P ancakes, the iconic comfort food of the American breakfast table –based on my personal preferences and observations at diners, not a Gallup poll – combine friendly familiarity with ever-evolving variations based on batter enhancements and multitudinous toppings. They also offer home cooks numerous advantages: Easy-going preparation eliminates the need to get dressed and drive to a dining destination; they’re faster and less complicated to make than cookies or cakes and offer equivalent indulgence; the promise of pancakes have a near-magical ability to rouse kids out of bed and arrive at the table with smiles on their faces.

TEMPERATURE MATTERS

“Pancakes are one of my favorite food groups,” says Christopher Heath, Corporate Chef for Paxos Restaurants. As such, he ensures that brunch menus at sister establishments blue grillhouse, Melt and Torre feature such appropriate staples as vanilla buttermilk pancakes, ricotta pancakes and cornflour pancakes, respectively, all presented with agreeable condiments.

To transfer batter to griddle, use a large kitchen spoon or small ladle, about a 2 to 3 ounces volume. When bubbles appear on the top, they are ready to flip, preferably with a suitably sized spatula. Just don’t keep poking at them – though it is not a tragedy if one of them breaks. And flip them only once.

Heath, experienced in running a child-friendly home kitchen, offers one final comment: “If you do this with your kids, it’s a great activity. It’s so simple, there’s nothing to it.”

While some cooks swear by separating the eggs and beating the whites until fluffy, Heath – who has tackled every variation imaginable – views this step as unnecessary. (His one exception being buckwheat blinis because of a textural difference when used in a savory dish.) Milk or buttermilk can be warmed gently in the microwave just to take the chill off. This is vital because when using melted butter as the element of fat, cold eggs and milk will cause the butter to seize and ruin your efforts.

DETAILS, DETAILS Resist the temptation to prepare pancake batter the night before for the sake of efficiency in the morning. Fresh batter activates quickly and needs to rest only a few minutes. Heath notes that the longer it rests, the tougher the pancakes. And be sure not to over mix the batter: it doesn’t need to be supersmooth and a few little lumps or streaks are fine.

Eggs, an essential ingredient, should be a room temperature.

The chef recommends using a nonstick griddle pan, which requires no greasing. A two-burner version accommodates a larger batch size. His personal preference for dishing them up is on a first-come, first-served basis as even the lowest setting on a home oven is still too high to prevent the pancakes from drying out. However, if your stove includes rear vents, turn on the oven and place a plate of reserved pancakes at the rear of the cooktop to capture the benefits of this gently warmed air.

“There’s definitely a science behind pancakes, and there are many factors that weigh in to making the perfect pancake. Really, they’re so simple. It’s just a matter of making sure the conditions are right and that you follow your recipe.”

First, among the all-important conditions, is making sure the baking powder is fresh. “If you’re not a baker or go through your cupboards regularly, that could be part of your downfall,” Heath explains. Next, for traditional pancakes, he prefers to use buttermilk, which has a higher acidity than whole milk or low-fat milk – and that activates the baking soda or baking powder, which is necessary for the pancakes to rise. (Note: Baking powder contains baking soda.)

For additions such as chocolate chips or blueberries, the easiest way to maintain consistency and control is by placing these tasty morsels on top surface prior to flipping.

Pancakes cook best at medium or medium-high heat, depending on the settings of your cooktop. Consider the first pancake as a test of the right cooking temperature.

CHEF HEATH’S buttermilk pancakes INGREDIENTS 2 eggs, room temperature 2 cups buttermilk, warm 1 tsp. salt 1/2 cup sugar 1 T vanilla 2 T baking powder 3 cups flour 1/2 cup melted butter DIRECTIONS In a medium mixing bowl, mix together the eggs, buttermilk,salt, sugar and vanilla with a whisk. Add the dry ingredients and melted butter then gently mix. Let stand for 5 to 10 minutes. If too thick, adjust consistency with buttermilk. Using a nonstick griddle, cook the pancakes on medium heat until golden on each side. Optional additions: Blueberries or chocolate chips

D rive through any residential neighborhood and you’ll likely see plenty of well-kept home fronts. Real estate agents know that “curb appeal” can be a key factor in selling a home. But what about the backyard? Many times, that plot of ground is just sort of there. And that’s a shame. The backyard represents part of an investment you’ve made in your home and dressing it up can help maximize its value.

“People have many motivations for re-doing the backyard,” Talago said. “It might be to replace something that’s at the end of its useful life—a cracked patio, for example, or a rotting deck. You might have kids, or a dog, and want to provide a safe place outdoors, or correct a drainage problem.” Or the kids have moved out, and you can finally create an oasis for just the two of you. No matter what your goal, your best first step is to do your homework. You wouldn’t just jump into adding a room, so neither should you take a slapdash approach to enhancing your backyard.

John Talago, owner of Chestnut Hill Landscape Contractors, Inc. in Center Valley, offers many general tips about expanding living and entertaining space, creating an oasis of beauty, or simply increasing property values.

Talago says clients often ask him, “How soon can you start?” He prefers to ask his clients, “When do you want this to be finished?”

Two elemental forces—fire and water—are often incorporated into backyard makeovers. But complex water features, such as elaborate fountains, ponds, and falls, are declining in popularity. “People still like the sound of water, so a bubbling decorative urn can be a good substitution,” Talago said.

“That way, we come up with a realistic schedule, and sometimes the proposed target date just isn’t feasible,” he said.

Likewise, outdoor fire pits can range from a simple ring of boulders to full fireplaces. “There are options to fit any budget,” he said, “but be sure to think through your plans.” You might have visions of a large fire pit, but that can be like owning a pool table, he added. It becomes a destination and its size can dominate the space.

Perhaps a spa or pool installation is part of the plan a few years after a major landscaping job is finished; a good design will accommodate that future addition. “If you plan those stages carefully, each one will look complete in itself,” Talago said.

Your intentions can point the way. “Big patio containers might be exactly the look you want. Well-placed trees or shrubs can buffer weather, provide shade, or enhance your privacy,” he said. Water tolerant plants like willow trees might be the perfect solution for soggy spots of the lawn.

Start by looking into local zoning laws, deed restrictions, and other constraints. The results could impact the project regardless of budget or scope of plans. Neighborhood rules can come into play, as well, Talago said. The ‘office’ can be as instant as wherever you sit down if you use a laptop computer, as your lap travels with you wherever you go! It can also be space that’s shared with others (e.g. kitchen counter, dining table), a specific area in your home (the corner of a room, a converted closet), or a dedicated room with a door (which may also serve double-duty as the guest room or exercise space).

If you’re going to be spending significant time in your home office, that side chair from the dining set you no longer have isn’t going to cut it. Go and find something that is suitably sized, adjustable for height, and comfortable. Consider this a sound investment in your long-term success.

You need to jump on Zoom, Skype, or FaceTime for work. Here are three things to keep in mind:

One final tip: Surround yourself with things that make you feel good! It can be framed photos of family, friends, or that great vacation you went on, or a memento from college or childhood. It can be scented candles or a vase with fresh flowers. Maybe it’s orienting your desk so you can see out a window so you have natural light and a nice view. HAVE A CLEAR SPACE TO WORK. One of my cardinal rules is to leave my home office with a clear workspace. This is typically the main desk area which my computer is on. The space may be chaotic while I’m in the middle of work, however I made the commitment to myself to do this. It’s along the lines of making the bed before you leave the bedroom.

HIDE THE CORDS WHEN YOU CAN. Visual clutter can impact your ability to start or continue working. I really appreciate my wireless printer, in that it doesn’t need a cable running to it from my desktop computer, and can also be located across the room. HAVE A PLACE FOR EVERYTHING… and put things back! One of the smartest things I ever did was to be consistent in where I kept things. The tape dispenser always goes back on my desk, even if I’ve used it in the dining room to wrap presents. Ink and paper always goes underneath the printer. You get the idea. LOCATION, LOCATION, LOCATION. You’ll likely spend many hours in your home office, so don’t stiff yourself on space. Also consider traffic flow and your ability to withstand distractions. Do you work best in the thick of activity, or should your office be tucked away in a quiet space? Consider what makes sense for all involved.

4. DRESS APPROPRIATELY!

Now, with four retail shops including wine tasting, six vineyards encompassing 80 acres across the Lehigh Valley, an annual output of 80,000 gallons and capacity to produce 125,000 gallons, it’s safe to say that water has been turned into wine.

W hat started out as a hobby is now the second largest winery by volume in Pennsylvania. Clover Hill Vineyards & Winery, with four retail locations in and around the Lehigh Valley, began as a hobby when founders John and Pat Skrip planted grapes at their home in Breinigsville in the 1970s. That hobby developed into a passion, and they began producing wines that they wanted to share with others. In 1985, they opened the doors of Clover Hill Vineyards & Winery, producing around 1,000 gallons of wine in their first year of operation. Growing up among the vines, two of the Skrip’s children have become an integral part of the family business.

“The idea was for me to come back and do the marketing, but when I went to Fresno State I kind of fell in love with the process of making wine,” explained John Skrip III. “When we first started, everybody thought we were nuts making wine in Pennsylvania. In the ’80s, it was an uphill battle. People thought if it wasn’t French or from California it wasn’t good. It was like pushing water uphill.”

In the early 1990s, after studying marketing at Penn State and enology (winemaking) at Fresno State in California, John Skrip III joined Clover Hill as its chief winemaker. Daughter Kari Skrip, seven years her brother’s junior, joined the family business after studying wine marketing at the University of Adelaide in Australia.

“My parents purchased the property in Breinigsville in 1976 to build a house there and also wanted to do something agriculturally with the land,” Kari Skrip said. “Dad was in construction and my mom had been a schoolteacher. In 1985, they decided to sell the construction company, go full-throttle and open up a winery. They didn’t have a lot of experience or background.”

“It’s interesting how my brother was so immersed in California wine culture and I was immersed in Australian wine culture and we both really wanted to come back to the family business in Pennsylvania,” Kari Skrip said. “We’re proud of the fact that when you are seeing farms chewed up left and right by development that we can be part of a farming business that can be profitable, arguably. It’s a really exciting business no matter where you are.”

“Probably the biggest factor that hinders us is that grapevines only need 12 inches of rain a year, and the Lehigh Valley averages 42 inches,” he said, adding that the extra moisture leads to disease pressures such as mold and mildew and fungi. “Spraying isn’t our favorite thing to do but it’s a necessary evil, and we try to utilize it as respectfully as possible.

Growing wine grapes in the region does present its challenges, as John Skrip III can attest.

“That term really touches on the fact that everything that’s involved in a bottle of wine —growing conditions, the soil, the climate, the landscape— really gives that wine a sense of place, and I love that about wine. Wine from Washington state is uniquely different than anywhere else in the world, and I love that about Pennsylvania wine, too.”

The two siblings now run most of the day-to-day operations with mom handling the books and dad helping to make big-picture decisions. A tight-knit family business offers its challenges, John Skrip III said. “With a family business everything is intensified. When we have fights, they can turn out to be doozies…but when everything clicks, it’s just rewarding. It’s nice to have those days where we’re getting along and making forward progress.”

Kari Skrip followed in her big brother’s footsteps, both in terms of joining the family business and with regard to her formal training. Before studying wine marketing and viticulture in Australia, she attended business school at Frostburg State University in Maryland.

Pennsylvania wines don’t taste like California wines, but they’re not supposed to, Kari Skrip said. It’s all about the “terroir.”

If you’re going to grow grapes on the East Coast, there is really no way of getting around it.”

The Skrip siblings said wine sales have been brisk during these challenging COVID-19 times, both with curbside sales at four retail locations and sales through grocery outlets.

“While other business are struggling…we have actually seen a big boost in sales,” John Skrip III said, expressing empathy for other businesses that are hurting. “People are staying home and enjoying our wine at night, and that is kind of rewarding.”

A more recent challenge, he said, has been the spotted lantern fly, a voracious pest believed to have been imported on granite shipped from South “Unfortunately,Korea. the insect seems to like our area,” John Skrip III said. The pest bores into the grapevines and sucks the sap out, he said, leaving behind a telltale glistening honeydew coating on the ground. “It kind of bleeds the plant to death. It’s a tough pill to swallow when you’ve worked the soil with your hands, set up the grapes on trellises and pruned the vines— it’s a lot of work— and then this shows up at the 11th hour two weeks before harvest starts.”

Spess says the puppies are typically 8 to 10 weeks when the group acquires them, and they are spayed or neutered and up-to-date on puppy shots. The pups begin their training between 12 and 13 weeks of age.

“We like to say we are saving two lives–the dog and the veteran.”

“We really want to rescue our pups, to give them a chance at a good life,” says Jana Spess, Program Administrator for Tails of Valor. “We like to say we are saving two lives—the dog and the veteran. We are always looking to build a relationship with a shelter or rescue for future dogs, and we pay all adoption fees.”

Tails of Valor looks for dogs that are confident in their own skin without being bullies. “We do a small amount of testing when picking out the pups we want for our program,” says Spess, noting that lab mixes are often preferred for their loyalty and retrieving ability. “They need to be able to stand alone from their pack, be alert and responsive when called, submit to being cradled and scruffed, and be healthy overall.”

The Tails of Valor Canine Connections Training Program typically runs 14 to 20 months, and in that time, dogs learn 40 commands or more and have at least 100 exposures. Dogs are trained and get accustomed to a variety of people, sights, and sounds at the group’s training facility, as well as offsite at the Coatesville VA Medical Center and Haven House in Allentown. Tails of Valor is also proud to be a pilot program for Animal Assisted Therapy at the Coatesville VA.

Each Tails of Valor puppy carries a proud moniker paying tribute to a fallen vet, and most are welcomed into the program from local animal rescues.

“Each dog must have at least three specific tasks they preform for their veteran, which can be anything from bracing and blocking to turning on light switches to nightmare interruption,” Spess Veteransexplains.andtheir dogs meet with a trainer once per year to re-certify. At each annual recertification, Tails of Valor supplies food for the life of the dog through vouchers from the sponsor VeRUS pet foods.

“There is no monetary cost to the Veteran, just the commitment of time and dedication to be part of the program—and a love for dogs,” Spess says. “Our mission is to provide holistic, non-medicinal rehabilitation therapies to improve veterans’ quality of life. We are always looking for more pups and volunteers. The more pups we have, the more veterans we can help.”

HOW TO GET

Sponsor – Different tiers of service dog sponsorship are available, including a $5,000 donation that allows you to choose the name of a dog in honor of a fallen veteran. Sponsors also get to be involved in key moments, like the dog’s graduation, and can see the dog any time they like.

Volunteer – Team up as a committee volunteer, community events educator, or a dog attendant. You can share your time in the office or at Tails of Valor events.
