In preparation for the holiday feasts yet to come this year, I suspect some of you might be looking to change your fitness routine. We have something for everyone! Tai Chi, Yoga and Water Exercise are easy on the joints, yet very effective ways to stay active. For those who are a little more adventurous, I invite you to try out Beginning Ballet or West Coast Swing. And, don’t forget about the kids; check out the wide variety of activities for them on pages 12 & 13. Cooking for a Crowd
If you enjoy cooking, want to learn more about cooking for a crowd and would like to help brighten the lives of others, this workshop is for you! Join us for this unique culinary adventure where we will cook and serve a meal for families staying at the Park Avenue Ronald McDonald House (RMH) in St. Louis. Part of the mission at the Ronald McDonald House is to provide a comfortable place to stay for families of seriously ill children receiving treatment at St. Louis area hospitals. In this hands–on workshop, you will learn some key tips for cooking for a crowd from Chef Stephanie Vallo including simple recipes with big taste, sanitary food preparation, efficient service to a large group, proper cleanup and food storage. You will also be introduced to the variety of volunteer opportunities available in the Metro East community by local philanthropist Christy Schaper. Workshop fee includes all supplies, food and materials for preparing the meal for the RMH families and transportation for the round trip expedition to St. Louis and back. If you have ever thought about providing a meal for the Ronald McDonald House families, but found it overwhelming to coordinate, get on the bus & come with us! Fondant Basics: Cake Pops
You asked for it and now here it is! This hands–on workshop is all about using buttercream and icing tips to give your cakes that finished, picture perfect look just like the pros. Cake artist Michelle Davenport of Sweet Indulgences will show you how to make scrolls, flowers and other designs. Then you will put these new skills and techniques to use as you decorate a cake to take home at the end of the night. All materials and supplies are included in the course fee.
Explore the latest trend in confectionary creations by learning how to create Thanksgiving themed cake pops! Perfect for parties and special events, cake pops utilize cake, candy and fondant to transform any shape into a sweet treat on a stick. In this hands–on workshop, cake artist and owner of Sweet Indulgences, Michelle Davenport, will teach you how to prepare and dip ordinary cake balls and decorate them to look like turkeys and fall leaves. The Japanese language has several writing systems. In this class, you will learn about the different ways Japanese people read and write. Understanding the Geriatric Client
This one hour workshop is designed to be an overview of the possible barriers to the care of the geriatric client with cognitive limitations. Not all cognitive deficiencies present the same way. While some may be limited to short term memory issues, still others may be unable to process new information, or have needs that are compounded by sensory limitations such as impaired vision or hearing. Participants will learn how to enter the world of a client with cognitive impairments, manage family response to such limitations and how to provide optimum care for the geriatric client while avoiding burnout. Plein air painting or drawing is done outdoors and began when the Impressionist artists worked outdoors and saw how sunlight affected their colors. In this class, participants will experience outdoor painting scenes along the banks of the Mississippi River, the Parks above the River, old Alton and the scenery surrounding the area. The instructor, artist Eugene Ursprung, will demonstrate watercolor techniques and explain color combinations, depth in painting, along with other drawing and painting techniques. Author of “Igniting the Sacred Fire, Reinventing Yourself at Any Age” she shares her process of “reinvention” to a full–time entertainment career at age 50 against all odds and in the midst of great personal crisis that included a failed family business, dual unemployment, bankruptcy, and foreclosure. Learn what personality traits it takes to be a successful entrepreneur, the variety of resources available to assist in the process and techniques for marketing your new business on a shoestring budget. Nancy has owned four businesses ranging from retail sales and custom framing, to piano tuning and service, to publishing and currently personal development coaching and entertainment. She is a third generation entrepreneur having grown up in her father’s sales business and has coached and mentored others in what it takes to make it as a successful entrepreneur.
Flagger: Highway Work Zone Safety
This course will focus on a review of the standards established by the National Safety Council and the Manual of Uniform Traffic Control Devices (MUTCD). Emphasis is placed on individual flagger requirements regarding at–risk worker training and responsibilities. Topics of discussion include, but are not limited to, advance warning areas, transition areas, activity areas and termination areas of work zones. On–site outdoor training examples are used to illustrate the proper selection set up and use of temporary traffic control devices. This 4–hour course is designed to satisfy Federal, State and Local flagger certification requirements. Jesse Allen Jesse Allen received his bachelor’s degree in psychology from the University of Illinois. After returning to his hometown of Edwardsville, Jesse received his teaching certificate in special education and his bachelor’s degree in education from Southern Illinois University at Edwardsville. He taught students with severe behavior disorders and zero–tolerance offenders in Madison County for ten years. During that time he received his master’s degree in education from SIUE. He also worked on statewide grants for social emotional learning. He resides in Edwardsville with his wife, Lisa, and two daughters, Eloise and Zinnia.

The goal of the Adult tennis program is to introduce and reinforce tennis skills for players who may be just starting to learn to play, or for those players who have already acquired the basic skills of the game. Understanding these foundational components will help you to see with fresh eyes and elevate your work to a new level. Tennis camps for kids can be a fantastic way to build healthy bodies, make new friends and develop lifelong skills. This program introduces tennis in a fun environment. Players learn the technical fundamentals of the forehand, backhand, serve, overhead and volley,while also improving their reflexes and speed with their footwork. Students will be grouped by ability levels the first day of class. Don’t forget your tennis racket and water bottle.
The Mini Tennis program is for children ages 5 to 7 interested in tennis and having fun! Children learn the basics of tennis through the development of warm–up skills, motor skills, racquet skills and playing skills. Development is achieved through fun activities conducted on a smaller tennis court with balls that are slower and lighter, which allows participants to cover the court, hit more balls and build confidence. Tennis rackets and balls will be provided. Players are encouraged to bring a water bottle.
Young riders will learn about the wonderful world of horses in this beginning riding class for parents and kids. Parent/child teams will experience everything from the feel of a horse’s fuzzy muzzle to the giggles of excitement during your child’s first trotting steps in the saddle. Kids will learn how to brush their horse, put the saddle on its back, and tell it how to stop, go and turn in the very first class. Rocky Branch horses are generous, patient and sweet–natured. Riders will demonstrate their new skills for family and friends on the last day and be presented with a rosette ribbon. Young riders must be accompanied by an adult who will participate in each class by helping to brush, saddle up and lead the horse while their child is riding.

The Rocky Branch Saddle Club’s 10–level program takes riders from beginner to accomplished equestrian. Each level is a set of building blocks combining riding skills and horse care knowledge such as how much oats to feed a horse, the difference between hay and straw, and how to clean a horse’s hooves. Riding activities include playing games on horseback, riding bareback, navigating hills and bridges and a life–size riding maze. Saddle Club riders will learn to ride both English and Western styles with confidence. Merit pins are awarded at each level; riders who complete all 10 levels will graduate as an assistant riding instructor. Special activities include arts and crafts, demonstrations from a professional horse trainer, and assisting a veterinarian or horse– shoer. For classes that meet four or more times, you may withdraw before the start of the second session in order to receive a refund. There are no refunds for classes that meet three or fewer times once the class has begun. To withdraw, call the Enrollment Center at (618) 468.7000.
Enroll Early!
All classes have limited enrollments and are filled on a first–come, first–served basis. Each class also has a minimum required enrollment. If this minimum is not met prior to a class starting, the class will be canceled and enrollment fees returned.

Once your fee is paid you are officially registered. Plan to attend the first session as scheduled. You will be notified if the class is canceled.

Children should attend class dressed appropriately for the weather or to suit the program. Art and science classes may be messy! Students are encouraged to bring their own water bottles to class; water is always available for refilling. Students attending an all–day class should bring a sack lunch and drink.
Safety
Students should be dropped off no earlier than 10 minutes before their class begins and should be picked up immediately following dismissal. Supervision will be provided for students ONLY 10 minutes before and after class.
