Instructions:
Prepare the Cake:

In a bowl, sift together the flour, baking powder, salt, cinnamon, and nutmeg.
In a separate bowl, cream the butter and sugar until light and fluffy Add eggs one at a time, beating well after each addition
Mix in the vanilla extract and rum
Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Fold in the soaked dried fruits and nuts, if using.
Bake the Cake:
Pour the batter into the prepared cake pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean
Let the cake cool in the pan for 10 minutes, then remove and allow to cool completely on a wire rack
Soak the Cake:
Once the cake is cool, poke small holes all over the top with a skewer or toothpick. Slowly pour additional rum over the cake, allowing it to soak in. For a more intense flavor, wrap the cake in plastic wrap and let it sit overnight before serving.
