DIY Hong Kong Peking Duck

Preheat the oven to 325 degrees Fahrenheit. Salt the duck inside and out. Grate some fresh ginger and place it inside of the cavity, and fully dust the outside of the bird with fivespice.
When it is done the skin will become delightfully crisp and the meat will pull right from the bone.
Allow the duck to cook for a few hours, checking it occasionally and spooning away the excess grease.
Prepare the plum sauce. Cut about ten plums, and then add, sugar, five-spice, soy sauce, chili powder, and a splash of water then boil the mixture.
