PAIR BEER WITH FOOD Metro Editorial The craft beer boom has inspired millions of people to look at beer through a new lens. Once relegated to backyard barbecues and ballgames, beer is now served alongside gourmet meals. Much like the right wine can make a meal taste even better, beer can bring out the flavors of food, making it an ideal complement to anything from steak to seafood to salad. The Brewers Association is an American trade group whose membership consists of more than 5,400 brewers, suppliers and retailers. The group recommends beer lovers follow a three-pronged approach to matching beer and food. It's worth noting the BA does not view this approach as a 1-2-3 process, meaning beer lovers need not follow the steps in order to perfect their pairing skills. 1. Match strength with strength. The BA recommends pairing strongly flavored

foods with assertive beers and delicate foods with delicate beers. For example, a relatively low alcohol witbier should pair well with light seafood like steamed mussels. Beer lovers who enjoy strong barley wines, which are typically 10 percent alcohol by volume (ABV) or higher, should find that a strong cheese or dessert matches up well with this overpowering style. 2. Find harmonies. The BA notes that beer-food combinations typically resonate most effectively when they share some common flavor or aroma element. The BA points to how the deep, roasted flavors of an imperial stout often pair nicely with chocolate truffles. 3. Consider sweetness, bitterness, carbonation, heat (spice), and richness. The BA

HOW TO... GRILL A JUICIER BURGER Metro Editorial Summer weekends wouldn't be the same without backyard barbecues. And no backyard barbecue is complete without hamburgers. The exact origins of the hamburger are unknown, but historians believe this beloved staple of American barbecues can be traced to mid-nineteenth century Germany. According to History. com, political revolutions in Germany in the 1840s spurred many Germans to emigrate to the United States. Germans brought many of their cultural traditions with them, including their cuisine. One such dish was the chopped steak, which can be traced to Hamburg, a city renowned for its high-quality beef. Though few might now see ground beef as a remedy for digestive issues, that was a common belief in the 1860s, when a New York-based doctor named James Salisbury suggested that cooked beef patties could benefit the digestive system as much as chopped, chipped or ground beef. Buns were not yet in the picture at that time, but they were by 1904, when beef patties on buns were available at the St. Louis World's Fair. In 1921, the first White Castle restaurant opened in Kansas, and hamburgers have been a staple of American cuisine ever since. Though it's been a century
since White Castle opened its first restaurant, people are still perfecting the art of making the perfect hamburger. Exactly what defines the perfect hamburger may be open to debate, but there's no denying the desirability of juicy burgers. As grillmasters prepare for another season of backyard barbecues, the following are some ways they can make their burgers more juicy. · Avoid extra-lean meat. Extra-lean meat might be healthier than the alternatives, but 93 percent lean ground beef is unlikely to produce juicy burgers. When making burgers from scratch, opt for 80 percent lean. WebMD notes that fat helps to hold burgers together while searing and cooking the meat. The result is a more juicy interior than cooks are likely to get when using lean meats. · Swap beef for lamb. Cookbook author John Holl notes in his book, "The American Craft Beer Cookbook" (Storey), that substituting ground beef with

ground lamb makes for a juicier burger. Lamb is moist, so unlike lean beef, it can be grilled as well-done without drying out. Lamb also offers a different taste than beef, adding a little variety to a backyard barbecue. · Saddle your spatula. Flipping the burgers too much or pressing them against the grill as they cook can dry them out. · Be conscious of carryover cooking time. Carryover cooking time refers to the length of time temperature in a food continues to rise even after it's been removed from a cooking area. Beef is among the many foods that continue to cook after being removed from a heat source, so beef burgers can be removed from the grill before they reach the desired cooking temperature. This prevents drying out and ensures that once they're served, the burgers will be juicy and safe to eat. Grilling a juicy burger is easily accomplished with a few simple and time-tested strategies. Traditional tends to have more earth tones, where Contemporary shows more greys and whites. Next decide whether you like a consistent pattern, or like the movement or vein look throughout the slab. Something else to consider, is the lighting in your space. If you have a smaller space with little natural light, you will want to stick with a lighter color countertop. If your space is open and has lots of natural light, a darker countertop color would work. After finding the perfect countertop, it is time to decide on the various fabrication options. First you want to select your edge profile. We have over 9 standard edge profiles to choose from along with many upgrade options. Next, choose the installation type for your sink. Undermount or Self Rim? With undermount sinks, we use a mechanical bracket that supports the weight of the sink and secures it underneath your countertop. We use a 30-year silicon to seal the sink to the countertop. Self-rim, or Top Mount sinks are supported by the countertop and rest on top. The last thing to think about is what type of backsplash. There a few options, if the backsplash needs to go all the way up to your upper cabinets, you can either choose tile or use the same countertop material as backsplash. BRICK AND MORTAR STORES Courtesy of Sam Dial Jewelers Most people these days don't start shopping at a "Brick and Mortar" store for an engagement ring or a diamond; it's just too easy and convenient to research on your phone. But, according to The Knot, 87% of shoppers still prefer buying in store. Online research can be daunting. Most websites are trying to promote a certain platform or website from which to buy and they are biased. GIA.edu is a good place to learn credible facts about the characteristics of diamonds. You can learn about cut and how it affects overall brightness and light output. You can learn about internal clarity characteristics. You can learn what "color" means and how it affects overall brilliance. These attributes are fairly quickly understood superficially if you can look at examples in person, but you can get a head-start understanding the concepts on GIA.edu. On my many trips to Antwerp to buy directly from the cutters, and to get the first pick of all the new stones available, I sorted through hundreds of the exact same size diamonds with exactly the same characteristics on paper. I would narrow my choices down to say 12 from 100, and then look again and again to pick the top 2 or 3. Because of the arrangement and location and size of the natural 12 | July 18, 2021
inclusions, even though they are the same grade, stones can have brilliancy scores that are vastly different. Furthermore, within the same color grade, there can be a further refinement of the color so that one diamond can face up much whiter than the other. The result - hand selecting really does mean something. Years of training to pick diamonds that maximize brilliance by selecting top color range and optimal clarity arrangement, all while looking
out for issues with faceting, fluorescence, proportions, and symmetry (to name a few), are essential. Most websites do not even look at the diamond for you; they list stones on a database from sellers all over the world. They, themselves, look at a list and computer images to "help" you select a stone from stock that is LEFT OVER from discerning buyers like me. So, buying one actual diamond from a sea of those choices online, without

even comparing them, is not recommended. Whether or not you buy a stone through me is another issue, but not the purpose of this article; at least buy it from somewhere that is independently and locally owned. You will pay for what you actually get. You will have a professional help you navigate through all the information and choices.
