More and more people are heading to Polynesia’s northern-most outpost these days. Renewed competition from airlines flying the route, plus the healthy state of the New Zealand and Australian dollars against the greenback, have all helped boost the popularity of this Pacific paradise. There’s a fantastic range of hotels and attractions on offer, making America’s 50th state a first-class option for family holidays. On our latest visit we checked out the finest luxury accommodation in some of Hawai’i’s famous hotspots – Waikiki on Oahu, and Ka’anapali and Wailea on the gorgeous island of Maui. You could spend a blissful holiday in any one of their exquisite properties, but if you’re in the mood for roaming, we’ve included tips for the top five things to do on each island.

Oahu The third largest (but most populous) of the Hawai’ian group is where you’ll touch down. Home to Honolulu, Pearl Harbour and Waikiki, Oahu offers shopping and sightseeing as well as tropical beachlazing. Learn to surf where the sport was invented, soak up the sunshine and get a taste of life in this Asia-Pacific melting pot, also where President Obama was born and often returns on vacation.

Hire a limo and driver for at least half a day Start around 7am and beat the crowds that flock to Pearl Harbour (or pre-book tickets for set times online). Don’t take a tour, explore at your own pace – it’s a must-see and a very sobering experience. Skip the touristy Dole Planation and head to the North Shore, where season permitting, you can take in the massive surf. Sample the local culture at Romy’s Kahuku – our favourite of the area’s roadside shrimp stands. All prawns and shrimp are harvested daily and deliciously fresh. There’s often a line but service is fast. It’s located two minutes past Turtle Bay – a gem of a beach, so bring your togs.

Allow at least half a day for shopping at Ala Moana Check out the largest outdoor shopping centre in the world. Serious shoppers are well catered for, with all the major luxury brands on sale, and it’s just a 10-minute cab ride from Waikiki. All that shopping will help you build up a healthy appetite. Learn to surf on Waikiki Beach We recommend Hans Hedemann Surf School, conveniently located in central Waikiki. We had three instructors: one for my wife and I, plus one each for our two children. The gentle waves are perfect for novices, and our kids were soon standing up and having an absolute blast. Much to our surprise, after a few false starts, we also managed to catch more than a few waves. The resident cameraman snapped some fantastic shots to enjoy later. Swim with the dolphins at Dolphin Quest Located next to the Kahala Resort on the other side of Diamond Head, just 15-minutes from Waikiki. We opted for the Dolphin Encounter, an up-close experience that gave us 30-minutes interacting and swimming with a dolphin. The facility has large natural lagoons and it’s not too big or busy. Take in a Waikiki sunset while enjoying a happy hour Mai Tai We opted for drinks beachside at the Royal Hawai’ian, the pinkcoloured grande dame on Waikiki beach. Afterwards, our thoughts naturally turned to dinner. For the ultimate in Japanese dining, we suggest Nobu, whose Waikiki outpost lives up to its global reputation. For another top quality Japanese dining experience, try Morimoto – the well known ‘Iron Chef’ at the Modern Hotel is a short cab ride away. Maui Mountainous Maui has a fraction of Oahu’s population but more than its share of natural wonders. Deeply incised valleys and ravines run between volcanic peaks, and the coastline is a magnet for beach lovers. If you want to explore a more laidback side of Hawai’i, take the short hop to Maui. Luxury resorts can certainly be found here – but nature’s wildness is never far away.

Go whale watching If you are travelling to Maui between mid December and mid April, this is a must. We chose Ultimate Whale Watch as it offered the most intimate experience, with only 18 people on-board, while some of the larger vessels cater for over 100. The 30-ft rigid hulled inflatable is very fast while its brilliant maneuverablity gives you the best close-up viewing. Go snorkelling at Molokini This partially submerged volcanic crater lies just off the coast. A noted Marine Reserve, it boasts abundant sea life including turtles and brightly coloured tropical reef fish. The clear waters ensure great snorkelling and diving. Cruise operators depart from a variety of locations, with most of the excursions around five hours. If you’re staying at Ka’anapali, the most luxurious option is a 65-ft catamaran called Hula Girl that departs directly off the Morimoto

Have a cocktail or three at Mick Fleetwood’s eatery Famous for his drumming days in Fleetwod Mac, Mick has been a fixture on Maui for forty years, along with a bevy of highprofile celebrities that either live or maintain holiday homes there. Fleetwoods is a great place for star spotting, and its prime location in Lahaina is definitely the place to chill on the day beds and take in the sublime sea views. Travel the Road to Hana A leisurely drive along a beautiful coastal route is one of life’s underrated pleasures. When the coastline is as stunning as it is Morimoto Chef’s Raw Bar Collection

in northern Maui, you’ll find it’s well worth taking time to enjoy every vista. The Hana Highway (HI-360) meanders along no fewer than 620 curves and 59 bridges. You’ll travel through flourishing rainforests, cruise past gushing waterfalls and marvel at dramatic seascapes. At journey’s end lies the tranquil town of Hana. It’s close to Hamoa Beach, cited by author James A. Michener as the most beautiful beach in the entire Pacific.

See the sunrise from the top of Haleakala Maui, like the other main islands in the Hawai’ian chain, is volcanic in origin. This makes for spectacular landscapes, with soaring peaks and awesome views. The Haleakala peak on Maui rises 3,000 metres from sea level and provides the most breathtaking spot from which to greet the dawn. Get up well before daybreak, dress warmly and drive up the Haleakala Highway, past the Park Visitors’ Centre and onward to the Haleakala Visitors’ Centre. Find a viewing spot and don’t forget your camera. As the sun starts to creep over the horizon you’ll be amazed at the colours of the sky and clouds.

Sheraton Maui Resort & Spa Hawai’i

Celebrating its 50th year, the Sheraton Maui boasts a colourful history. In fact it was a pioneer – the original luxury hotel built on Ka’anapali Beach, Hawai’i’s first master-planned visitor destination. The room rate back then was just $15 per night, with celebrities like Bob Hope and Bing Crosby among the guests flying in on United Airlines first ever commercial flight from the U.S. mainland to Maui. The unique architecture by Pete Wimberley was ahead of its time in 1963. It won many design awards and still looks current in today’s setting. The distinctive curved wing, with its cream façade and balconies bursting with hibiscus flowers, contrasts beautifully with the lush grounds, the blue sea and the clear sky. The whole is somehow greater than the sum of the parts, creating an endearing fusion of classic jet-age style with tropical luxury. Where Sheraton went, many have followed. The past 50 years have seen a plethora of hotels fill the entire beach. However, being the first on the beach enabled Sheraton to secure the absolute prime spot and the largest slice of Ka’anapali beachfront. The hotel was built in and around the iconic Black Rock, which also happens to be the best snorkelling spot.

Aesthetically, the resort design is timeless and elegant, and at 380 guestrooms, not too big as to be impersonal. As with all Four Seasons properties, the extremely high staff-to-guest ratio ensures a consistent level of service throughout the resort. In our opinion, this is the quality that distinguishes a good 5-star property from a truly great one. Even if you’re a Four Seasons regular, you can’t help but be impressed with the discrete, polished and personalised attention you receive as a guest here.

To witness Africa’s Big Five on an open

savannah-style safari is a once in a lifetime adventure. Couple that with the richness

and enduring culture of the Serengeti and its people and you find an experience that will leave you inspired for months. Our journey through Tanzania begins in Nairobi. Many safaris in this part of Africa begin here as it’s the main international city close to Arusha and the Serengeti National Park just beyond. Nairobi is not a city for the faint hearted, but there are still a number of beautiful hotels and lodges that will provide a more than adequate stay prior to the transition into Tanzania. We stayed at Tribe Hotel, a boutique Design Hotel™ that is edgy and cool – see our feature review later in this issue. The Fairmont is also stunning and more of a traditional colonial style hotel that is befitting of this destination.

West of the city, the suburb of Karen is named after Karen Blixen, author of the well-known book and movie, “Out of Africa”. Her house is now the Karen Blixen Museum, complete with a garden and tea-house, it tells the history of the famous novelist. In close proximity to Karen there are many wildlife sanctuaries. Of note is the Giraffe Centre, where you’ll have the option of handfeeding the rare Rothschild’s Giraffes. The centre’s party trick is to encourage guests to hold a food pellet between your teeth and let the giraffe literally lick it off your face. I only did it for the photo! Day two of the journey sees us departing for Tanzania with G Adventures. It’s a long drive across the border and on to Arusha where the Tanzanian experience really begins. Here, we searched for phenomenal wildlife, and all in their natural habitat. We chose a full-service camping safari. It certainly wasn’t ‘glamping’ or even remotely luxurious, but we opted for the ‘real experience’ for this leg of the trip. There are certainly a number of stunning lodges

along the way, but they tended to be away from the main action. Being in the tented camps in the reserves themselves brings you closer to the region’s wildlife… sometimes they are literally right outside your tent! It’s also a great way to gain insight into the local culture in a short amount of time. Most tours use vehicles that are optimised for snapping shots of Africa’s elusive ‘Big Five’ (lion, leopard, buffalo, elephant and rhino) as they mostly have roofs that pop up so you’re literally above the vehicle, but still safely inside. Think of it as a very tall convertible. The next day we head for Lake Manyara National Park. This area is truly stunning, as the western wall of the Rift Valley escarpment provides a backdrop to search the park for its phenomenal birdlife, tree-climbing lions, elephants, giraffes, and hippos. Later that day we spent more time game viewing along the main road that winds for several kilometres through a cool, lush, mature groundwater forest dominated by large fichus trees and a tangle of green epiphytes. Amazing! Then came the day I was waiting for. The Serengeti National Park is known as one of the best in Africa and it did not disappoint. An unforgettable day beginning with a visit to a working Maasai village where we learnt about their way of life, interesting diet and how to do their warrior ‘jumping dance’. As we drove further into the park, the landscape began to change. The sheer vastness of this area is breathtaking. The search for the Big Five continued here. The Serengeti, which derives its name from the Maasai language meaning ‘endless plain’, is the jewel of Tanzania’s protected areas. Together with the Maasai Mara Reserve and the Ngorongoro Conservation Area they protect the most varied and greatest collection of wildlife on earth. Maasai women

With a selection of over 400 whiskies, you can sip your favoured choice of the best Scottish malts by the smouldering flickers of the fireplace and the soft shine from the chandeliers of stag antlers. Other favourite restaurants I enjoyed while at Galaxy included: Tsui Wah (good quality Hong Kong style café food), Pak Loh (Chiu Chow style), Myung Ga (Korean style), and Gosto (Portuguese/ Macanese style). From the moment I arrived, Galaxy Macau was an extraordinary culinary experience, equaled only by my time spent in France. It was emotional, tactile and filled with never to be forgotten experiences. Macau is a destination that will definitely enliven the senses. Enjoy!

At the Raw Bar there are twenty-four different species of oysters in the half shell to choose from. We slurped back fresh Coromandel, Cleveland and Kaipara oysters from New Zealand, as well as California and New York varieties. Ulrich also prepares clam species such as Tua Tua, Diamond, Storm and Moon Shell from Cloudy Bay. Scorpion Fish, Snapper, Blue Cod, Gurnard and John Dory (subject to availability), all delivered fresh from New Zealand, from the boat to the table in less than 36 hours. Ulrich comments, “at Waterbar, we strive to ensure the highest standard of environmentally safe, sustainably-sourced seafood from both local and international waters, respecting seasonality and the natural essence of the sea.” The beverage list is equally impressive with a modern twist on classic cocktails and a befitting top shelf of spirits. The wine menu is both local and international, including a special collection from New Zealand. The Kiwi list showcases the breadth and depth of the country’s major wine regions such as renowned Marlborough, located in the northeast of the South Island, Hawkes Bay, which is the country’s oldest wine growing region and leading area for reds, as well as fast-growing Waipara Valley, Central Otago and Kumeu River located west of Auckland. An exceptional level of restaurant service extends out onto a large patio area dotted with large umbrellas and unobstructed views across the harbour. If you prefer a steakhouse style menu for those traditional favorites from an open brasserie and grill then adjacent to Waterbar, beyond the hundred-year-old olive tree, is EPIC Roasthouse. “We take the very best naturally raised dry-aged beef from Oregon, California, as well as Aitkins Ranch Lamb from New Zealand, and put our own touch on it,” says Ulrich. The beach of your dreams at Natadola A beach – what’s so unexpected about that, you might ask. Natadola Beach is not just any old strip of sand. For a start, it’s on the main island of Viti Levu, so you don’t have to hop on board a tiny plane to get there. Secondly, it’s rated one of the top 25 beaches in the world by Forbes Traveller. Approximately 35km from Nadi, you’ll find a gently curving 2km stretch of white sand beach bounded by coconut palms – every traveller’s South Pacific fantasy. The world’s largest reef fish Meet the Humphead Wrasse. He’s not your typical, pretty-boy reef fish, all dainty fins and day-glo colours. This slow-growing specimen can reach over two metres and tip the scales at a staggering 190kg. He can live for over 30 years and he plays a vital role in the reef eco-system, chomping on the notorious crown-of-thorns sea star. Unfortunately, overfishing has dented Humphead Wrasse numbers, but the good news is the species is now fully protected in Fiji’s waters. Fun fact: some adult males develop directly from juvenile males while others develop from an adult female that undergoes a sex change in mid-life.

World-class Italian cuisine Who would have thought that a trip to Fiji could involve some of the most sensational Italian cuisine you’ll find south of Sicily? Travellers on the road from Nadi to Denarau have been raving about what’s on offer at Flavio’s. The eponymous Flavio and his team run an intimate restaurant that’s a million miles from redchecked table cloths and giant pepper grinders. You’ll be seated at a table for 10 and treated to a menu, degustation style, with hand-prepared antipasti, pasta, mains and fine Italian wines. Don’t forget to leave space for dessert and cheeses – Flavio imports the best.

Signs of ancient history in the sand dunes Archaeological remains dating back 600 years before the birth of Christ are evidence that Fiji has been home to humans for a very long time. These pottery shards from the Lapita culture, along with stone tools and ancient burial sites, have been uncovered in the eerie dunes of Sigatoka Sand Dunes National Park. The dunes are more than 20 metres high on average, with some climbing to more than 50 metres. The views here, in Fiji’s first national park, are impressive. The park is also home to 22 species of birdlife, including eight that are endemic to Fiji, such as the Fiji Goshawk. If you’re ready to explore another side of this ancient island nation, take the road to Sigatoka and look out for the unspoilt sand dune landscapes.

Mud, glorious mud at the Sabeto hot pools Every luxury resort worth its salt has a spa offering therapeutic treatments and wraps. But if you want the raw experience as nature intended it, make a beeline for Sabeto on Viti Levu. Located halfway between Nadi and Lautoka, these thermal springs comprise three hot pools set in gorgeous natural surroundings. The sulphur in the hot pools is believed to have therapeutic qualities, and you’ll certainly find it relaxing to sink into the warm water and apply a liberal coating of slippery mud. It’s fun for all the family, with the friendly local staff adding to the atmosphere. Here’s a tip: arrive late in the afternoon, when the heat of the day has started to die down. Perito Moreno Glacier, Argentina This stunning glacier in the south of Argentina may not be the biggest glacier in Patagonia, but it is arguably the most impressive. Located in the province of Santa Cruz near to the town of El Calafate, Perito Moreno is a 251 square kilometre slab of ice winding its way down Lake Argentino in Los Glaciares National Park. You will be able to get up close to the glacier because there is a visitor centre and a network of paths on the opposite bank. So take your time and admire the might and majesty of the huge wall of ice, which sometimes feels so close that you can reach out and touch it. If simply admiring the glacier is not enough, you may want to trek across the surface of the ice. Mark Byrne is the CEO of Highlife Asia. Growing up in the town of Newry in Northern Ireland, the world of glamour may have seemed quite remote, but Mark had a flair for fashion and design even as a teenager. After gaining experience in event management, he went to work for MTV and got a further taste of life in the celebrity lane while working as an artist liaison for Live 8 Edinburgh in 2005. Next, his career took him to China, where he had the vision of creating a luxury concierge service. The rest was history.

MB: There’s a huge thirst for limited edition here in China, which could be anything from green room access at the Grammys to backstage passes for New York Fashion Week. We see many mainland consumers who were educated overseas, and now bring a certain knowledge and expectation back home. Local Chinese consumer requests can include limited edition handbags, a beautifully designed personal car interior, or a celebrity chef flying in for a special birthday party. As consumer confidence in our concierge services grew, the requests for luxury events became a natural next step for Highlife Asia. As demand increased, we simply adapted our skills to suit. LUXURY: Who are the typical clients for Highlife Asia?

LUXURY: Mark, how did Highlife Asia get started? MB: I worked for a global flight company in Scotland who bought me to China to build their business. The China division was struggling and it took a year to mould it into a successful brand here. After implementing a new working structure, I knew it was time to move on and create my own vision of what a luxury concierge service and lifestyle management company could be.

El Questro Kununurra, Australia

Sitting on my private deck on a cliff top terrace cantilevered out over the Chamberlain River, I feel the deep sense of humility and privilege to be able to stay in the ultra-modern, air-conditioned comfort of the El Questro Homestead. This sanctuary in the Kimberley wilderness offers rich experiences and fabulous scenery. Before me is a landscape of biblical proportions that was millions of years in the making. There’s a million acres (407,000 ha) of pristine wilderness and a working cattle station out there beyond the river. It’s a vast savannah of prickly spinifex, acacia, eucalypt and paperbark, interspersed with grotesquely attractive family clusters of big-bellied baobab bottle trees. Twilight is the time the painted desert comes to life. The sharply angled sunlight catches the rust red escarpments and gives them a fiery glow, as vivid as the embers of an outback camp fire. The golden grasses and savannah woodland that displayed organic, earthly hues under the dazzling sunlight during the day segue into a purple haze as the sky is suffused with orange and red. That Kumeu River Wines succeed is testament to three essential factors – heritage, viticultural expertise and winemaking excellence. Founded in 1944 by Mick and Kate Brajkovich, Kumeu River Wines is a tightly and proudly held family business now in the hands of its third generation and is a regional landmark in its Kumeu home in the rural green belt of West Auckland. One of the four siblings running Kumeu River Wines is viticulturist Milan Brajkovich who is happiest when walking and working amongst the 30 hectares of Kumeu River’s own vineyards and 10 hectares owned by local growers. One of the great attributes of their wines is balance, a distinctive yet hard to define character, both in wine and in vines. As Milan says, “I aim for vines that are balanced, that can survive any season and produce excellent fruit. But it’s not so much science as it is diligence. Some of it is tending to them by feel.” His approach is perhaps best summed in his answer to the question of how he works on his vines. “Do I work on them? Maybe. But most of the time I think I work for them!” He also works with brother and winemaker Michael who takes a similarly attentive approach, “White grapes are whole-bunch pressed. This is time-consuming but gives us the best quality. Similarly, reds are de-stemmed and crushed gently before fermentation.” He takes the risk of allowing nature to run its course in creating Kumeu River’s distinctive wines with extended lees aging and malolactic fermentation. With the sun rising for just a few short hours and the temperatures hovering near zero, winter gives Rosemary Hepözden, a visitor to the city, the perfect excuse to dive indoors to sample some Swedish specialties.

2.30pm. It hardly matters that Sweden is also famous for Volvo cars, Ikea furniture, Greta Garbo and meatballs. Touch down at Arlanda Airport and you’re immediately reminded that Stockholm is, above all, ABBA Town. Standing in a glass carousel display case just the other side of Immigration are four spangly costumes worn by ʼ70s popsters Björn and Benny, Agnetha and Frida. The dazzling sequins and acid colours are a mesmerising contrast to the gloom we step into as we leave the terminal. It is still early afternoon, but in this northern capital, in the darkest months of winter, deep snow blankets the ground, and the grey and white cityscape is already flecked with the light from streetlamps. Cars purr through the slush and pedestrians turn their coat collars up before jamming their hands into puffer-coat pockets. 5.00pm. Our hotel, the 17th-century Sven Vintappare, sits on a small, quiet square in Gamla Stan, the enchanting medieval centre of the city. A spiral stone staircase leads up to a large room, where sloping floors, shaggy bed throws and soft tones of apricot, cream and grey give a feeling of homely comfort. Outside, black iron lanterns glow from burnt orange stone walls. Mounds of snow festoon every ledge and each abandoned pushbike, giving the scene a distinctly Christmas-card feel. We join those already strolling through the picturesque old town, our cheeks stinging in the cold. 7.30pm. The charmingly narrow lanes lead us from one brightly lit shop window to another. The temptations on display range from arty décor items and stylish shoes to daintily decorated pastries and mass-produced Viking dolls. I’m happy to buy a cheering handmade felt hat to pull down over my ears, but still it’s not long before the cold and the dark drives us indoors to a cosy, intimate bistro, where locals and visitors alike keep their spirits up with a shot of Absolut or glass of apple cider and a steaming plate of meatballs served with potato puree and

lingonberries. As a couple sing folk songs in the corner, it seems sensible to linger over another warming tot before bed calls. 9.30am. Boiled eggs, warm brown bread topped with slices of smoked salmon, and a pot of strong breakfast coffee have stoked the internal fires. Winter in Stockholm is the perfect time for visiting the city’s sophisticated and idiosyncratic museums. Our destination is Fotografiska, a quayside exhibition space for contemporary photography. At the time we visited, the entire space was devoted to American surrealist photographer David LaChapelle, best known for his glamorous and sometimes absurd works inspired by celebrities, models, and the world of fashion. 12.00pm. It is definitely hip and progressive, but also a bit disturbing, and we need to retreat to the upstairs café for open sandwiches smothered in prawns and dill. We found this the perfect place to snap a few photos ourselves. The large windows provide panoramic views across the dark steel-grey water to the Old Town, where we’re headed next. 1.30pm. A few minutes’ walk from the Royal Palace, the Nobel Museum offers an inspiring measure of brilliance and heritage. Inside, an overhead cableway circulates the portraits of over 800 Laureates in random order, and we gaze upwards, waiting until the three New Zealand Nobel Prize winners − Alan MacDiarmid, Maurice Wilkins and Ernest Rutherford – have shuffled past. Brainy stuff, we decide, makes you hungry, and the Nobel Bistro is a restorative sanctuary for afternoon coffee. And for our final museum experience, we up-end our chairs. It is on the underside of these chairs where the Nobel Museum has asked over 200 visiting Laureates to provide their signature for what they describe as ‘a guest book, of sorts’. It’s a heady thought that I might have shared the seating with His Holiness the 14th Dalai Lama. My train seat, which I am soon to occupy for an 18-hour journey north, will, I’m sure, never boast such an illustrious occupant.
