Hospitality & Culinary Arts retired Professor. I have studied and wrote curriculum for a new cultural studies course emphasizing the role food plays in the arts, especially film and literature by defining peoples and cultures. Historically food and food rituals created identity markers for race, cultural and/or religious affiliation. These deeply-defined cultural markers identifiable through food also separate us by attitudes of superiority & ethnocentrism however when studied, food is a communicator when used as a theme in film and literature and takes a lead role breaking the barriers of the past by defining foods ability to communicate Using its role in the universal commonality of identity which recognized and has powerful unifying effects over religious, race, culture and socioeconomic boundaries that have been firmly and deeply rooted throughout the existence of human evolution.
