Hello... …and welcome to our winter issue. With so much change occurring politically, at home and abroad, the world we’re living in today seems to barely resemble the one we occupied at the start of this year. Events of the last few months have left many of us reeling, concerned by the divisions that have become apparent within our society. In this context, it seems more important than ever that to focus on the things that bring us together, the fundamentals that make us a community. It’s what Life in the Village is all about. By offering easy ways to access information on country living locally, we hope to reflect and support our community and help local businesses thrive. We print almost 13,000 magazines; if everyone made a single phone call as a result of reading their copy, imagine what we could achieve. This edition, we bring you expert advice from a range of local professionals plus news, views, events and a selection of money saving offers. We’re also offering three new competitions - a pamper package with Graham West Hair Design, a cheese selection and two three month film passes for The Roses, Tewkesbury. Entering is easy - just visit us online and provide your details as requested. Your next printed magazine will be with you in February but meanwhile you can access daily updates digitally. Please follow us on twitter @LisaLambon or visit www.lifeinthevillage.co.uk where you’ll find our feed displayed on every page. Thank you to everyone who has supported us during 2016. Over the winter we’ll be working on some new ideas to extend our offering so your feedback is always appreciated. Wishing you all a Merry Christmas and a very Happy New Year,

WILDLIFE
Wendy Carter of Worcestershire Wildlife Trust offers some winter gardening ideas, all designed to encourage wildlife.
W
e
may not think about our gardens much at this time of year but when the sun is shining and you feel the need to get outside, wrap up warm and 14
set yourself a wildlife challenge. There’s plenty that all of us can do to make our own little corner of the world more welcoming to wildlife. The second State of Nature report, released in September, offers all the incentive we could ever need. Bringing together data and
expertise from over 50 organisations on how wildlife is faring across the UK and beyond, it revealed that since 1970 just over half of our wildlife species have declined. It’s a huge concern but with minimal effort, we can all do something to help.

I try to make my small patch of garden as welcoming to wildlife as I possibly can. It’s not always easy – what suits our wildlife garden at Lower Smite, (Worcestershire Wildlife Trust’s HQ), doesn’t necessarily work in my own garden at home. We all have different types of gardens and varying priorities for them but if you’re lucky enough to have more than just a window box full of flowers you can foster bees, butterflies and other pollinating insects. From simple changes in the way you garden to more ambitious projects like installing a pond, you could make your plot more appealing whilst much of our wildlife is tucked up for the winter. Pruning and tidying Most of us like a tidy garden with plenty of clean lines but for 16
the sake of our wildlife, I try to fight against that urge! Where you can bear to, try to leave things a little bit messy – I admit I sweep some leaves into hidden corners but I also leave others to decompose where they land. Try to apply the same principle to any fruit trees as windfalls and unpicked fruit are a good source of food for wildlife in winter. By not pruning until spring, or at least popping cuttings safely in one place throughout the winter, you give everything a fighting chance of making it through to spring. Making compost Composting saves time and money so have a go if you can. I can’t have a proper compost heap so instead, I create a mini compost pile made up of dead stems and deadheads that
becomes home to woodlice, harvestmen, springtails, spiders and other small critters. I know that ‘my’ hedgehog rifles through it every now and then because I’ll tidy it into the corner only to find that the hedgehog has spread it out in search of food. The other important thing about the pile is that it provides a home to over-wintering eggs, larvae and adult insects. Logation, logation, logation Have a think about using a spare corner of your garden to create a simple log pile. Nothing complex is needed. Just partbury some standing logs then fill in the gaps with smaller logs and winter prunings; a feature like this will provide year-round protective nooks and crannies for a range of creatures. If you’re lucky, your efforts may one day

Care for the birds Don’t forget to feed the birds (particularly important at this time of year) but have a think about your planting too. Is your garden supplying nectar for early bumblebees or berries for birds?
If not, try putting in mahonia, pyracantha or cotoneaster. Ivy is also fantastic as it provides bees with a late source of nectar. If you’ve already got bird boxes in your garden, now is the time to clean them out - the next breeding season can start as early as February when birds start looking for nest locations. If not, how about considering whether you’ve got room for a nest box or boxes? Perhaps you could encourage sparrows with a a terrace on the side of your house or have you got eaves that would be suitable for house martins? Maybe you could put a nest box (or an insect hotel or bat box) on your Christmas list or buy them for friends and family? Watery goodness Winter is the perfect time for creating that pond you’ve always

“
be rewarded with a visit from a great spotted woodpecker trying to prise mini beasts from the crevices. If you have no option but to cut down a tree you could create a stumpery. Try to leave the stump as high as possible as it will provide an environment for everything from fungi to mini beasts for years to come. You can even get creative with the stump - plant honeysuckle around it to make a feature, use it as a plant pot stand or carve out your very own little chair like the one pictured overleaf.

intended to install. It doesn’t have to be huge as even the tiniest specimen will be used for drinking and/or bathing by birds, mammals and various insects. It should, however, be in a sunny location and have at least one shallow side to ensure that any wildlife that falls in can get out again. To achieve a range of conditions, it helps to choose a spot that will get a little shade at some point during the day. It’s also better for wildlife if your pond doesn’t contain fish. Providing extra habitats around the edge of the pond will be of great benefit to wildlife. These can be created by placing stones, logs and tall plants in spots all around the pond edges. Allow some long grass or other vegetation to grow up on at least one side. Try to build your pond using scalloped edges rather than 18
straight lines as this will provide many different micro-conditions with variations in shade, depth and temperature. Best of all, try to create a small bog area to the north/northeast side of the pond. Of the different pond types, garden ponds are most similar to freshwater ponds and can provide a refuge and home for many freshwater-dwelling creatures. A wildlife pond is one of the single best features for attracting new wildlife to the garden and it is thought that some amphibians, such as frogs, are now more common in garden ponds than in the countryside. Many pond creatures will travel far and wide to find new ponds, discovering a potential new home in no time at all, so a well designed pond can play a huge part in helping to preserve our natural biodiversity as well
as being an attractive feature. And what better motivation could you need than the thought that this summer your garden could be home to the magical, azure coloured damselflies and dragonflies who will come to visit and breed? Find out more... If you’d like further advice on welcoming wildlife into your garden, take a look at the free downloadable factsheets on our website. We’ve got practical tips on everything from making compost to controlling slugs, siting bat boxes to creating a wildlife meadow. Visit www.worcswildlifetrust.co.uk/ gardening-factsheets

ECLIPTINGTM
NEW! COLOUR GRAHAM
The autumn/winter collection from Aveda sees the launch of a new colour technique called Eclipting™ that can be compared to facial contouring, but for hair. Graham West explains.
T
his season we’re using a superb new colour technique, developed by Aveda’s Global Artistic Director for Hair Colour, Ian Michael Black with European Master Educator and Hair Colour Specialist, Jo McKay. Moving on from Balayage and Ombre, EcliptingTM is a technique patented by Aveda, which aims to bring out each individual’s best features. To achieve contouring, we assess face shape, skin tone and eyes then place and build colour in the hair to soften and highlight features. The technique is based on the same principles of framing a photo, using colour to make the best aspects of the image stand out. Adding darkness to the sides of the face or underneath the hair, for example, can make your face look thinner and your hair fuller. The beauty of EcliptingTM is it works on most people, whether Company Promotion

they’re after a minor or big change and whatever the length or texture of their hair. Using a combination of foils, freehand painting and accents, we can create a look that is subtle or more edgy. The base colour may be your own, or may be bold and extreme, such as streaks of midnight blue or even green. Also fresh in the salon is the new Foklor make-up collection from Aveda which includes rich, warm berry shades. We stock the entire range of Aveda hair, skin and beauty products, including beautiful gift sets for Christmas. Lots of clients visit the salon and ‘interview’ us before we touch their hair. Lasting Warmth
Is your conservatory too cold in the winter? John Lannen, Director at L & L Installations, offers advice on a range of solutions.
24
O
ne issue that homeowners often ask us for advice on is how they can make their conservatory warmer in winter. With a newly built installation, achieving a comfortable temperature all year round shouldn’t be an issue. Any conservatory installed today can enjoy the benefits of modern, thermally efficient glass, sealed units with argon filled cavities and the option of a tiled roof, all
of which will maximise solar gain and heat retention. However, many householders still suffer with heat fluctuations in conservatories that were erected more than a decade ago, or were originally poor quality installations, often inherited from a previous homeowner. If this sounds familiar, a replacement is not always required; there may well be several ways for you to renovate your conservatory. The temperature of your
Company Promotion
BOOK A FREE SURVEY conservatory is a complex matter influenced by a variety of factors including size, position and materials. The first step is to have it surveyed by a suitably qualified person who can find out more about your issue. Be sure to do your own research too because it’s important that any renovations suggested will solve the problem, enhance your conservatory and ensure it remains structurally sound. Options for upgrading include adding or modifying heating, reglazing, changing the windows and/or doors, and/or replacing the roof. Upgrading your windows and doors with modern, high efficiency units with low emissivity coated glass will not only make it much warmer, it means you can also change the appearance of your conservatory, including the style and colour. Replacement roof options includes swapping a polycarbonate roof for glass,
glass for tiles, or either for a glass/tile combination. Several tile systems are now available from regular roofing tiles to insulated, lightweight plastic versions. These can be combined with vented glass panels which can be strategically placed to let in light. Your roof can also be clad internally to aid with the retention of heat. Such renovations can work well. However, the changes must be chosen carefully and installed correctly, ensuring the footings, walls and UPVC structure are sufficiently strong to carry them. To comply with building regulations, some conservatories will require structural support. At L&L, we draw on 35 years’ experience to create products we are proud of. Whatever type of conservatory upgrade you are thinking of, consider not only the initial cost but the long term value of the installation that you will live with for years to come.
Call today for advice on upgrading your conservatory
Examine the length of guarantee being offered, look for a company’s membership of relevant trade bodies such as FENSA and Which? Trusted Trader, and ask to see their testimonials. You can be assured that all L&L products include the same high quality glass, a ten year guarantee and a free annual inspection for peace of mind.

CAPITAL Intergenerational financial planning means you may be able to help the younger generations of your family get onto the property ladder.
O
ne of the biggest challenges facing the millennial generation is how to save enough for a deposit on a first home. More than half of UK firsttime buyers in 2014 were given a helping hand by, ‘the bank of mum and dad’.* Parents can help their children save for a deposit and can also help with funding the mortgage. It has always been possible to help a child onto the property ladder by acting as a guarantor, but not everyone was happy to take on that risk. Now, some mortgage providers will allow parents to be part of the mortgage process without having to put their names on the title deeds, removing the potential liability for any default. Some lenders will take a combination of the parents’ and their child’s income into account before calculating the maximum loan available. Others will ring-fence some of the parents’ assets to increase the size of the deposit which thereby reduces payments. Whilst many young couples receive a deposit from their parents, financial support need not be in the form of a handout; it can be an integral part of inter-
WORDS: Jo Potts generational financial planning, and be undertaken to reduce Inheritance Tax (IHT). One of the easiest ways to pass money between the generations is by gifting. HMRC rules allow gifts of up to £3,000, free of IHT, every tax year, and small gifts of up to £250 to as many people as you like. The rules for ‘normal gifts out of income’, however, allow wealth to be passed down on a much larger scale. The gift must be part of a regular pattern – monthly, quarterly, annually – and must come from income, not capital. Grandparents could, for example, contribute to a Junior ISA every birthday or make regular gifts to help a child save up for a home. Having made the gift, the donor must ensure they have enough income to sustain their usual standard of living. Today, with so many pressures on our finances, wealth management is as much about protection and preservation as it is about growth. Hidden Hazards in Your Home
Consult our facebook page for our Christmas opening hours
C
hristmas is a time when most of us look forward to spending special time with family, including our pets. With so many hours spent relaxing, socialising and eating, it’s also a peak time for accidental pet poisonings. We tend to think of dogs and cats having digestive systems that are more robust than our own but it’s more that their bodies metabolise substances in a way that is different to us. This means there's a long list of foods that we can eat but are poisonous for them, including several products that we are more likely to consume during the holiday season. A moment of sherry fuelled distraction is all it takes so please plan ahead and think about how best to store, display and dispose of food. In clinic, the top two poisons we encounter are raisins and chocolate. Grapes, raisins, currants and sultanas contain toxins which are potentially fatal to pets meaning foods that are not immediately obvious Company Promotion
Vet Brad Cooper of Folly Gardens, Tewkesbury and Bishop’s Cleeve reminds you to stay alert to potential hazards for your pets this Christmas. NEW!
like Christmas cake, Christmas pudding and mince pies - all present a threat. As well as fruit, they often contain high levels of fat which can cause digestive issues, and alcohol which is highly toxic. Other substances that can be dangerous include nuts, onions, garlic and chives, raw meat and eggs, bones, caffeine, avocado, salt and artificial sweeteners like sorbitol and xylitol found in chewing gum, nicotine substitutes and some confectionary. Medication should be kept out of reach as should batteries and antifreeze. Beware of plants like mistletoe, pine, poinsettia and amaryllis; if you plant your Christmas tree in a pot, don’t let your pet drink the sap laden water. Should you have any concerns about what your pet has eaten, even out of hours, please always consult a vet. Call us on 01684 292244 or 01242 679880. Wishing you and your pet a safe and happy Christmas.

You know when you’re going to die, you’ve got loads of time! You rather like the idea of your children battling over your estate, falling out and never speaking to each other again! You dislike your spouse and would prefer them to struggle with strenuous legal issues and be tied up in expensive litigation with your children for many years. Your family doesn’t need the money. You actually much prefer the idea of the Government taking as much of your estate for taxes as they wish. You think foster care would be the best place for your children, whilst Social Services and your family fight in court over which relative gets custody.
Of course, we are being overly flippant! Like us, you will not agree with any of these reasons. So, you should be asking yourself one very important question?
Get in touch with our legal experts to discuss your Wills and Inheritance Tax Planning:
What logical reason is there for you NOT to have a Will? You may assume that everything you own at your death will go to your husband, wife or partner, or perhaps you believe you have nothing to leave anyway. The fact is, without a Will, the Intestacy Rules say who gets what and put simply your property may not go to those who you wish to receive it. If you care about who benefits from your property after your death you MUST MAKE A WILL. 37

Still GREEN Vale of Evesham company Budget Skips was set up with the aim of managing waste in the ‘greenest’ way possible. Sixteen years on, they recycle 95% of waste brought onto site. We caught up with Barry Holloway. Budget Skips is known as ‘the green skip company.’ What are your key priorities? We started the company on 1st November 2000 with just two lorries and a single vision - to change the way that waste was disposed of for good. Sixteen
40
years on, we are leading regional recyclers of commercial and domestic waste, all dealt with in the ‘greenest’ possible way. We’re very much a local concern. Over the years the company has enjoyed healthy expansion as a result of continual
investment in and support from the local community. We now employ more than 35 people. With over 750 skips, a modern fleet of specialist vehicles, and a large, state of the art recycling plant (self-sufficient in electricity and water) we can deal with almost any type and volume of waste on site. We also have an ongoing commitment to excellence. Not all householders realise that they have a duty of care to ensure that their waste is disposed of responsibly. We’re proud that the vast majority of products we handle are made good for future use; not only is this ethical but it means we can offer customers the most competitive rates.

Gardeners
We supply high grade topsoil to BS3882:2007
How do you process the waste that arrives in skips? It’s removed from the lorry and processed over a large conveyor belt inside our indoor plant. We’ve recently invested in new sorting bays where our team categorise waste by hand, picking out anything that can be recycled, including paper and plastics, cardboard, metal, hardcore and some PVCu. Can you give an example of waste products that you make good for future use? We recover over 250 tonnes of recycled topsoil and aggregate daily, as well as woods, plastics, metals, paper and card and more. Cardboard is baled and exported plus in an typical month, we provide over 4000 tonnes of raw materials for plastic manufacturers, paper mills, landscapers and others. We screen, process and supply the topsoil to local gardeners, both amateur and professional. It can be ordered by the tonne or
half tonne, and collected or delivered. Particularly popular is our highest grade topsoil which has to be analysed and meets British Standard 3882:2007. Hardcore and bricks are crushed in a massive piece of plant machinery to produce two sizes of stone, 40mm and 75mm, which are then used by the building trade. As a company we’re always looking for innovative ways to meet the ever-growing demands of waste management so that we remain at the forefront of the recycling industry. Can you tell us more about the new van collection service? Suitable for small loads, white goods, properties with restricted access or customers who don’t want to lift, we offer the option of a ‘man and van.’ Simply put your goods in the hall or garden and we’ll do the rest. To find out more skip hire, topsoil or our ‘man and van’ collection service please call us for a quote on 01386 841 181.

Growing our
OWN Dr Tony Evans, Headteacher at Prince Henry’s High School, Evesham introduces recent developments to teacher training locally.
I
n a previous article, I talked about the government’s education White Paper and their plans for change. One of the priorities the Department for Education has set out for schools includes recruiting and retaining teachers by strengthening university and school-led training and accreditation. Teachers have traditionally entered the profession by gaining a degree in teaching or by following a postgraduate course leading to Qualified Teacher Status. In recent years, there has been a move to give trainee
teachers more time in schools rather than in university through the introduction of the School Direct programme. Some schools are now embracing the responsibility of teacher training themselves by applying to the National College for Teaching and Leadership to gain SchoolCentred Initially Teacher Training (SCITT) status. Prince Henry’s is now one of three SCITTs in Worcestershire and the only one in the south of the county. In order to become a SCITT, a school has to demonstrate strong partnership working with other schools, and we work closely in an alliance with many First, Middle, High, Primary and Secondary schools in South Worcestershire and beyond. Our alliance’s aim is to create a ‘family ethos’ within the proposed partnership ‘to provide the highest quality of Initial Teacher Training producing the next generation of outstanding practitioners in order to continually raise standards and pupil achievement.’ Following the publication of the Government’s “Educational
Excellence Everywhere” White Paper, there is a clear move to a more school-led system of Initial Teacher Training which supports the view of Ofsted in 2012: ‘It is significant that all the outstanding training our inspectors have found so far is being led by consortia of neighbouring schools, with trainees taught by experienced, practising teachers’. This is a really exciting development and provides a superb opportunity for Prince Henry’s and our partner schools to “grow our own” and have a positive, long lasting impact upon the recruitment, training and development of new teachers within the South Worcestershire area and beyond. Andy Duffy, Assistant Headteacher at Prince Henry’s, will be the Director of the SCITT and if you are interested in learning more about a career in teaching, please contact him at the school on 01386 765588.

Bereaved people in Worcestershire who have been supported by St. Richard's Hospice have set up their own group to help them look to the future, Helen Griffee explains.
T
he newly formed social group is called Next Steps and meets in the community room at the Waitrose store in Worcester. Members of the group had previously been helped by the St Richard's team through a variety of groups and one-to-one support before the death of a loved one and into bereavement. Matt Jackson, St Richard's Family Support Practitioner, said, "Some people have been supported by us for a

considerable amount of time and may find moving away from that caring network very difficult. We run a Steps bereavement group where individuals come along for twelve sessions and we have been working with some of the members to set up this independent social group so they can continue to support each other and those in a similar position in the future." The new group chose the name 'Next Steps' and has already hosted a ten pin bowling evening and has more social events
planned in the future. They meet fortnightly. Yvonne Green, from Droitwich, has been supported by St Richard's before and after the death of her late husband, Chris. Mrs Green is now a member of Next Steps and said, "It's good to meet other people who have been through the similar experiences of bereavement. When people come to the end of being helped by St Richard's, some don't have friends or family around for support. This group can act as a

The group is open to any bereaved person who has previously been supported by St Richard's or Bereavement Support South Worcestershire (BSSW) which is hosted by St Richard’s to support those after a PHOTOS: Above, Cookery group at St Richard’s Hospice. sudden or unexpected death. Anyone who is interested in joining the group is asked to contact the Family Support Team on 01905 763963. St Richard's Hospice provides free specialist palliative care for patients living with life-limiting illnesses and supports their families. Each year the hospice team supports over 2,500 patients and family members in Worcestershire with compassion, kindness, dignity and respect.
Patients are cared for in Day Hospice, the 17-bed In-patient Unit or in their own homes by a specialist professional team as well as many trained volunteers. Last year 1,200 individuals were helped the Family Support Team. St Richard's is an independent charity and is grateful for all donations to help it to continue its work. www.strichards.org.uk

BOOKSHELF From the ultimate escape from everyday pressures there’s nothing to beat an hour in the company of good book. But what to read? TINY BEAUTIFUL THINGS BY CHERYL STRAYED
Beautifully written, funny and moving, this unusual book presents a series of responses by ‘Sugar’ the voice of the weekly ‘Dear Sugar’ advice column which was first published in an online magazine. Much of the advice is presented as stories derived from Strayed’s own life experience. As in her memoir ‘Wild’ her voice is warm, wise and authentic; it will have you reading late into the night.
This prize winning novel, written by a practising doctor, examines the predicament of a female surgeon who is forced to tell an untellable truth when she is summoned to a medical tribunal to explain a mistake in theatre. Gripping and intense from the first line, it uses sparse and accomplished prose to examine the many weighty moral issues that doctors face. Powerful, harrowing and unforgettable.
MUD, SWEAT AND TEARS BY BEAR GRYLLS
WHEN BREATH BECOMES AIR BY PAUL KALANITHI
THE SHEPHERD’S LIFE BY JAMES REBANKS
One of the best known faces of survival, Chief Scout, martial artist, mountaineer and SAS recruit Bear Grylls has lived a fascinating, action packed life, which has often pushed him to the limits of physical and mental endurance. One of his many feats is to become one of the youngest climbers to scale Everest only eighteen months after breaking his back. Read this gripping memoir and take part in his extraordinary adventures from the comfort of your armchair.
At the age of 36, just as he was about to complete his training as a neurosurgeon, Paul Kalanithi, was diagnosed with a cruel, inoperable lung cancer which prematurely ended his life. Overnight, he was transformed not only from doctor to patient but into a student of the meaning and purpose of life. In this remarkable memoir he writes exquisitely on morality, facing death and what it means for doctors to forge meaningful relationships with their patients.
Anyone who feels a strong sense of attachment to a place will love this gentle tale of the shepherd’s way of life, a disappearing lifestyle which is often inherited rather than chosen. In this well crafted, unsentimental book shepherd James Rebanks tells the story of his family’s ancient way of life on a remote farm in the Lake District which dates back 600 years. It’s a unique account of a rural year and what it means to feel an unbreakable connection to the land.
How is a novel written? A masterpiece painted? A symphony composed? And how can you achieve your best work? American writer Mason Currey sets out the working routines of more than 160 great writers, philosophers, artists and composers. Could you get inspired by doing it like George Gerswhin? It’s the best excuse you’ll ever find for working in your dressing gown.

e’re living through interesting political times, during which basic ideas about what unites and divides our society are being debated. In this context, the subject of hate crime has become more prominent. We know that hate crimes of all types are under reported nationally. Although our data suggests that we don’t have a significant problem locally, we are alert to the fact that until victims have the confidence to come forward and report their ordeals we won’t have a true picture. A hate crime is any criminal offence which is perceived by the victim or any other person to be motivated by a hostility or prejudice based on a person's race, religion, sexual orientation, disability, transgender status, or any individual characteristic that makes them seem different. Any type of crime can be a hate crime including physical attacks, damage to property, offensive graffiti, arson, threats of attack, anti-social behaviour, abuse and intimidation. I believe the vast majority of people are decent, tolerant and welcoming of the diverse cultural make up of our county. However, many of us will be aware of a small minority who
Being you is not a crime. Policing Commander for South Worcestershire, Supt. Kevin Purcell, expands on hate crime. think it is acceptable to victimise people because of who they are. Our culture must be one that ensures these people understand that their behaviour is wrong and won’t be tolerated. Some victims of hate crime are amongst the most vulnerable members of our society and it is only right and proper that we protect them. Sometimes their vulnerability is such that they may not realise that they have been a victim of hate crime. They may be too scared to report it or may not know how to. We all have a part to play, therefore, in addressing this issue. The more people who report hate crime the more able we will be to deal with those responsible. Anyone can be a victim of a hate incident or hate crime. If you are subject to an incident, or witness one, and believe that it was motivated by hate, we will record it and respond to it as such. It doesn’t matter what anyone else's view is; it is only your personal view of what happened that counts. We will never question your assessment of the incident. Every reported incident will receive a police response, depending, as with all crimes, on the nature of the offence. Every hate crime is also reviewed at inspector level to ensure it has been responded to appropriately.
We will never release personal information that could identify a victim or person reporting; all victims will be treated with dignity and respect. Courts treat hate crimes extremely seriously and the hate aspect of the crime acts as an ‘aggravating factor’ that allows judges to apply a more severe sentence. All of our officers have completed training to help them identify and manage reports of hate crimes. One crime is too many so don’t suffer in silence.

Belle House Luxury Fish Pie A comforting, indulgent recipe, rich in texture and flavour, ideal as a winter supper or dinner party dish. PIE INGREDIENTS 20 mussels, cooked 200g of salmon fillets, cut into pieces 200g cod, cut into pieces 4 hand-dived scallops, cut in half salt and freshly ground black pepper 500g of potato, peeled and diced into 2.5cm cubes 10g of salt 80g of butter freshly ground black pepper 2 egg yolks vegetables - julienne white wine
NAGE INGREDIENTS 4 shallots, finely chopped 1 garlic clove finely chopped coriander and fennel seeds (10 of each) 1 cup of white wine vinegar 1 cup of white wine 1 cup of fish stock 2 pints of double cream
Serves 6 56
METHOD Place all of the fish in an ovenproof tray or dish, cover with white wine and season. Cover with foil and lightly poach on 180 degrees or Gas mark 4 for 16 minutes. Once cooked, strain and keep the stock to use for the nage (sauce). See recipe below. Make the nage (sauce). Make the mashed potato by boiling the potatoes until cooked then draining. Put them back in the pan and dry out on a low heat for 1 minute. Add 80g butter whilst you mash, then 2g salt. Remove from the heat, then mix in the egg yolks. Transfer the fish into a pie dish, add the julienne of vegetables, cover with the nage (sauce) and spread or pipe mashed potato over the top using a large star nozzle. The dish can be frozen or kept in the fridge at this stage. When ready to cook, preheat the oven to 180ºC/gas mark 4 and bake for 15 - 20 minutes until golden. METHOD In a hot pan, gently sweat shallots, garlic, fennel and coriander seeds until translucent. Once cooked, add the white wine vinegar and reduce to syrup stage. Add the white wine and reduce again to syrup stage, then add fish stock. Reduce by two thirds and add cream. Bring to the boil and sieve through a fine sieve, add salt and pepper to taste. Perfect for fish dishes.
