K
nowing that 1st AVE Bakery’s Peanut Supreme Pie had won numerous awards, including first place at the State Fair of Virginia in 2005, 2007, 2008 and 2009, raises your expectations exponentially even before your first taste. Just how good can one pie be anyway? Can it make claim to be the Virginia state pie? With one bite of the champion pie you’ll know that 1st AVE’s winning baker, Violet LaBrecque, has created no ordinary dessert. The smooth and creamy texture of the filling is as light as a mousse but with more substance, and it sits above a layer of peanut fudge and peanut butter to anchor it down. The pie is topped with crunchy, crumbly, sea-salted Virginia-grown nuts, all cradled in a perfectly light, buttery crust. It is a fine example of umami — that pleasant savory flavor blending with the sweet and salty ingredients of the pie. An entire state was not wrong. For sure, this humble pie lives up to the hype. LaBrecque, 55, and her husband, Bob, 58, own and operate 1st AVE Bakery, which is named for the three bakers in the family — Violet and daughters Amanda, 25, and Elizabeth, 22. The family has been baking competitively for more than 21 years and started the bakery in 2008. They sell their pies, breads, brownies, cakes, cookies and candies out of their Purcellville home during the week and at

Except for what’s sold at the market, all products are made-to-order. “Sometimes she makes 60 to 70 crusts a week,” says Bob, who, with his sweet tooth, is the company’s official taste tester. “She’s got great form on the table, and has the operation down to a science.” Violet can peel, core and slice as many as 50 Granny Smith apples in under an hour. And 50 apples are 10

about what she needs to make just six apple pies. They are heavy desserts, weighing in at about 2 pounds apiece. In Violet’s kitchen, you’ll find a simple stand-up fruit slicer and her trusty 20-year-old KitchenAid Professional mixer that she bought when KitchenAid offered 50 percent off to contestants at a state fair. The only modern appliances in the kitchen are the double black ovens that are in use most days of the week. Violet also has a custom-made, maple-topped Boos Blocks baker’s table that was cut to be low enough for her to comfortably roll pie crusts on. The LaBrecque home kitchen is inspected and certified by the Department of Agriculture and is certified by the Virginia Department of Agriculture and Consumer Services as a home-based bakery and purveyors of “hand-crafted pies with a meltin-your-mouth crust.” While it would be easy to modernize their home-based operation to crank out more pies, breads and other treats, Bob and Violet adhere to the principle that everything they sell is made by hand — their hands. All the breads are hand-kneaded, and the pie crusts rolled out one at a time. “We’re doing this because it’s fun to do,” Bob says. “We can’t make 100 pies a day because that becomes a real job. We want to make the best in Virginia, and we can’t do that in a factory.” Violet got her start baking when she was in her early 20s and had wanted to enter a contest at the Prince William County Fair. When someone told her there was no way she could win against ladies who had been baking for decades, she took that on as a challenge and entered anyway. “It was kind of a dare,” she says. “I entered the contest but didn’t win. I did bread before I did pie, and it was horrible.” Now a champion-class bread maker, Violet and her daughters, who themselves have won their share of state fair contests as teens and young adults, have been featured in local and regional newspapers, magazines and a book. As teens, the girls were featured in I Want to Be … a Chef, a book about exploring careers in the culinary arts. “They’ve been helping in the kitchen since the time they could stand at the table,” Violet says. “When they were growing up, we all would spend a lot of time in the kitchen.” While Elizabeth and

Amanda have moved on to other pursuits and careers in California and Hawaii, they continue to bake in their communities, and whenever they are home. Violet earned her first state fair ribbon with a pecan pie recipe that she uses to this day. Since her first prize, she has taught cooking and baking classes for years, freely sharing her recipes with her students, but since the bakery opened, she has been hesitant to do so. Bob says their award-winning recipes have been published in numerous magazines, cookbooks and newspapers such as the Washington Post. Each time they’ve entered a contest, they have had to give corporate sponsors the right to publish their recipes. “The recipes are out there,” Bob says. But even if you followed the recipe, he adds, you won’t get Violet’s “artistic touch” that gives the pies that extra edge on the state fair circuit. When pressed for her secrets or tips, Violet did offer this: “The most important ingredient is not the right temperature, brand of flour or shortening you use. The most important variable is the moisture and water. And the weather has something to do with it, too.” She also said that “the pie crust will tell you it’s ready. You have to know the signs.” For the most part, the couple has retired this year from entering state fair contests and has focused their attention on helping others win the coveted blue ribbon. They are coaching contestants on the finer points of presentation. “There’s a lot of logistics in a pie or baking competition,” Bob says. “You have to know how each of your ingredients will perform.” Violet also has demonstrated to elementary students how easy it is to make a pie. “We want to see kids bake,”she says.“We want to inspire the next generation of bakers.” L o u d o u n M a g a z i n e

he aroma, which is salavatingly savory, precedes the music, which is a bouncy polka
emanating from a boom box. As you draw closer to both you encounter a grinning, sweating, 6-foot-5 man in lederhosen – leather shorts with suspenders, and knee-high
white socks – who swiftly turns from a flaming grill with a pair of silver tongs and offers you a sizzling bite of crisp Bavarian bratwurst.

“The thing that brings Germans and Koreans together is the cabbage,” Erbe jokes. “We call it sauerkraut and they call it kimchi.” Erbe, now 47, fell back on his butchery and found work in America in the meat department of the local branch of a chain supermarket. “I have respect for the department manager,”he says diplomatically,“but it is a big corporation. You have to do everything their way, and their way is not always the best.” His job now, he says, is “helping the farmers of the region three days a week” at Fauquier’s Finest Custom Meat Processing Inc. in Bealeton. He helps them by rendering their steer and hogs into retailsized products that they can sell to an increasingly expanding customer base of locavores. “They drop off the animal. I take care of the finer processing,” he says. “The sausage, the bacon, the ham.” In exchange, Erbe gets two days to use the processing plant on his own, under the watchful eye of a USDA inspector; it’s two days of master artisan butchery, with the butcher as his own master and where Old World traditions manifest in nearly 100

hat’s goot, yeah?” he asks with a smile, and not waiting for the obvious answer, dashes to a white cooler to hand over a pack of frozen sausages to an eager
customer. This is Saturday morning in Purcellville, where Lothar Erbe and his wife, June Bush, enliven the already boisterous Purcellville Community Market with their portable German butcher shop, Lothar’s Gourmet Sausage. “This guy is the real deal,” a waiting customer says. “I come every week to get his stuff.You can’t get it anywhere else. He’s a master artisan butcher.” A master artisan butcher. Any one of those adjectives would be impressive enough, but this Lothar guy is both? Then what is he doing here, among tomato vendors and apple stalls? Shouldn’t he have his own butcher shop where he can show off his skills in a more controlled environment? And can a guy in lederhosen and knee socks be taken seriously as a certified culinary master?
From Germany to Loudoun Germany is one of the few places left that has a bona fide master-apprentice system of teaching Old World skills from the old to the young. It’s a grueling, demanding apprenticeship that tests a young would-be professional’s resolve and dedication, not to mention their natural affinity for actually having a talent for the trade at hand. After discovering a flair for butchery on a school break in 1978, 16-year-old Lothar (it’s pronounced Lotar) Erbe (it means “herb” in Italian, “inheritance”in German), spent from 1979 to 1982 studying with veteran butchers in his home region of Frankfurt, learning not just the anatomy of animals but also the chemistry 22

and biology of the business that keeps the product safe and makes the end result a higher quality than what is normally found. He followed that by working for two years as a journeyman in Italy, studying the Italian style of butchery, before returning to Frankfurt to raise his game at Master Butcher school and launching a career. He plied his trade for 15 years before getting restless with meat. Highest quality possible.” The meat is as fresh and as local as it gets. “Everything comes into the facility on four legs,” Erbe says, delivered in person by the regional ranchers from Midland to Culpeper who raise their livestock by hand, with a minimum of contentious industrial production practices. In Germany, Erbe says, there are 3,000 recipes for seasoning meat; he has 900 and rotates them to keep things interesting for his customers. At any given time his larders are stocked with 45 of his usual 95 favorites, from Croatian lamb links to marinated, grass-fed Angus beef to creative Tex-Mex brats spiced with hot cheese and jalapeño. His proprietary spice mixtures are blended in bulk by Con Yeager Spice Co. in Pennsylvania, inspected and approved by the USDA (in fact, everything Erbe puts out has a USDA stamp on it). A car turns into the driveway and Erbe tells his wife, “We have a customer.” It’s near 7 p.m. on a Wednesday and the customer is Linda Karol, who works for the provost at the Loudoun Campus of Northern Virginia Community College. A couple of factors caused her to turn into the driveway: “I live in

Bush knew they would be in business for themselves some day, but “we always thought it would be in wine” because of his experience with Pernod Ricard. The custom meat business, as it turns out, has arrived at the right time, not just for the couple, but for the culture. “We seem to have come at the right time,” Bush says. “People want to know what their food is, where it comes from, who made it? There is a real movement. And we live in an area where customers are really educated and traveled, and they know and like good food.” The prices Erbe charges reflect the economies of the butchering process, and the weight of the livestock changes considerably during the butchering – but the cost to the butcher does not. But at the Purcellville Community Market, a customer tells him, “Lothar, trim the extra fat and raise the price $1.” “So I do,” Erbe says. “They want the best, so they are happy with it.” As for the lederhosen? “The leather of the pants protects me a little bit from the heat of the grill,” he says. “They are very comfortable pants.” So it’s not an act? “We have the music playing, I talk a lot of B.S., but for my customers it’s entertainment. This is my nature. Why change?”
Round Hill so I drive by here all the time and I always see the sign,” she says of the plastic “Lothar’s Gourmet Sausage” banner at the foot of the driveway.“And my husband is Polish, so I think he’s going to love this.” Erbe gives her a tour of the contents of the freezers and describes a few of the items before she settles on the Nuremberg bratwursts. Before she leaves, Erbe tells her to wait. “I have something for you.” He hands her a frozen package of a beige slab that Karol looks at with curiosity. “It is smoked and cured pork back fat,” Erbe explains. There is at least a pound of it. “You cut off a little piece and put it in your pan,” he says patiently as she nods appreciatively, “like you would butter. Put it on green beans, you will love it.” Karol departs into the night, an unexpected culinary adventure in her plastic bag. Another customer arrives a half hour later, although Bush says the shop hours are from 1 to 7 p.m. Wednesdays to Fridays. She’s forgotten to turn off the “Open”sign. Erbe and Bush have been in their present house for two years, after moving to Hamilton from Winchester.

LOTHAR’S SAUSAGES AT MAGNOLIAS AT THE MILL n BY BUZZ MCCLAIN
If
you dine out in Loudoun County, there’s a chance Lothar Erbe’s products are on the menu.The Wine Kitchen in Leesburg has Lothar’s Bratwurst on the menu, paired with German mustard potato salad and house-made red sauerkraut. Mark Marrocco, executive chef at the Purcellville restaurant Magnolias at the Mill, has not just one but two of Erbe’s products on display, in a “Duo of Sausage.” “We have his bratwurst and his spicy Mediterranean sausage, and we put that with a caraway sauerkraut (with bacon and beef broth), roast fingerling potatoes, apple chutney and whole grain mustard. It’s a nice plate,” Marrocco says. And the preparation of the sausages? “We do not poach the sausages,” Marrocco says. “We have a wood-fired grill so you get good flavor from the wood and lump charcoal.You could do it on a Weber grill.” That’s it? You just roast them? “That’s it, my friend,” he says laughing. “We let the sausages do the talking.” We were kind of hoping for a recipe . . . “Oh, we use his sausages in other applications,” the chef says. “He makes andouille (sausage) and we’ve used that in cassoulet or dice it up in a pearl couscous.” Marrocco also uses Erbe’s sausage in jambalaya, with local chicken, over rice and served with warm jalapeño cornbread. Serve this during a football game on a cold Sunday to warm everyone up.
Lothar’s Gourmet Sausage, Free Range Chicken and Shrimp Jambalaya 3 each red/yellow/poblano peppers (medium dice) 2 red onions (medium dice) 1 celery stalk (medium dice) 3 jalapenos (small dice) 2 tbs minced garlic 1 cup blackening spice 2 pinches cayenne 8 cups fish stock or clam juice (If making w/ seafood) 1 cup white wine 12 cups tomatoes (large dice) 3 tbs granulated garlic 2 tbs onion powder 2 cups tomato paste 2 cups brown roux 10 fully cooked chicken thighs (pull the meat) 5 Lothar’s Spiced Mediterranean Sausage (large dice) Colossal Shrimp Sweat sausage in large Rondeau (pan) with butter on 24

medium heat and add the HOLY TRINITY (peppers, celery and onions), jalapeños and minced garlic. Be careful not to burn. Add tomato paste and stir. Add tomatoes and dry spices, and give it some movement to allow flavors to blossom. Add wine, and stocks and reduce by 25 percent. Add brown roux to desired consistency and remove from heat. Add pulled chicken. Cook shrimp to order and serve with rice or desired starch. Serves 12 people.
Wood-Grilled Duo Of Lothar’s Sausages with Smoked Bacon & Caraway Sauerkraut and Apple Relish SAUERKRAUT WITH SMOKED BACON & CARAWAY 6 lbs of sauerkraut, drained well 2 large onions, diced 1/4” 3 lbs bacon, julienne sliced 1/4” 2 tbs caraway seed 2 tsp celery seed 1 tbs chopped garlic 3 1/2 cups beef broth Drain sauerkraut in china cap strainer for at least 30 minutes to get all brining liquid out of kraut without having to rinse. In medium Rondeau pan, render off bacon. Remove bacon from pan and sauté onions till translucent (do not brown onions), then add caraway and celery seed. Stir for 2 minutes on low, then add garlic and cook for another 3 to 5 minutes on low heat. Add sauerkraut and bacon, stirring to mix with onions and spices.When mixed, add broth then stir and cook for 5 minutes to bring veal stock up to temp.Take off heat, then let cool and place in container with tight lid or plastic wrap. Makes 6 pounds.
Apple Relish 1 1/2 cups white wine 1/2 cup maple syrup 1/2 cup plus 2 tbs honey 3 cinnamon sticks 1/2 red pepper, Brunoise-diced 1 medium white onion, Brunoise-diced 1 jalapeño, Brunoise-diced 12 Granny Smith apples, peeled and diced 1/4” inch thick In small stock pot, place white wine, maple syrup, 1/4 cup of the honey and cinnamon sticks. Heat over medium heat and simmer. Stir frequently until thick syrup is formed. In large sauté pan, heat 2 tbs of olive oil and brown apples (only for color, do not allow to overcook). Remove from pan and let cool. In saute pan, cook peppers, onions and jalapeños until soft. Add 1/4 cup honey and stir to coat, then remove from heat. Place all ingredients (apples, pepper/onion mix and syrup) together and stir lightly to coat with syrup. Makes 1 quart. Grilled Sausages Grill Lothar’s Bratwurst and Mediterranean sausages on medium heat, and warm sauerkraut slowly. Serve with roast potatoes, relish and Stone Ground Mustard.

expanding her artistic vision and exercising her creative talents to the overall design concept of The Big Day. Born into the Heider farming family of western Loudoun, Chapple has long been a cheerleader for the county. “Loudoun has resorts, estate homes, private gardens, the vineyards — I mean it, we have absolutely everything here! “It’s so easy to be a designer in Loudoun, each venue inspires a different feeling or look. A sexy resort like Lansdowne often compels me to design clean, crisp, and dramatic pieces. This venue can handle a glamorous or contemporary look as well. I literally can leave the resort and in minutes be

It’s fabulous for me because it always keeps me thinking and being creative.” As the Chapple brand evolves, she retains the passion and attention to detail that has been her trademark for almost two decades in the industry. “She has an incredible ability to take your ideas and organize them into a fluid style that continues to evolve as your big day approaches,”says Mackenzie Aiken, who was married in September. “Ours was the first event in which Holly was the event manager, but you would have thought she had been doing it her whole career. From the resources she was able to come up with and having her working with various vendors to be sure everything was in place, we never had to worry that something would go wrong. Everything was beautiful and perfect and we

I
n her 19 years in the wedding industry, Holly Heider Chapple has worked with vendors throughout metropolitan Washington, D.C., and stands behind the efforts of her county colleagues.“Don't get me wrong, I love doing events in the city, but it's not as much of a team effort. We partner out here in Loudoun, and we all work together. When you love the people you work with you find yourself putting extra heart and soul into the job. There's just this kind of rhythm that we all have and it produces an event that is beyond anything, even in the city.” Below, Chapple talks about some of her favorite partners based in Loudoun:

I do of course adore flowers, but I think that photography is the most important thing and that you should never, ever skimp on your photographer. When all this is said and done, all you are left with are the images. They are the most important thing you will do on your wedding day, absolutely hands down. And then the flowers! With photographers, I think it's so important for the bride and groom to feel comfortable with their photographer. Genevieve Leiper is just down to earth; she's got a big huge happy smile and a great attitude. You will never look back at your images and think that they were trendy. She's going to get the good, solid, clean shots. She'll get the fun in there too. You know, all the 44

cute little things where they're showing their socks and stuff, she’s the complete package. I also love Bob Updegrove. He has developed a huge following because he was a photographer for many of Loudoun’s brides and grooms when they were in the high school. He would capture all of the sporting events and the award ceremonies as they were growing up. Most of the local couples know him and that creates a wonderful comfort level for the brides and grooms. Joylyn Hannahs is another solid Loudoun County photographer. Her photography is fun, classic and clean. She also has a studio in downtown Leesburg, she is a remarkable artist and she is Loudoun County born and raised. Again, photography is your most important investment. Your photographer will give you your wedding to enjoy over and over again. CATERING
I love Celebrations Catering and their staff never ceases to amaze me. Their food is very now, very trendy, very cool. We have been guests at several Celebrations Catering events and our whole family loves their food, and trust me it’s hard to please nine people! They also have a truly delightful staff behind them and I admire their work ethic.

I also love Tuskies (Tuscarora Mill). They do a fabulous job and you can have the quality dinner that they offer in the restaurant, on site. I adore Joan Wolford at Savoir Fare. She has a restaurant in Round Hill, where you can get a sneak peak of some of her wonderful edible creations! One of my favorites is her berry salad, and she uses local berries and cheeses for this specialty! What makes her so attractive is that she can encompass such a wide range, from L O U D O U N

very now, very couture food to very hearty solid Virginian cuisine. Then there's also Karen Harper-Fuog (of Round Hill), another local caterer. I am always so impressed when I see her grilling vegetables on site. Karen is also a extraordinary baker and often does the wedding cakes in house! VENUES
I am always taken aback by the upscale resort feel that Lansdowne has. We tend to take the things in Loudoun for granted and that's just a venue that is absolutely noteworthy. Even if your wedding isn’t at Lansdowne, I would highly encourage having your guests stay there just because it's an awesome vacation experience. They offer seasonal music festivals, tourism options such as trips to the vineyards, and their Sunday brunch is a must! This venue is perfect for a destination wedding even if you are a local. I adore the integrity that Thomas Birkby House and Whitehall Manor operate under. W I N T E R

Those venues are always meticulous, every single solitary spot is clean and the gardens are immaculate. I love the historic value of both of those properties. The Birkby is in downtown Leesburg. I think your photographs and your options for getting images are amazing. I appreciate the fact that you have the option for an outdoor wedding but you also have a finished house that you're able to use. Sometimes that's a problem with historical properties: some of the larger estates, not necessarily in Loudoun, don't really encourage use of the home and both of those venues do. They're also decorated and finished with lots of visual interest not just an empty void. I feel completely at home at Whitehall, which also has a fabulous backup plan. If it should rain, you go into the ballroom and you marry in front of this old arched window that's just an architectural dream, and it’s the old beveled glass, so it sparkles differently than regular glass. When they designed the new addition, they put a skylight in
the ceiling so even if it's a rainy day you still get a natural light that's like moonbeams. Another place I'm falling in love with is Murray Hill, which has a view that absolutely blows my mind. You will have to work with rental companies if your event is of a certain size but the owner helps you orchestrate those. It’s a truly remarkable place that literally sits on a cliff overlooking the Potomac. For the wine fanatics our vineyards offer several incredible options but it’s important to understand that the vineyards are working farms and open to the public. Understand that you may have a few tourists on site when you arrive but the staff will certainly have them cleared out long before the first guests arrive. There’s a charm that no other venue can provide like a vineyard. EVENT DECOR

I've gotten beautiful brooches down there that we'll put on the stems of the bouquet, cinch it up and close it that way. Little things like that are priceless, they become an heirloom, and those are the details that make a Holly Heider Chapple wedding so special. I moved in with them (as a vendor) right about the time the vintage craze hit the wedding industry. All of a sudden, I needed milk glasses, blue Mason jars, lanterns, old scales and wooden boxes. I just started going there and saying,“I 46

I buy them for an event, and if I can bear to part with them and don't see a need for them for an upcoming event in the future, then I take them down to my booth and put them up for sale. So it's really just been a neat mix. I do enjoy marketing and I've had fun letting the rest of the wedding industry know about On a Whim. I think you could walk through that door any day of the week and find inspiration and plan your whole entire wedding. One little handkerchief, tiny jewel or silver vessel can inspire a whole entire wedding theme.

The pet additions are not surprising these days. Remodeling for pets is a trend that’s on the rise, BOWA President Josh Baker says. How the dogs, cats and other domesticated pets fit into the family lifestyle is now standard when it comes to planning a remodel. “Inevitably the discussion with the client at some point goes to the pets being part of the family and how they interact with the rest of the family,” he says. “They want to know what we can do as part of the design to incorporate their interaction with the pet. Where they eat, where they sleep, egress, access, security, cleanliness, clean up — the homeowner wants those interactions addressed.” Before, installing prosaic pet doors was about the extent of any consideration for dogs and cats. But they were primitive solutions consisting of an opening cut into an exterior door covered by a plastic flap that invariably refused to keep out cold air despite the magnetized catch at the bottom. These days a pet door is likely to be electronic. Plexidor Pet Doors makes one that opens via a “collar key” the pet wears. The key
is actually a waterproof, shockproof RFID chip, which doesn’t require batteries, and multiple pets can have access to the same portal. As they get close to the door, the heavy-duty plastic door automatically slides up to let the pet in, then slides down once the pet has cleared the opening (there’s a safety built in to prevent pinched paws from closing doors). The doors are a vast upgrade to previous iterations as they are energy-efficient and secure. The bottom line, Baker says, “is the interaction with the pet is important to the family, and the improvements need to make it a positive.” An electronic pet door does just that. The possibilities for pet home improvements are vast and varied. We asked several designers from here and elsewhere to offer tips that make life easier for pet owners and their animal companions. Here are some ideas that represent true thinking out-of-the-(litter)box. • Litter boxes are the unending conundrum with cats. Where do you place them to be discreet for you, but still accessible for your cat? “Try remodeling your laundry room to have a kitty litter cabinet,” says Robin Baron of Robin

A hidden cubby would also work for a doggie bed as well.” • If putting a pet shower on the floor isn’t an option, make a sink more accessible. “On one of the last projects we completed, we added a stainless steel doggie wash basin in the garage that incorporated a ramp for the dogs to walk up into the basin,” says Michael Menn, a remodeling architect in Illinois. “In another, we incorporated a very large sink in the laundry room that doubles as a dog washing sink.” • Use only semi-gloss paint in pet areas, reminds Christopher J. Grubb, president of Arch-Interiors Design Group of Beverly Hills, Calif. “Semi-gloss is easy to clean. And a faux finish creates a pattern that isn’t susceptible to dirt.” Similarly, use vinyl wall covering or a durable wallpaper, both of which wipe up with glass cleaner, and accent pet areas with “human” touches such as wainscoting. As for colors, “have as much fun with color as you want but if you have a pet who sheds a lot, try and keep the color scheme one that matches as close as possible to your pet’s hair color.” • If your home remodel includes adding an island counter to your kitchen, “why not extend the length and have end drawers for your pet goodies?” Baron asks. Besides the handy storage, “you have just created a nook underneath to install a floor box for food and water bowls.” • What about something for the birds? Add plush bedding and food and water bowls inside to give your little one its own room.” • Consider the flooring material when designing a pet-specific space. “Tile is best. Whether it is vinyl tile or porcelain tile, it’s easy to clean, and there are even porcelain tiles that look like wood,” Grubb says. “If you want a true wood look, a product like Pergo will suffice. Keep the grout lines tight. And if you really want to pamper your pet, radiant heated floors are the ultimate luxury.
