Dr. Godfrey joins Wellspring Health Services ➤ Just a year after their opening, Wellspring continues to expand By Jeff Say

CULPEPER TIMES STAFF WRITER

Wellspring Health Services is adding one of Culpeper’s most tenured medical providers. Effective Dec. 1, gynecologist Dr. Peter Godfrey, who has practiced in Culpeper for 34 years, will be joining Wellspring as the business that was named the Culpeper Chamber of Commerce’s Small Business of the Year continues to expand. Godfrey, who has operated Blue Ridge Gynecology and Wellness in Culpeper since 1983, will remain in his location of 541 Sunset Lane, Suite 301, and he will be welcoming other physicians into the office as Wellspring plans to use the facility for a multi speciality clinic covering podiatry, sleep disorders and dietary needs. Wellspring will continue to offer family practice and urgent care at its location at 15237 Creativity Drive. For Godfrey, it was his longtime working relationship with Wellspring CEO Dr. Khalid Athar that led him to coming to be under the Wellspring umbrella. “I basically stopped doing OB last year, because I was basically doing it all myself and that was very difficult,” Godfrey said. “It’s hard to run a small practice. Dr. Athar saw an opportunity to offer an alternative

and I’ve known him for quite some time through the surgery center. I thought it was a good way to continue to provide gynecological care under their umbrella.” Godfrey said his patient philosophy matches with Wellspring’s and that patient care is the highest of priorities for both. “Dr. Athar has created an entity that is on the same page we are,” Godfrey said. “It’s more patient centered. It’s taking care of the patients and putting their needs first.” Having served in the Culpeper community for 34 years, Godfrey has seen the landscape of the medical industry change throughout the years. As an independent practice, it had become harder as insurance groups demanded more. “When I came everyone had solo practices or just two or three doctors in a practice,” Godfrey said. “Over the last 10 to 15 years there’s been more pressure to join larger groups, especially from the insurance groups.” By joining Wellspring, Godfrey said that both practices will benefit. “We can share expenses and we will be able to share the office space,” Godfrey said. “We’ll be able to do cross referrals. It’s kind of seamless, they can see our charts and we can see theres. The communication will be better.” One area where he will not return, however, is to births. Godfrey has delivered thousands of babies in Culpeper over the years and he hears daily from patients who want him to return. “A lot of people want me to come

Not only are they colleagues, but Godfrey delivered Athar’s two sons as well. “It’s an honor, honestly,” Athar said. “I’ve had the honor of working with Dr. Godfrey for the last 10 years. I’ve enjoyed working under his leadership. He has a great reputation and he’s our doctor too. I have the utmost respect for what he does.” Wellspring, which just celebrated its one-year anniversary, has been dedicated to keeping patients local. By adding Godfrey and turning his office space into a specialty clinic, Wellspring hopes to keep

even more patients in Culpeper. Last year, Dr. Godfrey saw 4,400 patients and he’s still accepting new ones. That adds a large client base to Wellspring, who also see about 75 patients daily combined through the urgent care and family practice. “Since we moved to the new location we’ve grown exponentially,” Athar said. “We’ve seen a lot of female wellness and GYN issues, so we’ve been sending a lot of patients to Dr. Godfrey.” Godfrey starts effectively Dec. 1, while the other new specialists will start soon after. Wellspring will be adding Dr. Miriam Popal, a foot and ankle doctor from Warrenton, who has been practicing in the area for eight ➤ See Wellspring, Page 7

Floyd T. Binns students solve the kidnapping caper ➤ CCSO deputy Martz teaches kids forensics first hand By Jeff Say

CULPEPER TIMES STAFF WRITER

Floyd T. Binns principal Nate Bopp was kidnapped Tuesday. No need to worry, as a group of students from Rhonda Bollum’s gifted class solved the crime. The forensic exercise is part of a program devised by Culpeper County Sheriff’s Office deputy Dana Martz, who works with Bollum’s gifted students to teach them how detectives solve crimes and then asks them to use their problem solving skills to solve one of their own. Entering its fourth year of existence, Martz’s presentation takes a prominent figure at the school - in this case Bopp - and puts them in a crime scene. On Tuesday, Bopp’s office was shuttered with police tape and inside were evidence markers - pointing out areas that the students would have to catalog and then analyze while conducting interviews

with witnesses and potential suspects. Martz said that allowing students an opportunity to have a hands on experience teaches them more than if she was to lecture them about what a detective does. “I enjoy it,” Martz said. “They are at the age where they are trying to figure out what they want to be. This kind of shows them what the profession is all about, that it’s not as easy or fast as you see in on TV. It puts in perspective.” Inside Bopp’s office were five sets of evidence - a tennis racket, a size 10 New Balance shoe, a blue Eastern View Cyclones mug, a book from the Floyd T. Binns library and a pack of breath mints. The first group on the scene Jack Kerns, Keira Harrison, Mikayla Stanley and Brett Clatterbaugh - excitedly wrote down where the evidence was located, took pictures of the items and let their imagination run wild. “Breath mints,” Clatterbaugh yelled out, “they must have bad breath.” “A stinky shoe,” Kerns said, as he bounced across the room. Bollum smiled as her class trekked through the school, visiting

they trust her. She’s not just there for crime, she’s there to help learn in an educational setting.” Each student had a role - a note taker, a photographer, a interviewer and a timekeeper. Harrison hammed it up as the interviewer, going off script to grill her suspects. Librarian Virginia Garton insisted she just liked to read her books and drink her hot tea. The keen-eyed sleuths spied a shoebox in her room and asked to inspect it, hoping to find the match to the New Balance left behind in Mr. Bopp’s office. It wasn’t there. Garton laughed as Kerns yelled over his shoulder, “I’ll be watching you.” The group made their way through the hallways, ending up in Danielle Driggers’ classroom. Driggers said she liked to play tennis, she did have a blue mug with an EV logo on it (but lost it) and she stayed late at the school. Mr. Bopp was last seen at 5:30 p.m., and the students began to put two and two together. “It was really fun,” Kerns said. “I learned how to be nice and interrogate people.” Harrison smiled when it was pointed out how well she questioned the teachers. “I learned how to interrogate people well and how to analyze things,”

Keira Harrison said. So, through their analyzation, who was the culprit? Mrs. Driggers, the class yelled in unison. “When I do the problem based learning, they all have enthusiasm,” Bollum said. “They’re bringing their level of cognitive thinking to a higher level. They can think together as a group. Teamwork is very important.” This is the fourth year they’ve done the program, and each year there’s something new introduced. This year, Clatterbaugh was the first student ever to videotape the interviews on his phone and then play them back once they returned to the classroom. That impressed Martz and Bollum. “Maybe our writers might not catch everything that was said, so we can go back get the data,” Clatterbaugh said of his reasons behind taping the proceedings. Bollum said that by being hands on, the information is more easily retained. “I’ve had my older students come back to me and ask if we still do this exercise,” Bollum said. It was an experience the class wouldn’t soon forget. “It was really fun,” Kerns said. Bollum and Martz presented the same curriculum at Culpeper Middle School a few weeks earlier as well.

Mending the broken hearts ➤ Herren talks to students at CCHS about drugs, self worth By Jeff Say

CULPEPER TIMES STAFF WRITER

“Why drugs?” It was the question Chris Herren asked more than a thousand students at Culpeper County High School Wednesday morning. Herren, speaking at the school thanks to the Path Foundation, has a long history of drug abuse and recovery. For the past seven years he’s used those experi-

ences to go into schools and to hear the tales of students who hurt, who try to bury their pain in illegal substances and who sometimes hurt themselves. So, Herren asked, why use drugs? Is it because you got in with the wrong group of friends? Did they learn their actions from an older brother or sister, are they overcompensating to deal with pain caused by a rough family life? It was an emotional conversation. A rapt audience often wept, with some students having to leave their seats because they were so overcome. One young man, during the question and answer question asked a poignant

➤ Herren, from Page 6 question that floored Herren. “What do you do with a broken heart,” due to drugs. It was an experience, Herren said, that he will never soon forget. “It’s no doubt an emotional toll, what weighs on me more than the words that I say, is the tears that I see,” Herren said. “Often times I go to schools and they say we’re going to put the athletes in the front and I look at the principal and I say ‘why?’ It’s like the little kid that stood up and said what do you do with a broken heart? He doesn’t wear a uniform. He doesn’t have that team around him that some kids hide in or some kids use to shield them.”

➤ Wellspring, from Page 2 years. Dr. Mubasher Fazal, who has run a sleep clinic in Culpeper for several years, will be joining the practice by the end of December and Suzanne Amorusso, a registered dietician and diabetes educator has already been seeing patients and will soon be working out of the Sunset Lane location. “We’ll use this as a specialty clinic,” Athar said. “We will be continuing to focus on disease management, but it’s also about wellness programs.” Athar, who was named the Culpeper Chamber of Commerce’s Entrepreneur of the Year as well, said that his business is growing much faster than he ever dreamed. And he said, with a laugh, he can dream big. “I’m an optimist to the point of being a fool,” Athar said. “But even I would not have predicted that. All of the industry benchmarks we’ve far exceeded all of them.” Wellspring now employs close to 60 and still has the potential to grow. Athar said that he couldn’t go into details but

Other students showed courage in speaking out, in asking what to do if they see substance abuse at home, how do they help someone who doesn’t want help and what to do if they see a friend or a fellow student harming themselves. “It’s hard to surprise me,” Herren said. “But just when you think you’ve heard it all, something comes. I’ve heard a lot. I’m often times astounded and inspired by kids courage to say something outloud.” Amy Petty, Director of Communications for the Path Foundation, said that Herren’s message has been a worthwhile one to spread. Last month, he spoke to Fauquier County Public Schools and on Tuesday he visited Rappahannock Coun-

that discussions are ongoing for continuing expansion of the practice. “We are looking at other things, how we look at is is what is the real need,” Athar said. “Novant UVA Health System has done an amazing job in what they have done. There’s always room for private ventures to help out. It’s difficult to get specialists, we’re lucky to have people like Dr. Godfrey. It’s very difficult to get new people here, so we’re looking at creative ways to bring in some specialties we don’t have. Even if it’s for a day or two a week.” Wellspring will host a Christmas Party at it’s location on Creative Drive Dec. 4 from 4 to 7 p.m. Hosting community events has helped introduce the business to the community. “It has made a huge difference,” Athar said. “Despite the fact we’ve been there, in a prime location, for a year, Culpeper is still not that small and a lot of our patients come from other counties. For them these the opportunities to come and see who we are and what we are. Instead of trying to go to bigger cities, they can come and get their care here.”

HOME & GARDEN Butterfly numbers generally hold steady in this year’s count With the fall butterfly migration likely over here for the year, I turned to the results of the 2017 butterfly count here in Rappahannock County to see how our local species had fared. The bottom line is that the numbers show no cause for concern or elation compared with previous years.

WILD IDEAS Pam Owen

The count, officially, the “Washington, VA” count, was founded and is managed by Old Rag Master Naturalists (ORMN), was held on July 22. It’s part of the annual “July 4” count of the North American Butterfly Association (NABA). Butterfly monitoring data gathered in the field is prone to be affected by several variables, the most important being the weather. Fortunately, the weather was good — warm and dry — for this year’s count. And, as always, ORMN had a good volunteer turnout for its count, including experts and many repeat volunteers. Although the sites counted have

varied slightly over the years here, all are within a five-mile diameter circle required by NABA. For the past three years, the same 19 sites were counted. Several have been naturalized to attract pollinators, so generally attract more butterflies. The count gives a good snapshot of butterfly populations within the county on the day. And as data accumulates over the years, trends do emerge, although six years of data is still too small a pool for discerning trending. Among the most common species, the data show some fluctuate from year to year but no big surprises. The

total butterflies counted, 2,377, was close to previous years. The species with the highest numbers were also no surprise — all made the top-10 list in at least one other year: silver-spotted skipper (318), eastern tiger swallowtail (302), silvery checkerspot (296), cabbage white (275), eastern tailed-blue (172), spicebush swallowtail (119), pearl crescent (99), variegated fritillary (78), clouded sulphur (67) and orange sulphur. “Skipper spp” actually came in ninth, but that category combines skippers that could not be identified ➤ See Wild, Page 9

➤ Wild, from Page 8 down to the level of species (of which there are many). Identifying skippers is a hard task for even experts, considering most species are tiny, brown, quick and always on the move. Some species can have enormous swings in populations from year to year, so looking for upward or downward trends in those species can be even trickier than for species with steady averages. The star of boom and bust here is the eastern tiger swallowtail, which has had the following totals since 2011: 102, 615, 2,375 (a record for the national count), 30, 675, 172 and, this year, 302. And these numbers don’t include swallowtails lumped into “Swallowtail spp.” Female eastern tigers can take on a dark form that is similar to other dark swallowtail species, so often get lumped into this collective category. The top 10 species when totals are combined for all six years (excluding swallowtails not identified down to the species level) are eastern tiger swallowtail (4,271), eastern tailedblue (1,442), silver-spotted skipper (1,441), cabbage white (1,356), silvery checkerspot (857), spicebush swallowtail (606), pearl crescent (529), great spangled fritillary (507), clouded sulphur (487) and orange sulphur (394). Among the no-shows this year was the red admiral. This species tends to be more active early and late in the warm season, so never has high numbers at

the time of the count in any year, but this is the first year none were spotted. Other no-shows were mostly species whose numbers have hovered close to zero in previous years, so not worth noting. The only new species to be counted this year was a lone northern cloudywing, although at least one southern cloudywing has shown up most years. A Journey North (learner.org/jnorth), a monitoring project for citizen scientists to help track migrating species, including monarchs, has been reporting good numbers for sightings of monarchs migrating or that have arrived in their main overwintering sites in Mexico look promising. It will be interesting to see the totals from the NABA counts across North America this year, which NABA typically publishes early the following year. To find out more about the monarch, including animated maps of their migration, and how to help them, go to Journey North’s website. Frankly, while I welcome the sight of butterflies of any species, including monarchs, I’d be more concerned if Virginia’s forest species, such as the swallowtails, were trending downward. Fortunately, that does not seem to be the case — so far. © 2017 Pam Owen Pam Owen is a writer, editor, photographer, and passionate nature conservationist living in Rappahannock County, in the Blue Ridge Mountains of Virginia. Kid Central creates art for benefit auction Contributed report On the first day of December Kid Central will launch a Facebookbased auction of children’s artwork. The money raised from this auction will benefit Bright Spot (a playground for local children at the Culpeper County Sports Complex). To bid on artwork simply select the number of the artwork and place your bid amount on Kid Central’s Facebook page - then the top bid will be selected on Dec. 16 at 5p.m. Each piece of art is inspired and modeled after a famous artist’s notable creations. Artistic styles are inspired by Warhol, Van Gogh, O’Keefe and Kandinsky. Six kid-created works of art are framed and ready to hang in your home or office. Each one was created exclusively and lovingly to help raise funds for the Bright Spot Inclusive Playground in Culpeper. The Bright Spot Playground is planned for the Culpeper Sports Complex near the intersection of Green’s Corner and Jonas Roads this fall, according to Culpeper Parks and Recreation. A grassroots effort to fund the

project is currently underway. “Our after-school children wanted to support the effort to fund this wonderful playground that will bring so much joy to the lives of area children,” said Rachel Palmer, Program Manager for Kid Central. “Our children and staff thought this would be a nice way to give back in a creative way.” To place a bid on artwork visit the Kid Central, Culpeper’s Face-

KKK fliers dropped on Rappahannock doorsteps By John McCaslin

RAPPAHANNOCK NEWS EDITOR

Ku Klux Klan fliers placed in plastic bags and weighed down with bird seed were dropped early this afternoon onto the front door steps of numerous homes in the historic town of Washington and elsewhere in Rappahannock County. Shortly after the fliers were discovered, Rappahannock County Sheriff Connie Compton and at least one deputy, their office and adjacent Rappahannock County courthouse just one block away from where some of the fliers were left, were seen collecting the bags in the vicinity of Main Street and for several miles along Fodderstack Road. Reached Tuesday afternoon, Sheriff Compton said her office received a phone call in the early afternoon from a resident who discovered the hate-filled flier in her driveway. Subsequent investigation by the sheriff ’s office determined that the fliers were

distributed not only along Main Street in the town of Washington but along Fodderstack Road as far as Dearing Road near Flint Hill, a distance of about five miles. “We gathered all of them that we could see,” the sheriff said, adding that an investigation is underway to determine who might have distributed the fliers. “They were in most of the driveways along Fodderstack.” “This message has been brought to you by Loyal White Knights of the Ku Klux Klan,” the headline of the flier reads. “Reminding you of the REASON for the Season. The Birth of our Savior and King JESUS CHRIST!” The leader of the same KKK group said last August in the wake of white nationalist protests in nearby Charlottesville that he was happy that a Virginia woman, Heather Heyer, died after participant James Allen Fields Jr., drove his car at a high speed into a crowd of counter protesters.

➤ Herren, from Page 7 ty Public Schools. He also spoke to the public in Warrenton on Tuesday evening, to tell people about the struggles everyone faces and how to properly deal with them. “We feel just so fortunate we are able to do this, because it’s an important issue,” Petty said. “Chris doesn’t just touch on addiction. There’s a lot of issues that affect young people. He is really able to resonate with them.” Herren praised the group at CCHS, before heading over to Eastern View High School to have a frank conversation with that school as well. “The kids in there were unbelievable today,” Herren said. “There was a lot of emotion and hopefully it resonated with more than a few.” From the start, he said his mission is accomplished if he helps just one kid. A former college and NBA basketball star, Herren’s career and life was railroaded by addiction. He started as a young man, drinking and smoking weed. After going to college he graduated to cocaine, then oxycontin. From there, he found himself playing basketball overseas and trying to score heroin in Italy. Those tough times let him to

rehab and introspection. He was afraid he was going to lose his family, at one point contemplating just disappearing so as not to cause his wife and young children any more pain. Now, the Fall River, Mass. native goes to schools spreading the message that there is help and hope. He encouraged students to put down the drugs and alcohol, that if they are using to step away before they are in too deep - like he was. “I want you to walk out of this auditorium and challenge yourself to be better,” he said. “It’s about understanding your struggle and the mistakes you are making.” He talked about students laughing, bullying and ridiculing others who were struggling with alcohol and encourage everyone to be a solution to the problem - not a cause. Alcohol and drug free since Aug. 1, 2008, Herren encouraged students to talk to their parents about their problems and for parents in the audience to do the same - not hiding behind the phrase of “it’s just the teenage years.” Prior to the speech, students were shown the Emmy nominated ESPN documentary “Unguarded,” detailing Herren’s struggles and redemption. Most importantly, Herren encouraged students to speak up. To speak up to Herren directly, email him at chris@theherrenproject.org.

FILM • “Casablanca” (Warner Bros., 1942) One of the most beloved of American films, this captivating romantic adventure directed by Michael Curtiz is the story of world-weary ex-freedom fighter Rick Blaine (Humphrey Bogart) who runs a nightclub in Casablanca during the early part of WWII. Despite pressure from the local authorities, led by the wily Capt. Renault (Claude Rains), Rick's cafe has become a haven for refugees. One of those refugees is Rick's true love who deserted him when the Nazis invaded Paris (Ingrid Bergman) and her Resistance leader husband (Paul Henreid). How the triangle would resolve itself wasn't known even to cast members until the last days of filming. The film's dialog and the timeliness of world events swirling around Casablanca, Morocco made the eventual Best Picture winner a favorite with wartime audiences. “Casablanca” was among the first movies added to the National Film Registry in its inaugural year, 1989. This month marks the 75th anniversary of the film’s premiere. 7:30 p.m. Free, at the Library of Congress Packard Campus Theater located at 19053 Mt. Pony Rd. in Culpeper, VA. No reservations taken.

VIEWS LETTER TO THE EDITOR

Tell the World This poem was part of the RN-BSN Professional Role Transition course to complete a Tell the World project and was submitted by Bethany Bettis, RN. We start out the morning with a personal pep talk and a “you can do it” attitude, Making sure we do our best to encourage and uplift every patient’s mood. We put on navy scrubs that we are proud to wear each day. This represents the people we are and makes us ready for all that comes our way. Our accessories aren’t earrings, bracelets, and rings. A stethoscope and wrist watch are what we call “our bling.” The day starts out with checklists and stocking, Because so quickly we have patients we are admitting and discharging. Being a nurse is more than a job. It’s our career and profession. Wearing the “RN” on our name badge is one of our greatest possessions. We know we’re not a doctor and we certainly don’t have all the answers, But holding a hand and comforting a patient is what we call “our

LETTER TO THE EDITOR

In defense of Sheriff Scott Jenkins and the 287(g) (Jail program) I have read one letter and one article about the Sheriff’s Office and Immigration. Sheriff Jenkins is applying for the 287(g) Jail program and not the task force program. The jail program refers only to immigration matters within a jail. The task force model allows (with training) road deputies to act as immigration agents). The task force program is definitely not being asked for by Sheriff Jenkins. Presently, the sheriff office uses the Virginia state data base (VCIN) system looking up criminals. VCIN is also a special computer and all operators using the system have to be trained in its use and vetted by the State Police. Sheriff Jenkins has asked for a federal data base computer for use only in the jail and by trained jail

glamour.” We walk in with an introduction and a smile and ask “how can I help you?” Sitting down and attentiveness is the comfort that gets each patient through. We start an IV, draw labs, and give some medication. The right to protect each patient is our biggest obligation. To each patient, what they feel and see is their reality. It’s our duty to provide exceptional patient care and protect their confidentiality. Nurses have an obligation to assist each new nurse they encounter; Because so many times they feel in over their head, like they are going to flounder. Some days there’s more time to give a helping hand; And other days it feels like we are treading water or in quick sand. We feel this way because we want to give each patient the attention they deserve, But often times we are pulled to different places if there’s any other concerns. We work twelve-hour shifts and are given a 30-minute break. However, normally it’s a bit of food here and there because of all we undertake.

We sometimes only use the bathroom once or twice; As our patients come first and that’s what we choose to sacrifice. In the emergency department, we see roughly 100 patients a day. Each patient requires a nurse helping them put a little fear away. Rainy days require a heightened sense of awareness; Because we have no helicopter crew to assist us. Nurses save a life each day or provide at least one person relief. We are mindful and respectful of each patient and families’ beliefs. Some days we do everything we can and still can’t save a patient’s life, But nurses provide a sense of peace when the family feels this overwhelming sense of strife. Compassion and integrity is a part of who nurses are. Providing special, kind, and professional care in and out of the hospital is what makes us superstars. Nurses choose this profession because it’s a part of their inner being. The title of nurse gives us a chance to make a difference and that’s the most rewarding.

deputies to use the system. Four to six deputies will be trained to cover all the day and night shifts in the jail. (Most of these deputies are not trained for the road and therefore can’t leave the jail to act as immigration officers in any manner if this is brought up by anyone). With the federal data base the Sheriff’s Office can see if warrants have been issued from any state or federal agency for people arrested here in Culpeper and brought to the jail. The Sheriff’s Office then can notify that federal agency or state agency to say we have the prisoner. There are time limits for holding someone for extradition. All prisoners brought into the jail go through a booking process where numerous forms are filled out. It is usually in this process where the deputies find out if a prisoner is an illegal alien and inquiries are sent out. The federal data base will help with finding both illegal aliens, and citizens where warrants may have

been issued. Usually when illegal aliens are identified, ICE is notified of their presence and it may take time before any action comes back from the government. If the data comes back late the prisoner may have already been released or bonded out. Sheriff Jenkins is only after the federal data base computer and has no intention of using road deputies as immigration officers, to go after the Hispanic community, or illegal aliens from anywhere. Sheriff Jenkins requires all deputies to take community diversity and ethics classes annually and works closely with the Hispanic community in Culpeper. The cost of the computer and training in its use is paid for by the US Government and no money is spent by the Sheriff’s Office.

All day, everyday

What’s your favorite Cheese? At some point siblings are apt to ask their parents “Who is your favorite?” Ignoring the question will not make it go away and the politically correct answer is never satisfying. Somehow kids are determined to believe that one is favored over the other. The feeling that inevitable question generates in parents is somewhat analagous to when a Cheesemonger is asked, “What’s your favorite cheese?” How do you answer that? There are hundred’s that I have tried and hundreds more to explore, but to seriously choose just one? Through the years I have come to bypass the politically correct “They are all my favorites” and focus on one cheese, Gaperon. If you have suffered through my musings on cheese you may remember in 2015 when I wrote about Gaperon adoringly in the Thanksgiving Cheese Column. In that column, I politely suggested Cheese take out the bird as the Thanksgiving centerpiece. Yeah, I stand by that. Bold, audacious, but it’s not like another cheese (or Turkey) is going to get jealous or go

into a manic depression. So yes, I can say that Gaperon is a favorite cheese. Ok, so this squashed softball looking lump of a cheese is not a beauty queen. I can admit that Truffle Brie runs silky circles around this homely looking cheese. Gaperon, somewhat like vehicle of my dreams (Pinzgauer), is all about utility. At its core Gaperon is Cow’s milk turned with garlic and studded with peppercorns. The rind, well, it’s complicated. Young, there really is not one. Then, as it ages, there is a white geotricum bloom (mold) that covers it in ever growing, well…splotches. While you are trying to understand a cheese whose surface can admittedly look like a dog with the mange as it develops, let me distract with the yellow ribbon. This cheese is wrapped up, tied with a bow on top. It’s like a present, with a yellow (sometimes orange) ribbon that can emulate the “ribs” on a pumpkin as it wraps around the pudgy sides of a cheese. The cool thing is that when you pull the ribbon correctly it sections the cheese like an apple or chocolate orange. Way cool – when it works. I am about 1for 5 on this. Now that it’s “loose”, use it as a flavor enhancer to melt over fries (or just about anything). Gaperon has the elasticity to hang together when under the broiler. Truffle Brie? Um, that would be a big messy no. No heat? Use Gaperon’s semi-soft nature at room temperature to spread it on a baguette. Just add red wine. Then there’s my favorite, melted slowly in a pan with cream (oh, yes) and tossed with cooked (hot) pasta for a new dimension of Mac ‘N Cheese. So why have you not heard nor seen anything about this amazing cheese here to fore? It’s a commodity and overly common in Europe. So much so that it’s seldom imported. To me, that makes this common and rare cheese (at least in the US of A) all the more special and admittedly my favorite cheese. Jeffery Mitchell is the owner of the Culpeper Cheese company.
