ne afternoon, while hanging an Easter wreath on our door, I saw my neighbor Janice, and we started talking. I asked her why she didn’t decorate her house for read all about it holidays anymore. When we’re hurting, turning to others and getting support from them gives us strength to cope better. Research has shown again and again that positive relationships and support help people come through tough life events mentally healthier—with less risk of depression, a lower chance of suffering from PTSD symptoms, and higher markers of well-being. One big way we can get support from others and support ourselves is to tell our stories. To that end, we invited our Chief Spiritual Officer, Candace Cameron Bure, to do just that this month in a very special column honoring the memory of her dear friend and longtime TV dad Bob Saget. Turn to page 18 with a tissue handy to read about his epic hugs. On page 20, you’ll meet another voice of healing and hope—our brand-new Rabbi in Residence, Steve Leder, of Wilshire Boulevard Temple in Los Angeles. He’s a renowned Jewish-community leader and the best-selling author of The Beauty of What Remains and More Beautiful Than Before. Call your healthcare provider or go to the nearest hospital emergency room right away if you have: high fever; changes in your breathing, heart rate, and blood pressure; stiff muscles; confusion; increased sweating. • Uncontrolled body movements (tardive dyskinesia or TD) in your face, tongue, or other body parts. TD may not go away, even if you stop taking REXULTI. TD may also start after you stop taking REXULTI.

Do not become too hot or dehydrated during treatment with REXULTI. • Difficulty swallowing that can cause food or liquid to get into your lungs. • Sleepiness, drowsiness, feeling tired, difficulty thinking and doing normal activities. Until you know how REXULTI affects you, do not drive, operate machinery, or do dangerous activities. REXULTI may make you feel drowsy. The most common side effects of REXULTI include weight gain and restlessness or feeling like you need to move (akathisia). These are not all the possible side effects of REXULTI. REXULTI may harm your unborn baby. Taking REXULTI during your third trimester of pregnancy may cause your baby to have abnormal muscle movements or withdrawal symptoms after birth. { Tell your healthcare provider if you become pregnant or think you are pregnant during treatment with REXULTI. { If you become pregnant during treatment with REXULTI, talk to your healthcare provider about registering with the National Pregnancy Registry for Atypical Antipsychotics. You can register by calling 1-866-961-2388 or visit http://womensmentalhealth.org/clinical-and-research-programs/ pregnancyregistry/. • are breastfeeding or plan to breastfeed. It is not known if REXULTI passes into your breast milk. Talk to your healthcare provider about the best way to feed your baby during treatment with REXULTI.

Tell your healthcare provider about all the medicines you take, including prescription and over-the-counter medicines, vitamins, and herbal supplements. REXULTI and other medicines may affect each other causing possible serious side effects. REXULTI may affect the way other medicines work, and other medicines may affect how REXULTI works. Your healthcare provider can tell you if it is safe to take REXULTI with your other medicines. Do not start or stop any medicines during treatment with REXULTI without first talking to your healthcare provider. Know the medicines you take. Keep a list of them to show your healthcare provider and pharmacist when you get a new medicine.

What should I avoid while taking REXULTI? • Do not drive a car, operate machinery, or do other dangerous activities until you know how REXULTI affects you. REXULTI may make you feel drowsy. • Do not become too hot or dehydrated during treatment with REXULTI. { Do not exercise too much. { In hot weather, stay inside in a cool place if possible. { Stay out of the sun. { Do not wear too much clothing or heavy clothing. { Drink plenty of water. What are the possible side effects of REXULTI? REXULTI may cause serious side effects, including: • See “What is the most important information I should know about REXULTI?” • Stroke (cerebrovascular problems) in elderly people with dementia-related psychosis that can lead to death. • Neuroleptic malignant syndrome (NMS) is a serious condition that can lead to death. Call your healthcare provider if you have any of these symptoms of high blood sugar during treatment with REXULTI: feel very thirsty; feel very hungry; feel sick to your stomach; need to urinate more than usual; feel weak or tired; feel confused; or your breath smells fruity { increased fat levels (cholesterol and triglycerides) in your blood. Your healthcare provider should check the fat levels in your blood before you start, or soon after you start REXULTI, and then periodically during treatment with REXULTI. { weight gain. You may feel lightheaded or faint when you rise too quickly from a sitting or lying position. • Falls. REXULTI may make you sleepy or dizzy, may cause a decrease in your blood pressure when changing position (orthostatic hypotension), and can slow your thinking and motor skills which may lead to falls that can cause fractures or other injuries. • Seizures (convulsions). • Problems controlling your body temperature so that you feel too warm. fter developing alopecia universalis, an autoimmune condition that results in the loss of all hair, in late 2015, McKenna had trouble looking at herself in the mirror. “I was always known for my long, thick hair, but I never identified with it until it was gone,” she says. She tried to conceal her condition at first, but felt motivated to show her two daughters how she handled adversity: “I wanted to prove to them that we were strong enough to get through anything, especially since alopecia can be genetic,” she says. In this month’s column, I celebrate the life of the beloved Bob Saget and share the words that help me cope with loss.

I

n January, I said goodbye to my good friend Bob Saget. I say “friend,” but he was family—not TV-dad family, but real family. I did not want to say goodbye; it was too soon. Thirty-five years of friendship wasn’t enough—I wanted one more hug and one more laugh. He taught me so much, but his greatest lesson was this: Never leave someone wondering about your love. Bob ended every single conversation, email, and text message with “I love you.” His hugs were warm, tender, and all-engulfing! If hugging were an Olympic sport, Bob would have been a gold medalist. Grief is unique. If you are the one grieving, your world stops, but the world around you doesn’t. Vacations, work, and dinner parties happen—yet for the grieving, the days drag and fly by at the same time, and the tears come at the oddest times and out of nowhere. I’m sipping hot tea, and suddenly I’m sobbing. Through all the tears, I remind myself of this truth—God is present.

Watching someone grieve is difficult too. I’ve learned that you don’t have to do or say much—just be there. It’s called the ministry of presence. Quietly sit. Your presence can be in a short text: I love you or I’m praying. Your presence can be a card—maybe send a card every month for a year. Don’t worry that you will remind the griever of their loss: They have not forgotten, and to know that others haven’t either can be comforting. In honor of Bob, tell the ones you love that you love them. Tell them, and tell them again. Give them big hugs that are tender and allengulfing. Be that person! Passover begins with kin and friends around the dinner table telling their tribe’s story. Children are encouraged to ask why the story matters and what it has to do with them. Various foods are used to illustrate parts of the story, including horseradish and saltwater to represent the bitterness of slavery. There is singing as well as games and laughter. Your stories matter— get together and share them!

On Passover, eating anything with leaven in it is prohibited. Leavening agents like yeast puff things up. Most of our regrettable, foolish, and hurtful mistakes could have been avoided with a dose of humility. Passover reminds us to let the air out of our inflated egos. It invites humility to the table, because without it, friendships, families, and even mighty pharaohs cannot survive.

There are more slaves in the world than you can imagine. Their anguish is in the clothes we wear, and it also exists in sadder ways. Some are not literally enslaved but are nevertheless shackled by war, poverty, and addiction. Many of us are among the freest people who have ever lived. Let’s not take our freedom for granted. Instead, let’s use it to soothe the suffering of others.

The ninth plague in the Passover story is darkness. The sages surmise that it was so dark, the Egyptians and the Hebrews could not see “the humanity in each other.” It was the darkness of objectification, of failing to remember that if we’re pricked, we all bleed. The people we demonize have dreams, fears, and longings just like we do. Let’s try harder to really see them. Only then can we too be seen.

After each of the first five plagues, Pharaoh “hardens his heart” and will not free his slaves. After each of the next five, “God hardens Pharaoh’s heart.” In other words, the bad behavior we can control can end up controlling us. At some point being heartless becomes not what we do, but who we are.

Legendary meatloaf Longtime Woman’s Day reader Joanne Prudhomme of Clarkston, MI, has made this special meal for 45 years!

How’d you find our recipe? I discovered it in my mother’s recipe folder. My dad was in sales, and they entertained clients. This was her go-to because it’s fancy—not just from the back of an oatmeal box.

What makes this meatloaf so delicious? It’s the combination of the meats and thyme and marjoram. Also, the cream sauce! My trick: I always plate it with fresh thyme.

When do you serve it? My daughter Lindsey first chose meatloaf for her birthday dinner when she was 8. I started making it more often; in fact, the first time she had a boy over for dinner, this was what I made!

We asked Lindsey: Do you now make this meatloaf? Yes! I jazz it up by baking it in a muffin tin for my two daughters. My oldest, who is 8, has celiac disease, and I can easily adjust the recipe to make it gluten-free.

Where’s the recipe now? I keep the original in a binder. I plan to frame it. I also have a typed copy with sheet protectors that I keep in a “family favorites” binder. Turn to page 81 for your own copy of the WD original.

memories Do you have a treasured recipe from your childhood? Food whiz Chadwick Boyd does, and he stepped into the kitchen to bake up his grandma’s legacy.

hen Chadwick was a kid, his grandma Clara kept him busy after school with a bag of icing, decorating tips, and practice boards. He credits Clara, who passed away in 2006, for putting him on the path to becoming the chef and food media entrepreneur he is today. Every Easter, Clara made 20 to 30 of her beloved Easter Egg Cakes for family, friends, and neighbors. “My grandparents’ life purpose was to delight other people. They

spent every day creating things they knew would bring others joy,” Chadwick says. Last year he decided to pay homage to Clara with a “reimagined” version of her cake, and the intense emotions he experienced as he baked caught him by surprise. “It was a moment. I felt even more connected with my grandmother,” he says. “It’s like we’re still cooking side by side.”

eing a health and nutrition correspondent means that companies frequently send me their products, and ask for my stamp of approval. Most of the time I dive into research, give the product a try, and send the company honest feedback about what they’ll need to change before I’ll recommend it. T

he climate crisis has always been a thing I’ve cared about, but there were other issues that felt more pertinent,” admits Wanjiku, a.k.a. Wawa. During her junior year of high school, she experienced an aha moment in her environmental science class. “I started realizing how connected racial justice is to the climate crisis,” she says. (For example, according to the monumental Toxic Wastes and Race in the United States study, the top indicator for location of commercial hazardous-waste facilities in the U.S. is the race of the local population.) After reflecting on the absence of Black voices in environmental leadership, she began writing about the intersection of climate and racial justice. Then an idea struck: What if she founded an online space to discuss these issues? “I was often the only Black person in the room, but I was in the room because I wanted to get more people of color involved. It was frustrating,” she says. And so the Instagram account @BlackGirlEnvironmentalist, “a safe space for Black girls, women and Black nonbinary environmentalists,” was born. It now has almost 20,000 followers. She also hosts monthly intergenerational talks about environmental justice from the Black and brown perspectives as well as highlights individuals making change. “Through this platform as well as my writing and research, I want to help change the environmental narrative to be one that is more inclusive,” she says.

M

ehgan describes herself as an outdoorsy lifelong conservationist—she grew up free diving (that’s deep-sea diving without a scuba tank!) in the Florida Keys. “Nowadays it seems you can’t go out on the water without seeing lines of trash—it’s like a seaweed line, but it’s garbage and single-use plastics,” she says. The sight, along with other changes she’s seen in the ocean over the years, horrified her, and she wanted to do something. So about a year ago, she launched her Web series, The Imperfect Conservationist, on YouTube to share simple, doable tips to help reduce environmental impact. “The series was really born out of my own struggles with the enormity of the problem,” she says. “It can leave us feeling helpless. I’m a single mom; I’m on a tight budget. Things like zero waste are not always attainable. But what I can do is better than nothing, and that goes for every one of us.” For example, Mehgan never lets her car idle—if she’s going to be parked for more than 10 seconds, she switches the engine off. A

s an undergraduate, Katharine took her first climate science course, and it changed her life. “That’s when I learned that climate change affects every aspect of our lives on this planet. And it affects those who have done the least to cause it the most,” she says. She was incensed by the injustice and had to do everything she could to help. Katharine does more than just research, though: Her husband is a pastor, and her faith is hugely important to her. She’s become proof to her fellow Christians that you can believe in God and advocate for climate action. “The real objection [to dealing with climate change], in a nutshell, is The solutions are worse than the impacts, and we don’t want any more change.” She aims to alter that thinking. “People have been told that climate solutions are negative,” she says, referring to people who believe the answer is to give up things like cars. “But if we begin our conversation by connecting the dots on how climate change matters to something we both already care about (like our kids’ health)—and how we can fix it—that’s going to give all of us the better world we want.”

arla always wondered what made the products we use in our homes safe. She decided she wanted to empower other people to learn to choose safe cosmetics and make their lives greener and healthier as she had. Now she manages the Skin Deep cosmetics database at the nonprofit Environmental Working Group (EWG), which helps people research thousands of personal care products to evaluate their hazard levels. “It really motivates me to help others have access to good options,” she says.

or much of the 30 years Debra has lived in Montclair, NJ, she has used her bike to get around town, do errands, get exercise, and reduce the need to drive. “But many of my friends would tell me, ‘It’s not safe,’ ” she says. “So I thought, What can we do to change that?” She began volunteering to help, eventually leading the charge at the New Jersey Bike & Walk Coalition for the Essex-Hudson Greenway project, a nine-mile stretch of unused railroad track that will connect eight New Jersey towns via a bike/walk path and a linear park. Last November, the project was approved. “Making New Jersey a more walkable, bikeable, and sustainable state means making our streets safer for everyone,” Debra says.

S

harina remembers the day in 2018 when her idea was born. She had just gotten a paper straw at a restaurant. “It was in a clear glass, and I started to see particles floating,” she says. “And I’m like, When did we become OK with stuff in our drinks?!” Plus, she worried that a shift to paper straws would create deforestation, putting a new environmental problem in place of the old one. Also, she wanted to enable manufacturers to use their current machinery to keep their businesses going and preserve workers’ jobs. So she began playing around with fashioning a straw out of hemp, a material she had been studying (she had a health and wellness brand at the time). After some tinkering, which included adding other fibrous crops like jute, it worked. Sharina realized that her plant-based plastic could have a lot of uses, and that’s how her company Utopia Plastix began. Now Utopia provides its eco-friendly plant-based compounded, pelletized resins to manufacturers, and Sharina is seeing her creation used in everything from straws, cutlery, and bags to lids and bottles. Instead of dyeing real eggs, Deonna brushed fake eggs from the craft store with acrylic paint.

E

aster Sunday has always been special for Deonna Wade, a hand-lettering artist based in Lubbock, TX. It was on Easter in 2012 that her son, Cole, came into the world. “We called him our Easter Bunny,” says Deonna. This year, it’s extra-special—just like Christmas and Halloween—because she and her husband, Dane, will get to celebrate with both their kids at home. In November 2020, Deonna’s then 4-year-old daughter, Allie, had an accidental fall that left her paralyzed. Unbeknownst to them, she had a condition called a Chiari malformation, and she bumped her head in just such a way that it caused her to have a stroke. In the year and a half since, the family has moved from El Paso to Lubbock, with a long stint in between at Texas Children’s Hospital. Thankfully, Allie is home now and doing well, but the experience has changed them. “We went from having a carefree life to planning every little thing ahead of time,”

Deonna says. “Allie’s on a ventilator, so you have to think, When did I charge that? Do I have enough oxygen?” When the elevators were out at their church, they weren’t sure they could go. But there have been positive changes too. “I always took going to church for granted— sometimes you are tired and don’t want to get up. Now we have a totally different outlook,” she says. “We’re just happy to be there as a group of four.” Like Sundays, they look forward to holidays even more than they used to. Last Easter, Deonna and her mom masterminded an indoor Easter egg hunt and painting session, hiding the eggs and writing up a list of clues so Allie and Cole could find them together. “Allie would look for them with Cole’s help,” she says. “He’s pretty good at being bossed around by her.”

1 Melt butter in large saucepan on low. Add cream of tartar and beat on mediumhigh until soft peaks form. Add sugar, 1 Tbsp at a time, until peaks are stiff and glossy. Beat in vanilla. 3 Spoon meringue into piping bag fitted with star tip or into resealable plastic bag with 1 corner cut off. Pipe six 3-in. disks onto baking sheet, spacing 1 in. apart. Tangy Lemon Curd 1 From 3 medium lemons, grate 1 Tbsp zest and squeeze ⅔ cup juice. 2 In small, heavy saucepan on medium, heat 1 cup sugar, 6 Tbsp unsalted butter (cut up), 1 Tbsp cornstarch, ¼ tsp kosher salt, and lemon zest and juice to boiling. Boil 1 min. 3 In small bowl, lightly beat 5 large egg yolks. Into yolks, beat small amount of lemon mixture. Off heat, whisk egg mixture back into lemon mixture in saucepan. Return to medium-low heat; cook, stirring constantly, until thickened, about 5 min. 4 Pour lemon curd into bowl; cover surface area with plastic wrap and refrigerate until well chilled, about 3 hr. Store in refrigerator up to 1 week. Makes about 1⅔ cups.

Knead frosting and shape into disk. Remove one-fourth of frosting and knead in enough yellow food coloring to mimic color of egg yolks. Form yellow frosting into twelve ½-in. balls. 2 Shape white frosting into twelve 1-in. balls; flatten each into disk in palm of hand. Place 1 “yolk” in center and gently form white around “yolk,” taking care to push air out and smooth seam without crushing “yolk.” Form into oblong egg shape. Place on waxed paper. Spring Pesto Penne

Sheet Pan Chicken Suizas Nachos

1 Cook pasta per pkg. directions, adding asparagus 4 min. before penne is done, then adding frozen peas 2 min. later. 2 Meanwhile, make pesto: In food processor, pulse parsley, mint, walnuts, lemon juice, garlic, ½ tsp salt, and ¼ tsp pepper until almost smooth. With motor running, slowly add oil, then ¼ cup water, and process until smooth. 3 Toss pasta and vegetables with pesto and ¼ tsp salt. Top with ricotta. Lemony Chicken & Rice Soup ACTIVE 25 MIN. ✦ TOTAL 45 MIN. SERVES 4

1 medium onion, quartered 1 leek (white and light green parts only), cut into 1-in. pieces 1 stalk celery, cut into 1-in. pieces 3 Tbsp low-sodium chicken bouillon base (we used Better Than Bouillon) 1 bone-in chicken breast (about 2½ lbs), split 1 small sprig fresh oregano ¼ small bunch fresh dill, plus sprigs for serving ½ cup long-grain white rice 2 large eggs 6 Tbsp fresh lemon juice Pepper

1 In large pot, combine onion, leek, celery, and bouillon with 10 cups water and bring to a boil. Reduce heat; add chicken, oregano, and dill; and simmer until chicken is just cooked through, 15 to 20 min. 2 Transfer chicken to bowl and, when cool enough to handle, shred meat, discarding skin and bones. 3 Strain liquid and return it to pot. Add rice and simmer 12 min. 4 Meanwhile, in medium bowl, whisk together eggs

and lemon juice until combined and foamy. 5 Ladle 1 cup hot broth off top of soup into measuring cup. Slowly whisk broth, 1 Tbsp at a time, into egg mixture. Then, whisking constantly, gradually add egg broth mixture to pot. Simmer until soup is slightly thickened and velvety and rice is tender, about 5 min. Remove from heat; stir in shredded chicken. In bowl, combine mayonnaise, lemon juice, chives, mustard, ½ tsp salt, and ¼ tsp pepper. Add lobster and gently toss to coat. Butter sides of hot dog buns and cook in nonstick skillet until golden and crisp on each side. Line toasted rolls with lettuce leaves and fill with lobster salad.

Toss together potato chips, lemon zest, and parsley. Toss together green beans, olive oil, lemon juice, and ¼ tsp each salt and pepper. Serve beans sprinkled with chip mixture.

Simmer potatoes in salted water until just tender; run under cold water to cool, then quarter. In blender, puree chives, olive oil, vinegar, mustard, and ¼ tsp each salt and pepper until smooth. Add sauce and parsley to potatoes and toss to combine.

18 coconut crisp cookies (9 oz, we used Tate’s) 4 Tbsp (½ stick) unsalted butter, melted 1 8-oz pkg. cream cheese, at room temp 1 5.4-oz can unsweetened coconut cream ¾ cup confectioners’ sugar, plus more for dusting 1½ cups cold heavy cream 2 tsp grated lime zest plus 3 Tbsp lime juice, divided 2 cups blackberries 1 Tbsp granulated sugar

1 Heat oven to 350°F. In food processor, pulse cookies until fine crumbs form, 12 to 15 min. Add butter and pulse until mixture holds together when squeezed, 10 to 12 times. Press mixture on bottom and up sides of 8- by 11-in. removable-bottom tart pan. Bake until golden brown, 10 to 12 min. Let cool completely on wire rack. 2 In large bowl, using electric mixer, beat cream cheese, coconut cream, and confectioners’ sugar on medium-high speed until smooth, 1 to 2 min. Reduce mixer speed to low and gradually add heavy

cream. Increase speed to medium-high; beat until stiff peaks form, 2 to 4 min. Add 2 Tbsp lime juice and beat to return to stiff peaks, 30 sec. to 1 min. Spoon into crust and spread to edges. Refrigerate until set, overnight or up to 2 days. 3 In medium bowl, toss blackberries with granulated sugar and remaining Tbsp lime juice. Let sit, tossing occasionally, 4 to 6 min.; spoon on top of tart. Serve topped with zest and dusted with confectioners’ sugar. Squeeze garlic cloves from peel; discard peel. 2 Transfer pepper and garlic to food processor along with chickpeas, tahini, lemon juice, paprika, cumin, and ¼ tsp each salt and pepper and puree until smooth. 3 Transfer hummus to serving bowl; drizzle with remaining Tbsp oil and top with chickpeas and red pepper if desired. Serve with crackers and vegetables for dipping.

4 bone-in pork loin chops Kosher salt and pepper ½ cup (1 stick) unsalted butter, melted 1 Tbsp finely chopped fresh rosemary 2 cloves garlic, finely chopped 1 Tbsp olive oil

1 Heat oven to 375°F. Season pork chops with ¾ tsp salt and ½ tsp pepper. In small bowl, combine melted butter, rosemary, and garlic. Heat oil in ovenproof skillet on medium-high. 2 Add pork chops and cook until golden brown, 4 min. per side. Brush generously with garlic butter. Transfer skillet to oven and cook until just cooked through, 10 to 12 min. Serve with more garlic butter for dipping. 1 Tbsp olive oil 1 lb sweet Italian sausage, casings removed 4 cloves garlic, chopped 2 cups chicken broth 2 cups marinara sauce 1 14.5-oz can diced tomatoes, drained 8 oz lasagna noodles, broken into large pieces ⅔ cup fresh basil, roughly chopped, plus more for garnish ⅓ cup ricotta 4 oz mozzarella, coarsely grated (about 1 cup) 2 Tbsp grated Parmesan

1 Heat broiler. Heat oil in large cast-iron skillet on medium. Add sausage and cook, breaking up with spoon, until beginning to brown, 4 to 6 min. Add garlic and cook, stirring, until fragrant, 1 min. 2 Add chicken broth, marinara, and tomatoes. Nestle pasta pieces in broth mixture and bring to a boil. Reduce heat and simmer, covered, 4 min. Uncover and continue simmering, stirring occasionally, until pasta is tender, 10 to 12 min. 3 Remove from heat and fold in basil. Top with ricotta, mozzarella, and Parmesan. 12 cloves garlic ¾ cup packed fresh mint leaves ¾ cup packed fresh basil leaves ½ cup red wine vinegar 1 cup reduced-sodium soy sauce ¼ cup packed fresh tarragon leaves 2 serrano chiles 3 Tbsp sugar 1 Tbsp ground cumin ½ cup plus 3 Tbsp oil 1½ tsp salt, divided 4 large Cornish hens 3 lbs baby new potatoes

1 In food processor or blender, puree garlic, mint, basil, vinegar, soy sauce, tarragon, chiles, sugar, cumin, ½ cup oil, and ¾ tsp salt until smooth. Place hens in 2 gallon-size resealable bags and add marinade. Seal bags and turn over a few times to distribute marinade. Refrigerate at least overnight or up to 24 hours. 2 Heat oven to 425°F. Remove hens from marinade (discard marinade) and arrange on rimmed baking sheet, breast side up. Tuck wings behind body; tie legs together with twine.

HERB SAUCE: In food processor, puree 1 cup sour cream, 6 Tbsp fresh lime juice, 1⁄2 cup extra virgin olive oil, ½ cup each fresh mint and basil, 2 Tbsp fresh tarragon, 2 cloves garlic, 1 serrano chile, and 1 tsp salt until smooth.

2 lbs jumbo (10- to 15-ct) peeled, deveined shrimp 1½ Tbsp Creole seasoning 3 Tbsp plus ½ cup extra virgin olive oil 5 cloves garlic, finely chopped 1 small shallot, finely chopped ½ cup dry sherry 2 roasted red piquillo peppers, finely chopped 1 tsp sugar ¼ tsp red pepper flakes Kosher salt 2 cups shrimp or seafood stock Chopped flat-leaf parsley, for sprinkling Grilled or toasted baguette slices, for serving

1 Pat shrimp dry with paper towels. In large bowl, toss shrimp with Creole seasoning; refrigerate. 2 Heat 1 Tbsp oil in small saucepan on medium-low. Add garlic and shallot; cook until shallot starts to soften, stirring frequently, 2 to 3 min. Add sherry, piquillo peppers, sugar, red pepper, and ½ tsp salt. Bring to a boil and boil until reduced by half, 3 min. Add stock and ½ cup oil. Simmer 10 min., stirring occasionally. 3 Meanwhile, heat remaining 2 Tbsp oil in large cast-iron skillet on medium-high. Arrange half of shrimp in single layer. Cook until deep golden brown and just cooked through, 1 to 2 min. per side. Transfer to bowl. Repeat with remaining shrimp. Remove skillet from heat. Return reserved shrimp to skillet; add sauce (be careful, it will spatter). Stir to coat. Sprinkle with parsley; serve with bread. 4 pints cherry tomatoes 6 cloves garlic, smashed and peeled 6 sprigs fresh thyme ¼ cup olive oil, plus more for topping, if needed Kosher salt and pepper

1 Heat oven to 350°F. On large rimmed baking sheet, toss tomatoes, garlic, and thyme with ¼ cup olive oil and ¼ tsp each salt and pepper. 2 Bake until tomatoes are wrinkled and fragrant, 45 to 50 min., shaking pan halfway through. Let cool. To store, transfer to jar, top with olive oil, and cover. Refrigerate up to 1 week. PER ¼-CUP SERVING ABOUT 45 CAL, 4 G FAT (1 G SAT), 1 G PRO, 35 MG SODIUM, 3 G CARB, 1 G FIBER
