Did you know? May Day is an ancient festival that welcomes spring and was once celebrated widely on May 1 every year. May Day falls approximately halfway between the spring equinox and the summer solstice and has its origins in pre-Christian times. May Day commemorates festivals of fertility and agriculture. Ancient Romans celebrated the festival of Flora, the Roman goddess of flowers. But May Day is also related to the Celtic festival of Beltane, a springtime festival of optimism, and the Germanic festival of Walpurgis Night, which

also celebrates the arrival of spring. Many past May Day celebrations included spending time outdoors standing around bonfires and dancing. A traditional British May Day celebration included crowning a May Queen and dancing around a Maypole, which was covered in ribbons. While May Day has lost many of its pagan origins since the widespread conversion to Christianity, there are some who see May Day as a special time and a harbinger of spring. In the UnitedStates, May 1 is also recognized as Law Day and is meant to highlight the importance of law in the foundation of the country and how law benefits society.

Motorcycle enthusiasts in locales with cold winters may anticipate the warmer weather of spring and summer more than others, as it means they can pull their bikes out of their garages and get back on the open road. While riding a motorcycle can be an exhilarating experience, the U.S. Highway Safety Authority notes that fatal crashes are much more likely to occur to motorcycle riders than automobile drivers. As the number of drivers and riders on the road continues to increase, it has never been more important for riders to practice motorcycle safety. Be seen and heard Ever wonder why some motorcycles make so much noise? It's to attract the attention of other motorists. Thanks to their small profiles, motorcycles can easily go unnoticed

by motorists. Failure of other motorists to see motorcycles on the road is a chief contributor to collisions involving motorcycles. One of the more comprehensive studies on motorcycle accidents occurred in 1981. Titled "Motorcycle Accident Cause Factors and Identification of Countermeasures" and published by researcher Harry Hurt with the help of the University of Southern California and the National Highway Traffic Safety Administration, the study analyzed 3,600 motorcycle traffic accidents in a specific region of California. The findings showed most motorcycle accidents involve a short trip associated with shopping, errands, friends, entertainment, or recreation, and the accident is most likely to occur within close proximity to the rider's home.

Accident involvement is significantly reduced by the use of motorcycle headlamps, including during daylight hours, and the wearing of highly visible clothing, including yellow, orange or bright red jackets. Although this research was conducted some time ago, it still underscores the importance of remaining visible on the road. While leather and denim may be the traditional uniform of motorcycle riding, synthetic materials that have reflective fabrics can improve visibility. Highly visible colors, such as orange and yellow, are good choices when on the road. Riders also can add reflectivity to existing gear with reflective tape. Many motorcycle riders, particularly those on

Harley Davidsons, swap out stock exhaust pipes for ones that emit a louder decibel range. This helps other motorists notice them. Use the right gear When a rider is on the open road, he or she doesn't have the protection of a car frame to offer a buffer between the rider and the pavement should an accident occur. That is why it is crucial to invest in quality gear that can offer a certain measure of protection. A high-quality helmet that fits well is an important piece of safety equipment, as head and neck injuries can result in paralysis or fatalities. Pair the helmet with goggles or glasses with safety lenses. Durable nonslip gloves will help riders maintain a good grip

on the handlebars, and boots can cover the ankles. Although it can be tempting to forgo long pants or jackets when the weather warms, doing so can lead to painful abrasions and road burn should a fall occur. Invest in a leather jacket and pants or a highquality, durable and bright-colored material. Additional safety precautions According to Allstate(R) Insurance, 46 percent of motorcycle crashes occur at intersections. Knowing this information can help riders make more informed choices on the road. Some other important safety precautions include: * Exercise extreme caution at intersections and only go through when safe.

* Test the lights, brakes and turn signals before you make any trip. * Make sure the fuel and oil levels are at the correct levels. * Know your bike's limits. * Follow the speed limit and the rules of the road, and do not weave in and out of traffic. * Don't ride in blind spots, staying in spots where you are most visible to fellow motorists. * Always use turn signals. * Do not tailgate, as stopping distances for motorcycles, especially on slippery roads, can make stopping difficult. * Never drink and ride. Emphasizing motorcycle safety can make for an injury-free riding season.

Girls can borrow a necklace or earrings from their mother, grandmother or an older sibling. Buying accessories like jewelry for the night can be very expen-

sive while borrowing such items is free. And none of your friends will ever know the difference. * Split the cost of a limo or take Mom or Dad's car to the prom. Renting a limousine is considered a prom night tradition, so teens who must have a limo can split the cost with as many friends as possible to save some money. If a limo is beyond your budget, you can have just as much fun without the limo by borrowing Mom and Dad's car. You can still head to the prom with friends if you borrow a car instead of renting a limousine, especially if Mom or Dad happens to drive a minivan.

These cameras are capable of taking great photos, which can save teens and their parents money on the cost of potentially costly photography. Dear God, I am saddened by the tragedy in the Boston bombing. Many lives have been changed in a moment of time and it seems as though there is no end to these occurrences. In my reading of the media’s comments and the comments of others, I was somewhat taken back by what was posted by the Yahoo News. It was the report by Timothy Heritage that struck me. The headlines read: “Pro-Moscow Chechen leader blames U.S. for Boston bombing.” What followed was the shocker; stating: “The root of evil should be looked for in the United States,” Ramzan Kadyrov said in comments posted online after the police shot dead Tamerlan Tsarnaev and hunted for his brother Dzhokhar, his suspected accomplice…They (the brothers) grew up and studied in the United States and their attitudes and beliefs were formed there,” Kadyrov said. “Any attempt to make a connection between Chechnya and the Tsarnaevs is in vain.” Why would someone make such a statement when they haven’t even had contact with either of the brothers for over 10 years? Kizzy Dear Kizzy, Statements such as these have been voiced since the beginning of time. Mankind has struggled with accepting responsibility for their actions. Take for example the first time that mankind was faced with a similar situation. It was in Genesis which states: Now the serpent was more crafty than any beast of the field which the Lord God had made. And he said to the woman, “Indeed, has God said, ‘You shall not eat from any tree of the garden’?” The woman said to the serpent, “From the fruit of the trees of the garden we may eat; but from the fruit of the tree which is in the middle of the garden, God has said, ‘You shall not eat from it or touch it, or you will die.’” The serpent said to the woman, “You surely will not die! For God knows that in the day you eat from it your eyes will be opened, and you will be like God, knowing good and evil.” When the woman saw that the tree was good for food, and that it was a delight to the eyes, and that the tree was desirable to make one wise, she took from its fruit and ate; and she gave also to her husband with her, and he ate. Then the eyes of both of them were opened, and they knew that they were naked; and they sewed fig leaves together and made themselves loin coverings. They heard the sound of the Lord God walking in the garden in the cool of the day, and the man and his wife hid themselves from the presence of the Lord God among the trees of the garden. Then the Lord God called to the man, and said to him, “Where are you?” He said, “I heard the sound of You in the garden, and I was afraid because I was naked; so I hid myself.” And He said, “Who told you that you were naked? Have you eaten from the tree of which I commanded you not to eat?” The man said, “The woman whom You gave to be with me, she gave me from the tree, and I ate.” Then the Lord God said to the woman, “What is this you have done?” And the woman said, “The serpent deceived me, and I ate.” Notice that after Adam and Eve sinned, they blamed someone else in regard to their actions. Adam blamed Me; of which most people miss that point, when he said; “…the woman You gave to be with me…” she is the one who make me give in, and Eve blamed the serpent. The lack of accountability began back then and continues to occur in this modern day. What mankind needs to do is to be responsible for their own actions. The world still struggles to understand and some refuse to acknowledge the real, the true, reason why man is in the state; and that is this, because of one man, sin entered into this world. Mankind must acknowledge their sin and turn back to Me for peace, for love, and for unity. It is only when they turn to Me that they will find these three things and begin to live a life of integrity. God

It is a cultural holiday that celebrates the victory of the outnumbered Mexican Army, lead by General Ignacio Zaragoza Seguin, over the French at the Battle of Puebla on May 5, 1862. Often, May 5 is mistakenly called Mexican Independence Day. Actually, Mexico declared its independence more than 50 years earlier on Sept. 16, 1810 (celebrated in many cities as Diez y Seis de Septiembre). Modern celebrations feature plenty of flowers in the colors of the flag of Mexico: green, white and red. Parties and parades are held, and mariachi music and folk dancing are a traditional part of the holiday. A large variety of wonderful Mexican foods also are served. Sometimes, a celebration is the perfect time to try something new. My recipe for Spicy Taco Cups can be made in large quantities to accommodate a festive crowd. This dish also is a tasty and fun way to introduce your family to a historic celebration!

Spicy Taco Cups

This recipe makes 4 to 6 servings, but is easy to double (or quadruple) to make in large quantities. It’s a real crowd-pleaser! You can prepare the meat mixture ahead of time and store it in an airtight container in the refrigerator. You also can prepare the tortillas up to the baking step, store them in an airtight container, and re-heat and assemble your taco cups on the day of your celebration! Cooking oil spray 12 whole wheat or flour tortillas (6-inch)

2 1/2 cups shredded cooked chicken or pork, or ground beef, chicken or turkey 1 cup barbecue sauce 1 cup Pace Chunky Salsa, medium or hot, plus 1/2 cup extra for topping 1/4 teaspoon ground chipotle chili pepper or red pepper flakes 1 cup shredded Cheddar cheese 1 cup guacamole 1 sour cream 1/2 cup sliced ripe olives 1 cup chopped green onions, white parts and green tops 1. Heat oven to 350°F. Spray 12 (3-inch) muffinpan cups with cooking spray. 2. Wrap tortillas between damp paper towels. Microwave on HIGH for 30 seconds or until tortillas are warm. Fold 1 tortilla into thirds to form a cone shape. Press the tortilla cone, wide end down, into a muffin-pan cup. Repeat with remaining tortillas, rewarming the tortillas in the microwave as needed. 3. Bake for 5 minutes, or until the tortilla cones are golden. Remove tortillas from pan and cool on wire racks. If you’re making the tortilla cones ahead, store them in an airtight container after they’ve cooled. 4. Heat the meat, barbecue sauce, salsa and chipotle chili pepper in a microwave-safe bowl on high for 5 minutes until hot, or in a large saucepan over medium heat until the mixture is hot and bubbling, stirring often, about 6 to 8 minutes. 5. Spoon about 1/4 cup of meat mixture into each tortilla cone. Place salsa, cheese, guacamole, sour cream, olives and green onions in small bowls and allow your guests to top their taco cups as desired. Hurry, don’t delay one minute longer — within just a few short weeks, those perfect “home-grown” berries will be hard to find, and we’ll have to wait another whole year! 4 cups sliced fresh strawberries 1 (4-serving) package sugar-free strawberry gelatin 1 (4-serving) package sugar-free vanilla cook-andserve pudding mix 3/4 cup diet lemon-lime soda pop 1 (6-ounce) purchased shortbread pie crust 1/2 cup reduced-calorie whipped topping 1. In a medium bowl, mash 2 cups strawberries with a potato masher. In a medium saucepan, combine dry gelatin, dry pudding mix, soda pop and mashed strawberries. Cook over medium heat until mixture thickens and just starts to boil, stirring constantly. 2. Remove from heat. Stir in remaining 2 cups sliced strawberries. Spoon hot mixture into pie crust. Refrigerate for at least 2 hours. When serving, garnish each piece with 1 tablespoon whipped topping.
