Dear readers We’re having a brief edition this time albeit for a sad reason. I lost my beautiful mother-in-law just as we started working, so we put everything on pause till we could pick up where we left off. Mum was a wonderful human being who was blessed with a rich life which she led with the dignity that personifies holocaust survivors, and my family is all the richer for being part of. Mum was meticulous in her Pesach preparations and would definitely want the show to go on, so we hope you’ll benefit from this Pesach guide. PESACH SPRING ROLLS Wrappers 9 large eggs 9 tablespoons potato starch 3/4 cup water pinch salt

Filling shredded onion, kohrabi and carrot or your favourite fillings adapted for Pesach PREPARATION Beat together wrapper ingredients. Grease a frypan and heat on high. Pour a thin layer of batter into pan, turning
to coat bottom. Cook for 1 minute or until bottom sets. Flip and cook for half a minute. Set aside on a plate stacking until done. Heat oil in pan over medium heat. Add filling and seasoning and saute for approx 5-10 minutes Place 1-2 tablespoons of filling into the middle of the crepe. Fold over top then both sides and then roll tightly into a spring roll. Heat a pot of oil and add the spring rolls, carefully holding them with tongs to keep them from opening. Fry on all sides until golden brown. Dip in kosher l’Pesach dipping sauce or make your own. Try boiling a mix of water, brown sugar, red wine vinegar, oil and ginger with a little potato starch
