Many people insist grilling has no peers when it comes to cooking methods. Part of the allure of grilling is undoubtedly the chance to spend time outdoors in warm weather, which is when many people do the bulk of their cooking over an open flame. But grilling also produces unique flavors that simply can’t be replicated. It might be impossible to match the flavor of foods cooked over an open flame, but that doesn’t mean those flavors can’t be augmented. Grillmasters can try these strategies to improve the flavor profile of their favorite grilled dishes.
ADD SOME WOOD Wood is often utilized to add some extra flavor when smoking foods, but it also can add flavor when grilling in a more traditional way. Wood chips can be soaked in water or even wine or beer so they don’t burn so quickly that the flavor gains are negligible. Wood chunks or logs will burn slower than chips, so there’s no need to soak them. Wood imparts a unique flavor to grilled foods, making meals even more delicious.
APPLY A DRY RUB TO THE FOOD Dry rubs are made from dry ingredients like herbs and spices. Dry rubs don’t penetrate the meat too deeply, which means they

don’t need much time to add flavor. That’s ideal for people who decide to grill at the last minute and want to add flavor even if they don’t have the time to marinate their meat.
BRING MEAT TO ROOM TEMPERATURE PRIOR TO PUTTING IT ON THE GRILL Meat that goes directly from the refrigerator to the grill is likely to cook unevenly, which can affect the overall flavor of the meal. But this issue is easily overcome by taking the meat out of the fridge about 20 to 30 minutes before putting it on the grill. Doing so lets the meat reach room temperature and increases the likelihood it will cook evenly.
SEASON YOUR VEGETABLES, TOO Meat and other proteins might garner the bulk of the grilling attention, but vegetables are worthy additions to any grill grate. Grilled vegetables can be made even more flavorful with some light seasoning with a little kosher salt and/or black pepper before placing them on the grill. As the vegetables cook, they will absorb the salt, which adds to their flavor profile. Dried herbs also can be used to season grilled vegetables for even more flavor. Grilled foods are incredibly flavorful. That flavor profile can be even better when grillmasters employ a few simple techniques.

HOW TO... CHOOSE A STONE SURFACE Finding the perfect countertop Courtesy of Granite Concepts When choosing your countertop, first ask yourself if you want a traditional or contemporary look. Traditional tends to have more earth tones, where Contemporary shows more greys and whites. Next decide whether you like a consistent pattern, or like the movement or vein look throughout the slab. Something else to consider, is the lighting in your space. If you have a smaller space with little natural light, you will want to stick with a lighter color countertop. If your space is open and has lots of natural light, a darker countertop color would work. After finding the perfect countertop, it is time to decide on the various fabrication options. First you want to select your edge profile. We have over 9 standard edge profiles to choose from along with many upgrade options. Next, choose the installation type for your sink. Undermount or Self Rim? With undermount sinks, we use a mechanical bracket that supports the weight of the sink and secures it underneath your countertop. We use a 30-year silicon to seal the sink to the countertop. Self-rim, or Top Mount sinks are supported by the countertop and rest on top. The last thing to think about is what type of backsplash. There a few options, if the backsplash needs to go all the way up to your upper cabinets, you can either choose tile or use the same countertop material as backsplash. If you don’t

need to go all the way to the uppers, another option is to run a 4-6” strip of countertop material along the walls. Decisions are made. Time to template the project. We use a laser template system to collect 2D and 3D data. After collecting the information, our template technician will go over some final details such as seam placement and outside/inside radii. Once our programmer receives the data from the template technician, we can get you involved in layout with our state of the art layout software, where we have high resolution pictures of all of our slabs and can drop the templates on the slabs to show the various options in layout. After all the data is processed, it is time to get cutting. At Granite Concepts, we use a Saw-Waterjet CNC that can perform any straight cut with a Diamond blade, while finishing up arcs, inside/outside radii, sink cutouts, and cooktop cutouts with a very precise waterjet, giving us the upmost precision. Once the CNC is done cutting out the tops, our fabrication team with a combined 20 years of experience will make sure the hand polish is perfect on your countertops. Finally, Time for installation. Our installation team will arrive and carefully assemble your countertops in your home. After the install is complete, they will go over the routine care and maintenance to help your countertops look as good as new for years to come.

None of us like pain and we all complain about it. We spend hundreds, even thousands of dollars trying to rid our bodies of it. We go into the doctor’s office and when they ask us what the problem is, we state by saying that we have pain. Let’s dissect this further. Pain maybe problematic, but it is not our problem. The pain is simply the SYMPTOM of an underlying problem, but it is not the problem itself. PAIN ACTUALLY PLAYS A VERY IMPORTANT ROLE...IT IS A PROTECTIVE MECHANISM The body uses pain to signal us that something within is systems/structure is wrong. So, when we have pain, we need to begin asking, “What is causing my pain”. By doing this, we will begin to look at pain differently. If we find out the “why” and handle that, then we are in a better position to control our bodies. Not only enabling us to handle the pain, but now we are best positioned to keep it from reoccurring. WHAT SHOULD I BE LOOKING FOR? I don’t know if you noticed, but when you visit a doctor or a physical therapist, they are not interested in what feels good. They only are interested in what hurts. step further and they push on it making it hurt worse. WHY? The purpose of this is...they are trying to determine what pieces and parts of your body are involved. If it hurts, it is relevant making it easier to establish a treatment plan. So when you are having pain there are helpful things to look for: 1) what causes your pain 2) what makes it worse (positions, activities, duration of activity, time of day, etc 3) what makes it feel better (yes... it is important too). With this basic information, it will give

HOW TO... BUY DIAMONDS: ONLINE VS. BRICK AND MORTAR STORES Courtesy of Sam Dial Jewelers Most people these days don't start shopping at a "Brick and Mortar" store for an engagement ring or a diamond; it's just too easy and convenient to research on your phone. But, according to The Knot, 87% of shoppers still prefer buying in store. Online research can be daunting. Most websites are trying to promote a certain platform or website from which to buy and they are biased. GIA.edu is a good place to learn credible facts about the characteristics of diamonds. You can learn about cut and how it affects overall brightness and light output. You can learn about internal clarity characteristics. You can learn what "color" means and how it affects overall brilliance. These attributes are fairly quickly understood superficially if you can look at examples in person, but you can get a head-start understanding the concepts on GIA.edu. On my many trips to Antwerp to buy directly from the cutters, and to get the first pick of all the new stones available, I sorted through hundreds of the exact same size diamonds with exactly the same characteristics on paper. I would narrow my choices down to say 12 from 100, and then look again and again to 12 | July 17, 2022

Because of the arrangement and location and size of the natural inclusions, even though they are the same grade, stones can have brilliancy scores that are vastly different. Furthermore, within the same color grade, there can be a further refinement of the color so that one diamond can face up much whiter than the other. The result - hand selecting really does mean something. Years of training to pick diamonds that maximize brilliance by selecting top color range and
optimal clarity arrangement, all while looking out for issues with faceting, fluorescence, proportions, and symmetry (to name a few), are essential. Most websites do not even look at the diamond for you; they list stones on a database from sellers all over the world. They, themselves, look at a list and computer images to "help" you select a stone from stock that is LEFT OVER from discerning buyers like me. So, buying one actual diamond from a sea of those choices online, without

even comparing them, is not recommended. Whether or not you buy a stone through me is another issue, but not the purpose of this article; at least buy it from somewhere that is independently and locally owned. You will pay for what you actually get. You will have a professional help you navigate through all the information and choices. You will have someone to see face-to-face if you have questions later, and you will save time and effort.

Metro Editorial If one had to find a silver lining during the global pandemic that kept people close to home for an extended period of time, the chance to spend more time with pets is worthy of consideration. Cats, dogs, birds, and other animals reaped the rewards of having humans nearby for much of the day. As the world continues to open up and people are returning to their offices and schools, pets who have grown accustomed to having company all day long may be in for a shock. Concerned pet owners can take various steps to help keep their pets occupied and content while their human companions are away from home.

GET A BUDDY When two pets get together, the opportunity for play increases exponentially. Animals can keep themselves company and hopefully out of trouble. A single pet may experience separation anxiety when his owner goes away to work or school, and that may result in damaging behavior like chewing, scratching or even soiling in inappropriate places.
PROVIDE PUZZLING TOYS Keeping pets’ brains active can reduce instances of boredom. PetMD suggests food puzzle toys that can be stuffed with treats and involve brain power to unlock the food rewards. .
EXPEND ENERGY Prior to leaving for work or
school, pet parents can help pets expend some energy so they’re more inclined to sleep during the day. The Animal Behavior College suggests an extra 20 minutes of walking each day may be enough to tire out most breeds. Working dogs, such as shepherds, pointers and setters, may need 40 or more minutes to burn off energy. Cat owners can play with their cats indoors, but generally cats will lounge around during the day anyway.
PROVIDE WHITE NOISE Pets may have grown accustomed to the sounds of an active house, so white noise can fill the void owners’ absences create. Turn on the television or radio. Pet fountains, fans and other devices
