Ingredients: 6 tablespoons tomato sauce 2 potatoes, cooked, thinly sliced 1 small handful of herbs from the garden, chopped (rosemary, thyme) extra virgin olive oil lemon juice salt/pepper 50g mozzarella
Equipment: knife chopping board bowl juicer
Method:
1. Smear the tomato sauce evenly over the pizza base. 2. Slice the potatoes into ½ cm slices and toss in a bowl with the herbs, a good lug of olive oil, a small squeeze of lemon juice and a pinch of salt and pepper. 3. Scatter them over the pizza base and put small torn up pieces of mozzarella into the gaps. 4. Cook until crisp and golden.
