New chefs, food at bistro

S

T. JOSEPH, Mich. — Three new chefs at Bistro on the Boulevard located in the Boulevard Inn, St. Joseph, recently released their new spring/summer menus. “We are bringing traditional French cooking to this corner of the state,” said Executive Chef Cheyenne Galbraith. “But we are also being adventurous.” Galbraith, along with her new Sous Chef James Galbraith and Pastry Chef Mandy Krause, say they are creating menu choices not offered elsewhere in the area. They plan to use the region’s freshest ingredients, purchasing from select local farms and creating flavor combinations that are simultaneously unexpected, yet delicious. “Eating at the Bistro will be extra fun for people who aren’t afraid to try new things,” said Cheyenne. “It’s the experience foodies have been looking for in our area.” The new lunch menu includes a selection of small plates, soups, salads and entrees featuring such choices as pate du jour, piccolo frito, burrata cheese, baby beets salad, steak and hand-cut frites, hot pressed ham and gruyere and cornmeal crusted po’boy with remoulade. Dinner choices include duck confit rillettes, roasted wild mush-

rooms, roasted carrots salad, rack of lamb, cast iron bone-in ribeye steak, mussels, Scottish salmon and crispy skin duck breast with ancho chili honey. Cheyenne said they will augment the menu with seasonal specials and events. “We have one of the most distinguished wine, craft brewery and spirits lists to pair with our foods,” said Cheyenne. She cited that Wine Spectator has given the Bistro its coveted award of excellence for “one of the best restaurant wine lists in the world.” She added that the staff, headed by Maitre d’ Samer Badreddine, is very knowledgeable about the selections when guests seek

advice. As the Bistro’s new executive chef, Cheyenne is a familiar name in southwest Michigan’s epicurean circles. Most recently she was event manager at Shadowland on Silver Beach, St. Joseph, and lead cook at the Mendel Center, Lake Michigan College, Benton Harbor, Michigan. But she credits her technique and desire to bring adventurous food choices to the region with working five years alongside seventime James Beard Nominee for Best Chef in the Southwest, Jennifer James, in Albuquerque, New Mexico. “Jennifer James has created restaurants that are travel destinations for peo-

ple who truly appreciate excellent cuisine,” she said. “My hope is to replicate that experience here.” Assisting Cheyenne is her brother James who brings nearly a decade of experience to the Bistro’s kitchen. He draws his inspiration and techniques from renowned French Chefs Jacques Pepin and Paul Bocuse. Most recently he worked under regionally acclaimed Chef Tim Foley at the Bread+Bar in Benton Harbor. He specializes in foods that demand painstaking preparation and slow cooking and will continue to build his reputation with his braised meats, homemade sausages, duck, cheeses and pasta. Krause is a graduate of

The French Pastry School in Chicago and has studied her craft around the Midwest. She worked as an assistant to world-renowned pastry chef Chris Hamner, the youngest chef to win a world pastry championship and the winner of “Top Chef: Just Desserts II.” Prior to joining the Bistro, Krause was pastry chef for The Carriage House in South Bend, Indiana and the Inn at Harbor Shores in Benton Harbor. The Bistro will serve her French minimacarons to each guest at the end of each dinner but will also offer several sweet confections such as slices of carrot cake, chocolate cake with mascarpone and red raspberry jam filling and caramel au lait in a chocolate crust. Badreddine rounds out the culinary team. He has welcomed and served guests at the Bistro since 2010. His staffing and training skills have helped the restaurant earn numerous awards including “Best Sunday Brunch in southwest Michigan” by The Herald-Palladium, “20 Greatest Getaways” by Midwest Living, “Regions Best Fine Dining Restaurant” by Shore Magazine and the aforementioned Wine Spectator award. Badreddine is also well known in the community for volunteering at fundraisers for breast cancer

‘Deano’ Wilson back in Indiana with a story

A

ny wine geek living COLUMNIST around Indianapolis the past 15 years knows Dean “Deano” Wilson. Deano had a couple of retail wine operations, a restaurant, and served as one of Indy’s “bon vivants” when it came to all matters wine. His robust sense of humor and passion turned a lot of people into oenophiles. His story continues today in California pursuing a winemaking dream. Deano, wife Howard Hewitt Vicki and kids, picked up Grape Sense and moved to wine country nearly three years ago. Wilson had industry connections and started working for winemaking icon Joel Peterson at Ravenswood. After two more stops, he started his own label – “Scribble, Scribble” – and debuted his whites last year and reds recently in hometown Indianapolis. Wilson poured his Zinfandel, Petite Sirah, and Red Blend during several April stops. The wines were full bodied, a tad lighter in alcohol than normally expected and had a palatefriendly silkiness. The wines are distributed in Indiana, Tennessee and California. Scribble, Scribble wine got its name from Wilson’s young son. The boy came home from school with some marks on a paper and explained it was Scribble, Scribble wines. Wilson added the phrase, ‘every scribble tells a story.” Indeed the wines are named for his children and mother. Wilson feels lucky, with a bit of karma, since his initial departure to the west coast. “I’m from Indy and the first place I looked to make wine was Mare Island near Vallejo. Mare Island is an old naval base. The USS Indianapolis took out its last time from there. I’m from Indianapolis so it just felt right.” Deano wants to permanently locate his family near that area at the heart of California wine country. To finish living the dream, he expects to grow his winery from the 700 cases of the latest vintage to 5,000 cases by 2020.

“Vicki is a chemistry teacher,” he said. “Our dream is by 2020 she gets to retire. Then she goes work a crush with a winery like Ravenswood and learns the wine analysis part of making wine. She comes back and we start our winery in the hills of Cloverdale in northern Sonoma County.” His current and future location is a perfect spot for buying grapes. Deano bought Muscat Canelli white grapes from Lake County, north of Napa, and his Zin and Petite Sirah from Lodi west of San Francisco. The location would give him the opportunity to buy grapes an easy distance away from Sonoma, Napa, Lake county and Lodi. The location would even make sourcing grapes from the California Central Coast a possibility. A couple of steps in the winemaking process helped him achieve a wine style pleasing to customers wanting full flavor, a bit lighter alcohol, and a silky mouthfeel. First he picks grapes earlier than many to get more acidity. He uses oak aging to create balance and mouth feel. He co-ferments his Zin and Petite Sirah for his red blend. Fermenting the wines together “melds flavors and gives you deeper flavors,” Wilson explained. This Indy wine icon hasn’t forgotten his Hoosier roots. He’s just living the dream from the coast. “If this is work, clock me in,” he cackled. “I don’t feel like I’m working and I don’t ever want to clock out.” Howard W. A story in his head, a song in his heart Appalachian storyteller, songwriter featured in upcoming Dogwood Festival By TED YOAKUM ted.yoakum@leaderpub.com

W

hile not connected to the Great Lakes State like many of the other featured artists at this year’s festival, the tales and tunes in the head of Dogwood’s latest storyteller resonate with any audience, regardless of what side Mason–Dixon line it falls on. Appalachian Mountains area native Michael Reno Harrell will be sharing his blend of southern stories and songs with visitors to the upcoming Dogwood Fine Arts Festival with a family-friendly performance at 7:30 p.m. Wednesday, May 11, at the Dale A. Lyons Building theater at Southwestern Michigan College. Harrell will also lead a storytelling master class from 7 to 9 p.m. Tuesday, May 10, at Cass County COA Front Street Crossing Building. Harrell, who came recommended to Dogwood Festival organizers by 2014 performer Kim Weitkamp, describes his style of storytelling as something that people across the entire country can relate to, like “granddaddy’s pocket knife — well worn and familiar feeling, but razor sharp and with a point.” A self-taught guitarist who has been performing professionally for more than 50 years, Harrell’s passion for music and songwriting led him down the path young, aspiring musicians do — per- Harrell tried performing songs he creathe follows today. Starting off as many forming in bars and other tiny venues — ed himself for audiences, though they were often met with apathy from crowds wanting to hear covers of classic tunes, he said. “I thought if I started telling audiences the story behind why I wrote the song, maybe they would be interested in listening to it,” Harrell said. “Eventually my introductions became longer than the songs themselves, and at that point I guess I became a storyteller.” He didn’t become a full-time storyteller until around 10 years ago, though,

after a breakout performance at the National Storytelling Festival in Jonesborough, Tennessee. Since then, Harrell has traveled across the U.S. as well parts of Europe, performing in festivals and corporate events, and has received honors such as the featured teller at the National Storytelling Festival and teller in residence at the International Storytelling Center. “I’m lucky,” he said. “I get to travel all over and meet so many different people. It’s not a bad way to make a living.” In spite of his popularity in the storytelling community, Harrell still considers himself a songwriter at heart, weaving music with the spoken word during his performances, he said. “In the folk music world I’m that guy who is always telling stories, and in the storyteller world I’m that guy who is always singing songs,” Harrell said. Drawing mostly from his own experiences growing up, Harrell’s storytelling focuses on relaying tales that everyone can take something away from, be it stories about childhood mischief with cherry bombs or his grandmother’s fried chicken. It’s this aspect of his career Harrell enjoys most — the opportunity to see the reactions his tales elicit from his audiences, be it fits of laughter or sobs of sadness, he said. “All I did was make them feel their own emotions,” he said. “That’s what we’re after as storytellers: to make people feel their own lives, to remember their own experiences.” Tickets to Harrell’s performance May 11 cost $6; registration cost for the May 10 master class cost $10, with limited registration. Fernwood Railway Garden back on track

Popular attraction open to the public

N

ILES, Mich. – Tucked away on a 50-foot-square plot of land on the grounds of Fernwood Botanical Garden and Nature Preserve lived five little trains that helped the organization weather the recession of 2008. Though they were strong enough to go up against a force that brought the nation to its knees, the small but mighty locomotives came to a halt during a fire last October. Fast forward six months. Just as the landscape awakens from its deep winter sleep, the Railway Garden at Fernwood is shaking off the ashes to open for an eighth season. “We were devastated,” said Carol Line, Fernwood’s executive director, of the fire. “The Railway Garden is part of the fabric of Fernwood. I know I speak for all of the staff and volunteers when I say that seeing the charred tracks and trains was heartbreaking. But, we knew we would rebuild.” When the public learned of the fire, sentiments of heartfelt sadness and concern coupled with offers to help poured in. The community started a grassroots online fundraising campaign. Donations came in directly to Fernwood from garden members, members of the community, and businesses. Those efforts, combined with the insurance coverage, have allowed the organization to use the winter months to complete the rebuild of an attraction loved by so many in the Michiana region. “If you want to find a positive in the loss of the garden, it is the story of so many coming together so earnestly and generously to ensure the return of the garden. We are grateful,” Line said. This Sunday, May 1, the Railway Garden will re-open to the public — better than before. And the five replica landmark buildings are back, too. “The fire destroyed two of the replicas — Notre Dame’s Golden Dome and Buchanan’s Pears Mill. Those have been recreated,” Line said. “The other three replicas – the St. Joseph North Pier Lighthouse, Niles Amtrak Depot, and Niles’ Chapin Mansion – were spared from the fire and only annual post-season repairs were needed to ready them for a new season.” The replica buildings are all built by hand of natural materials. The creators of these miniature structures are renowned landscape architect and naturalist Paul Busse, and his team at Applied Imagination in Alexandria, Kentucky. Applied Imagination is a nationally recognized, award winning crew of creative artists, botanical architects, and landscape designers producing original public garden exhibits, seasonal displays, and garden railways. Applied Imagination worked on the buildings and other railway garden components over the winter. The team arrived at Fernwood on April 21, with buildings

in tow, to begin reconstructing the multiple levels that make up the garden feature and laying the tracks. The installation process took five days to complete. Fernwood is in select company with its Railway Garden exhibit. Busse and his award-winning team have created railway gardens for some of the country’s finest botanical gardens including those in Chicago, New York City, Washington D.C., Philadelphia, and Atlanta. According to Line, it is rare that Applied Imagination works with a smaller botanical garden like Fernwood. The railway garden got its start in 2007 when Line joined Fernwood, and learned of plans for a small, temporary outdoor train exhibit for the garden. Line knew of Busse’s work at other public gardens and went about seeing if he had interest in bringing his magic to Fernwood. It took a bit of persuading, but in 2008 when returning from a project at Chicago Botanic Garden, Busse stopped by. “I believe it was love at first sight,” Line said. “Paul connected with our unique property and felt his work would be a perfect fit for Fernwood. He loved the stories of our founder, Kay Boydston, and her work as a miniaturist.” At the time of the visit, the Michiana Rug Crafters had an exhibit of hooked rugs in the Gallery at Fernwood. Upon seeing the exhibit, Busse shared that his mother was a rug hooker, and as luck would have it, Line’s mother was as well. The deal was sealed. Busse agreed to do the project for Fernwood. The exhibit opened on Father’s Day weekend 2009. The Railway Garden has become a centerpiece attraction for the Buchanan Township-based botanical garden and nature preserve. Over the past seven years it has been a draw for thousands of adults and children and, in the process, those visitors have been introduced to lifelong

learning opportunities and nature trails at the 105-acre center for environmental education, horticulture, art, and culture. “We opened the Railway Garden as the recession was tightening its grip. The garden became an instant hit with families, children, and train lovers,” Line said. We saw our memberships and attendance grow during economic conditions that led other gardens and museums across the country to experience layoffs and dramatic declines in visitation and memberships. I truly believe our little train garden saved us from the same fate.” The Railway Garden captures the imagination of those who might not otherwise consider visiting a botanical garden and nature preserve. This first impression becomes the gateway for visitors to discover the full range of outdoor experiences, classes and programs Fernwood offers. Staff and volunteers are trained to engage with guests and educate them about the Fernwood ecosystems and gar-

dens. This overall experience is the foundation for developing a deeper understanding of and respect for the interdependent roles land, plants, and animals play in sustaining daily life. This Sunday, visitors can enjoy light refreshments and children’s activities while exploring the Railway Garden. They also can celebrate the arrival of spring by walking the trails and enjoying emerging wildflowers throughout the nature preserve. The Railway Garden will be open through the fall. Fernwood is open Tuesdays through Saturdays from 10 a.m. to 6 p.m. and Sundays from noon to 6 p.m. Admission is $9 for adults, $7 for seniors 65 and older, and $4 for children ages 5 through 17. Blossomtime Parade takes off Saturday

S

T. JOSEPH, Mich. — The Cities of Benton Harbor and St. Joseph will be hosting the 2016 Grand Floral Parade on Saturday May 7, 2016. The parade starts at 1 p.m. and road closures in St. Joseph will go into effect at 10 a.m., which includes all masted boat traffic using the Bicentennial Bridge. Traffic entering St. Joseph from the north will be detoured west onto Port St. and then south on Lake Blvd. Traffic wishing to continue south on M-63 will turn east onto Jones St. or continue south on Lake Boulevard for BL-94. Traffic

coming from the south into St. Joseph will be diverted at westbound Jones St. and will follow the same route in reverse. The detour will stay in effect until the end of the parade which will be approximately 3:30 p.m. In the City of St. Joseph, there will be no parking along the following public streets which will start at 6 a.m. Saturday morning and continue until 4:00 p.m. at the conclusion of the parade. Any vehicles parked in these areas will be ticketed or towed. 1. 500 through the 1000 blocks of State Street.

ISHAWAKA, Ind. — It is a COLUMNIST staple of the local music scene, yet somehow it remains unknown to many. It was by chance that I found my own way to it. Many years ago, in the days of the big bands at the Woodfire in Dowagiac, I came to know the musician Tom Moore. Over setbreak discussion, he told me tales of the fantastic venue just off the Justin Flagel corner of Smith and West 4th Street in Mishawaka, Indiana, of a blues bar embedded in a building that once housed Prohibition-Era rebellion, and hosted the likes of Al Capone. On a cold day this recent Winter, proprietor Albertina Wassenhove sat with me to recount tales of the music, her family, and the legend that is the Midway Tavern. She stands before me at a proud 88 years, the survivor of four cancers and a stroke, still working any evening a musician is playing and often on other nights. She was recently the honoree of an appreciation night at the tavern, celebrating her continued energy and involvement. She emphasized to me the importance of keeping busy and interested, telling me how it has kept her young and alive. “I think people that retire and don’t find something have more of chance of dying than other people,” she said. She described to me the history that led her to operating the venue. Her parents, who came to the United States from Belgium in the 1920s, acquired the bar where her father had been a frequent patron. The owner at the time, frustrated with the interactions between his wife and some of his customers, offered them the business and the building, even helping them to finance it. Early on, the establishment became marked with the personality of her mother, Martha. As Albertina explained, her mother did most of the work behind the bar while her father would socialize with the customers. Albertina described her earliest memories of the venue. Her mother would not allow anyone under 21, including her, inside. Instead, she was forced to peek in from an adjacent doorway. The rule was lifted, however, when music was playing. “That’s where I learned to dance,” Albertina said. She became more involved at the age of 21, helping to tend bar and wait tables, along with her husband, stopping only to raise her children. When Martha died at the age of 91, Albertina and her sister took over the operation. Eventually, in 2003, she would come to run the bar entirely herself. The Midway Tavern evolved over the decades to become the staple music venue it is now. The front section has the bar and holds pool tables and dart boards for the tournaments that occur multiple days each week. The back section holds the stage, plentiful tables and booths, and, of course, the dance floor. Once a space with a dirt floor and a pot bellied stove, it was remodeled in 1933 and remains largely in the same condition as it was then. Over the years, the music came and went, with the room closed for part of the 60s and used as a game space for people playing Belgian versions of bowling, darts, and archery. Albertina opened it back up in the 1980s, after being approached by a local musician. “Somebody came in and wanted to know if they could use the back room to practice,” she said. “I thought, gee, that sounds pretty good.”

Barn Swallow Theatre’s Board of Governors will host the May meeting at 10 a.m. Saturday, May 7, in the theater located at 22334 US-12 east of Edwardsburg.
