Ingredients:             

½ bunch lettuce ½ bunch mint, torn ½ bunch parsley, torn 2 vine ripened tomatoes, roughly chopped 1 cucumber, roughly chopped Spiced bread :2 pita bread 40g ground sumac 70g olive oil 1 ½ tablespoons lemon juice Dressing :2 cloves of garlic 50ml lemon juice 60ml extra virgin olive oil sea salt flakes & pepper

Method: 1. To make the salad, wash & dry all ingredients. Chop up and place in a bowl. 2. To make the spiced bread, preheat oven to 180C. 3. Whisk together the sumac, olive oil and lemon juice to make a paste. Split each pita into half and brush generously with the paste. 4. Place on baking tray and bake for 15 minutes or until dry & crisp. 5. Once they are cool, break up into pieces. 6. For the dressing, combine ingredients together. 7. Just before serving, add the dressing and spiced bread and toss gently.
