Chilli Chicken Recipie

When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily. Boneless chicken cut into ½ inch cubes 500 grams

Peanuts 1/2 cup

Button red chillies (bor mirchi) 250 grams

Garlic 10-12 cloves

Oil 2 cups

Sugar a pinch

Soy sauce 1 tablespoon

Salt to taste

Spring onions 7-8
10. Sichuan peppers crushed 1 teaspoon
Method Step 1 Heat oil in a non-stick pan. Place the chicken in a bowl. Add soy sauce and mix. Set aside to marinate. Chop the spring onions and the greens. Step 2 Add the button chillies to the hot oil and deep fry for 1-2 minutes on medium. Drain the chillies and set aside. Step 3 Deep fry the peanuts on medium heat till golden brown. Drain and set aside. Add the chicken cubes to the hot oil and deep fry on medium heat till golden. Drain and set aside. Step 4 Heat another non-stick pan and add 2 tbsps of chilli oil remaining in the pan. Heat till the oil reaches smoking point. Step 5 Add garlic and fry till a little burnt. Add spring onions and chicken and toss. Step 6 Add sugar, salt and crushed Sichuan peppers and stir. Add peanuts and the button chillies and toss. Add spring onion greens and toss. Serve hot.
