Holiday Your Way One of the things I love most about this season is learning about the special ways the holidays are celebrated in different families. From region to region, from home to home, the holidays look a little—or a whole lot—different depending on the people we celebrate with, traditions old and new, and of course the kind of food we gather around each year. We thought about those varied traditions when planning this issue and brought to life a few of our favorite merry menus in “Holiday Your Way” (page 43). Brief Summary of Important Patient Information about DUPIXENT® (dupilumab) (DU-pix’-ent) injection, for subcutaneous use What is DUPIXENT? • DUPIXENT is a prescription medicine used: – with other asthma medicines for the maintenance treatment of moderate-to-severe eosinophilic or oral steroid dependent asthma in people aged 12 years and older whose asthma is not controlled with their current asthma medicines. DUPIXENT helps prevent severe asthma attacks (exacerbations) and can improve your breathing. DUPIXENT may also help reduce the amount of oral corticosteroids you need while preventing severe asthma attacks and improving your breathing. • DUPIXENT is not used to treat sudden breathing problems • It is not known if DUPIXENT is safe and effective in children with asthma under 12 years of age. Who should not use DUPIXENT? Do not use DUPIXENT if you are allergic to dupilumab or to any of the ingredients in DUPIXENT. See the end of this summary of information for a complete list of ingredients in DUPIXENT. What should I tell my healthcare provider before using DUPIXENT? Before using DUPIXENT, tell your healthcare provider about all your medical conditions, including if you: • have a parasitic (helminth) infection • are scheduled to receive any vaccinations. You should not receive a “live vaccine” if you are treated with DUPIXENT. • are pregnant or plan to become pregnant. It is not known whether DUPIXENT will harm your unborn baby. How should I use DUPIXENT? • See the detailed “Instructions for Use” that comes with DUPIXENT for information on how to prepare and inject DUPIXENT and how to properly store and throw away (dispose of) used DUPIXENT prefilled syringes. • Use DUPIXENT exactly as prescribed by your healthcare provider. • Your healthcare provider will tell you how much DUPIXENT to inject and how often to inject it. • DUPIXENT is given as an injection under the skin (subcutaneous injection). • If your healthcare provider decides that you or a caregiver can give the injections of DUPIXENT, you or your caregiver should receive training on the right way to prepare and inject DUPIXENT. Do not try to inject DUPIXENT until you have been shown the right way by your healthcare provider. In children 12 years of age and older, it is recommended that DUPIXENT be administered by or under supervision of an adult.

How should I use DUPIXENT? (continued) • If you miss a dose of DUPIXENT, give the injection within 7 days from the missed dose, then continue with the original schedule. If the missed dose is not given within 7 days, wait until the next scheduled dose to give your DUPIXENT injection. • If you inject more DUPIXENT than prescribed, call your healthcare provider right away. • Your healthcare provider may prescribe other medicines to use with DUPIXENT. Use the other prescribed medicines exactly as your healthcare provider tells you to. What are the possible side effects of DUPIXENT? DUPIXENT can cause serious side effects, including: • Allergic reactions (hypersensitivity), including a severe reaction known as anaphylaxis. Stop using DUPIXENT and tell your healthcare provider or get emergency help right away if you get any of the following symptoms: breathing problems, fever, general ill feeling, swollen lymph nodes, swelling of the face, mouth and tongue, hives, itching, fainting, dizziness, feeling lightheaded (low blood pressure), joint pain, or skin rash. • Inflammation in your blood vessels: Rarely, this can happen in people with asthma who receive DUPIXENT. This may happen in people who also take a steroid medicine by mouth that is being stopped or the dose is being lowered. It is not known whether this is caused by DUPIXENT. Tell your healthcare provider right away if you have: rash, shortness of breath, persistent fever, chest pain, or a feeling of pins and needles or numbness of your arms or legs. The most common side effects of DUPIXENT in patients with asthma include: injection site reactions, pain in the throat (oropharyngeal pain), and high count of a certain white blood cell (eosinophilia). The following additional side effects have been reported with DUPIXENT: facial rash or redness. Tell your healthcare provider if you have any side effect that bothers you or that does not go away. These are not all of the possible side effects of DUPIXENT. Call your doctor for medical advice about side effects. You may report side effects to FDA. HERYL DAY’S BAKING JOURNEY BEGAN IN HER CHILDHOOD HOME

as she made pies, cookies and other treats beside her mother. She then sharpened her skills in her grandmother’s Alabama kitchen, where she learned the storied baking traditions of the South. Years later, she shared her baked creations with her colleagues at the architectural firm where she was the office manager. For a long time, that was enough. Cheryl excelled at her day job while continuing to make confections that made people, including herself, smile. But a series of moments in her life made her question this path. Should she leave the safety of her corporate job to pursue her passion? A global event finally pushed her to turn her talent for baking into a business. “I’ve had many moments throughout my life where I felt as if life was too short—9/11 was definitely one of them.” When tragedy struck the United States, she reflected on her own personal losses. “I lost both of my parents while in my 20s,” she says. “They both had jobs they loved and were creative people. My father had always instilled in me that you should be doing something you really care about. I finally decided, That’s it. I’m going to do that.” Less than a year later, in 2002, her shop, Back in the Day Bakery, was open in Savannah, Georgia, and serving homespun confections that tugged on customers’ most nostalgic heartstrings. Her display case overflowed with flaky biscuits, old-fashioned cupcakes and chewy cookies.

“One day a customer told me that I had really found my calling and should stick to my own way of doing things.” It was exactly the unexpected confidence boost that Cheryl needed. She dug deeper into her own personal experiences to share them with her customers. Even though she sometimes worried that her bakes could be too approachable or seem too homemade, she stuck to it, refusing to make anything fussy or contrived. As the world of baking started to change with the rise of foodie bloggers and Instagram influencers with their curated feeds, Cheryl remembered those encouraging words: “Stick to your own way.” She leaves little details to remind her customers that everything is lovingly baked by hand. The natural uneven surface on her muffins, the handcrafted swirls in her cake frosting—they’re small signals to show the care taken in every swoop of her spatula. The massive cathead biscuits in the bakery case are a perfect example of her style. They gleam with a sheen of golden butter as they sit stacked high, ready to be devoured. It’s a recipe that feels homey and comforting, so she was excited to share it with readers of her newest cookbook, Cheryl Day’s Treasury of Southern Baking. “I think biscuits are often intimidating,” says Cheryl, “so I created a biscuit you just scoop and drop after you mix the dough.” Even without the rolling and cutting typically required in biscuit making, these are flaky and fluffy, and they sit tall—things that make a biscuit craveworthy without the extra fuss. This one got its name because each extra-large drop biscuit is as big as a cat’s head. These treats are crisp and golden outside, soft and pillowy inside, and filled with scallions, cheese and just the right amount of pepper. —Cheryl Day, Savannah, GA Prep: 25 min. • Bake: 25 min. Makes: 1 dozen 1¹ ₂ 1¹ ₂ ¹ ₄ 2 1 1 ¹ ₂ 2 1 1¹ ₂ 1

cups (188 grams) all-purpose flour cups (188 grams) cake flour tsp. sugar Tbsp. (26 grams) baking powder tsp. fine sea salt cup (227 grams) cold unsalted butter, cut into ¹ ₂-in. cubes cup (30 grams) chopped scallions cups (227 grams) shredded sharp cheddar cheese tsp. freshly ground pepper to 2 cups (355 to 473 milliliters) buttermilk, room temperature large egg, beaten, room temperature

1. Position a rack in the middle of the oven and preheat to 375°F (190°C). Line a baking sheet with parchment. 2. In a large bowl, whisk together flours, sugar, baking powder and salt. Add butter; toss to coat. Cut in butter using a pastry blender, or pinch it with your fingertips, smearing it into the flour. You should have various-sized pieces of butter, ranging from coarse sandy patches to flat shaggy pieces to pea-sized chunks. Stir in the scallions, cheese and pepper. 3. Make a well in the center, pour in 1¹ ₂ cups buttermilk and gently mix until mixture is crumbly but starting to come together into a shaggy mass. If the dough still looks too dry, add up to ¹ ₂ cup more buttermilk. The dough should be moist and slightly sticky. 4. Turn the dough onto itself a few times until it forms a mass. Gently pat down the dough until it resembles a loaf of bread. Dust the top lightly with flour. 5. Using a 3-oz. (89ml) ice cream scoop, portion dough 1 in. apart onto prepared baking sheet. Gently flatten biscuits. 6. Lightly brush the tops with beaten egg. 1. Place the whole, unpeeled sweet potatoes in a Dutch oven and cover with water. Call your doctor right away if you have any of the following symptoms of infection: fever or chills skin that looks red or swollen and is hot or tender to touch fever, shortness of breath, cough that will not go away severe abdominal pain frequent or urgent need to urinate or burning feeling when you urinate • Skin problems. Skin problems such as inflammation of your skin (dermatitis), rash, and eczema may happen if you take Prolia. Call your doctor if you have any of the following symptoms of skin problems that do not go away or get worse: redness your skin is dry or feels like leather itching blisters that ooze or become crusty small bumps or patches (rash) skin peeling • Bone, joint, or muscle pain. Some people who take Prolia develop severe bone, joint, or muscle pain. Call your doctor right away if you have any of these side effects. What is Prolia? Prolia is a prescription medicine used to: • Treat osteoporosis (thinning and weakening of bone) in women after menopause (“change of life”) who: are at high risk for fracture (broken bone) cannot use another osteoporosis medicine or other osteoporosis medicines did not work well It is not known if Prolia is safe and effective in children.

Do not take Prolia if you: • have been told by your doctor that your blood calcium level is too low. • are pregnant or plan to become pregnant. • are allergic to denosumab or any of the ingredients in Prolia. See the end of this Medication Guide for a complete list of ingredients in Prolia. Before taking Prolia, tell your doctor about all of your medical conditions, including if you: • are taking a medicine called Xgeva (denosumab). Xgeva contains the same medicine as Prolia. • have low blood calcium. • cannot take daily calcium and vitamin D. • had parathyroid or thyroid surgery (glands located in your neck). • have been told you have trouble absorbing minerals in your stomach or intestines (malabsorption syndrome). • have kidney problems or are on kidney dialysis. • are taking medicine that can lower your blood calcium levels. • plan to have dental surgery or teeth removed. • are pregnant or plan to become pregnant. Prolia may harm your unborn baby. Females who are able to become pregnant: Your healthcare provider should do a pregnancy test before you start treatment with Prolia. You should use an effective method of birth control (contraception) during treatment with Prolia and for at least 5 months after your last dose of Prolia. Tell your doctor right away if you become pregnant while taking Prolia. • are breastfeeding or plan to breastfeed. It is not known if Prolia passes into your breast milk. You and your doctor should decide if you will take Prolia or breastfeed. You should not do both. Tell your doctor about all the medicines you take, including prescription and overthe-counter medicines, vitamins, and herbal supplements. Know the medicines you take. Keep a list of medicines with you to show to your doctor or pharmacist when you get a new medicine. How will I receive Prolia? • Prolia is an injection that will be given to you by a healthcare professional. Prolia is injected under your skin (subcutaneous). • You will receive Prolia 1 time every 6 months. • You should take calcium and vitamin D as your doctor tells you to while you receive Prolia. • If you miss a dose of Prolia, you should receive your injection as soon as you can. • Take good care of your teeth and gums while you receive Prolia. Brush and floss your teeth regularly. • Tell your dentist that you are receiving Prolia before you have dental work. What are the possible side effects of Prolia? (¹ ₄ oz. each) active dry yeast ¹ ₂ tsp. sugar 1¹ ₂ cups warm water (110° to 115°), divided 5 large eggs, room temperature ² ₃ cup plus 1 tsp. honey, divided ¹ ₂ cup canola oil 2 tsp. salt 6 to 7 cups bread flour 1 cup boiling water 2 cups golden raisins 1 Tbsp. water 1 Tbsp. sesame seeds

1. In a bowl, dissolve yeast and sugar in 1 cup warm water. Separate 2 eggs; refrigerate the whites. Place egg yolks and remaining 3 eggs in a bowl. Add ² ₃ cup honey, oil, salt, yeast mixture, 3 cups flour and remaining ¹ ₂ cup warm water; beat on medium speed 3 minutes. Stir in enough remaining flour to form a soft dough (dough will be sticky). 2. Pour boiling water over raisins in a small bowl; let stand 5 minutes. Drain and pat dry. For the creamiest hot chocolate, we recommend using whole milk, which has a high fat content. In a saucepan over medium heat, warm the milk until steaming (about 160°), but don’t boil the milk or it will scald. An insulated coffee carafe is just the thing you need to keep the milk nice and hot for hours.

Crafty Cups With oil-based paint markers, doodle to your heart’s desire on white mugs. Let dry for a few hours or overnight. Bake at 350° for 30 minutes, leaving mugs in the oven as it heats and cools to prevent cracking. (Bake twice if desired.) Wash in the sink, rather than the dishwasher, to preserve the pattern.

22 oz. semisweet chocolate, such as Baker’s Chocolate, finely chopped ¹ ₂ cup baking cocoa ¹ ₂ cup nonfat dry milk powder ¹ ₄ cup confectioners’ sugar 6 Tbsp. vanilla marshmallow bits (not miniature marshmallows) Optional: Sprinkles, colored sanding sugar, melted candy melts

1. Place chocolate in a microwavesafe bowl. Microwave, uncovered, on high for 1 minute; stir. Microwave, stirring every 30 seconds, until the chocolate is melted and smooth, 1-2 minutes longer. Chocolate should not exceed 90°. 2. Add 1 Tbsp. melted chocolate into a silicone sphere-shaped mold (2¹ ₂-in. diameter). Brush melted chocolate evenly inside molds, all the way to edges. (Rewarm melted chocolate as needed.) Refrigerate molds until the chocolate is set, 3-5 minutes. Brush a thin second layer of chocolate in the molds. Refrigerate until set, 8-10 minutes. Place remaining melted chocolate into a piping bag fitted with a small round decorating tip; set aside. 3. Carefully remove chocolate spheres from molds. In a medium bowl, whisk together baking cocoa, milk powder and confectioners’ sugar. Place 3 Tbsp. cocoa mixture into half the chocolate spheres. Top with 1 Tbsp. marshmallow bits. 4. Pipe a small amount of melted chocolate on edges of remaining spheres; carefully adhere to filled halves, pressing lightly to seal and using additional melted chocolate if necessary. If desired, decorate with optional ingredients. Refrigerate until set. Store in a tightly sealed container. 5. To prepare hot chocolate, place cocoa bomb in a mug; add 1 cup hot milk and stir to dissolve.

1. In a large bowl, combine the cold water and gelatin; set aside. In a heavy saucepan over medium heat, combine the sugar, corn syrup, water and salt. Bring to a boil, stirring occasionally. Cover and cook for 2 minutes to dissolve sugar; uncover and cook on medium-high heat, without stirring, until a candy thermometer reads 240° (soft-ball stage). 2. Remove from heat and gradually add to gelatin. Beat on medium speed for 14 minutes. Add the extract; beat 1 minute longer. Meanwhile, sprinkle 2 Tbsp. confectioners’ sugar into a greased 13x9-in. pan.

3. With greased hands, spread the marshmallow mixture into prepared pan. Top with 2 Tbsp. confectioners’ sugar. Cover and cool at room temperature 6 hours or overnight. 4. Cut 15 snowflakes with a greased 2¹ ₂-in. snowflake-shaped cookie cutter; toss marshmallows in the remaining confectioners’ sugar. WHEN ATTEMPTING TO GET FOOD TO PEOPLE IN NEED THROUGHOUT BIG SKY COUNTRY, THE SHEER SIZE OF THE STATE CAN BE A CHALLENGE. That was the situation in 2014, when the staff at the Montana Food Bank Network wanted to help people experiencing food insecurity in remote rural areas. “These are pioneer towns that had some industry a long time ago, but it’s not there anymore,” explains Eric Luongo, agency resource coordinator at Montana Food Bank Network. “There are a lot of older populations still living there who need assistance.” The Montana Food Bank Network, located in Missoula, regularly sends semis full of food out to network partners across the state’s 147,000 square miles, but adding these remote towns to the routes was just not practical. Chief Operations Officer Brent Weisgram found an answer, though—why not mail the food to those in need? Today, the Montana Food Bank Network’s Mail-a-Meal program sends food boxes with nonperishable items via UPS and other carriers to more than 200 households in areas off the beaten path. Boxes include items such as peanut butter, canned fruits and vegetables, canned chicken and tuna, as well as low-sodium, low-sugar and whole grain options. Eric says that many of those who receive boxes live 30 minutes to an hour from the nearest grocery store, so the food boxes supplement the groceries they pick up at their local convenience store. In communities without food banks, the Montana Food Bank Network arranges for churches, community centers and local businesses to act as drop sites for food distribution. Mail-a-Meal boxes are also distributed on three of seven Native American reservations in the state, with plans for further expansion. Box recipients have reported they’re grateful for the help. Several seniors told Eric that before Mail-a-Meal, they were choosing to pay medical bills or to buy medication instead of buying groceries. 1

When Emily’s infant daughter, Jenny, passed away in 2008, the kitchen was one of the few places Emily found solace and felt hope. With new faith and a reignited passion for baking that’d been largely dormant since her childhood, the home baker began her blog, thehutchoven.com, where cookies abound and Christmas-level cheer lasts all year.

Which one of your recipes are you most proud of? My classic sugar cookie recipe! Many home bakers have created businesses using that recipe, and it brings me joy knowing that it’s loved. How do you get inspired to come up with new creations? I get inspired thinking of what I loved to bake in my childhood. The smells and flavors of peppermint blondies, pumpkin bread or apple pie can be turned into recipes for cookies that have similar tastes to what I remember making with my grandma. You’re now a judge on Hallmark Drama’s show “Christmas Cookie Matchup.” What makes a winning cookie? In my opinion, the perfect cookie should be soft and flavorful— not a cookie with a snap and not one too brown on the bottom. I want sweetness with a hint of salt to enrich all the

flavors of the cookie. Show me the best classic cookie, executed with a little flair or a secret ingredient. What do you like best about baking? Baking memories is my favorite thing. Truly, the kitchen is the heart of the home and holds so much laughter and joy—it fills my heart. I find a peace and sense of purpose each time I pull out my measuring cups. I find so much joy in teaching others what I know, in hopes that they are going to be baking as many memories as my family and I do. TRY ONE OF EMILY’S FAVORITE RECIPES

Peppermint Sugar Cookies In the bowl of a stand mixer, beat 1 cup softened unsalted butter and ¹ ₂ tsp. salt for 30 seconds. Add 1 cup sugar and ¹ ₂ cup confectioners’ sugar; beat 1 minute. Add 1 room temperature large egg, 1 tsp. vanilla extract and ¹ ₂ tsp. peppermint extract; mix to combine. Whisk together 2³ ₄ cups all-purpose flour, ¹ ₂ tsp. baking powder and ¹ ₄ cup cornstarch; add to butter mixture. Mix just until dough forms. Cover and chill at least 15 minutes. Preheat oven to 375°. On a lightly floured surface, roll out dough to ¹ ₄-in. thickness. Cut with a floured 3-in. cookie cutter. Place 2 in. apart on parchment-lined baking sheets. Bake until cookie puffs up and is a dull matte on top but not browned, 6-8 minutes. Let stand 1 minute before removing to wire racks to cool completely. Makes 2 dozen. 1
