small,” Jennifer says of the choppy layout that had the kitchen plunked in the centre – which is not ideal, because she likes to admire the garden while cooking. Still, the house had good bones (it was built in the ’70s, after all), so there were no scary surprises behind the walls. During the year-long renovation, the designer rejigged the layout. Four walls were demolished, the kitchen was relocated to the rear and a set of doors was installed to graciously divide it from the dining area. “I like the formality of closing off the kitchen to the dining room while entertaining. I also love the airiness created when the doors are open,” says Jennifer. With their stately centred doorknobs and etched detail, these doors exude luxury, as does a nearby ceiling rosette circling a brass light fixture. The latter is a bit of designer trickery. “That medallion and the others used

throughout the house were super inexpensive,” says Jennifer, who reveals the solid-wood doors themselves were a splurge. (Not so throughout the rest of the house, where she used hollow-core versions.) In terms of the palette, Jennifer harnessed a classic combo. “Because the house is small, I painted it entirely in white to make it feel open and airy,” she says. “I love adding black for contrast, and it also highlights the brass hardware on all the doors on the second floor.” The result is an oh-so-chic home with high- and deceptively low-cost flourishes that perfectly suits the family. “The biggest challenge throughout the process was that I had to purge and really edit what I had acquired from my previous place,” Jennifer says. “I had to teach myself to live with less.” It was well worth the effort, because this house proves that less is definitely more.
“I had very limited space to work with, so I designed a vanity to house all our toiletries and towels,” says Jennifer of the ensuite bathroom. She kept everything white for an open airy atmosphere. urquoise, chartreuse and blush are hues you’d normally associate with an eclectic beachside abode with a dreamy Caribbean sunset, not a transitional interior in a big city. But in this newly built 4,200-square-foot Washington, D.C., home owned by a pair of recent empy nesters, the place and palette are in perfect harmony. “The wife has always loved turquoise,” says designer Erica Burns, who collaborated with GTM Architects and Sandy Spring Builders to execute the look. “She told me the hue made her happy, so we ran with it!” Turquoise became the home’s principal unifying colour, seen on walls, furnishings and accessories, but it’s tempered by lots of neutrals. “We opted for mostly light beige walls, creamy upholstery and white oak floors,” says Erica. “An all-white backdrop would have read too cool, but warmer neutrals add movement and sophistication.” THIS PAGE & OPPOSITE Colour takes centre stage in this Washington, D.C., home, as evidenced by the library’s high-gloss turquoise walls. Sliding glass-panelled pocket doors, also finished in turquoise paint, seal off the library from the entryway and dining room as needed. The fresh trellis-patterned wallpaper just beyond the doors softens the turquoise hue, and offers a stunning transition to the dining room.
That said, the use of vivid colour is what really distinguishes the home. It makes its statement as soon as you walk in the front door and look to the right: Glossy turquoise paint cloaks the panelled library, where the homeowners enjoy an evening cocktail or relax with their books. “When you pick a strong colour like turquoise, the other hues you use should complement it, not compete with it,” says Erica of her almost painterly approach. So across from the saturated high-gloss library, the dining room walls are a soft blush shade, and the dining chairs a more muted turquoise. In the kitchen, soft chartreuse accents perk up adjacent furnishings and elevate the bold backsplash. Meanwhile, subtle patterns throughout the home echo the palette but never overwhelm it. “It’s important to employ hues in different doses and textures,” explains the designer. From the wainscotting to the arched doorways to the coffered ceiling, beautiful architectural details make the bold colour choices read as sophisticated. Incorporating antiques alongside RIGHT & BELOW The homeowners’ mahogany dining table was stained an espresso shade to match the legs of the dining chairs, while the chandelier, a contemporary take on a traditional tiered fixture, ties into the gilt antiques. the clean-lined contemporary furnishings also imbues elegance, and metallic hits help. “I used warm brass and gold accents in the formal rooms for an Old World feel,” says Erica. “And in the back of the house, which is lighter and more casual, I worked oil-rubbed bronze into the lighting and kitchen hardware.”
The finished home is elegant and unexpected. “Some people would find these colours hard to integrate into a home while keeping it elegant,” she says, “but we are so happy we pulled it off!” It just goes to show that having the confidence to use colour and the daring to mix styles can yield unforgettable results.

GO WITH THE FLOW Two-tone cut-marble floor tiles add a soft and subtle pattern that becomes high-impact when carried up one wall of the shower (shown opposite). “The shower’s glass enclosure shows off the tiles, establishing continuity, and keeps the room feeling open and airy,” says designer Amber Kingsnorth.
Modernizing this handsome master bathroom meant going back in time. “It is a heritage property that was converted into townhomes,” says designer Amber Kingsnorth, who was enlisted to update the entire townhouse, located in Vancouver’s vibrant South Granville area. “It had builder-grade finishes inside, and the homeowners wanted it to feel more true to its origins.” By incorporating traditional architectural details, cleanlined elements, subtle pattern and a crisp, neutral palette, the designer created a tailored space that respects the property’s history but still feels modern and fresh.
A wall-mounted faucet keeps the counter looking clean and spacious. SEE THE LIGHT A single smoked-glass and black aluminum sconce serves as a statement piece and adds a stunning vintage hit to the room. “I like how the smoky glass brings in warmth,” says Amber. The marble-look engineered quartz countertop and backsplash tie in with the marble floors. Matte black elements like the wall-mounted faucets and mirror frames offer crisp contrast to the soft white and grey hues dominating the palette. IT’S THE LITTLE THINGS Small details were added to increase functionality. For example, the vanity’s two top drawers were outfitted with shallow internal units. “You can keep smaller items, such as toothbrushes, toothpaste and hairbrushes, in there and store larger items below,” says
Amber. Next to the built-in armoire, a small nook with outlets allows the homeowners to keep items that plug in, like hair dryers, tucked in the corner and out of the way.

OPEN & SHUT CASE Enlarging the bathroom allowed Amber to incorporate both extra storage and a double-sink vanity. A built-in armoire serves as a linen closet and houses a tilt-out laundry hamper, while open shelves provide a spot for attractive toiletries and useful accents. Traditional detailing, such as the feet on the toe kicks, crown moulding and Shaker-style cabinetry, add character: “It’s a nod to the heritage vibe of the house,” says Amber, “and prevents the room from feeling too austere.”

IN THE BLACK The Calacatta marble floor with black granite inlay is the elegant nod to Old Hollywood that designer Chrissy Cottrell was looking for. “Black and white bathrooms aren’t uncommon, because they are incredibly classic,” she says. “So I wanted to bring this one up a notch by adding an extra punch.” The rich black walls make the floor pop and let the inlay detail really shine.

With
green granite countertops and white cabinetry that had turned peachy-cream over time, this master bath was in desperate need of an overhaul. “It was like the 1980s called and wanted their bathroom back!” says designer Chrissy Cottrell. Part of a complete condo renovation in Vancouver’s Yaletown area, the bathroom was given a dramatic elegant vibe that blended with the rest of the Hollywood Regency-inspired space. Contrasting the room’s white elements with a black envelope creates striking drama, while brasshued faucets and fixtures enhance the richness of the space and pay homage to the home’s glamorous old L.A. feel.
GET IT TOGETHER The bathroom’s unusual footprint presented some challenges. “It’s like a rectangle with a corner cut off,” says Chrissy. “I usually like to have two sinks in an ensuite, but we didn’t have the space for that.” Instead, the designer created an elegant vanity with recessed cabinets highlighted by geometric brass pulls and a sleek marble countertop that matches the floors. The wall-mounted faucet and simple cylindrical sconces are integrated into a counter-to-ceiling mirror. “I wanted the vanity and mirror to look like one cohesive unit,” she says. TAKE A SEAT A typical tub and shower combo was ripped out and updated with a stand-alone shower featuring classic dark-grouted ceramic subway tiles and a mosaic marble tile floor. Brushed
champagne bronze fixtures complement the room’s luxe look, and a built-in bench (not shown) clad with a marble top, adds functionality. “Every shower should have a bench,” says Chrissy. “Who wants to shave their legs standing up?!”

Ali Budd was renovating her north Toronto home slowly but surely when things took a surprising turn. “The master bathroom wasn’t a priority until it was pretty much falling through the ceiling and I had to do it out of necessity,” she says. To create a retreat-like setting, inspired by a Parisian bathroom she found on Pinterest, Ali expanded the footprint. The resulting 14½-by-8½-foot room was injected with bold pattern, textural elements and unexpected juxtapositions, creating a classiccontemporary look with just the right amount of edge.
THE BIGGER, THE BETTER The shower’s Nero Marquina marble bench is a functional element that offers a hit of contrasting black and serves as a striking decorative piece. “I didn’t want to have a built-in bench because we were doing the whole shower in glass,” says designer Ali Budd. “This is a beautiful piece and I love that you can see it from all sides of the room.” MIX MASTER Ali incorporated a mix of textural elements and patterns while adhering to a sophisticated neutral palette to create a serene sophisticated space with wow factor. The floating vanity has a reclaimed-wood veneer that adds essential warmth, and its thick porcelain countertop ties in with the stunning porcelain-clad walls on the opposite side of the room (both of which look like marble). With their bold geometric design,
the black and white porcelain floor tiles are both classic and modern. Porcelain tiles covering the wall behind the vanity have a white-painted brick look that offers urban edge. “Mixing a lot of different materials and finishes is what makes a space pop,” says Ali.

The
third-floor master bathroom in designer Shirley Meisels’s midtown Toronto home was meant to be. After moving into the 100-year-old Edwardian house with her family several years ago, she gave the interior a facelift and decided to create a master suite on the third floor. It was previously a big, open family room and bedroom. “We used the footprint of the bedroom as our bathroom,” says Shirley. “The previous owners had actually already plumbed it in hopes they would one day create a bathroom there, so we got lucky.” In the spacious area, it was easy to design the eclectic, modern and edgy space Shirley envisioned.
SOLID PERFORMER A mix of patterns, textures and neutral colours (the warm wood tones with crisp black, grey and white) adds depth. The contemporary walnut vanity has slim metal legs to make it look like furniture and provide an edgy aesthetic; its thick acrylic countertop, which has integrated sinks, feels substantial. Niches in the wall behind the mirrors provide handy storage, and a Jonathan Adler sconce lends glamour to the space. EAVES DROPPING Tucked under the eaves, the master bathroom’s sloped ceiling offers both cozy architectural character and a few challenges. “We tested all sorts of different configurations to see what would get us the best flow, and it made the most sense to put the stand-alone tub under the eaves,” says designer Shirley Meisels. Pulling it out from the wall allowed
for the necessary head clearance, and a floor-mounted faucet takes advantage of the plumbing underneath the floor. “I didn’t want to have to build out a wall to accommodate a wall-mounted faucet,” she says.

etails matter,” says homeowner Ivonne Suridjan. “Whether the field is science, writing or design, what distinguishes an amateur from a professional is their attention to detail.” On the same day that she and husband Alex Cui bought their first home, Ivonne contacted a designer to take care of the details. “I love home decor, but I’m trained in science, not in design,” says the neuroscientist. “I wanted to experience the mind of someone who spends hundreds of hours a week focusing on making rooms beautiful.” That “someone” was interior designer and blogger Jacquelyn Clark. The pair connected immediately. “I love that Ivonne knew what she wanted, yet was open to input,” says Jacquelyn. The house was less than 10 years old, with an awkward layout spread over four floors, switching from boxy rooms to open-concept spaces. “Architecturally, this was the exact opposite of Ivonne’s preference for older, more traditional homes. So, our challenge was obvious: How would we transform this builder-basic home into a place of timeless elegance?” Since an all-traditional space can come across as more formal than inviting, Jacquelyn suggested ways to soften

the look. She recommended adding layers of texture, such as velvet, silk and even a fuzzy ottoman topper, in the living room. She also noted that a blush and gold palette, though breathtaking, is on-trend, so it would be best to keep it to a whisper. “For large pieces, go traditional. For accents, go trendy,” says Jacquelyn. “That way, your home never goes out of style.” The living room’s blush-coloured chair, though, was a happy exception to the rule. “I simply fell in love with it,” says Ivonne. But the piece wasn’t available in Canada. That’s where Alex came in. “Can you believe he actually drove to Buffalo, N.Y., and brought it back? Amazing!” As the project unfolded, Ivonne expressed a desire for more contrast. To that end, she and Jacquelyn changed the kitchen island from cement grey to black and echoed it in the adjacent dining room with a black sideboard. A tonal backsplash in a bold geometric pattern amplified the contrast, while wooden shelves and stool seats bring warmth to the grey, blush and gold scheme. “The wood’s gold tones play into the palette without being

obvious,” says Jacquelyn. For a little sparkle, a metallic gold finish was selected for the dining room chandelier. And the whole time, Ivonne felt like a key part of the design process. “I’d never worked with a designer before,” says Ivonne. “I thought of decor as an end point. But what I learned from Jacquelyn is that home design is a process. It constantly evolves. And even though it’s creative, you need a plan. It’s methodical, too. As a scientist, I get that! “Jacquelyn made me feel like a collaborator – I learned so much. Now that we’re done, Alex and I can begin to add in pieces that have a story. That’s something that’s missing, since our house is so new to us. But hey, we can’t fake time and we can’t fake life. So, we’ll just have to let it unfold – and let the design unfold with us!”
ABOVE & OPPOSITE Minor changes in the small kitchen garnered big results. The marble backsplash was a worthwhile splurge for the crisp visual interest it offers. Floating wooden shelves warm up the neutral, which originally had a boxy bank of ugly brown cabinets. A black-painted island and a pair of eye-catching globe-shaped pendant lights make the room look distinguished yet fun. When we think of comfort food, it’s usually hearty warm soups, stews or casseroles that come to mind. However, one look at Sarah Owens’s book Toast & Jam and we’re craving that classic panacean combination of bread and spread. Here, we feature our favourite preserves – both sweet and savoury – to top loaves, crackers, muffins and more.
GINGERED SWEET POTATO BUTTER MAKES 4 CUPS

cups roasted sweet potato, skins removed cup cubed cored peeled apples cup grapefruit juice tbsp freshly squeezed lemon juice cup sorghum syrup tsp finely grated fresh ginger tsp cinnamon tsp fine sea salt tsp nutmeg

Place the roasted sweet potato, apple pieces, grapefruit juice and lemon juice in a food processor and process on high until the mixture is relatively smooth. Transfer the mixture to a medium saucepan, stir in the remaining ingredients and place the pan over medium heat. Cook for about 25 to 30 minutes, stirring occasionally and then often toward the end of cooking to prevent scorching, until the mixture thickens and smells fragrantly caramelized. The mixture will bubble, hiss and steam like active volcanic lava. Transfer the sweet potato butter to clean airtight jars and store them in the refrigerator for up to 1 month.
VANILLA CITRUS MARMALADE MAKES 8 CUPS
3½ lbs citrus fruits (such as oranges, grapefruits, tangerines) 2 lemons 3½ cups citrus juice (from the above fruit) 2 cups water 9½ cups granulated sugar 1 plump vanilla bean ¾ tsp grapefruit bitters Halve the citrus fruits and lemons and juice them until you obtain 3½ cups of juice; set aside. Remove any remaining pulp from the citrus halves, reserving any seeds. Wrap the juiced lemon halves and any seeds in cheesecloth (the pith and seeds contain pectin that will help the marmalade set), tie with baker’s twine and place the bundle in a large heavy-bottomed pot. Shred, slice, or chop the remaining citrus peel to your preference and transfer it to the pot. Add the reserved juice and the water. Cover the pot and let sit overnight at room temperature. The next day, place a plate in the freezer

the set test Place a clean, thin plate in the freezer at least 10 minutes before you’re ready to test your jam. When you are near the end of the suggested cooking time, remove the jam from the heat and place a small dollop onto the cold plate. Return the plate to the freezer for 2 to 3 minutes. Test for a set by gently nudging your fingertip into the dollop of jam. If a wrinkled skin has formed or your finger mark remains, your jam has reached the setting point. If the jam pools into a runny liquid, this is an indication that it is not ready and needs more cooking time.

for a set test (see opposite page) and sterilize your jars. Preheat the oven to 250°F. Place the sugar into a heatproof bowl and place it in the oven to warm. Bring the pot of citrus to a relaxed boil over medium-high heat, then reduce the heat to low and simmer for 30 to 45 minutes or until the mixture has reduced by about onethird and the peel is completely tender. Turn off the heat and remove the cheesecloth bag from the pot. Using the back of a large spoon, press the cheesecloth into a fine-mesh sieve positioned over a bowl, releasing as much pectin-rich liquid as possible. Transfer this liquid back to the pot. Split the vanilla bean, scrape the seeds into the pot, and toss in the pod. Gradually stir in the warmed sugar until it’s completely dissolved. Add the grapefruit bitters and return the pot to medium-high heat. Bring the mixture to a relaxed boil again and let it cook for 20 to 40 minutes, gently stirring only occasionally to prevent scorching. Test for a set after 15 to 20 minutes. If the marmalade hasn’t set after 20 minutes, continue cooking until it is ready (this may take another 15 to 20 minutes, depending on the pectin content of the fruit). Once the mixture passes the set test, turn off the heat. Allow the marmalade to rest for a few minutes, then stir well and ladle into the hot sterilized jars, being careful to include equal amounts of peel and syrup in each jar. Position the lids and rings and heat process for 5 minutes and then store.
TOMATO MARMALADE
COCONUT JAM MAKES 1¾ CUPS

14-oz can full-fat coconut milk cup coconut sugar large egg yolks
Combine the coconut milk and sugar in a bain-marie set over medium-low heat. Cook until the sugar dissolves and the mixture feels hot when dabbed onto your inner wrist, about 5 to 6 minutes. Meanwhile, lightly whisk the egg yolks in a medium bowl. While whisking constantly, slowly pour about 1 cup of the hot milk mixture into the egg yolks, then slowly whisk the warm egg yolk mixture back into the remaining hot milk. Continue cooking over low heat for about 45 minutes, whisking continuously to prevent the mixture from curdling. When the coconut jam has thickened to a pudding-like consistency and reduced by about one-third, strain it through
a fine-mesh sieve into clean airtight jars. Seal the jars and place them in the refrigerator for 3 to 4 hours to set. The jam will keep for up to 1 week in the refrigerator.
TOMATO MARMALADE MAKES 6 CUPS
6½ lbs ripe whole Roma or San Marzano tomatoes 3½ cups granulated sugar 2½ cups citrus peel (from about 6 oranges, 2 grapefruits and 2 lemons) 1 cup mild honey ½ cup peeled, finely grated fresh ginger ½ cup freshly squeezed orange juice ⅓ cup freshly squeezed lemon juice 1½ tbsp red wine vinegar
2 cinnamon sticks 1 tsp ground allspice ½ tsp fine sea salt Bring a large pot of water to a boil. Carefully place the tomatoes in the pot and return the water to a brisk boil until the tomato skins begin to curl, about 1 to 2 minutes. Drain and transfer the tomatoes to an ice bath to cool. With a paring knife, peel away the skins and discard them. Coarsely chop the tomatoes, removing the cores, and place them in a large bowl. Toss the chopped tomatoes with the remaining ingredients and let the mixture rest at room temperature for at least 1 hour, or cover and refrigerate overnight. mixture to a large heavy-bottomed pot and set the pot over medium-high heat. Bring the mixture to a boil, stirring constantly, for about 5 minutes. Lower the heat and simmer for 1 to 1½ hours, uncovered. Stir frequently in the last half hour of cooking so the thickened marmalade doesn’t stick to the bottom of the pot. During the last half-hour of cooking, sterilize your jars. When the marmalade is thick enough to hold its shape almost solidly in a spoon, test for set using the chilled plate. When the marmalade passes the set test, skim off and discard any foam that may appear on the surface and remove the cinnamon sticks. Ladle the marmalade into hot sterilized jars and position the lids and rings. Heat-process the jars for 10 minutes and then store.
FENNEL, PEAR & PEPPER PRESERVES
FENNEL, PEAR & PEPPER PRESERVES MAKES 8 CUPS

lbs fennel bulbs with fronds pears, cored and diced into ¼" pieces cups water cups freshly squeezed orange juice cup green Kasmiri or golden raisins, chopped cup freshly squeezed lemon juice tbsp orange zest tsp coarsely ground black pepper cups granulated sugar cup mild honey
Place a plate in the freezer for a set test (see page 108) and sterilize your jars. Peel and core the fennel bulbs. Slice the bulbs lengthwise and stalks crosswise into thin strips, reserving the fronds separately. You should have about 5 cups of sliced fennel bulb and stem and 1 packed cup of fronds. In a large stock or heavy-bottomed pot, combine the fennel, pears, water, juices, raisins, zest and pepper. Bring the mixture to a gentle boil over medium-high heat and cook until the fennel is tender but still firm, about 15 minutes; turn off the heat and gradually stir in the sugar and honey until they are completely dissolved. Return the fennel mixture to a boil over medium-high heat and let it cook for 15 minutes. Turn off the heat and test for a set using the chilled plate. If it hasn’t reached its setting point, continue to cook the mixture for another 5 to 7 minutes, then test again. When the preserves pass the set test, ladle into hot sterilized jars and position the lids and rings and heat-process for 10 minutes and store.
