Tomato Pasta Sauce

Ingredients:  1 onion, finely chopped  3 cloves garlic, finely chopped  1 carrot, grated  1/2 cup flat leaf parsley, leaves only  ¼ cup extra virgin olive oil  2 fresh bay leaves  8 cups tomato passata  freshly ground pepper  large pinch of freshly grated nutmeg  handful of basil leaves

Equipment:  chopping board  knife  saucepan  grater  metric measuring cups

Method: 1. Heat the olive oil in a large saucepan over medium heat. 2. Add the onion, garlic and carrot and fry for 5-­‐10 minutes on low-­‐medium heat until onion is translucent & soft. 3. Add parsley & bay leaves and cook for a further minute, stirring to combine with the onion mixture. 4. Add the passata and stir till well combined. 5. Season with salt, pepper & nutmeg. 6. Allow sauce to come to a simmer and cook on low heat with lid on for 20 minutes. 7. Then add in torn basil and serve.
