I’m fortunate to have a comfortable life yet it amazes me how basic the answer usually is. Winter can be harsh for our wildlife – freezing temperatures, piercing winds and snow on the ground make it difficult to locate food. Seeds will have dispersed. Berries, ripe and juicy in autumn, will have been gobbled up or rendered inedible by frost. Many insects will have buried themselves in the ground or lie beyond reach in crevices, often as eggs or pupae. It all adds up to a situation in which finding the nutrients essential for survival becomes a real challenge. There’s also another basic problem. Keeping warm in low

temperatures takes a huge amount of energy, burning calories fast, especially for creatures with a large surface area and short, thin fur. Whilst a few small animals like shrews adopt extreme strategies such as shrinking their internal organs (and even their brains) in order to make it through the season, others have no choice but to hibernate. So what is hibernation? A handful of UK animals including hedgehogs, dormice and bats – even frogs, lizards, snakes, newts and bumblebees – hibernate. It’s a complex physiological state that makes normal activity impossible. Creatures might look like they are sleeping but hibernation is much more than this - a truly deep slumber in which they are able to conserve energy by lowering body temperature and reducing breathing, metabolic and heart rates. Oxygen consumption is reduced and blood flow to main organs restricted. The process is triggered by the shortening of the days and hormonal changes and it can last for

days, weeks or even several months. Its primary purpose is simple: to use less energy and facilitate survival for many weeks without food. Hedgehogs Depending on the weather and their general health, hedgehogs hibernate from October/November until March/April. They must feed intensively and get into peak condition before hibernating if they are to have enough reserves to last the winter. The gardener’s best friend, they’ll hoover up slugs at an amazing rate so are well worth encouraging onto your patch. One way you can do this is to provide suitable nesting sites including log piles and wild areas or even a purpose-built hedgehog home. Fallen leaves and prunings make ideal nesting material so make sure you don’t clear all of them away. Hedgehogs particularly love apple and cherry leaves whilst sticks of hawthorn and honeysuckle make good structural supports. Even for healthy individuals, hibernation is no small feat. can be anywhere between 200 and 280 beats per minute but during hibernation it drops to just five beats per minute. If the ambient temperature rises or drops, the hedgehog’s body will automatically lift or lower its metabolic rate to compensate – much more energy efficient than being awake and struggling to source food in hostile conditions. Research has shown that hedgehogs change nesting sites at least once during hibernation so they can sometimes be seen out and about during winter. However, it’s unusual to see a hedgehog staggering about in the colder months or during daylight so if you do see one and it looks unwell, it might need a helping hand. If you come across an underweight hedgehog, the first step is to provide supplementary food and fresh water. Hedgehogs will relish any combination of meatbased wet dog or cat food, specialist hedgehog food or cat biscuits. Place it in a shallow dish and put in a sheltered area of your garden around sunset. Please visit britishhedgehogs.org.uk Dormice With their long honey coloured tails, massive eyes and rounded ears, dormice are perhaps one of our most beloved – if least seen – animals. They are also our longest hibernating mammal, sometimes

sleeping for up to three quarters of the year. Depending on the weather, they can fall asleep as early as October and not wake up until early May, which makes for an awful lot of snoozing! Even their name reflects their penchant for slumber, derived from the French dormir (meaning to sleep) or dormeuse (a sleeper). Dormice live in woodlands and during spring and summer spend almost all of their time off

the ground between the scrubby understorey in which they build their homes and high in the tree canopy. Their summer nests are built of grasses, stripped honeysuckle bark and fresh hazel leaves but by autumn, these homes will lie abandoned. After filling their bellies with protein-rich hazelnuts, dormice will head off to find a warmer site beneath logs, in a tussock of grass, at the base of a tree or even underground where the temperature is more constant. They snuggle themselves tightly into a ball of woven grass or bark covered with leaves or moss and sleep and sleep… The secret to dozing for such a long period is high body fat and a slow metabolism. When the cold weather sets in, a healthy dormouse will be at least twice the weight it was in summer – 35 or 40g rather than 17g or so. Their body temperature falls to that of the woodland and their heart rate and breathing slows down to around a tenth of the normal rate so they use barely any energy at all. Nature is remarkable but there is a flaw; it means they are vulnerable if found 14

by a predator because it can take quite some time to wake from such a deep sleep. Dormice are a protected species and you need a licence to survey for their presence but if you want to look for signs of these elusive creatures, head to a woodland west of the Severn and look amongst the leaf litter for nuts that have had small bites taken from them. Dormice prefer to eat hazelnuts whilst they

are still soft and green and having nibbled the shell to reach the kernel, they will drop it to the ground. Worcestershire and are scarce in our south eastern corner but by this time of year you’re unlikely to come across one no matter where you live. As reptiles, lizards are coldblooded (or ectothermic) meaning they are unable to create their own internal heat. Being reliant on the sun and their immediate environment for warmth means that during winter they have no choice but to hide away.

By November, all lizards will have found somewhere safe to snooze – often in the hollows of tree trunks or in cavities between and under rocks. Groups of lizards have been found hibernating together presumably for warmth - and they will stay asleep until March or April, depending on the temperature. Technically, the hibernation of cold-blooded animals is called brumation but it’s essentially a

dormant state, loosely similar to the hibernation of mammals. Like other species, lizards prepare for brumation by stocking up on food, mainly worms, slugs and invertebrates. Once asleep, they too take advantage of milder patches of weather to temporarily shake off sleep and forage for food before hibernating once more. If only we could do the same… Queen bumblebees The common association of bumblebees, sunny days and brightly coloured flowers doesn’t entirely apply to the queen bumblebee, who spends much of her life underground, producing and caring for eggs, never again seeing the light of day once she has constructed her nest. Some bumblebee queens will hibernate for up to nine months, almost three quarters of their life. It’s hardly surprising that winter is problematic for these nectarsupping, pollen-collecting insects, but hibernation does much more than protect them from the risk of starvation; it’s also a mechanism that 15

guards against predation and disease. New queens emerge in late summer just as the colony they are born into is in decline, mate with males and become fertilised. In autumn, the males and workers die, leaving the new queens as the only members of the colony who can survive the winter. They only do so by entering a state of true hibernation, waking in the spring when temperatures rise, ready to start brand new colonies. Before hibernating, new queens will guzzle on pollen and nectar. This binge-drinking enables them to build reserves of energy that are stored in the body as fat, vital to helping them survive the winter. You can help them with this process by planting your garden with a succession of nectar-rich flowers that will bloom for many months of the year. Try mahonia, snowdrops, crocuses, winterflowering clematis and heather for late colour and nectar. However, their favourite site of all is near the top of a north-facing bank of earth in well-drained soil because it ensures they will not be exposed to winter sun, which could cause premature emergence â&#x20AC;&#x201C; a potential disaster if temperatures plummet again and

there is no food available. During hibernation, bumblebees use a technique similar to the autometabolic control seen in mammals. If the temperature falls below a certain point, there is a danger that the fluids inside the queenâ&#x20AC;&#x2122;s cells could freeze, expand and cause her body to burst. Instead, glycerol

production kicks in, automatically producing a substance that essentially acts as an anti-freeze, preventing ice crystals from forming in her cells. Even, or perhaps especially in winter, when so much of the natural world appears to be dormant, nature is amazing in so many ways.

Just one danger of DIY Probate Angela Scott, Partner of Thomson & Bancks Solicitors, offers a word of caution The case of Harris v HMRC in 2018 is a salutary warning that the administration of an Estate is not straightforward. Many people, armed with some basic information from Google, have a go themselves. They run the risk of exposure to huge personal risk. Mr Harris was the Personal Representative of the late Helena’s estate. He filled in the forms for HMRC. The estate was worth approximately £1.1 million with an inheritance tax (IHT) liability of £341,000. The Inheritance Tax Act provides that, with very limited exceptions, the deceased’s Personal Representatives are liable for all of the IHT payable on the deceased’s estate. In this case, HMRC issued a demand for the tax and Mr Harris appealed on the basis that he didn’t have it. Following the sale of the deceased’s home he had given the proceeds to the deceased’s beneficiary brother but on the understanding that the brother would pay the tax. The brother went abroad without doing so. The Court held that it was no defence that Mr Harris may have transferred the assets to a beneficiary on the basis that the beneficiary would be responsible for the payment of the IHT due.

Nor is it a defence that Mr Harris was ignorant of his obligations to pay the IHT. Mr Harris found himself in the unenviable position of being responsible for the tax liability personally! Acting as Personal Representative carries with it a huge responsibility for the Personal Representative and so it is vitally important to have the appropriate legal advice before proceeding. There are many non-legally qualified firms including probate processing companies and even some accountants offering assistance. There is no substitute for a solicitor. After all would you ask your dentist to carry out a heart operation?

working in Australia, I moved to the Midlands and gained experience in several fine dining venues before opening Belle House in 2003. What type of chef are you? I really am hands-on, still at the stoves, doing what I’ve always done, and I think that’s the secret to success, to have your finger on the button all the time. What sets the tone at Belle House? We have a ‘real food’ ethos – using the best real ingredients and chefs with real skills, using methods learnt over the last 30 years. It was moving to Worcestershire that proved to me that the only way to cook is with local, seasonal produce. Our menus

are based on what’s available locally and I’m always seeking new ways to use the ‘whole’ product. What satisfies you at work? I love seeing guests enjoying their meal, whether it’s in the restaurant or a bride on her wedding day. Details matter and giving attention to them makes the dining experience special. Smoked salmon & prawn mousse roulade This also works well with cream cheese instead of prawns INGREDIENTS

1 long slice of smoked salmon 25ml double cream 100g prawns or Philadelphia Cheese Lemon juice to taste Chopped chives TO SERVE

METHOD – MOUSSE

• Whizz up the prawns and slowly add the cream (you may not need all of it, make sure it’s not too loose). • Add lemon juice and chives, check seasoning. • Chill in the fridge until required METHOD – ROULADE

• On the work surface, spread out 3 sheets of cling film. • Place smoked salmon on top of the cling film. • Pipe the prawn mousse (or Philadelphia cheese) in a long log shape, from one end of the smoked salmon sheet to the other. • Roll smoked salmon around the mousse log. Wrap in the cling film, as tight as possible. • Leave in the fridge overnight to chill and set. • Keeps for up to 5 days if refrigerated. Serves 4

Guacamole

(serve with triple cheese straws) Simple to prepare ahead INGREDIENTS

2 ripe avocados 4 tbsp double cream 1 tsp vitamin C powder 1 clove of garlic Salt and pepper

METHOD

• Put the avocado flesh into a food processor and sprinkle with the Vitamin C powder which will slow down the oxidisation. • Add the crushed garlic and blend until smooth. • Add a pinch of salt and pepper and the double cream, pulse the blender until the cream is well blended and smooth. • Keep in the fridge, serve with triple cheese straws. • Serve in shot glasses as a canape or in a simple bowl as a starter.

Triple Cheese Straws INGREDIENTS

A4 sheet of puff pastry Blue cheese (grated) Parmesan (grated) Beaten Egg wash Poppy seeds

METHOD

• Brush the puff pastry with the beaten egg wash and cover half the sheet with the grated cheeses. • Fold over and press all the pastry down. • Roll with a rolling pin until both sides stick together. • Egg wash the outside and sprinkle on poppy seeds, then freeze. • Defrost when needed, cut into strips and twist. • Bake in the oven on 180 degrees C for approximately 8 minutes or until golden brown. Serves 25

Chicken Liver Parfait INGREDIENTS - SERVES 4

1.75lb chicken livers, washed 10oz melted butter 400ml double cream 2 eggs 20ml brandy 20ml white port 0.5oz pink salt 4 garlic cloves Salt & pepper to taste French bread or melba toast Sprigs of fresh thyme or sage to serve

METHOD

• Preheat the oven to 140 degrees and prepare a bain marie (large metal tin filled with warm water) • Blend the livers, brandy, salt, garlic and pass through a sieve. • Blend again and add the eggs then gradually add the butter and cream; this must to be done slowly to prevent the mixture from splitting. • Once mixed well, check the seasoning and pour into individual moulds. • Place in a bain marie and put in the oven for 20 minutes. • After 20 minutes, reduce the oven temperature to 100 degrees and bake for another 40 minutes. • Once cooked, remove from the oven and bain marie and cool. Once cooled, store in the fridge overnight for a nice firm parfait. • Serve in quenelles on melba toast or with hunks of crusty bread. Serves 8-10

Dedicate a light in memory of loved ones Hundreds of twinkling lights will be lit in memory of loved ones at a range of moving hospice services this winter explains Helen Griffee In the weeks leading to Christmas, there will be six St Richard’s Hospice Lights of Love services or events – offering the community a place to remember and celebrate the lives of their loved ones. The first two services were held at Worcester Cathedral on Thursday, 15th November when a Christmas tree in St Andrew’s Spire was illuminated, full of dedicated lights of love.

Further services will be held at the Sacred Heart Church, in Droitwich, on Tuesday, 20th November, Pershore Abbey on Thursday, 29th November and Great Malvern Priory on Tuesday, 4th December. A special Carols in the Car Park event – featuring a brass band and festive sing-along – will be held on Thursday, 20th December at St Richard’s Hospice in Wildwood Drive, Worcester.

These moving, community services are deeply comforting for the people who attend. Many people attending have had family or friends cared for by the hospice. We find each service unites people in their shared experience of missing a loved one, while providing support and solace through lighting a candle and taking time to reflect. Last year, nearly 3,000 names were dedicated and £46,591

was raised to help support our specialist care to people living with life-limiting illnesses, their families and bereaved people across Worcestershire. We are so grateful for the continued support of the community. Anyone is welcome to dedicate a light in memory of a loved one and attend a Lights of Love service if they wish – not simply those who have a connection to St Richard’s. The dedicated names will be displayed around St Andrew’s Spire and in books of remembrance at Worcester Cathedral, Pershore Abbey, Sacred Heart Church in Droitwich and Great Malvern Priory. All dedicated names will also be added to an online book of remembrance on a weekly basis. Help Stop Hunger While many families are busy hoisting up Christmas trees, stocking up on seasonal food and decking the halls with boughs of holly, others are struggling to make ends meet. Figures from The Trussell Trust, a charity that runs a network of more than 420 foodbanks across the UK, show that December is the busiest month for foodbanks. We talked to Marion Badham, Project Manager at Tewkesbury Foodbank. When was The Tewkesbury Foodbank set up? Over four years ago, by the Churches Together Group. It originally operated from Holy Trinity church hall but we now have a centre in Church Street which is open four mornings a week. Clients with a voucher can come and meet us and be given not only food, but advice and signposting. We’ve been overwhelmed by the generosity of local people. During this year’s harvest collection we weighed in 2170.53kgs of food, that’s a lot of beans and pasta. Who are your clients? We always say you are only two pay cheques away from poverty, so many

of our clients are just like you and me: hard working and law-abiding people who, for whatever reason, find themselves in crisis. We have a whole range of people coming in to see us, teachers, self-employed electricians, builders, domestic abuse victims, and people suffering from long term illness, particularly mental

health problems and cancer. None of them expected to find themselves in the situation of having no food to feed themselves or their families. We try to offer, not only food, but steer them towards services like money advice and Fuel Banks which help to break the cycle of poverty. Our volunteers also offer tea and biscuits, and a chance to chat. We keep lots of tissues to mop up the tears and we hope that by the time the clients leave us they are feeling stronger. How can people access help? To receive food from a foodbank you would need a red voucher. These are given out by our referral agencies - over 70 organisations, ranging from doctor’s surgeries,

hospitals, schools and local government agencies such as the Housing Advice Team and CAB. This means we don’t have to make a judgement about whether or not a client is in genuine need, as they are often known personally by the referring agent. By using this system we’ve only had the odd isolated cases of misuse. What supplies are provided? Enough food for a three-day emergency supply of stock cupboard items. The foods have been carefully chosen to make up three well balanced meals for three days. In addition, in Tewkesbury, we are able to provide vouchers for use at our local greengrocer and butcher. The funding for this has been mostly given at a local level and has proved a welcome addition, especially for families. We also benefit from the Fareshare food scheme, which allows us to collect bread, cakes, fruit or lifeinthevillage.co.uk | Winter 2018

vegetables which is near the end of its sell by date, one evening a week, from our local Tesco Metro. Does that vary throughout the year? In the summer we ran a school holiday meals project, providing families with food for a mid-day meal five days a week for six weeks. This was a lifeline for many. In Tewkesbury alone, we gave out food for 78 adults and 196 children, that’s 1,585 meals.

And currently? Covering the costs of cold weather and having children at home during the school holidays make December a difficult time for a growing number of people. Pair this with something unavoidable like redundancy, illness or a delayed benefit payment, and you have a recipe for disaster. In December we’ll be running our Christmas Blessings project. Again, we aim to again target families in need. We try to give them food items that are not on our official food lists, such as mince pies and custard, tinned ham, savoury biscuits, Christmas cakes, chocolate for the children (Father Christmases, reindeers, selection boxes) and also some goodies for the adults too. We’re also busy squirreling away small toys and toiletries ready to give out. Bredon Knitting Circle has been busy knitting scarves, mittens and hats for us. Plus we help the Salvation 55

Army by supplying them with food to distribute through their own Christmas hamper scheme. How can we help? We are very busy, and always welcome visitors. Giving food, money or time ensures help is there for people when itâ&#x20AC;&#x2122;s most needed. Fill a cocktail shaker with ice, add the Brockmans Gin, grapefruit juice, lime juice, cherry liqueur and cinnamon syrup and shake. Single-strain into a coupe glass. To garnish, turn the squeezed lime half inside out and float on top of the cocktail. Place a cube of sugar inside the lime and add some Absinthe. Carefully ignite the Absinthe and sprinkle a pinch of ground cinnamon powder over the flame. (Wait for the flame to extinguish before drinking!) 61
