ver the winter holidays a minor surgery and a broken toe temporarily sidelined me from my normal daily workouts. Why was this a big deal? Group exercise is my happy pill. Even beyond the mood magic of moving my body to a beat, the sense of community and routine I get from sweating with my gym buddies instantly recharges me. I like to say, “I work out so I work.” It follows that I was feeling a bit “broken” without my trusted fitness fix—that is, until I decided to get really crafty. I started knocking out a project (or two!) a day: spray-painting dried mums silver, stacking kids’ books into Christmas “tree” towers, creating Rudolph in no fewer than five ways, and hot-gluing every googly eye, pom-pom, and ribbon in my path. And you know what? Channeling all that excess energy creatively and sharing the fun on Instagram began to bust me out of my rut—especially when some of you showed off your own versions of my DIYs! Serendipitously, as Team WD was planning this issue, we discovered that March is National Crafting Month. I took it as a sign that we should theme the issue and celebrate some incredible makers and the amazing things they knit, sew, paint, draw, bead…and, yes, hot-glue! I especially related to our “Crafting Saved My Life” feature on page 42, highlighting women who, like me, found unexpected joy and healing in their handiwork. Your healthcare provider should check your blood sugar before you start REXULTI and during treatment with REXULTI. • have or have had high levels of total cholesterol, LDL cholesterol, or triglycerides, or low levels of HDL cholesterol • have or have had seizures (convulsions) • have or have had kidney or liver problems • have or have had a low white blood cell count • are pregnant or plan to become pregnant. REXULTI may harm your unborn baby. Taking REXULTI during your third trimester of pregnancy may cause your baby to have abnormal muscle movements or withdrawal symptoms after birth. { Tell your healthcare provider if you become pregnant or think you are pregnant during treatment with REXULTI. { If you become pregnant during treatment with REXULTI, talk to your healthcare provider about registering with the National Pregnancy Registry for Atypical Antipsychotics. You can register by calling 1-866-961-2388 or visit http://womensmentalhealth.org/clinical-and-research-programs/ pregnancyregistry/. • are breastfeeding or plan to breastfeed. It is not known if REXULTI passes into your breast milk. Talk to your healthcare provider about the best way to feed your baby during treatment with REXULTI.

Tell your healthcare provider about all the medicines you take, including prescription and over-the-counter medicines, vitamins, and herbal supplements. REXULTI and other medicines may affect each other causing possible serious side effects. REXULTI may affect the way other medicines work, and other medicines may affect how REXULTI works. Your healthcare provider can tell you if it is safe to take REXULTI with your other medicines. Do not start or stop any medicines during treatment with REXULTI without first talking to your healthcare provider. Know the medicines you take. Keep a list of them to show your healthcare provider and pharmacist when you get a new medicine.

What should I avoid while taking REXULTI? • Do not drive a car, operate machinery, or do other dangerous activities until you know how REXULTI affects you. REXULTI may make you feel drowsy. • Do not become too hot or dehydrated during treatment with REXULTI. { Do not exercise too much. { In hot weather, stay inside in a cool place if possible. { Stay out of the sun. { Do not wear too much clothing or heavy clothing. { Drink plenty of water. What are the possible side effects of REXULTI? REXULTI may cause serious side effects, including: • See “What is the most important information I should know about REXULTI?” • Stroke (cerebrovascular problems) in elderly people with dementia-related psychosis that can lead to death. • Neuroleptic malignant syndrome (NMS) is a serious condition that can lead to death. Call your healthcare provider if you have any of these symptoms of high blood sugar during treatment with REXULTI: feel very thirsty; feel very hungry; feel sick to your stomach; need to urinate more than usual; feel weak or tired; feel confused; or your breath smells fruity { increased fat levels (cholesterol and triglycerides) in your blood. Your healthcare provider should check the fat levels in your blood before you start, or soon after you start REXULTI, and then periodically during treatment with REXULTI. { weight gain. You and your healthcare provider should check your weight before you start and often during treatment with REXULTI. • Unusual and uncontrollable (compulsive) urges. Some people taking REXULTI have had strong unusual urges, to gamble and gambling that cannot be controlled (compulsive gambling). You may feel lightheaded or faint when you rise too quickly from a sitting or lying position. • Falls. REXULTI may make you sleepy or dizzy, may cause a decrease in your blood pressure when changing position (orthostatic hypotension), and can slow your thinking and motor skills which may lead to falls that can cause fractures or other injuries. • Seizures (convulsions). • Problems controlling your body temperature so that you feel too warm. he phrase “consider it an opportunity for great joy” from this month’s verse has also been translated as “count it all joy,” something I encourage you to do. Joy is different from happiness. Happiness depends on circumstance—joy does not. Joy is a heart posture prepared to receive the circumstance. Joy is surrendered trust in the One who loves us. I admit, when I see trouble, my natural response is not joy. I want to fix it, change it, ignore it, or cry. These responses are planted in the idea that I can control my world, but the only thing I control in my world is my response. Years ago, while working on the talk show The View in New York City, I received an alert about a threat near my son’s school. I was on the other side of the country. My mama-heart was distressed. I sat on the floor crying and praying; a colleague walked over, sat next to me, and listened. Prayer, tears, and the presence of a friend redirected my heart to joy. Joy does not replace tears with laughter or concern with levity. Joy brings a peaceful strength grounded in hope and trust—hope and trust in things not seen but promised in the Bible. God is with you, strengthens you, helps you, and holds you (Isaiah 41:10). Especially in hard times, try to remember: Count it all joy.

W

hen her son, Eddie, was born in 2010, Veena left her job as a program manager for a nonprofit to focus on raising him, though she hadn’t originally planned on giving up her career. “Frankly, I didn’t think I had the skill set to be a stay-athome mom,” she says. Though she embraced her role as a mother, she soon felt her own identity slipping away and began suffering from postpartum depression. “I didn’t go anywhere or do anything—I felt like I had no purpose,” she recalls. Then she rediscovered crafting and began picking projects from Pinterest to try with her son. “I knew I needed an outlet that gave me a sense of accomplishment, unlocked my creative side, and made me feel like the Veena I used to know,” she says, citing crafting as the lifeline that got her through postpartum depression. Veena’s hobby also inspired her to accept the messiness that comes with being a mom. “Crafting is like a metaphor for motherhood,” she says. “It’s not about looking or being perfect. It’s about making memories and finding joy in small things.”

n Tuesday mornings, you’ll find 75-year-old Sharon at Senior Action, a nonprofit that provides programs and services for adults over 55, sitting with a dozen or so other women, crochet hooks and knitting needles in hand. This is more than a club—it’s a sisterhood. The group welcomed Sharon when she left a troubled 48-year relationship and relocated to live with one of her sons in 2014. It’s been a way for seniors like her to make meaningful connections. “Women need woman friends. So many are widowed and divorced. When sitting with a group, we’re comforted by each other’s presence,” says Sharon. The women accompany one another to doctor’s appointments and are always talking things out— in fact, the group is notorious for getting kicked out of restaurants or libraries for chatting and knitting too long. They make prayer shawls and collaborate on charitable crafts like blankets for shelter dogs, baby bibs for struggling single mothers, and crocheted prosthetics (“knockers”) for breast cancer survivors. “It’s amazing how everyone supports one another,” she says of her group, called Stitch in Time. “And crafting pulled me out of the depths. It has given me a reason to get up and go.”

A

fter returning from Iraq in 2003, Shawn, a sergeant in the military police, found herself battling ongoing PTSD. “I wouldn’t go outside, period. I didn’t want to be bothered with anyone. My family told me, ‘You’re not the same person anymore,’ ” she says. Then one day she noticed a personalized wood sign in her neighborhood and instantly felt inspired to make her own. She purchased tools and wood from the hardware store and letters from a craft store, then fashioned her own Army sign, which she displayed proudly on her porch. From there, Shawn began making bath bars, candles, and T-shirts, giving them away to friends and family. “It’s just so relaxing to me,” she says. “I craft every day.” Getting creative helps her tune out negative thoughts, improve her mood, and combat anxiety. She even started her own Facebook group, “Black Woman Who Craft on a Budget,” where she shares her project ideas with nearly 3,000 members. “I’ll always have some form of PTSD, but crafting helps me a lot,” says Shawn. “It’s my therapy.”

ancy has experienced a level of loss that few understand. After being widowed twice and losing her eldest son, she battled severe depression. “It felt like I was trying to slog through a foot of peanut butter,” she remembers. In desperate need of self-care, she began doing projects like redecorating her late son’s room. She also returned to her love of sewing. During the pandemic, Nancy discovered the Quilts of Valor Foundation, a nonprofit that awards service members “touched by war” with healing quilts (a.k.a. Quilts of Valor) made by volunteers. She nominated her son-in-law, a Vietnam medic, for the honor and, when he was approved, gave him a quilt in which he now wraps himself up every night. She’s since sewn four more quilts for veterans and several for The Linus Project, for children who are in need. These efforts have played a key role in Nancy’s recovery by giving her an opportunity to help others outside her relationship-coaching career (relationshiprehabcoach.com), which often involves heavy conversations. “Creating something is uplifting,” Nancy says. “That creative energy helped me rebalance my emotional state.”

n 2020, Annemarie underwent chemotherapy for ovarian cancer. She began crafting as a distraction and learned soon afterward that it could help combat neuropathy, a common side effect of chemo. “You need something to keep your mind occupied, because there’s a lot to process when you’re going through it,” she says. Annemarie whipped out her Cricut (a tabletop cutting machine) and started making everything from personalized onesies to wreaths to cachepots (shown), projects she now shares on her blog, Make Every Day an Event. “Crafts gave me a new focus and a way to forget about my health issues, if only for an afternoon,” Annemarie explains. “Plus, I was able to make personalized thank-you gifts for those who helped me through this journey.”

A

t the age of 12, Jewell was diagnosed with lupus and rheumatoid arthritis. Since then, she’s bounced between specialists and struggled to make peace with her diagnoses. But throughout it all, the 38-year-old has found comfort in crafting. “It takes me to another place where I’m not thinking about my aches, pains, anxiety, or whatever is stressing me at the time,” she shares. For Jewell, this has also been empowering: “I don’t have to be overrun by my ruminating thoughts. I can channel this energy and create something amazing.” Jewell, who comes from a fashion background, has also used crafting to honor deceased loved ones. She added photos and quotes onto a vintage denim jacket as a tribute to her father, and she is currently working on a canvas collage of a picture of her aunt, who passed away in 2014, which she’s accentuating with unique materials like carpet swatches and crushed jewelry. “These projects help me feel more connected with them,” she says.


Natalie Bickel FLOYDS KNOBS, IN

T

here was a time when Natalie felt belittled by her bosses whenever she voiced her opinions. She also felt ignored any time she attempted to infuse her own creativity into her work. “Hearing that message over and over completely dismantled my confidence and made me feel like, OK, I can’t do anything right,” she says. Natalie’s self-confidence suffered—so much that she became too anxious to express herself in social settings for fear of being ridiculed. “That role pushed me to be unhealthily introverted,” she says. “I was so nervous to be in situations where I’d be expected to talk or contribute.” Then she got furloughed and spent her days going on restorative walks. After passing a field of wildflowers, she noticed how the flowers, which bloomed wherever they landed, were flourishing. “It was pure symbolism for me—I could grow during a pandemic, or furlough, or wherever I was planted,” she says. She began pressing these wildflowers and turning them into resin jewelry. “All my creativity erupted again,” says Natalie, who is now thriving at a new job. “I feel more like myself, with the walls that were previously built around me finally broken down for good.”

How to make

a pan sauce

Cook your protein and the sauce in the same skillet. BASE RECIPE

MIKE GARTEN.

1 Brown meat well, then cook to desired doneness, either in same pan or on baking sheet in oven. Immediately after removing meat from pan, start sauce: Turn heat to low. (There should be a thin, even coating of fat on the bottom of the skillet. If there’s more, pour a little off. If there’s less, add some olive oil.) 2 Add alliums (onions, shallots, leeks, scallions, garlic) and cook, stirring often, until slightly translucent and just tender but not browned, 2 to 3 min. 3 Turn heat to mediumhigh and add vegetables. Season with salt and pepper and cook, stirring, until just tender, 3 to 8 min. 4 Turn off heat and add liquid. (The liquid will bubble vigorously when it hits the hot pan.) 5 Turn heat to medium. Simmer, stirring and scraping bottom and side of pan to incorporate any stuck browned bits into liquid. Continue simmering and stirring until mixture is saucy, 3 to 4 min. (this gives alcohol enough time to burn off and creamy sauces enough time to thicken). 6 Stir in any juices from cooked meat and season to taste. (If the sauce is too salty, stir in a bit of water. For richer sauce, stir in 1 Tbsp butter.) Scatter fresh herbs all over warm sauce before serving.

hen the clocks spring forward on March 13, there’s more to think about than how you’ll find the energy to make up for that lost hour of sleep. Studies suggest that the risk of heart attack or stroke rises in the first few days after the spring time change, especially among people with heart disease risk factors. The combination of those risk factors and the temporary disruption of the circadian rhythm and sleep loss is likely to blame, but there are steps you can take for a smoother transition:

Prep ahead. For the week before the time change, move your bedtime up by 15 to 30 minutes. This will help your body adjust and respond better to the lost sleep (return to your regular sleep schedule after the time switch). And expose yourself to bright daylight soon after you wake to help your internal clock stay in sync.

Build a heart-healthy lifestyle to follow year-round. Things like getting regular exercise, enjoying healthful and nutritious meals, keeping a handle on stress, and prioritizing good sleep all help prevent or manage heart disease risk factors like high blood pressure or cholesterol, weight gain, and unbalanced blood sugar.

Pay your doctor a visit. Yearly trips to your primary care physician can help reveal worrisome heart-related changes, such as elevated blood pressure or blood glucose, that you may be able to target via lifestyle changes before resorting to medication. Create a “ ta ke out ” stash . Make freezer-friendly meals ahead of time, then put them in containers labeled with the dish name and date prepared and store in their own area of the freezer as easy grab-and-heat eats. Do the same with leftovers—no more mystery meals!

Sma rten up mea l prep. You can certainly create a week’s worth of meals in advance, but any type of prep work will make healthy cooking easier when the time comes. Dice onions, mince garlic, and chop peppers or other veggies; store in glass jars to use throughout the week. You can also store prepped aromatics like onions, garlic, and ginger in the freezer so they’ll always be ready for use.

Eat better with less hassle.

Rely on olive oi l or avocado oil . Nothing needs to be totally off-limits, and that includes butter—you can feel free to use a little here and there (like on that slab of whole-grain sourdough toast!), but for the majority of your cooking and in salad dressings, use a plant-based oil like olive or avocado oil. These oils are lower in saturated fat and have more cholesterol-improving unsaturated fats and antioxidants.

Buy fruits a nd veggies weekly. Purchase only the fresh produce you’ll need for the week so nothing will go to waste. You can prewash hard items like apples and carrots so they’ll be ready to grab.

Embrace shortcuts. These smart detours can help you get hearthealthy meals on the table faster: Repurpose store-bought rotisserie chicken, rely on instant or quick-cooking brown rice or oats, and keep riced or spiralized veggies around (find them in the freezer or fresh-produce section).

There’s a reason you’re told to “eat the rainbow.” Fruits and vegetables are rich in fiber and packed with antioxidants, vitamins, and minerals that contribute to good health, particularly that of your heart. Frozen fruits and veggies. Frozen produce is just as nutritious as fresh and can be a cost-effective option. It’s also the perfect meal fix in a pinch. Eggs. They’ve unfairly gotten a bad rap in the past, but current eating guidelines say it’s perfectly fine to consume eggs as part

of overall heart-healthy eating. They’re filled with protein and other key heart-health nutrients, and they’re budget-friendly. Sparkling water. It’s packed with protein and heart-supporting nutrients and is super versatile. PANTRY STAPLES Stock up on heartfriendly must-haves. Beans, lentils, and peas. Whether you buy these canned, boxed, or dry, they’re all nutritious. Canned produce. Yes, this is healthful too. Just go for products without added sugar and sodium. Whole grains. They’re linked to reduced risk of heart disease and are more nutritious than refined white flour. Buy the whole-grain versions of bread, crackers, and pasta. Nuts and seeds. These are great to munch on and to add flavor, crunch, and heart-healthy fats to recipes. Don’t forget to have a jar of nut or seed butter too—perfect for a snack!

Canola oil, for pan 2½ cups buttermilk, plus more for brushing 1 large egg 1½ cups dried currants 3 cups all-purpose flour 1 cup whole-wheat flour ¼ cup wheat germ 3 Tbsp sugar 2 tsp baking soda 2 tsp kosher salt 6 Tbsp cold unsalted butter, cut into pieces, plus more for serving

1 Heat oven to 400°F. Lightly oil 9-in. cast-iron skillet or cake pan. In medium bowl, whisk together buttermilk and egg. Add currants and stir to combine. 2 In large bowl, whisk together all-purpose flour, whole-wheat flour, wheat germ, sugar, baking soda, and salt. With fingertips, rub butter into flour mixture until small pebbles form. Create well in center of flour mixture. Add buttermilk mixture, stirring with wooden spoon in 1 direction and gradually incorporating, until combined (dough will be sticky). 3 Using slightly wet hands, shape dough into ball and transfer to prepared pan. Let rest 10 min., then brush with buttermilk. Cut large “X” about 1 in. deep in top of loaf, wiping blade with damp cloth between cuts. Bake until golden brown and internal temperature registers 195°F to 200°F on instant-read thermometer, 50 to 60 min. Transfer to wire rack and let cool completely. Serve with butter.

5 sticks (3½ cups) unsalted butter, at room temp, plus more for pans 2 recipes Classic Vanilla Cake batter (page 86) 24 oz marshmallow crème (1 16-oz container plus 1 8-oz container) 2 tsp pure vanilla extract 1 lb confectioners’ sugar Blue paste food coloring 1 35-oz bag round rainbow candies (we used Sixlets; see tip below right) Chocolate sprinkles

1 Heat oven to 350°F. Grease bottoms of one 8-in. and one 10- by 2-in. round cake pan and line with parchment or waxed paper. 2 Pour 6 cups batter into 10-in. pan and 4 cups into 8-in. pan (any remaining batter can be baked into cupcakes if desired). Bake until each cake is golden and toothpick inserted in center comes out clean, 25 to 35 min. Transfer cakes to wire racks; let cool 15 min. Remove cakes from pans and let cool completely on racks.

3 Meanwhile, prepare marshmallow frosting: Spoon marshmallow crème into large bowl. Using electric mixer on medium speed, beat in softened butter 2 Tbsp at a time, beating well after each addition. Beat in vanilla. On low speed, gradually add sugar and beat until smooth. Increase speed and beat until light and fluffy. Makes about 5 cups frosting. 4 Fit pastry bag with ½-in. round tip. Spoon in 1 cup frosting; set aside for clouds. Transfer 2½ cups frosting to medium bowl, then tint light blue with food coloring. Keep remaining frosting white for rainbow. 5 Trim top of 8-in. round cake to make flat. Cut cake crosswise in half to make 2 semicircles. Spread some of white frosting on trimmed side of 1 semicircle. Top with other cake half. Trim base of semicircle cake to make level and ensure that sides are straight. Line baking sheet with waxed paper. Cut thin piece of cardboard into rectangle same size as base of cake (8 in. by 3 in.) and place underneath cake. Transfer cake on cardboard base to prepared baking sheet.

Spread enough frosting to fill gap at top and sides and smooth with offset spatula. Refrigerate until firm, about 30 min. 6 Trim top of 10-in. cake to make level. Place cake, trimmed side down, on serving platter. Spread light blue frosting over cake and smooth with spatula. Cut 4 straws to same height as cake. Insert straws, level with cake height, in row down center of cake to help support rainbow cake. Refrigerate while working on rainbow cake. 7 Spread remaining white frosting over semicircle cake and make smooth. (Make sure cake is level and sides are straight.) Starting on top edge of cake, press single row of yellow candies close together. Repeat going down side of cake with orange, pink, red, green, light blue, and purple candies (there will be a small opening of just frosting). Repeat on other side of cake starting with purple candies, working down with light blue, green, red, pink, and orange and ending with yellow. Fill in sides of arc with row of yellow next to edge of yellow and continue with orange, red, etc. Refrigerate cake at least 30 min. 8 Move chilled cakes from refrigerator. Carefully transfer rainbow cake to top of blue cake on top of straw supports. Using pastry bag with white frosting, pipe clouds on blue cake and on rainbow cake. Using tweezers, attach sprinkles to make cute faces.

1 In small saucepan, bring vinegar and ¼ cup water to a simmer. Remove from heat; add jicama and carrots and let vegetable mixture cool completely. 2 Meanwhile, heat grill to medium. Fresh Tomato Sauce

3 Wrap tortillas in double layer of damp paper towels; microwave on High until soft, about 1 min. (be careful of steam when removing). Working with 1 tortilla at a time, dip in reserved salsa mixture, shaking off any excess. Place on cutting board, top with heaping ¼ cup filling, roll up, and place, seam side down, in baking dish. Repeat with remaining tortillas and filling. 4 Spoon any remaining salsa mixture on top. Sprinkle with Monterey Jack and bake until cheese begins to brown, 8 to 10 min. Serve topped with onion, radishes, and jalapeño.


Mushroom Chicken Skillet with Herbed Cream Sauce ACTIVE 20 MIN. ✦ TOTAL 45 MIN. SERVES 4

1 Tbsp unsalted butter 3 Tbsp olive oil, divided 1 10-oz pkg. cremini mushrooms, sliced 8 oz shiitake mushrooms, stemmed and sliced Kosher salt and pepper 1 large shallot, finely chopped 8 small chicken thighs (about 2¾ lbs) ⅓ cup dry white wine ½ cup low-sodium chicken broth 3 sprigs thyme, plus more for garnish 1 Tbsp white miso ¼ cup heavy cream

1 Heat oven to 375°F. In large oven-safe skillet on mediumhigh, heat butter and 2 Tbsp oil. Once butter foams, add mushrooms and a pinch of salt and cook, tossing occasionally, 5 min. Add shallot and cook, tossing occasionally, until mushrooms are golden brown, 2 to 3 min.; transfer to plate. Wipe skillet clean. 2 Return skillet to medium. Rub chicken with remaining Tbsp oil and season with ¼ tsp each salt and pepper. Add chicken to skillet, skin side down, and brown, 10 to 12 min.; drain fat. Turn chicken over; add wine, then broth and thyme. Transfer skillet to oven and bake until chicken is cooked through (165°F), about 5 min. 3 Transfer chicken to plate, discard thyme, and return skillet to medium heat. Whisk in miso, then simmer 3 min. Stir in cream and mushroom mixture and heat through, about 2 min. Serve with chicken and additional thyme if desired. For pears 4 firm-ripe red pears, halved and cored 2 Tbsp coconut oil, melted 1 tsp ground cinnamon For caramel 1½ cups sugar 1 5.4-oz can coconut cream ½ tsp kosher salt ½ cup toasted pecans

1 Heat oven to 400°F. Place pear halves, cut sides down, on cutting board and, without cutting all the way through to bottoms, thinly slice (Hasselback-style). Arrange, cut sides down, in 9- by 13-in. baking dish. 2 In small bowl, whisk together coconut oil and cinnamon. Brush all over pears, making sure to get mixture between slices. Cover baking dish with foil and bake 10 min. Remove foil and continue baking until pears are tender, 10 to 15 min. more. Let cool 5 min. 3 Meanwhile, prepare caramel: In small saucepan, combine sugar and ½ cup water and cook on

low, stirring to dissolve sugar before it boils. Brush down sides of pan with pastry brush dipped in ice water to wash sugar crystals back in. 4 Increase heat to medium and simmer until mixture is amber in color and reaches 285°F on candy thermometer, 10 to 15 min. 5 Remove from heat and gradually whisk in coconut cream until fully combined (mixture will bubble up a bit). Let cool to room temp, then stir in salt. Transfer half of caramel to measuring cup, reserving remainder for other use. 6 Spoon off 3 Tbsp roasted pear juices and stir into caramel, then fold in pecans. When ready to serve, drizzle pecan caramel over pears. PER SERVING 215 CAL, 10 G FAT (5 G SAT), 1 G PRO, 65 MG SODIUM, 32 G CARB, 3 G FIBER

Classic Vanilla Cake ACTIVE 20 MIN. ✦ TOTAL 50 MIN. MAKES 24 CUPCAKES OR TWO 8-IN. CAKE LAYERS (SERVES 12)

1 cup (2 sticks) unsalted butter, at room temp, plus more for pan 3 cups all-purpose flour 1 Tbsp baking powder 1 tsp kosher salt 1¾ cups sugar 4 large eggs, at room temp 2 tsp pure vanilla extract 1¼ cups whole milk, at room temp

1 Make cake: Heat oven to 325°F. Line two 12-cup muffin pans with cupcake liners (or butter two 8-in. round cake pans and line bottoms with parchment). 2 In bowl, whisk together flour, baking powder, and salt. 3 Using electric mixer, beat butter and sugar in large bowl on low to combine. Increase speed to medium-high; beat until light and fluffy, about 3 min. Reduce speed to medium; add eggs 1 at a time, beating each until incorporated before adding next egg. Beat in vanilla. 4 Reduce speed to low and add flour mixture in 3 parts, alternating with milk and beating just until incorporated. 5 Divide batter evenly among prepared pans (or divide among cupcake liners, about ¼ cup each) and bake until wooden pick inserted in center comes out clean, about 25 to 35 min. for cake and 20 to 25 min. for cupcakes. Let cool in pans on wire rack 10 min.; remove from pans and let cool completely.
