How to Make Pancetta-Stuffed Mushrooms We will need: 24 white mushrooms, about 2 inches in diameter 12 oz. pancetta
1/2 cup olive oil 1/2 teaspoon Spanish smoked paprika Create Filling
We have our pancetta cut about 1/4-inch thick. So, what we are going to go is chop the pancetta finely. Once we have chopped the pancetta, we transfer it to a bowl. We then add the Spanish paprika and mix until it is all coated. After cleaning the mushrooms of any debris, we are going to snap the stems off of them, so that we have a cavity to fill with pancetta. Stuff the Mushrooms Next, we are going to stuff the mushrooms. Just
simply put the pancetta in without
pressing down. Leave it loose, so that it cooks easier. Cook the Stuffed Mushrooms We are going to pour the olive oil into a medium size frying pan and heat on medium. Once the oil is hot, we will place the mushrooms in it and let them cook, covered. It will take about 10 minutes. Serve Pancetta-Stuffed Mushrooms Once the mushrooms are cooked, we just transfer them to a plate and we serve them. We recommend that you only cook as many as you are going to serve right away because they are a lot better when they are warm.
