n September 2nd The Inn at Little Washington will host a food and music festival in Washington, Virginia, to celebrate our 40th Anniversary. The event will be like a giant family reunion loosely inspired by Woodstock, which I happened to attend 50 years ago. We’ve invited 25 of our alumni chefs to prepare their finest offerings, which we will serve in our Field of Dreams (behind the Tavern building) along with beer, wine, fried chicken and BBQ, while enjoying live music, fireworks and hot air ballooning. At this point in our journey we are able to reflect on the wonderful relationships that we’ve forged in the last four

F
ood is the primary focus of INNstock, hence some renowned chefs from around the country — “alumni” of the Inn at Little Washington — are eagerly making pilgrimages back to the small Virginia town that helped launch many a culinary career, what Patrick O’Connell equates to a very large family reunion.Indeed, several of these celebrated chefs met their husbands and wives while working in the Inn’s five-star kitchen. For INNstock, the visiting chefs will be preparing their favorite dishes and serving them to guests on the lawn behind the Inn’s Tavern. Without further ado, the INNstock menu:
Kevin Binkley
Executive Chef of Binkley’s, Phoenix, Arizona Dish: Black Truffle Tacos A graduate of the Scottsdale Culinary Institute in 1994, Chef Kevin Binkley was a James Beard Award semifinalist in 2018 for the “Best Chef Southwest” category. Binkley honed his craft and skills while working at two of the top 13 restaurants in the United States, which afforded him the opportunity to develop an in-depth understanding of fine dining. While at The Inn, he learned every job in the kitchen and was promoted several times, rising to executive sous chef, second in command to chef/owner Patrick O’Connell. This is also where he met his wife, Amy Binkley.
Derek Bissonnette
Chef, Photographer and Author of Soup: The Ultimate Book of Soup and Stews Dish: Lobster Bisque Derek Bissonnette is a graduate of the Culinary Institute of America and a chef of 22 years, most recently as the executive chef at the White Barn Inn, Kennebunk, Maine. In addition to the White Barn Inn, Bissonnette served as a sous chef at the Inn at Little Washington and in Great Britain at the Summer Lodge Country House Hotel. He is the author and photographer of the

Kristin Butterworth
Executive Chef of Lautrec Restaurant at Nemacolin Woodlands Resort, Farmington, Pennsylvania Dish: Chicken and Waffles Kristin is a graduate of Indiana University and the Italian Culinary Institute for Foreigners. She is currently the only female Forbes Five-Star, AAA FiveDiamond chef in the world and the youngest female chef to helm a Forbes Five-Star restaurant. She has been invited to host three James Beard Foundation events in New York City and was a James Beard Mid-Atlantic Semi Finalist in 2018.
Christopher Coombs
Chef/Owner at Boston Urban Hospitality, Boston, Massachusetts Dish: Lobster Roll BLT Over the past decade, Christopher Coombs has quickly become one of Boston’s top chefs and restaurateurs. Under Coombs’ leadership, Deuxave restaurant consistently shows up on Best of Boston lists and has earned a Wine Spectator Award of Excellence. Boston Chops, another restaurant in the Boston Urban Hospitality groups, was voted Food & Wine Magazine’s “Best New Steakhouse” in 2014. Coombs was named one of Forbes’ “30 Under 30” in 2012, in 2015 the Massachusetts Restaurant Association’s “Restaurateur of the Year,” and he has created his own scholarship under the MRA to help fund talented high school students’ higher education.
Raffaele Dall’erta
Executive Chef of Hamptons Restaurant, Sumter, South Carolina Dish: Sheep Ricotta Agnolotti with Lamb belly Chef Raffaele Dall’Erta was born and raised in Milan, Italy and attended culinary school at Vallesana in Northern Lombardy. His formal
education was followed by apprenticeships which led to positions in top Italian kitchens, including Don Lisander and La Rondine. The next chapter in his life took him across the Atlantic to Baltimore to work at Sotta Sopra, where he was able to mix his Italian influence with new American cuisine. From there he went to The Inn at Little Washington for a span of 11 years, where he worked as a chef and eventually executive sous chef.
Austin Fausett
Executive Chef of Fisk & Co., Chicago, Illinois Dish: Porcolete Porchetta Austin Fausett has spent time in the kitchens at the former Craftbar in New York City; Sea Grill, a two-star Michelin restaurant in Brussels; and Novelli Bacaro con Cucina, Konstantin Fillipou’s Michelin-starred restaurant in Vienna. Most recently, Fausett served as executive chef at Proof, and under his direction Proof was featured in The Washington Post’s list of the Top 100 Restaurants, and won “Best Upscale Casual Restaurant.” Fausett has earned numerous accolades, including a 2015 nomination for Rising Culinary Star by the Restaurant Association of Metropolitan Washington (RAMW) and a nomination for Eater D.C.’s “Chef of the Year” Awards. He is also the recipient of the 2014 StarChefs Rising Star Chef Award and was named to Washington, D.C.’s first-ever Zagat 30 Under 30 list of “Rock Stars Redefining the Industry.”
Dan Gorman

THE CHEFS ➜ CONTINUED FROM PAGE 6 Gorman has been recognized as a Young Chef of America by Chaîne des Rôtisseurs, has been named the Hans Bueschkens Young Chef of the Americas and Young Chef of the World by the World Association of Chefs. Serving as executive chef of Henley in Nashville’s midtown neighborhood, Daniel Gorman focuses on regional cooking traditions and works closely with local farmers and purveyors to obtain seasonal ingredients used to create Henley’s modern American menu.
Laurence Gottlieb
Co-Owner Gottlieb’s Bakery, Savannah, Georgia Dish: Chewie Ice Cream Sandwich and Pecan Truffle Pralines Chef Gottlieb grew up in the family bakery and worked in all aspects of the bakery business. Gottlieb is a graduate of Johnson & Wales in Providence, Rhode Island and was voted by Bertoli Olive Oil as one of the top 10 Sous Chefs in America. While Executive Sous Chef at The Inn at Little Washington, he took home the Peoples and Peers award. Gottlieb’s Restaurant and Dessert Bar received the prestigious four diamond award from AAA and was one of Georgia Trend Magazine’s Top 10 Dining Destinations in Georgia in 2005 & 2006. Chef Gottlieb is now in his hometown of Savannah, Georgia where is co-owner of Gottlieb’s Bakery.
Logan Griffith
Sous Chef, The Watergate Hotel, Washington, D.C. Dish: Chicken Karaage A graduate of the Culinary Institute of America, Chef Griffith spent four years in the kitchen at The Inn at Little Washington following his graduation, then served as a sous chef at both the Blue Duck Tavern and Wegman’s. Griffith started working in his first restaurant when he was 13, starting

Shawn Harlan
Chesapeake Chef Service, Kent Island, Maryland Dish: Blue Corn Crusted Rockfish Chef Shawn Harlan is an accomplished chef and instructor with close to 30 years’ experience in hospitality. Currently he has partnered with one of his former students, Chef Kurt Peter, to launch Chesapeake Chef Service, an exclusive catering and consulting company for clients in the Annapolis area and Eastern Shore of Maryland. His professional work experience includes a variety of restaurants and country clubs, including The Inn at Little Washington, Lespinasse Restaurant and Chateau de Sureau & Elderberry House Restaurant in California.
James Kirby Executive Sous Chef, The Watergate Hotel, Washington, D.C. Dish: Japanese Karaage Wrap
Chef James Kirby is a graduate of Johnson & Wales and has served as a sous chef at The Inn at Little Washington, Le Chambord and Blue Duck Tavern. Kirby owned and operated Fort Valley Farm and served as a chef instructor at Stratford University.
Kevin Johnson
Chef/Owner of The Grocery, Charleston, South Carolina Dish: Glazed Lamb Shoulder and Moroccan Carrot Salad Following graduation from Johnson & Wales, Chef Kevin Johnson began his professional career working under renowned chef Frank Lee at Slightly North of Broad (SNOB) in Charleston, South
Carolina. He later returned home to Northern Virginia with his wife, Susan, and spent several years working alongside Patrick O’Connell, where he served as sous-chef at The Inn at Little Washington. Since opening The Grocery, Johnson has earned multiple James Beard nominations, national accolades and helped shape the culinary scene in the Charleston Lowcountry.
Tarver King
Executive Chef, Restaurant at Patowmack Farm, Lovettsville, Virginia Dish: Chopped Pork and Pickle Hand Rolls in Buckwheat Chef King began his career apprenticing for the threestarred chef of La Villa Lorraine, Alain Jackmin. His career includes time in the kitchens of Le Bec Fin of Philadelphia, The Inn at Little Washington, French Laundry, and The Fat Duck and the Waterside Inn of England. As head chef of The Dining Room at The Woodlands Inn & Resort in Summerville, South Carolina, King and his team achieved the highest recognition from both Mobile and AAA, receiving respectively five stars and five diamonds. He was also named “Grand Chef” by the Relais & Château organization, of which The Woodlands was a recognized member. He was named the RAMMY Chef of the Year 2017 and was a finalist for Best Chef, Mid-Atlantic, James Beard Foundation. The Restaurant at Patowmack Farm has been awarded the No. 1 restaurant from the Northern Virginia Magazine.
Mike Lund
Chef/Owner of LUNdCH, Staunton, Virginia Dish: Chicken Chimichurri Tacos with Shenandoah Valley Mole Chef Mike Lund began working in commercial kitchens at the age of 15 which led to his decision to study Hotel and Restaurant Management at the University of Tennessee. Lund went on to work for six years under the tutelage of Chef Patrick O’Connell, who guided the restaurant when it was declared number one in the world by Travel and Leisure magazine. Dish: Quiche Lorraine A graduate of the Culinary Institute of America, Chef Stephen Lyons has lived a life of obsessive devotion to the hospitality industry. He has served as an executive sous chef at the Four Seasons Hotel in Kona, Hawaii, The Inn at Little Washington and as a sous chef at several restaurants in the West Indies. Prior to joining Clyde’s Restaurant Group, Lyons was vice president of Culinary Operations at the Matchbox Food Group.

Executive Chef & Founding Sole Proprietor of L’Opossum, Richmond, Virginia Dish: Les Escargots à la Ham Biscuit After graduating from the New England Culinary Institute, Chef David Shannon began his eight year tenure at The Inn at Little Washington. During that time, he staged at two Michelin starred properties, L'Oustau de Baumanière and Abbaye de Sainte Croix in France. In 2018 L’Opossum was named The South’s Best Restaurant by Southern Living Magazine. Other recent awards include two 2017 Elbys for Chef of The Year & Restaurant of The Year as well as OpenTable’s Top 100 Restaurants in the U.S. In 2016, L’Opossum was named Style Weekly’s Restaurant of The Year and David was selected as a James Beard Foundation semifinalist for Best Chef Mid-Atlantic.

Executive Chef, The Inn and Spa at Loretto, Santa Fe, New Mexico Dish: Chile Lime Shrimp with Avocado Mousse Originally from Tijeras, New Mexico, Sean Sinclair attended culinary school at Le Cordon Bleu in Portland, Oregon, where his love
for the locavore style of cooking took root. After a 5-year stint, Sean returned home to New Mexico to helm Albuquerque’s Farm & Table, which was voted “Best Restaurant in Albuquerque” by USA Today. Sinclair refined his skills as a sous chef at The Inn at Little Washington.

Chef and Co-Owner Gastrolove LLC, King George, Virginia Dish: Duet of Chocolates Chef Devin White studied at the IUP Academy of Culinary Arts and earned an advanced Diploma in Pastry and Chocolate from DCT University in Vitznau, Switzerland. Directly out of culinary school, Devin joined Belvedere in Hergiswil, Switzerland, studying and working under Fabian Inderbitzen. Following Switzerland, she had the privilege to work under Patrick O’Connell at The Inn at Little Washington before assuming the role as pastry chef for The Palisades Restaurant. Devin and her husband, Kevin White, are currently launching their business GastroLove, LLC, focusing on intimate dinners and small upscale parties.

Kevin and Devin have partnered in a business called GastroLove, specializing in intimate gatherings and private dinner parties.
