1 packet udon noodles 1 tablespoon rice bran oil 1 bunch broccolini, cut into 5cm lengths 1 bunch choy sum, ends trimmed, washed & cut into 8cm lengths 2 cloves garlic, finely chopped ½ red cabbage, finely shredded 1 teaspoon fresh ginger, grated handful snow peas 1/3 cup kecap manis 2 tablespoons water

Prepare udon noodles according to packet directions Cut all your vegetables up and set aside. Heat oil in wok over high heat until just smoking. Add broccolini, cabbage, garlic & ginger and stir fry for 2 minutes or until broccolini is bright green. 5. Add noodles to the wok with choy sum, snow peas, kecap manis and water and bring to the boil. Stir fry for 1 minute or just until the choy sum wilts and serve.
