Tomato Pasta Sauce

Ingredients: 1 onion, finely chopped 3 cloves garlic, finely chopped 1 carrot, grated 1/2 cup flat leaf parsley, leaves only ¼ cup extra virgin olive oil 2 fresh bay leaves 8 cups tomato passata freshly ground pepper large pinch of freshly grated nutmeg handful of basil leaves
Equipment: chopping board knife saucepan grater metric measuring cups
Method: 1. Heat the olive oil in a large saucepan over medium heat. 2. Add the onion, garlic and carrot and fry for 5-‐10 minutes on low-‐medium heat until onion is translucent & soft. 3. Add parsley & bay leaves and cook for a further minute, stirring to combine with the onion mixture. 4. Add the passata and stir till well combined. 5. Season with salt, pepper & nutmeg. 6. Allow sauce to come to a simmer and cook on low heat with lid on for 20 minutes. 7. Then add in torn basil and serve.
