SPRING Wings Butterflies are one of the great delights of spring. Wendy Carter of Worcestershire Wildlife Trust introduces a range of early risers and offers suggestions on how to attract them to your garden.

W
ho can fail to love spring? Birdsong in the air, buds on trees and flowers poking through the soil, insects on the wing. The natural world is waking up and, providing our seasons have got their timing right this year, it won’t be long before our butterflies emerge and paint some colour into our lives. Some of our butterflies are fussy so-and-so’s; their

caterpillars will only eat certain plants. This dependency leaves them especially vulnerable in our changing landscape. With the exception of a few species that have very specific requirements, this is something we can all help with when thinking about what to plant in our gardens. First Up - Brimstones One of the first butterflies to brighten our spring days is the brimstone. Usually seen in ones or twos, they wake from their winter slumbers in March and go searching for food and mates. These butter-coloured flutterers (males are much brighter yellow) have spent winter hanging, hidden, amongst evergreen leaves like ivy. Once they’ve emerged, they need energy sugars from nectar-rich flowers
in gardens, hedgerows and woodland rides - to give them the power to find a mate. If you can, watch a pair spiralling high into the sky in display flight before descending to mate on a perch. The female lays eggs on either common or alder buckthorn; the caterpillars will hatch from May and nibble their way through the leaves until they pupate. The whole cycle begins again in late July when fresh adults emerge. Find Orange-Tip Eggs Each season I try to set myself a challenge...and spotting the eggs of orange-tips is just that! You’d think it was easy, orange-tips favour plants like cuckoo flower or garlic mustard and their eggs, being orange, should stand out. However, they’re rather small

and, as the precious eggs hatch into cannibalistic caterpillars, there’s usually only one egg per flower head. Once you’ve got your eye in, it gets easier but you sometimes need to (gently) check the underside of a lot of flowers. Of course, it’s the orange tips of the male’s wings that give them their name (female wing tips are grey-ish) – the colour of the eggs is just a coincidence! Holly Blues Holly blues have a wintery connection – the newly emerged spring butterflies lay eggs on holly flowers; the summer generation on ivy! These butterflies spent winter as a pupa, having spun a fine silken girdle to attach themselves to their pupation site on or near the

ground. On the wing from early April, they will often catch your eye as they flutter along around

head height. At first glance, you may confuse them with a common blue butterfly but they’re easily distinguished by the silvery underside completely lacking in orange spots. The females have a broad black border on the uppermost side of their wings – but as they almost always rest with their wings closed this is something you’re unlikely to see! Planting for Butterflies Over the next couple of issues we’ll look at where to go to spot butterflies but, for now, let’s bring it closer to home. What about that garden of yours? Perhaps you’ve got space for a tree or maybe you’ve only got room for a window box? Think ‘butterfly border’ – if you plant for butterflies you’ll be helping
other wildlife too. You’ll need a sunny spot and the more plants you grow, the more nectar you’ll provide. Aim to have flowers throughout as many months as possible; try grape hyacinth or primrose early in the season and how about honesty, lavender, scabious and verbena as the seasons tick by. Buddleia is brilliant (you can get dwarf versions) and can be followed by fuschia, sedum, michaelmas daisy and ivy. Don’t forget to include some food plants for caterpillars nettles in an unused corner or nasturtiums around your veggies, for example. Finally, if you can bear it, leave the ivy-covered wall untrimmed to provide shelter for hibernating butterflies and moths.

INTRODUCING GRAHAM
British Hairdressing Awards finalist, Graham West, combines 20 years’ experience with the art and science of natural Aveda products at his luxury salon in Fladbury, near Pershore. We talked to him about what makes it so special. Why do you choose to be an Aveda exclusive salon? We care about our clients and want them to look and feel amazing. We specialise in colouring hair, as well as cutting and dressing it, and our top priority is to give honest, unpretentious service. Aveda offers a natural colour and product range that gives superb results. Working with them, we can help you achieve a fabulous hairstyle that you will love. What’s the concept behind your salon? I’d worked in top salons in London and the Cotswolds for 20 years and reached the point in my life where I wanted to apply my learning and create something of my own. My commitment is to offer an environment where everyone feels welcome and comfortable. Over the years I’ve been involved in management and education, as well as stage and show work, all over the world. What I found is that being a good hairdresser is about one thing: listening to your client and

helping them to create a practical look which makes them feel like the best version of themselves, every day. How do you keep it fresh? My team are motivated, experienced and embrace the new. We invest heavily in training and regularly visit the Aveda Institute in London to hone our skills. We’re experts in male grooming and balayage, the French art of free hand colouring. We also stock the full range of Aveda hair and make up products which changes season on season. Plenty of clients come and visit the salon to ‘interview’ us before we cut their hair. JOIN in with... Chris Warren, manager at Gym and Tonic Health Club at Croft Farm Water Park is hosting the third Sainsbury’s Sport Relief Tewkesbury Gym and Tonic Mile at 11am on Sunday 20th March. Could you be part of it? So what’s it all about? The Sainsbury’s Sport Relief Games are nationwide fundraising events taking place over one weekend in March. The Tewkesbury Gym and Tonic Mile is on Sunday 20th March, starting at 11am. It’s a great way for local people to come together and have fun keeping fit whilst raising money for a fantastic cause. All you have to do is choose a distance to suit you then enter online. Most people run but you can also jog or walk the route. You’ll be helping people living incredibly tough lives, both here and in the world’s poorest communities. How many people take part? In previous years we’ve had over
200 participants and I set the pace at the front. Don’t worry about it being too competitive; there are three distances available - 1, 3 and 6 miles which are suitable for everyone. It’s fun to enter as a family or team and some people dress up or walk three-legged. However you choose to get around, you’ll enjoy stunning views as you lap the lake. The facilities here mean that babies in pushchairs, children, older people and those who use a wheelchair can all take part, including dogs on leads. How do I enter? Just visit the Sport Relief website www.sportrelief.com/mile where you’ll find full details and training tips. You’ll receive a Miler number which you need to bring on the day with safety pins to attach it to your t-shirt, trainers and suitable clothing including a waterproof and sunscreen, water and snacks, and a stopwatch if you want to time yourself. Travel light and arrive in plenty of time prior to 11am to

warm up and take in the atmosphere. Entry is £7 for adults, £3 for children or £17 for a family and you have the option to gain sponsors if you wish. Parking is free and there is a café on site serving hot & cold food and drinks. Other local events are taking place including a Swimathon at Malvern Splash and Pershore Plum Mile. HATS OFF! Chic Chapeau hats are regularly seen at Royal Ascot and society events, have been featured in Vogue and are worn by Dave Hill of Slade. We visited Worcestershire milliner Bobbi Heath. I never make the same hat twice so every creation is unique but the challenge is much greater than simply thinking up a fresh design. Each new hat or headpiece must act as the finishing touch to the outfit for which it’s created, making the person who wears it feel utterly fabulous. Practicalities also matter, of course, so it must be wearable, meaning comfortable and secure. I trained as a milliner 15 years ago but I’ve always been interested in fashion and made my own clothes. I love experimenting with unusual materials such as the plastic ‘ghost’ dress that I made for Grayson Perry’s alter ego Claire which appeared in Wallpaper magazine in 2012. I’ve been lucky to enjoy some high profile commissions like the Carr's
Water Biscuit hat which illustrated a Vogue feature entitled “Grace and Flavour,” photographed by Tim Gutt. But the biggest thrill I get is the last stage in the process of making a hat for a client. I just love that moment when he or she steps into their outfit, put on their hat, glances in the mirror and realises that they look amazing. Their head rises, their shoulders go back and finally, my work is complete. So many women feel that they can’t wear a hat which is why fascinators became so popular. Since Royal Ascot changed the rules, headpieces with the requisite 4” base have become the easiest item to wear but the truth is that there’s a hat for everyone. With personal fittings, I take the time to ensure that colour, line, shape and form not only complement a client’s face shape and outfit but suit the occasion and personality of the wearer. It usually takes two to three weeks to complete a commission but last minute projects can often be undertaken. Please call on 01905 345 640.

Microchipping - Will Your Dog Be Legal?
Proud Winners of 2014 Veterinary Practice Front-Of-House Award for our Bishop’s Cleeve Clinic!
T
he Microchipping of Dogs (England) Regulations 2014 becomes law on 6th April and requires all dogs to be microchipped and registered to an approved database by the time they are eight weeks old. The law will be enforced by local authorities, police constables, community support officers and others. If a keeper of a dog that is not microchipped (or chipped for short) gets served with a notice, they will be required to have the dog chipped within 21 days or face a fine of £500. Losing a dog, even for a short time, is every owner’s nightmare but you only have to follow our facebook page to see how often it happens. Pets can go missing for a number of reasons including illness, travel, moving house, loud noise, unusual weather or fireworks. Once separated, they can become distressed and disorientated, wander long distances or seek privacy. The

team at Folly Gardens has recommended microchipping for several years because it offers you the best chance of being reunited. Getting a microchip implanted is quick, safe and should last for the lifetime of your pet. The chip is the size of a grain of rice and the procedure, which must be carried out by a vet or trained implanter, takes only a few minutes. Once your dog is chipped it’s essential to ensure that the microchip number, your pet information and contact details are registered and kept up-to-date on the microchip database. Should your pet go missing, the person who finds them can take them to the police or an animal professional who will scan your dog and contact the database centre. After some security checks to confirm that your pet is yours, it will then be returned home. To take advantage of our offer on microchipping please call us on 01684 292244.

CYCLING made easy
Many of us love cycling through the countryside but is your bike ready for the new season? Adrian Johnson explains how About Bikes can help.
A
bout Bikes offers an affordable, local service to help cyclists take care of the set up, servicing, repair and cleaning of their bikes. With ten years’ experience in bike sales and maintenance, a background in engineering and a love for all things bike, we are qualified to deal with all makes and models from a child’s starter trike through to professional road or mountain bikes. Since closing the shop and setting up a purpose-built workshop we are now focusing on repairs and servicing. Because we ride bikes, we understand them...how they function, how some seemingly minimal squeak or skipping gear can spoil your ride. We offer the service we’d want to receive and are proud to say no job has beaten us yet. We will collect your bike, take a note of any problems, call to verify if we are struggling to locate the issue, advise what needs doing, quote, then gain authority before going ahead. As we work, we’ll text or email updates and we
always deliver on our promises. If you’ve bought a new bike that’s arriving in a box, we can take delivery, assemble it and dispose of the packaging, set it up and adjust it to fit you correctly. If you cycle regularly but struggle with discomfort, we offer a personalised bike fitting service based on training and years of experience. Anything from a quick seat or handle bar adjustment to advice on posture can make your cycling more comfortable. We don’t charge silly fees and find a 20-30 minute appointment suffices. For serious cyclists we offer a pre-season deep cleaning service and the option of a regular postride spruce-up including wash, lubrication of cables, bike spray, buff and a quick check over perfect for the mountain biker who doesn’t have time to do a weekly spoodle and fettle. GARDEN DESIGN
With RHS Chelsea Gold Medal winning garden designer Richard Mercer.
A
chieving good results in any garden requires skill in construction and creative design. The principles and process I use are the same whether I’m installing a water feature, constructing a patio, or transforming an entire estate. Every project starts with an initial free consultation during which we work together to assess your existing plot and explore your needs. I see it as my job to interpret your wishes, not impose my preferences upon you, so we’ll create a checklist together and use it as a starting point. I need to understand the style of garden you like so it’s worth preparing for my visit by looking through magazines or printing off visuals from the internet. Giving me an idea of budget is also a great help to the design process. If you choose to go further, the next step is for us to create a
34
Company Promotion
scaled concept plan. After surveying your plot, we will create a design which you can build yourself, commission us to construct, or use to get quotes from others. For this there is a fixed fee, depending on the size of the project. Designing a plan to budget requires construction know-how, expert knowledge of landscaping materials and an eye for detail. Working from our checklist, measurements and photographs, we begin by drawing in everything we want to keep from the existing layout. Bearing in mind sightlines and focal points, we go on to pen a combination of shapes on paper which will evolve into a pattern that flows throughout the garden. Our aim is to link the garden to the house, ensuring it is practical to maintain and looks attractive all year round.
If you decide to progress to the construction stage we’ll suggest materials and bring samples to your home from which to choose, followed by a quote. We’ll put together a planting scheme that will give changing colour and interest, provide a winter structure and fulfil your original brief. By using traditional plants in a modern way, with attention to contrast and texture, we will achieve a garden that is both functional and beautiful. Having trained at Pershore College 20 years ago, been awarded an RHS Chelsea Gold Medal and completed numerous projects, domestic and commercial, we are able to work on projects large and small. We only construct one project at a time and I am always on site myself to oversee the process. Please call on 07860 603598 to book your FREE consultation.

TREE SURGEON Commissioning a professionally qualified tree surgeon is the best way to ensure a natural looking landscape, suggests Tim Coppin, Director of Park and Landscapes.

ost trees will need some attention from time to time to keep them healthy and safe. Whether you own a single specimen apple or an entire woodland be sure that your little bit of England remains in the hands of a responsible professional. A properly qualified tree surgeon will resolve any problems such as a branch overhanging your drive or a canopy that has spread too wide, whilst also taking care to maintain a balanced, natural outline to your tree, appropriate to its species. Before you employ anyone it’s a good idea to check them out in terms of qualifications, experience and insurance. Get a fixed quote for the work
required, be clear about how long it’s likely to take, and what will and won’t be included. Will you be left with anything to dispose of? Can you create a useful pile of logs or bark chippings as a by product of the project? Some indications that you are dealing with a suitable professional are: NVQ / NPTC professional qualifications demonstrating safety and proficiency in tree climbing, aerial rescue and the use of chainsaws, chippers and stump grinders. Longevity
With such a vast range of windows and doors available in a variety of materials, the prospect of replacing them can be daunting. 42
How can you be certain that the company you choose will provide a quality job at a reasonable rate? John Lannen, Director at L&L Installations, now celebrating 35 years of trading, offers a simple three-step guide.
1
Choose a well established supplier. Windows and doors represent a significant investment. Whether you plan to remain in your home long term or sell it on soon, you must be confident that the products you install will be functional, long lasting and enhance your property. Most companies will offer some form of guarantee but
study the small print carefully and think about what value it might have in a few years time. Indicators of a solid company are a guarantee backed by QA National Warranties combined with membership of FENSA, the Glass and Glazing Federation, the government’s Trust Mark Scheme and the Which? Trusted Trader scheme. L&L is proud to belong to them all. Beware of any supplier who asks for a deposit on your order. L&L will only request payment once we are sure that you are satisfied with the work completed.
2
Research the quality of the products you plan to buy. Who makes them, where, and to what specifications? How will they be installed? L&L are unique locally in manufacturing our own products in addition to selling select national brands. Our PVCu windows, doors and conservatories are extruded and hand built on Tewkesbury Business Park then installed by our own team of craftsmen who are trained to at least NVQ Level 2. Over three decades we have developed unique standards, methods and ways of working which we believe are the best. You can’t buy our products anywhere else. Providing that you pre-book, anyone can take a guided tour of our factory and see our technicians at work.

3
Consider what aftersales service you require. All our products are covered by our annual inspection scheme which is part of our standard ten year guarantee. We’ll visit your home to check your installation every year and resolve any issues immediately. This remains the case even if you sell your home as you can pass your guarantee on to your purchaser at no extra cost. For 35 years, L&L Installations have developed an unrivalled reputation as one of Gloucestershire’s leading manufacturers and suppliers of glazed upvc, aluminium and timber. As a family company, the L&L team firmly believe in delivering incredibly high quality products and impeccable service, at an affordable price. Behind The Scenes...
With Caroline Lawrence from The Roses in Tewkesbury The changes to The Roses over the last year have been well documented, and few regular visitors to the town will have failed to notice both the ongoing work and the striking result. All along the aim has been to update and modernise the building, making it more accessible, more versatile and to ensure its continued success well into the future. For me personally, one of the most interesting aspects of the journey has been the realisation that making an organisation like The Roses truly accessible involves much more than simply making obvious physical changes like installing a lift, or increasing the number of accessible toilets. The Roses worked closely with a number of organisations during the planning and consultation process prior to the redevelopment,
one of which was Barnwood Trust – a charitable foundation dedicated to creating the potential in Gloucestershire for people with disabilities and mental health challenges to make the most of their lives. One of the initiatives we continue to work alongside Barnwood Trust on is You’re Welcome; a ten year plan to create more welcoming and inclusive communities across the region. You’re Welcome recognizes that there are many more barriers than just the physical that may prevent somebody from feeling able to come to The Roses. In order to become a space that is as welcoming as possible, for as many people as possible, we are looking at things from many different perspectives. What’s it like to visit The Roses if you are on your own? What’s it like to come to a film if you suffer from dementia? How easy is the building to navigate if you are blind?
Buy One Get One Free on any evening film screening in March & April Ends 30/04/16 T’s & C’s Apply
You’re Welcome challenges us to answer all of these questions, but it also asks us to focus on people’s strengths and not their weaknesses. To give just one example, we now programme ‘Relaxed’ film screenings, which allow anyone with Dementia, Autism or any other condition that makes day to day living difficult to enjoy the most popular films in our programme with no fear of judgement or stigma. Strong communities are essential, and encouraging people to do things together helps to break down barriers, build confidence and create new opportunities for all. You’re Welcome at The Roses – and if there’s anything we can do to make your visit easier, all you have to do is ask us. For more information on You’re Welcome, visit www.yourewelcome.to

Stay SAFE
Home safety tips from Steve Owens, MD of Buzz Electrical
U
K
Government statistics show that electricity causes more than 20,000 fires a year with about 70 people killed and 350,000 seriously injured annually. The rise in the use of electrical appliances has led to an increase in electrical accidents recently. Electricity improves our daily lives but it must be used safely. It sounds like common sense, but you’d be surprised how many of us fail to follow basic safety guidelines. Accidents are most likely to happen when equipment is damaged or misused, and failure to correct a minor problem can have devastating effects. So take a look around your home and ensure you follow these tips to stay safe this year:
Never overload sockets
particularly with high current appliances such as kettles, irons and heaters. Don’t use adaptors plugged into other adaptors.
Don’t ignore warning signs like
the smell of burning, the sound of arcing (buzzing or crackling), fuses that blow or circuitbreakers that trip.
Inspect the condition of your
cables, switches, sockets and other accessories regularly -
faulty and aging wiring is one of the major causes of fires. Remove plugs from sockets carefully. Pulling out a plug by the cable can damage the contact between the plug and socket resulting in overheating, loose wires or an electric shock. Use plugs with the British Standard safety mark. Don’t trail cables under carpets or rugs to keep a room tidy. Don’t dry clothes on an electric heater with water dripping onto live parts or cover up vents. Never drill or fix nails into a wall without knowing what’s behind it - it may conceal cables, gas or water pipes. Take particular care with the installation and maintenance of down lighters. Consider an Electrical Installation Condition Report (EICR) at regular intervals, at least once every ten years. Buzz Electrical regularly carry out these tests for domestic and commercial properties and will give you total reassurance that your house is safe. It is important that any electrical installation work is carried out by a
competent person. Buzz Electrical guarantees a friendly, reliable service from fully qualified electricians. For advice call on 01386 423600 or for hints and tips visit www.facebook.com/ buzzelectrical

POLICING
South Worcestershire With Policing Commander for South Worcestershire, Superintendent Kevin Purcell.
T
hink for a moment about Evesham Police Station, a typical base on my patch, situated in arguably one of the most pleasant areas of England. From it, you can look out over the River Avon, Bredon Hill, a field of Asparagus, and newly planted Christmas Trees. It’s a great place in which to live and work, with a lengthy agricultural history that has made it the multi-cultural town it is today. You might be forgiven for thinking that a police officer’s lot in the Vale of Evesham is a crime free one and indeed, our area enjoys a very low crime rate. Rooting through the archives there recently served as a reminder, that when it comes to crime, things change and yet forever remain the same. The archives include a crime report from 95 years ago of a house burglary in Hampton. A mackintosh (no, not the apple kind!) and a velour hat were stolen. The offender was caught and sentenced to 3 years in Borstal. Almost a century has passed since that incident but it’s not so different from the crime reports we receive today. Criminals will always look for the easiest target and the best gain.
So as we move into spring and the gardening/cycling/ caravanning season please bear in mind the vulnerability of your garden sheds, outbuildings and equipment. The harsh fact is that if you don’t take care of your belongings, a criminal will be sure to have it away without a second thought. Most victims of burglary are concerned that they have been specifically targeted or watched. However, most burglaries are opportunistic. Burglars choose premises that have little or no obvious security, seem to be unoccupied, have easy, unobserved access to the side and rear and/or offer them the chance of gaining entry without being seen or heard. It’s possible to dramatically reduce your risk of burglary by taking simple security measures to deter criminals and remove some of these opportunities. The best way to approach your home security is to start from the boundaries and work your way into the centre, treating each area as a layer, until you reach the targeted contents. This is known as the 'onion peeling principle'. Although the layers differ for each household, generally they can be broken down into boundaries, outbuildings,
buildings, buildings and contents. You can find more detailed advice online at www.westmercia.police.uk/ Home-security Finally; social media. If you own an expensive bike and use apps on your smartphone to share your rides, do not enter the start and end point of your route for all to see online or it could be that you inadvertently make yourself and that beloved bike, a target.

March Only Mini Advance Incubator - is a fan assisted egg incubator holding up to 7 eggs which are turned automatically, up to 12 smaller eggs (e.g. pheasant or quail) can be accommodated using the optional small egg disk. The combination of a simple yet accurate menu driven digital control, fan assistance and carefully directed airflow result in a machine which is deceptively sophisticated yet convenient and extremely easy to use. The digital display shows incubation temperature (in °C or °F), days remaining before hatch and turning status. The user can alter settings to control incubation temperature, temperature units, turning interval, turning angle, the number of days your eggs take to hatch from fresh and the high and low temperature alarm limits. If the number of days to hatch isn't known then the automatic turning can be controlled by the user and easily turned off when the first egg cracks.

NEW Exam Framework Dr Tony Evans, Headteacher at Prince Henry’s High School, Evesham, addresses the changes in the AS and A-Level courses.
I
n my last article, I talked about the government’s reforms to GCSEs. Changes have also recently been made to AS and A-Levels making them, in their words, “more rigorous as … this will prepare young people better for higher education, apprenticeships or employment”. Some new AS and A-Levels have been taught in schools and colleges in England since September 2015 whilst other subjects will change in 2016 and 2017. The first results for the new AS
levels will be in 2016, and for the A-Levels in 2017. The first subjects to be reformed include Art & Design, Biology, Business, Chemistry, Computer Science, Economics, English Language, English Language and Literature, English Literature, History, Physics, Psychology and Sociology. Further subjects will be introduced over the following two years. The main features of the new qualifications are as follows: The main form of assessment will be by examination. Other types of assessment will only be used where there is a need to test essential skills. The courses will no longer be divided into modules and there will be no external exams in January. AS and A-Levels will be assessed at the end of the course. AS assessments will typically take place after one year’s study and A-Levels after two. AS and A Levels will be

decoupled – this means that AS results will no longer count towards an A-Level, in the way they have done previously. AS levels can be designed by exam boards to be taught alongside the first year of ALevels. The content for the new ALevels has been reviewed and updated, with universities playing a greater role in this process than they have before. It is very likely that we will see significant changes to the way students select their A-Level options. Students will need to choose carefully before embarking upon A-Level courses, as there may not be an opportunity to complete an AS at the end of Year 12. My advice is to read the information provided in Sixth Form prospectuses very carefully and speak to the schools and colleges about the courses they have on offer. Many university websites also offer guidance about their entry requirements which may help.

Chocolate Velvet
With an intense flavour and delicious melting centre this recipe is the perfect dessert for a dinner party, Mother’s Day or Easter Sunday. It’s a perennial favourite with diners at Belle House, Pershore.
Belle House Famous Hot Chocolate Fondant Pudding INGREDIENTS 200g good quality dark chocolate (minimum 70% cocoa solids), broken into pieces 200g unsalted diced butter plus extra to grease ramekins cocoa powder to line ramekins 110g caster sugar 4 eggs 4 egg yolks 60g plain flour, sifted crème fraiche, vanilla ice cream or cream to serve MUST BE PREPARED AHEAD These fondants must be prepared 2 hours ahead of cooking but can be made 2-3 days before and frozen. Cook from frozen or, if you prefer to defrost, leave them out at room temperature.
Serves 8
56
METHOD Line 8 ramekins with butter and cocoa powder to prevent the puddings from sticking Preheat the oven to 180C/160C fan/gas 4. Place a bowl over a pan of barely simmering water, then slowly melt the chocolate and butter together. When melted take off the heat and stir until smooth. Heat sugar in the oven with no fan at the above temperature for 4 minutes, (this step is optional). Whisk egg and yolks and add the warm sugar. This needs to be done with an electric whisk until the mixture gets to the ribbon stage i.e. a thick mousse mixture - when you lift the whisk over the pale, thick mixture it should fall slowly, forming a ribbon. Fold the flour into the chocolate and butter mixture. Fold the chocolate mixture into the egg and sugar mixture and pour into the greased ramekins. Chill for a minimum of 2 hours or overnight. Cook for 8-10 minutes in a pre-heated oven at the above temperature then remove. Either run a knife around the edge of the dishes and turn the puddings out onto warm plates or leave them in the ramekins. If cooking the fondants from frozen, add 5 minutes to the cooking time. Serve straight away with ice cream, cream or crème fraiche.
