holidays Victoria Leister runs Pharo Garden Centre with her partner, Ray Steidinger, who bought the business from the Pharo family in 1978 after working there for many years and graduating from Delaware Valley College with an ornamental horticulture degree. Leister, who earned an ornamental horticulture and landscape architecture degree from Temple University, joined the business in 1981. With those combined credentials, it should come as no surprise that the year-round business grows many of its own plants – including vegetable garden starts and annual and perennial ornamentals – at its own farm in Bethlehem Township. The business otherwise sources locally, with “organic” and “sustainable” firmly on the radar. “Our original intention was just to have a fun time at the end of the regular planting season and to enjoy our customers,” Leister explained. While Pharo Garden Centre currently sends out thousands of invitations to the event – redeemable for a surprise gift (as supplies last) and 10 percent off purchases – to thousands of people on its mailing list, that was not always the case.

“We didn’t have many customers who knew about the Christmas Shoppe at first,” Leister said, “and we didn’t send out invitations.” Customers originally learned about the endeavor, she said, when they came in to buy holiday items such as trees and wreaths and Christmas blankets.


Word traveled fast and was enhanced by the postcard invitations. During the regular planting season, Leister said, Pharo Garden Centre is basically a oneroom operation. That all gets transformed into individual holiday-themed rooms featuring old-world Christmas items from around the globe including Byers’ Choice, Ginger Cottages, Inge-Glas, German wooden ornaments, nutcrackers, smokers and carousels, as well as cemetery and fair-trade items. “It takes at least two months to set up,” Leister said. “Taking it all down is a much slower process because you have to carefully pack everything.” And as the seasons shift and customers come in to request items such as graduation ornaments, she said, “you have to know where everything is. We try to put things where we can find them. It has to be a little more organized than ripping boxes open and putting everything out.” The Pharo Garden Centre’s 30th Annual Open House and Christmas Shoppe runs from November 12 through November 30 Mondays through Fridays from 10:30 a.m. to 7 p.m., Saturdays from 10:30 a.m. to 6p.m., and Sundays from 11 a.m. to 5 p.m. The store will be closed on Thanksgiving, and the Christmas themes will be on display through the end of January.

pride of place “It takes so much time to put it up and we worked so hard on it from the end of the growing season that we’re not in a big hurry to take it down,” Leister said. Plus, she said, it’s not unusual for people to come in requesting an item someone else had been given as a gift during the holidays and who had inquired to the lucky recipient as to where it had been purchased. While you will never find a “sale” at Pharo Garden Centre, Leister said, all items are always priced fairly and competitively. ” Our prices are the same all the time. It’s not just that our prices are cheap, it’s that they’re fair.”

Is all the work of putting together the Christmas Shoppe worth the effort? Leister said it’s not about the monetary payoff. “It puts everyone in a good mood,” she said. “We love plants and we love growing them, and we like Christmas and making our customers happy. We like what we’re doing. I think if we didn’t we would have quit a long time ago. It’s hard work, kind of like having a dairy farm. You can’t ever leave.”

While making adjustments during the pandemic, such as expanding the dates of their Annual Open House and Holiday Shoppe in order to give customers a little more space, Steidinger and Leister said they are committed now more than ever to their mission of spreading natural beauty as well as Christmas cheer. “We’re just presuming that people will still want to shop,” Leister said. “When you run a business, you can’t have a black cloud over your head all the time. You’ve got to be a little optimistic.”

avishly creamy – without containing a drop of cream – and superbly comforting, risotto has been a classic Italian specialty for centuries. Although this dish finds a place on many contemporary American restaurant menus, a profound number of accomplished home cooks are intimidated by what they assume it to be difficult and intricate recipe. In fact, risotto is essentially just rice cooked in broth, with a mere handful of other ingredients. However, the technique and the type of rice used distinguish this delicacy.

GOING WITH THE GRAIN Starchy rice is essential for successful risotto. (That’s what creates the creaminess.) Arborio, a medium-grain rice, is always a good choice and can be found in most major grocery stores. Premium short-grain varieties of Italian rice such Carnaroli and Vialone Nano can be found in specialty shops and are best tried after perfecting your Arborio game. Avoid less starchy long-grain varieties such as Basmati and Jasmine.

TAKE THE SLOW LANE The real secret ingredient in risotto is time. The cook will be spending about 20 minutes at the cooktop slowly stirring in broth, one ladleful at a time. Consider this a compact with the universe to never desert your post during the process: Ignore the phone, your partner, the kids, and the dog. Lehigh Valley Marketplace photographer Ryan Hulvat, who spent a college semester in Italy, took a cooking class while abroad and found time spent stirring risotto to be a “meditative experience.” Although current recipe versions that hasten the process – we’re looking at you, Instant Pot – and reduce stirring time are basically missing the point. Generations of busy Italian nonnas probably embraced having this undisturbed “me time” at the stove. Sipping a glass of wine can enhance the contemplative endeavor.

DETAILS, DETAILS The foundation of flavor comes from sweating chopped onions (or other alliums such as shallots, garlic, or leeks) in a pan with butter or oil. The rice is then added to the pan to toast briefly. What comes next, should you choose to include it, is a good splash of dry

T I P S - Don’t rinse the rice, which removes the required starch. - Use a wooden spoon. A metal spoon can break the rice and make the dish mushy. And a wooden spoon doesn’t make an annoying scraping sound. - Keep the stock warm. Stirring in cold stock will mess up the cooking process. - Take a gentle, even approach to stirring. You’re not beating egg whites here! - Turning the heat on high will not speed cooking process. The rice grains won’t cook properly and you’ll have a burnt pan of goopy risotto with crunchy rice. - Reserve leftovers to make arancini, stuffed Sicilian rice balls rolled in breadcrumbs and fried until crisply golden. They are utterly irresistible as a snack or app.

white wine which adds acidity to the dish and cooks off before incrementally adding the warmed broth or stock to the pan. This method allows the rice to gently shed starch as the stirring keeps them bumping together. The best way to tell when risotto is done is by tasting frequently during the last few minutes: The rice should have a toothsome bite and the sauce should be neither runny nor sticky. Should you run out of broth before the rice is done, simply use warm water as needed. Also, if a spoon dragged across the bottom of the pan leaves a trough that fills in gradually like flowing lava, that’s another indication that the risotto is ready for a bit of butter and hand grated Parmesan.

TWEAK THE TASTE Risotto may be adapted for the season with such additions as fresh peas or asparagus in spring or butternut squash or porcini mushrooms in winter. Serve as a stand-alone first course or complement with proteins for a main course. Grilled shrimp or scallops are outstanding partners, and anyone who’s watched Hulu’s food-centric show The Bear knows that braised short ribs of beef served with risotto is a praise-worthy combo. Presenting risotto on an oven-heated plate is highly recommended: Starch-based sauces thicken as they cool, and preserving the luscious texture of this sumptuous dish is paramount for pleasure.

BUY LOCAL, EAT GLOBAL Risotto alla Milanese, one of the most beloved versions of risotto, boasts an enticing golden glow acquired by the addition of saffron. The delicate red stigmata of the crocus flower impart a complex earthiness to savory dishes, baked goods and beverages. Although considered the world’s priciest spice, only a few threads deliver intense color and flavor – so a little goes a long way. With a mission to bring high quality and healthful imported saffron to American and Canadian audiences, Ali Almasi, a graduate of Lehigh University’s Technical Entrepreneurship program, founded his flagship brand Zaffrus (zaffrus.com) in Bethlehem in 2017. The website offers different styles of saffron, including organic and premium, and saffron-infused products. However you use it, saffron adds a touch of elegance.

RISOTTO INGREDIENTS 6 cups broth (chicken or vegetable) 1 T olive oil 2 T + 2 T butter 1/2 medium onion, chopped finely 1/2 cup dry white wine (optional) 3 cups Aborio rice Salt and freshly ground pepper Handful of grated Parmesan Olive oil for garnish (optional) Grated Parmesan for garnish (optional) Chopped flat leaf parsley (optional)

DIRECTIONS Heat stock to a low boil in large saucepan; reduce to medium-low heat and keep warm. Warm olive oil and melt 2 tablespoons butter in a large, heavybottomed pan over medium heat. Add onion and sauté until translucent. Add rice and stir for about 2 minutes to coat the rice with the butter and oil. The rice should be lightly toasted, with a nutty aroma, but not browned. If using wine, stir it in briskly until wine is fully absorbed. Next, begin gently stirring in hot broth, one ladleful at a time. (At this point, a timer set for 15 to 18 minutes can help to make sure the process is on track.) Continue stirring and adding a ladleful of broth when the previous addition of liquid has been absorbed. Season with salt and pepper to taste. When the rice is cooked al dente, stir in the remaining 2 tablespoons of butter and handful of grated Parmesan. Plate and drizzle lightly with olive oil, and sprinkle with Parmesan and parsley as desired.

VARIATION:

RISOTTO ALLA MILANESE Following the above directions to the step where the rice is toasted. At this point add wine along with 2 good pinches of saffron (about 0.25 gram), stirring briskly. When the wine cooks off and is fully absorbed, continue the process of stirring in 1 ladleful of stock at a time as described above. How do I know if I need joint replacement surgery?

Am I too young or old for joint replacement surgery?

Once diagnostic tests confirm osteoarthritis, nonsurgical options such as weight loss, physical therapy, pain medication and joint injections may help. “Joint replacement is the last option to consider after first trying more conservative measures,” says orthopedic surgeon Eric Lebby, MD. Does joint pain diminish quality of life? Regularly cause sleep loss? Impair normal function or activities, including work and recreation? If so, surgery may be called for.

Many people get total joint replacement surgery in their 60s or older after a lifetime of joint wear and tear. “But age isn’t the most important consideration,” says orthopedic surgeon Wayne Luchetti, MD. “A younger person can be a candidate if joint damage is significant enough.” In older people, overall health and ability to recover count more than age.

roundhog Day isn’t as widely celebrated as other holidays, but that wouldn’t be the case if it were up to Terry Ellis, owner of The Sweet Spot in Allentown, who puts the holiday at the top of his list. Twenty years ago, Ellis began hosting a Groundhog Day neighborhood party where he served his homemade pulled pork recipe. As word spread, instead of heading to Punxsutawney on the special day, friends, family, and strangers came from all around to Ellis’ event, which eventually needed to be relocated from his house to a larger venue to accommodate the expanding guest list. Nowadays, you don’t have to wait until February 2 to enjoy this regional favorite. The pulled pork is offered exclusively at The Sweet Spot where you can order it any time of the year. Although he likes to keep some of the magic behind the taste under wraps, he reveals it’s a 48-hour process, marinating the pork for 24 hours in his own combination of dry-rubbed herbs and spices, and slow-cooking for another 24 hours. here are those rare classic cars that are total eyecatchers resulting in doubletakes. You know the kind,…’55 Aston Martin DB3S, ’63 Shelby Cobra, and ’57 BMW Isetta. The last one, in case you’re not familiar with it, is rather unique, and happens to be owned by Scott Westgate, formerly of Bethlehem.

Scott’s interest in cars started with his father. Regaled by his dad’s stories of a simpler time, including how he changed the transmission of his 1956 Bel Air by dropping it onto his chest and the countless adventures with his mother’s 1956 VW Beetle, Scott got the car bug. “I think genetically I got it from my Dad, although while he prefers German cars, I developed an affinity for small British and Italian cars,” Scott says. When he was a teenager, Scott’s father took him to Quakertown’s annual car show, and there he saw an MG Midget in person: it was “love at first sight” for this car guy! Scott ended up buying one of his own when he was in college, and it became a father/son project over the next year to get it back on the road.

But we’re here to talk about Scott’s other classic car: the 1957 BMW Isetta. He was always been aware of the car, however, it wasn’t until he showed a documentary to his then girlfriend (now his wife) that she fell in love with it. “She is a toy designer and was taken by something that is essentially a life-sized toy car,” Scott shared. BMW produced only 161,360 Isettas during its production run from 1953-1962. Of those, 8,500 were exported to the USA, and it is estimated only 1,000 of those still survive today. Interestingly, the Isetta is powered by a single-cylinder motorcycle engine and has a whopping 13 horsepower! It took Scott six months of looking until he discovered one that fit the bill in Michigan. Keeping it a secret from his wife-to-be, he purchased it, sight unseen, and had it shipped to his home in Bethlehem. In October 2014, it arrived on a trailer, and it took Scott the next few months to get it safe and roadworthy, changing out the tires, rebuilding the brakes, fixing the horn, and some other odds and ends. The timing worked out, so Scott was able to complete the work before Christmas.

He shared, “I revealed the car to her on the Sunday morning before Christmas and took our first ride together in it to church.” He added: “She’s not into cars that much but she’s into this one!”

INTERESTING FEATURES It’s very small—so small you could even park perpendicular to the curb, if necessary! There is only one door, and it opens in the front along with the steering wheel swinging out of the way with it. Although BMW bought the rights to the design to manufacture it, it was initially designed by Iso, an Italian company, who made refrigerators at the time. So the door in the front made sense! The shifter for the 4-speed manual transmission is on the left side of the driver, instead of the right. And the gears are in reverse order, with 1st gear down and to the right. So, not only do you have to use your left hand to shift, but it’s in a reversed shifting pattern! Also, there is no gas gauge. For that reason, Isettas were fitted with a “reserve” fuel supply that could be accessed via a lever inside the car.

If the car you’re buying isn’t made anymore, you’re looking for a mechanic with specialized skills. Brown Sugar Dijon Glazed Salmon INGREDIENTS 8 oz. salmon filet, skin off Salt and pepper to taste 1/2 oz. vegetable oil 1 T butter For the glaze: 2 T brown sugar 2 T Dijon mustard For the vegetables: 3 oz. diced butternut squash 6 oz. Brussels sprouts, halved 1/2 oz. mild tasting oil, such as vegetable or sunflower Salt and pepper to taste For the purée: 1 cup large diced butternut squash 1/2 cup heavy cream Salt to taste

DIRECTIONS Salmon: Season top of salmon filet with salt and pepper and sear in a hot ovenproof pan with vegetable oil and butter. When a good sear has formed, flip the salmon and spoon brown sugar and mustard over top. Place in a 375°F oven for 12 to 15 minutes or until internal temperature reaches 135°F. Vegetables: Roast squash and Brussels sprouts with oil, salt, and pepper in a 375°F oven for 20 minutes or until fork tender. Purée: Place squash, cream, and salt in saucepan. Cook on low heat until squash is tender. Transfer contents of pan into a blender and process until smooth. Plating: Spread puree evenly on plate. Place roasted vegetables on top in center then position salmon on vegetables. Serve at once.

These days, the trombonist, singer and band leader, who moved to Tinicum Township in 2015, is more likely to be found playing in Bucks County than in the Big Apple.

“Even before the pandemic, I had been planting the seeds to play locally,” he says. “Pennsylvania was quicker to ease up on the restrictions than New York, so I’ve found myself working more in Pennsylvania. In New York, I have only one weekly engagement. Out here, I’ve been playing three days a week.” His “First Friday” performances with his quartet at Durham Springs in Kintnersville, were among his first in the area. “I had gotten to thinking it would be nice to play closer to where I live, so I made the rounds and ended up at Durham Springs,” he recalls. He started his monthly cabaret there in spring 2019, attracting a regular crowd. “The dance community from the neighboring towns—Bethlehem, Allentown, Easton, the New Hope area—would come out and dance to the music, which was wonderful.” He also performed there on New Year’s Eve and,

following a pandemic-induced hiatus, outside on July Fourth. Since Pennsylvania reopened, all of Arenella’s performances have been outdoors. His regular regional venues include a courtyard at the 1740 House in Lumberville, the porch of the National Hotel in Frenchtown, N.J., and outdoors at McCoole’s Red Lion Inn in Quakertown. He is hopeful that restaurants will try to keep open-air venues for dining, even as indoor dining returns. “When it gets colder, it will be a challenge for musicians to play outside in the elements, he says, “but we sweated it out all summer playing on the sidewalks. Musicians are hardy and will do what need to do till everything comes back.”

“They are just aching for any inkling of what life used to be,” Arenella says. “Things that we may have taken for granted are real commodities right now. Listening to a live band, having a cocktail are simple pleasures people are really longing for.” Arenella also has an interest in what life— and music—used to be. “I’ve always had an affinity for old things,” he says. “Old music, old cars, old books, antiques, even junkyards.” His fascination with the music of 1920s and early 1930s prompted the formation of his New York-based Dreamland Orchestra, a Jazz Age dance orchestra that dresses in period outfits and plays music that Arenella transcribed note-for-note from old 78-rpm recordings. “It’s very unique repertoire that you won’t find anywhere else in the world because I’m the only one crazy enough to sit down and transcribe a lot of that stuff.” “That era still holds a dear place in my heart, but I’m not strictly the 1920s guy anymore,” he says. “I’m embracing anything that’s beautiful, from Frank Sinatra to Charlie Parker to Miles Davis. There’s so much beautiful music that I don’t focus on one era specifically. I play what I consider classic jazz. That can apply to Louis Armstrong and Chet Baker and everything in between.”

With social distancing at play, most of Arenella’s recent live music making has been as part of a duo, with a guitarist or a pianist joining him. When space permits, he adds a string bass and maybe drums.

His two recordings offer listeners both options. “Blue River” features the music of the 1920s, played by a 12-piece orchestra, while “Just in Time,” recorded with a six-piece band, samples later styles of jazz.

“I carve out my own little jobs and produce my own events,” he says, adding that he enjoys helping keep other artists employed. “It’s important to remember people in the arts right now.”


ALL THAT BUCKS COUNTY JAZZ With some down time during the pandemic and a desire to help both his community and other musicians, local musician Michael Arenella plans to produce a jazz festival in Tinicum Park. Be sure to keep a lookout for the announcement about the Bucks County Jazz Festival. Arenella expects to start modestly, working on his own and hiring bands he has connections with, but he hopes to build the festival over the years, involving sponsors and turning it into a world-class event featuring performers from around the globe. The festival could eventually feature performances, jam sessions, master classes and other educational programs at satellite sites and businesses nearby, he says.

Arenella’s Jazz Age Lawn Party, a multiday event that draws approximately 5,000 people daily to Governors Island in New York to celebrate the music and culture of the 1920s, would have celebrated its 15th anniversary this year, had the pandemic not canceled it. While the Lawn Party focuses on the music of the 1920s, the Bucks County festival will also feature later eras and more diverse types of jazz. “I think it would be real exciting for Bucks County, for the Lehigh Valley and for tourism,” Arenella says. “I’d like to reach out to local businesses and get them involved to help me build this to eventually reach the same scale of the event on Governors Island.”

Tinicum is an ideal location for the event, he says, noting that it is rural yet close to urban areas such as New York and Philadelphia, which are home to many great jazz musicians. “I want to bring what I’ve built and created to Bucks County and contribute to my community in a meaningful way, and the strongest resources I have are my music and my ability to create world-class events,” Arenella says. “It’s a little lazy on my part, too.
