SAFETY TIPS FOR THE PESACH SEASON
• When cleaning for Pesach, take care when using chemical cleaning agents. Avoid direct contact with skin or eyes, and ensure they are kept out of reach of children. If contact does occur, wash immediately with cold running water. • Never allow children near boiling water. Use appropriate protective clothing (eg. heatproof gloves, apron) when kashering. Always pour boiling water away from yourself. • Bedikat Chametz: When searching for Chametz, keep the candle away from any flammable objects such as curtains, furniture, clothing, beards etc. • Burning Chametz: Don’t make a large bonfire to burn your Chametz. A small flame in a restricted area such as a hole in the ground should suffice. Ensure you are not close to buildings, fences, trees, or other flammable objects. Do not use flame accelerants such as Methylated Spirits, Kerosene, or Petrol as they could explode or cause the fire to burn out of control. • Do not leave children unattended near fire. • Do not leave fire unattended. • With extra activity and excitement in the kitchen, ensure that extra caution is taken, particularly with knives and sharp objects, as well as with ovens, stoves and other hot objects. Use common sense regarding what jobs you ask your children to do in the kitchen. • Shabbos and Yom Tov candles should be placed away from any flammable objects (eg. tablecloths). When lighting candles and reciting the blessing over them, women should ensure that any clothing (particularly sleeves) and long hair is kept well clear of the flames. • Yahrtzeit candles should always be placed on a plate or saucer and never directly onto a wooden surface. • Cottonseed Oil has the potential to spontaneously conflagrate when stored incorrectly. If storing it, ensure that the bottle is wiped clean of any oil residue.

MY SUREFIRE PASSOVER CLEANING TIPS

ome holidays take prep and on Pesach that means getting rid of all of your Chametz. Here are some tried and true techniques from yours truly to make sure your house is Chametz-free for Pesach: EAT WHATEVER YOU CAN This method of cleaning is good for those who do not like throwing stuff out and do not care about their waistline. Eating whatever you can, helps with ridding your home of past due date items. For example: If you are willing to consume cake that has mold on it, then now is the time to finish off the Babka. The 2006 mandel bread might have been purchased hard and stale, which is confusing when it is still hard and stale 10 years later. No matter how hard it is, that does not mean you shouldn’t eat it before Passover. This is also a good chance to find some use for the mishloachmanot, the Purim gift baskets with lemon wafers and poppy seed hamentashen that your friends baked by accident. ANORAUYLAACHILATKELEV There is an idea that whatever is Chametz, is not considered Chametz if it is not fit for a dog to eat. This includes frozen meat and anything my roommate has cooked in the last three years. I have seen some dogs that will eat most anything, so do not take this to be a leniency. I was walking down the street recently and saw my neighbor’s pug licking it, and by it I mean the actual street! SHPRITZES Without shpritzes or “sprays” you are not cleaning for Passover. The first step in cleaning is to get every shpritz possible. Six to twelve sprays are good: The shpritz that cleans sinks. The shpritz that cleans sinks and tiles. The shpritz that cleans

sinks, tiles and showers. The shpritz that cleans off the shpritz… SPRAY DOWN YOUR HOME AND IT WILL BE KOSHER FOR PESACH Point is, spray a lot. Turn your home into a semitoxic nuclear plant. That is Kosher for Passover and dogs will not eat it. A picture of a skull on the label is important. This will reassure you that your spray is toxic. The skull with an ‘x’ made of bones is a comforting sign of good Passover practice, ensuring that your home is not edible. DO NOT EAT THE SPRAYS Safety comes first at Jewlarious. Make sure your spray says ‘Do Not Eat.’ Otherwise, it will get confusing when are spraying down the wood and you get hungry. Yes, you purchased a spray that says ‘Kosher for Pesach,’ but it says on the back ‘Do not eat.’ That is very confusing. I recommend you consult with your local rabbi to see if you should or shouldn’t eat it on Pesach. USE THE PICTURE TO HELP YOU FIGURE OUT WHICH SHPRITZ You have to know what each spray is for. If you see the picture of a sink, that means it cleans sinks. Sinks, tubs and tiles, has the picture of the sink, tub and tiles. Picture of a lemon, means it cleans lemons. A picture of lemons on the shpritz does not clean lavender. The one with the purple flowers on it cleans lavender. Do not eat the lemon spray. Although it looks quite tasty, it is at most 2% natural lemons. Blue shpritz cleans windows. It has to be blue to clean windows. If it doesn’t have a picture of windows on it, blue is a good enough indication that it is a form of Windex. Different brands clean differently, so make sure yours is the right shade of blue. ‘For wood’ means it is for wood. Nonetheless, it must have a picture of furniture on it. If it doesn’t show furniture, it should only be used on branches.

s I write this, it is one week after Purim, and my fridge has just been cleaned for Pesach. How did I achieve this remarkable feat, you might ask, when I still need to use the fridge for chometz? The answer lies in a great tip I read about a few years ago, which has reduced that last minute stress considerably. After cleaning and drying each shelf and drawer, slide each one into a garbage bag before replacing in the fridge. Now you can put your chometzig food back, onto the plastic covering. When it’s time to remove it all again before Pesach, use those same garbage bags to dispose of unwanted food. You will thank yourself when you see those gleaming shelvesunderneath, ready for your Pesach fare! One more tip: When replacing bread or crumbed food into the fridge, it’s best to use the lowest shelf or drawer, so that any crumbs that may fall will not any further than the floor.

POTATO STARCH OR IS IT POTATO FLOUR? How would we ever manage our Pesach meals without potato starch? Although many people do indeed refrain from using even potato starch on Pesach, most of us rely on it for our baking and frying needs.
FACTS -
Years ago we would refer to it as potato flour, but is there really a difference?
• Potato starch has a rather bland taste, which doesn’t taste overwhelmingly like potato. That makes it good for use in all kinds of recipes, even if you are cooking something sweet.
First, let’s clear up any confusion about potato flour and potato starch. Potato flour is made with the whole potato, including the skin. The potatoes may be cooked or left raw when they are dried then ground into beige-colored powder. Potato starch is made by removing the potato peel, then dried to a fine, bright-white powder. It can be used as a thickener and also in gluten free baked goods.Potato starch is also used in gluten free baking. It lightens the texture of gluten free baked goods and tends to give them more of an airy texture. Is also has a tendency to absorb more liquid than other gluten free, so it works well in items like crackers that need to be crispy. Don’t be fooled just because potato starch and potato flour both have the word “potato” in them. Potato flour’s heavier weight and strong flavor means it doesn’t substitute well in recipes that call for potato starch—after all, they are really meant for different purposes.
• Potato starch is very fine, much like cornstarch. Potato flour is a heavy flour.
• Potato flour has a strong potato flavor. It’s suited for baking bread. • Potato starch is typically used to make gravies and sauces. It also makes baked goods light and fluffy. • If you do use potato starch in a gravy or sauce, don’t let the liquid boil. This will make it harder for the liquid to thicken. • Potato starch has uses ranging from photography and wallpaper, to junk food! It’s gluten-free, so popular with coeliacs. It gelatinises at lower temperatures than Corn starch which makes it more useful as the bulking agent in gluten free Baking Powder as it helps the air bubbles formed to hold their shape and trap the gas.

ately I’m finding I’m stuck with extra bananas. Rather than throw them out as they over-ripen, I have decide to give them a new life as muffins. Although the recipe tells you to beat the ingredients, I find it works just as well if you mix it by hand. This recipe is adapted for Pesach.
PESACH LADYFINGERS INGREDIENTS • 350 gm ground almonds • 1 cup sugar • 2 large eggs • Baking Chocolate, Melted

My Surefire Passover Cleaning Tips STRONG SPRAYS FOR GREASE Oven cleaner spray takes off grease from your oven and part of your fingers. The oven cleaner warning should read, ‘Do not use. May lose appendage.’ But it doesn’t. There is no picture of a skeleton arm with an ‘x’ made of bones sign on it. TO MAKE IT A FAMILY EXPERIENCE- USE YOUR CHILDREN TO MOP THE FLOOR Get them to mop the floor for you. This is a good chance to finally get your unhelpful children to clean. At Jewish schools, they will learn about the importance of getting rid of Chametz and feel a religious obligation. Take advantage of this by telling them stuff is Chametz. You can practice now: ‘The mantel is Chametz, dust it.’ ‘The chair needs a shine, it is Chametz, shpritz it.’ ‘Your room is Chametz, fold your pants and put them in the drawer.’
REAL CLEANING IS WITH A SPOON AND A FEATHER When all the bread is laid out around the house, it is time for the big guns to come in and do the real cleaning. For that, in my house, my dad comes in and saves the day with a wooden spoon and feather. My mother’s efforts of scrubbing the floors and tiles with every shpritz possible was for naught. After all of the scrubbing and use of pointless cleaning instruments, like brooms and dustpans, it is just the feather and spoon that are needed. Who knew?
Moroccans use Aravot... not a feather. You clean the Chametz with that, and then you try to clean the driedup leaves that got all over the house.
I grew up thinking that windows had to be cleaned because there might be Chametz on the glass. I never ate off a sliding glass door, but I felt like I was doing a positive commandment by using blue spray on them. I also mowed the lawn a few times, thinking ‘grass that is shorter is not considered Chametz.’ I cut the grass and then sprayed it down. THE FINAL STEPS- REAL CLEANING For the final step of cleaning: After you’ve shpritzed the house and cleaned all the Chametz out of all the rooms, you now place bread around the house. Don’t argue with tradition, this does make enormous sense. This tradition, called Bedikat Chametz, is done the night before Pesach, giving you more to clean.
I think in ancient Pesach cleaning, the feather was used to tickle the wall, in hopes that it would fold over the course of the interrogation process and tell you where the bread is. For this style of traditional cleaning, Moroccans use Aravot, myrtle branches from Sukkot, and not a feather. You clean the Chametz with that, and then you try to clean the dried-up leaves that got all over the house. After you have finished with all the feathering of your home, it is now time to pull out the tinfoil. A house covered in tinfoil is the sign that Pesach has begun.

PESACH FEATURE WHAT MAKES OUR MATZO KOSHER?
W
ith beard and sidelocks, Yisroel Bass does not have the appearance of a typical American farmer. However, since 2011, he has been tirelessly managing all aspects of production for Yiddish Farm, organic farm located in Goshen, New Hampton New York:
“’Organic, Local, Handmade, great, BUT HOW KOSHER IS YOUR MATZO?’” This is a great question that we receive quite often” says Mr Bass. “While a lot of people know that matzo must be baked in no more than 18 minutes to be kosher for Passover, there is actually a lot more that goes into ensuring the kashrus of Yiddish Farm’s Eretz-Goshen Matzo Shmura.” “That’s right, our kosher supervision starts way before our harvest.” Besides letting the matzo dough sit for too long in the bakery, the wheat itself could disqualify it from Passover use. How? Pre-harvest sprouting. When the grain reaches maturity, it could actually sprout on the stalk if it exposed to excessive rainfall! When the grain sprouts, it is actually considered chometz. “I have spent the past 3 seasons consulting with learned, expert Rabbonim to learn how to identify sprouted grain. Just like many halochos, it is not as easy to understand as it may seem (rarely will one see an actual blade of wheat grass in a bowl of grain, it is a much more minute change).” “In order for our matzo to be certified kosher, we bring in an expert moshgiach to supervise the
entire process. We work with certifying agencies so that people like you know that our claims: Kosher and Organic are more than just hot air. We take kashrus and, lehavdil, organic standards very seriously, and that’s why we take on additional costs so that the public doesn’t just need ‘to take our word for it’”. “After the on-site inspection, wheat samples are then brought to Monsey for a final rabbinic ruling. Once we get the green light, we can then start preparing our machinery. All the nooks and crannies of our combine are vacuumed clean so that no grain from last year’s harvest is present in the machine.” “Moshgichim from Rabbi Yechiel Steinmetz, Vizhnitzer Dayan of Monsey, as well as from the bakery that we rent, then come back for the actual harvest, inspecting the combine as well as the field again”, says Mr Bass Before I turn on the harvester I set an intention for the harvest by saying the words “L’shem Matzos Mitzvah” This translates to roughly: [this harvest is] for the sake of the matzo mitzvah.” “The harvested grain is then transferred to our storehouse where it is dried under lock and key.” Throughout the drying and storage process, the moshgichim return several times to take addition samples. They want to ensure that there hasn’t been any sprouting in the bags, after harvest. “Before milling, our mill must be taken completely apart, scraped and blown clean under rabbinic supervision, and even after that the first bowls of grain to go through must be discarded”, Mr Bass adds. “When we start baking, our flour and matzo will be under the strictest supervision as well.” “In short, our matzo is VERY KOSHER. Tell your friends and family, yes even that cousin who brings his own Tupperware for Thanksgiving.” Yisroel Bass is the Co-Founder and Farm Director of Yiddish Farm – America’s only Yiddish speaking farm, where he lives with his wife Yonit and their children.
