March 2, 2013 Hello Again, We use some colorful and not so scholarly politically correct words and lores, which gives us away as country folk. Who else would talk the way we do? Certainly not our city friends, pastors, school teachers, doctors, some lawyers unless they have become ‘countrified’. Some of these converts are even worse. They mix slicker talk with country and think they are getting away with it. We can spot a slicker a half-mile away. How about a glass of ‘wata’? Some of our local country folk jargon carries sound wisdom, such as: • It doesn’t make good sense to mend or patch a hole in pants, attaching new material next to rotten • Out of the mouths of babes come words their mothers should never have uttered • That fella reminds me of the east end of a horse heading west • If I had my druthers, I’d druther not (This was my kid’s great grandmother’s favorite) • How about the Johnstown area’s “Are YOURS Going to the party?”’ • I can almost hear General Robert E Lee at the time of surrender of the war between the states saying to General Grant “Did Y’all have to come down here to join this fracus? A faithful reader from Washington Street said she reads and enjoys Hello Again each week, except the part when we chat about cars. So don’t tell her, maybe she will miss this. I could not resist publishing this picture of the 1956 Chrysler Imperial.

Remember the push button shift controls connected to a power-flite automatic transmission? All SL Imperials carried a new 354-CID firepower V8 with the efficient hemi-head design. All I can say – that ‘56 Imperial was all class, what a beauty. Mr. or F. Gould if you see me driving down the road with this imperial – pull over, try not to cry — Well, I do admit I still love your Model A Sport Coupe. This is America or is this America? At the conclusion of this you decide which is the better title. Are we, the American people, being duped? Let’s take a little trip down the pathway of American life and see what is going on. In about 1951, I was sprawled out on our living room carpet, half-watching T.V. while reading the business section of the old Harold Tribune. My Dad was sitting in his usual over-stuffed chair reading one of the other sections. As I was turning the page, Dad looked down at a full-

page ad – Blue Cross and Blue Shield insurance – pointing at the ad, said, “That will be the downfall of this country.” I never forgot his point. This is about what he said, “See that hospital insurance ad.” The hospital will now perform an appendix operation for $100 and the insurance company will foot the bill. Soon the hospital will figure out if they raise the cost of an appendectomy operation to $150, the insurance company will pay that amount and raise their premium rates a little.” That is how the insurance – medical seesaws, plays back and forth, and finally explodes. Eventually the working man will not be able to pay the high cost of hospital or doctor care so he will buy health insurance. He won’t be able to eventually afford either – insurance OR medical care. So the hospitals and doctors quickly learned how to take advantage of the insurance scheme and raised their rates a bit more – insurance companies again would pay the new charge and again raise their insurance rate. So 50–60 years later, the cost of a 2-3 day stay in a hospital, including an appendectomy, now cost more than Dad paid for his very comfortable four-bedroom home in 1948. Is this nonsense or the truth? This is America. Or, is this America? You decide. The question with no answer: if medical care costs continue to climb because of health insurance or along with health insurance, where, when, and how does it or can it stop? Oh – maybe there is an answer. A national health program, which the government pays for, and then government can go belly up, as the medical cost keeps on spiraling upwards. Naturally when the cost of government sponsored health insurance becomes impossible to cover, the word sequester will be used (like the Obama administration is using now). What does sequester mean? In this case, coverage will be dropped. Benefits will cease. Who will be hit first and hardest? Seniors and the terminally ill. I asked a friend to explain in his own language, what does the word sequester really mean? His response, “In its most common definition, sequester simply means to put in isolation or to cause to withdraw into seclusion. An example of this might be a monk who withdraws from society for purposes of constant prayer. However, in the federal budget process, the word sequester has taken on a new meaning. In layman’s terms, after our politicians have run constant and significant budget deficits for several years, sequestration is the use of automatic, across-the-board cuts in spending designed to limit these deficits.” Is it possible that while the insurance company employees, hospitals and doctors are receiving more and again more money each year from the insured (you and me), this present plan along with other automatic price increase schemes are driving our country into a forever downhill economic spiral? And now is it not equally true that Mr. Obama’s plan to grow the federal government just added to the eventual crushing downfall? If our president’s plan is to grow the federal government, where will the money come from? I’m not against the person Mr. Obama. I am against destroying America. On the other hand, I am against anyone if his intention is to hurt or downgrade the United States. Assuming you are an employed person, and every time you go to your employer and say, “I need more money – a bigger paycheck,” he gives it to you, when would you finally decide not to ask for more? Naturally the reason you ask for more is because you are living beyond your means, and who would ever consider spending less?

Does that make sense? With each raise he gives he raises the cost of his product. How long will it take for his customers to find a manufacturer who will sell cheaper? The end results becomes automatic hardship the employer goes out of business and the employee loses his job. You know the often used phrases, “The truth can hurt,” and “The truth may set you free”? Our marriage may be suffering from a case of truthfulness. We were planning on meeting friends for a fish dinner. I said to my wife, “I better go upstairs and make myself beautiful.” She said, “Good luck.” The truth was – when I returned downstairs and looked in the library mirror, there was little change. I was still that handsome hunk of humanity. On the other hand when I said I better go upstairs and make myself beautiful – she could have easily said, “Yes, maybe you better.” Now I ask you, is that or would that be any way to talk to a humble man such as myself? Again – I wonder if she was looking for an excuse to set me free. I sure hope not. She makes great apple pies. While enjoying the fish dinner with our friends, our friend said he was on a diet, lost twenty pounds. I told him I favored the Scarsdale diet. When he talked about what his diet amounted to I wondered if that is what he eats before or after the meal. I don’t have any fear about going on a weight-loss diet. I have been on dozens of them. I know from experience, if I wait for a few weeks, I will once again find the weight I lost. A smidgen of blarney is great for the cold weather chills. The Irish grandpa was chatting with a young bible student – “You talk,” said the student, “like you believe the Irish were here at the time of the flood. Were they in the ark with Noah and his family?” “Not at tall, not at tall,” said the Irishman. “They had their own boat.” Grandpa’s brother was the first on his farm road to install electricity. The night his wife was to deliver their first child – the doctor yelled out through the bedroom door and said, “You have a fine big son,” and a few minutes later called out again, “You have a beautiful daughter,” and again he called out, “You have another daughter.” With that, Grandpa’s brother unplugged the main fuse sending the farmhouse bedroom into darkness. “Why in the heavens sake did you do that for?” The triple-blessed father answered, “I was afraid it was the light that was attracting them.” Enough blarney for one sitting. I drove over to the village where I grew up, drove up and down the streets and then went on up Baptist Hill past the cemetery. I swear there was more activity in the final resting grounds than in the village below. I guess it must be true. T.V. is robbing all of the youth from our kids. No hand sleds, skis, toboggans, snow huts, etc. I imagine every house with a child in it had a T.V. or a computer running, or should I say ruining their lives. I can hear it now – someday they will be asked what they did over in the hills when they were young and they will say, “Nothing – absolutely nothing. There was nothing to do except the T.V. and computer.” Thanks for turning the page. Until next week, don’t pick “fights” with someone larger. Say hi to your neighbor. Volunteers join forces for Tyson Fowler Benefit

by Elizabeth A. Tomlin The love of family, friends and the community was evident at the Tyson Fowler Benefit, which took place at the Canajoharie High School, Feb. 24. The names of nearly 300 businesses and individuals that made donations to the benefit appeared on a handout that recognized and thanked everyone for their help in making Tyson’s treatments possible. Tyson, who grew up in Canajoharie, is currently undergoing stem cell treatments at Nu Tech Mediworld in New Delhi, India, for a progressively worsening, debilitating disease he has suffered with the past two years. After being examined by numerous neurologists and immunologists he was diagnosed with Progressive Muscle Atrophy. However, the cause was unknown. He underwent numerous medical treatments. Then, in Sept 2012, he tested posi-

One theory is that the Lyme may have triggered a motor neuron disease and caused irreversible damage. Tyson has been in a wheelchair since the fall of 2011. The benefit event at the Canajoharie High School, where Tyson graduated in 1995, is the first in a series of events planned to help raise monies to defray the immense cost of the medical bills and expenses which Tyson and his wife Annie have incurred in their journey for his healing and recovery. This event was sponsored by acclaimed Folk Artist Denise Allen. Allen displayed her 911 Folk Art Story Quilt, and donated prints of the quilt to be sold for the benefit. In addition to the auctions, the 9-hour benefit featured a basketball

tournament, vendors, concessions, live entertainment and refreshments. “The fundraiser was a great success because of all the support of the many people who responded,” said Tyson’s father Joe Fowler. “The numbers were outstanding and the monies were great!” Fowler said the 500 chicken dinners and 250 t-shirts were sold out and all of the auction items were also sold. It was reported at the event that Tyson had actually taken his

first step from the wheelchair on Feb. 23. He has been in India for treatment for two weeks. “Tyson’s condition is improving and continues to get better every day,” said Joe. “He gets the stem cell injections each day along with his antibiotics and has five more weeks in this session.” Tyson and Ann reside in Greenwich, CT, with their 2-yearold son. Whatchamacallits This tender piece of wood is an early form of a horse sweat scraper. Today, equestrians and horse enthusiasts use metal, rubber or plastic scrapers as well as towels and cloths, but our modern tools evolved from this wooden version. When a horse cools down after working hard, cooling too fast can cause muscle aches, so a sweat scraper is used to remove the sweat from the horse’s body to prevent it from chilling. Sweat scrapers are also used when washing a horse so that cold water does not sit on the animal’s coat and make it cold. After hosing, the sweat scraper is used so that the cloths used to dry the horse are not immediately saturated. Without the use of a sweat scraper, it

would take more effort and additional rags to remove the same amount of excess water. If no sweat scraper is available, some horse owners improvise by using the

flat back end of a grooming rake which easily removes sweat, as well. However, sweat scrapers are easy to obtain and are sold at most standard tack shops for only a couple dollars.

I spoke to several serious Presley collectors, and they seem to agree that most Elvis card sets sell in the $15 to $25 range, depending on rarity, age and condition. Q: I have a painting by A. Tips for writing your own wedding vows Couples are increasingly integrating personal nuances into their ceremonies and receptions to tailor weddings to their unique visions. The desire to include personalized wedding vows continues to be a popular trend. If you are considering personalized wedding vows, first realize that it may not be a simple task. That's because you want the message conveyed to be dear to your heart, and that can be challenging when faced with the pressures and planning of the rest of the wedding. Here are some guidelines for personalizing your ceremony with your own sentiments. • Schedule time for writing. Amid the bustle of dress fittings and interviews with photographers, it can be easy to put off the important task of writing vows for another day. But it takes writing -- and rewriting -- to achieve a finished product you can be proud of. Give the task of writing your vows your undivided attention. Mark it in on your calendar just as you

Antiques Show at Arkell Museum on March 9

The Palatine Settlement Society will host an Antiques Show and sale for the benefit of the 1747 Nellis Tavern at the Arkell Museum on Saturday, March 9, 10 a.m.-4 p.m. Arkell Museum is at 2 Erie Boulevard, Canajoharie. Twenty-five dealers

will offer a full range of antiques including paintings, silver, postcards, books, glassware, quilts, and some furniture. There will be an appraisal booth, homemade refreshments for sale, and admission is only $4. The Arkell Museum, which normally charges $7 for

entrance, will offer a special combo ticket for $7 to include both the antiques show and gallery visits. The volunteer appraiser this year will be Dennis Holzman of Albany and Cohoes. A donation of $5 will be charged for any two items brought in by the public. Donna

The sweet potato is not a potato or even a distant cousin. Potatoes are tubers; sweet potatoes are roots. True yams (from tropical and subtropical regions of the world) contain more starch and less sugar than sweet potatoes — and they must be cooked before eating. African slaves in the South called the sweet potato “nyami” because it reminded them of the starchy, edible tuber of that name that grew in their homeland. The Senegalese word “nyami” was eventually shortened to “yam.” When the orange-fleshed, Puerto Rican variety of sweet potatoes was adopted by Louisiana producers and

shippers, they called them “yams” to distinguish them from the whitefleshed sweet potatoes grown in other parts of the country. The yam reference became the trademark for Louisiana-grown sweet potato, and refers to sweet potatoes that are grown in Louisiana. There is a difference between sweet potatoes grown in northern states and those grown in Louisiana. Sweet potatoes produced in the northern states are mostly “firm” and tend to be drier and more mealy with yellow flesh. Folks in Louisiana enjoy the second type, “soft,” which is higher in natural sugar. Louisiana sweet potatoes are moister, and have a bright-orange flesh color. Most often, it is the “soft” type that is referred to as a yam. Sweet potatoes are stored in temper-

ature- and humiditycontrolled warehouses that extend their shelf life for the entire year. So the “season” for fresh yams is 12 months. Canned yams also are available year-round. Here’s some great information about the health benefits of sweet potatoes, and how to select, store and prepare them: • Orange, leafy green and red fruits and veggies, such as sweet potatoes, are full of beta-carotene/vitamin A, which regulates cell production and turnover for a smooth skin surface. • The CSPI ranked the sweet potato at 184 in nutritional value, more than 100 points ahead of a baked Idaho potato, spinach or broccoli. • Sweet potatoes provide twice the recommended daily allowance of vitamin A and more than one-third of the daily requirements of vitamin C. • Sweet potatoes are an important source of beta-carotene, vitamin B-6, iron, potassium and fiber. Sweet potatoes that are a pretty, bright-orange color are richest in beta-carotene. • Studies have consistently shown that a high intake of beta-carotenerich vegetables and fruits, like sweet potatoes, can significantly reduce the risks for certain types of cancer. • Sweet potatoes contain virtually no fat or sodium. • When selecting fresh sweet potatoes, choose those that are smooth, plump, dry and clean. • Sweet potatoes should not be refrigerated unless cooked. Store at 55 degrees to 65 degrees F. • Always use a stainless-steel knife when cutting a sweet potato. Using a carbon blade will cause them to darken. • One cup of canned sweet potatoes equals one medium-size, cooked fresh sweet potato. • When using canned yams, add them at the end of the recipe because they are already pre-cooked. This recipe for Vietnamese Sweet Potato and Pork Soup showcases the flavors of the sweet potato in a spicy, coconut-milk broth.

Vietnamese Sweet Potato and Pork Soup 1 tablespoon canola oil 1 pound ground pork 1 small onion, finely chopped (about 1/2 cup) 1/4 cup chopped fresh basil, divided 1 (3-inch) piece lemongrass or zest of 1 lemon 3 cloves garlic, minced 1 jalapeno pepper, chopped 2 teaspoons grated fresh ginger

2 teaspoons ground cumin 1 1/2 teaspoons ground cardamom 1 teaspoon salt 1 teaspoon ground black pepper 1/4 teaspoon ground nutmeg 2 sweet potatoes, peeled and cut into 1/2-inch cubes (about 2 cups) 1 quart chicken stock 1 (13.5-ounce) can light coconut milk 1 tablespoon soy sauce Chopped fresh cilantro, basil or jalapeno pepper slices for garnish 1. In a large stockpot, heat oil over medium heat. Add pork, onion, 2 tablespoons basil, lemongrass or lemon zest, garlic, jalapeno, ginger, cumin, cardamom, salt, pepper and nutmeg. Cook until pork is browned and onion is soft, about 10 minutes. 2. Add sweet potatoes, chicken stock and coconut milk. Bring to a boil and then reduce heat to a simmer. Cover and cook until sweet potatoes are tender, about 20 minutes. Uncover, remove lemongrass (if used) and stir in soy sauce. Garnish with remaining cilantro, basil and jalapeno, if desired.
