Salad of Your Imagination Bialik College Kitchen Garden Program

Ingredients:

 Dressings:  1 part acid: lemon juice, vinegar, verjuice etc..  3 parts oil  Additions to dressings could be small amounts of mustard, honey, sugar, garlic, chopped herbs, toasted spices etc..  Always season with salt & pepper  Special touches for salads could include croutons, seeds, shavings of parmesan, crumblings of feta  Chunks of avocado  Gratings of vegetables-­‐beetroot, carrot, radish etc..  Fruits – pears, apples

Equipment:    

Chopping board Knife Salad spinner Metric measuring cups/spoons

Method: 1. Go to the garden, walk around and look what is in the garden. Choose what you would like in your salad and pick just enough for your class. 2. Come back to the kitchen and decide how you want your salad to look, think of the design etc… 3. Wash and dry salad ingredients and choose a platter to place it on. 4. Once salad is made, start to think about the dressing. Follow the 1 to 3 ratio of acid to oil. Make your dressing and always taste it & season it before putting it on the salad. 5.
