Feel good factor The New Year is a time to relax and recover from the busy festive season, get fit after indulging at Christmas, reflect on the past and start the year a fresh. Life in Petersfield investigates ways to take a little ‘me time’ and just feel good

In this day and age, there is a lot of reason to feel stressed or low. The eight-week Mindfulness Course for Stress Reduction might be a solution for people who are feeling drained from last year, or anxious about the year to come. The Mindfulness Course is to assist in taking better care of yourself and getting more out of living. The aim is to learn new ways to handle challenging physical sensations, emotions, moods or social interactions. The course consists of deep relaxation techniques, simple but deep yoga movements and meditation. Susan Rooke, the course leader who is certified by the Centre of Mindfulness Research and Practice, says that meditation is a chance to sit down and allow you to do nothing at all. “If you shake up apple juice, it becomes cloudy,” she says. “If you leave it to sit for a while, all the sediment falls to the bottom and the juice becomes clear.” “Over the eight weeks you will learn how to relax and build up concrete tools for how to deal with stress. It could lead to feeling less stuck, seeing more options and having more confidence”, says Susan. People with chronic pain, multiple sclerosis (MS), depression, sleep problems and headaches have benefited from this stress clinic. “The Stress Reduction Program was developed in hospitals in America and health professionals have referred patients with MS, chronic pain, depression, sleep problems and head aches to the course”, says Susan. ‘Risk Doctor’ wins world renown Petersfield’s global expert in risk management has received two international awards

He defines risk as: “Uncertainty that matters. All other definitions are variations on this phrase (usually with more words!). So all risks are uncertain because they may never happen (though not all uncertainties are risks), and all risks matter because if they happened they would have a material effect on achievement of one or more objectives. “ David Hillson has a scholarly and softly spoken manner, but he exudes great warmth and wit. A man of the world, he has worked in 43 countries and on every continent except Antarctica, providing support to clients in all major industry sectors.

avid Hillson, known worldwide as ‘The Risk Doctor’, has won the inaugural award as “Risk Personality of the Year” for 2010. This award, by the Institute of Risk Management (IRM) and Risk Management Professional magazine, honours the individual who contributes most to improving risk knowledge and standards, promoting the message of strong risk management, and inspiring their peers. In the words of the judges Dr Hillson is “a larger-than-life character, who has become a well-known brand”. His other award is a fellowship of the Project Management Institute, the PMI’s highest individual honour and the only one awarded in 2010. Having moved to Petersfield with his wife Liz more than 30 years ago, he became involved in risk management in 1983 while working at Ferranti in Portsmouth. “The company was instructed by the MoD to use risk management in a £30 million defence contract; but we didn’t know much about it, so I was detailed to try it out.” The project was a big success, and David Hillson was on the road to becoming ‘The Risk Doctor’. In 1993 he left Ferranti and after working for two specialist consultancies he set up his Risk Doctor consultancy, which now has 20 expert partners across the globe. Risk management may sound like a dry and cerebral subject but this is a “larger-than-life” discipline which affects everybody. “Every client is different,” David said. “The core message is that the future is uncertain, but we can do something about it. “To succeed we have to deal with uncertainty. While uncertainty is a threat it also offers opportunities, and risk management is all about using and exploiting that. I provide the forward-looking radar to look into the future and help people take appropriate action.”

As well as giving strategic advice to corporates, he is interested in applying the risk management approach to communities, for example in developing entrepreneurship in local community groups. His clients range from corporates such as BP and NASA to a township in South Africa and a village community in Ghana. “When I undertake a big job I try to make sure that I also meet local people and see what I can do on the ground.” Married for 32 years, David and Liz have two daughters who were raised in Petersfield – one is a biochemist in Cardiff, the other a

His interests outside risk management include active participation in Christianity, music, the community, and travel. “We came to Petersfield in 1979 to start a new community-based Christian church, which has become an active part of the faith community in the town,” he said. “We are now working with a new church in Greatham that was started four years ago.” As well as his work in local churches, he is also a much-published author on risk management – with eight major books and over 100 journal papers and articles. And he is a keen musician having trained on brass instruments at Trinity College of Music in London. A lasting impression James and Russell Stone have just returned from a life-changing two-week visit singing to the Maasai tribe in Tanzania

Russell, a Transpersonal Councillor and Physiotherapist, says: “These tribes use song in everyday life to tell stories, to express emotion, and to communicate. I want to know what happens when a white man sings back.” Word spread quickly of the ‘White Man that would sing’ and hundreds of people turned up to greet them, some travelling up to 45km from their villages. “They had never seen anything like this before,” explains Russell. “These are very traditional people;

every song in the Maasai tribe has a meaning and purpose. Improvisation is foreign to them. “Once I explained that my songs were to express our gratitude for their hospitality, and that we wanted to learn from them, the songs made more sense to them. I believe I reached the people in a way that had far more impact than just talking through translators.” “The Maasai need to build schools to educate their children,” says James. “We raised money for the Livingstone Tanzania Trust, which went towards building a school in the village.”

Versatile vegetable Alison Grange at the Durleighmarsh Farm Shop offers some great ideas using squash, a versatile winter vegetable which comes in many shapes and sizes.

Squash risotto 1 1/2 lb squash or pumpkin 1 onion chopped 3oz butter 2 pints stock 4 sage leaves 12oz rice 2 tomatoes skinned and chopped 1 glass white wine salt, pepper, chopped parsley parmesan cheese (grated) Cut squash into cubes – discard seeds and skin. Gently cook onion in half of the butter. Bring stock to the boil and then turn heat down low. Add sage (chopped) and pumpkin to onion and add rice. Cook and stir for two minutes. Add tomatoes, wine, salt and pepper and simmer for a few minutes. Add hot stock slowly while stirring and cook until rice is tender. Add remaining butter, parsley, and extra seasoning if desired. Stand-bys in the freezer • Leftover white bread for bread-sauce, force meat, crumb toppings, etc. • Bags of parsley. Use straight from the freezer when required. • Crumble. Make double the amount of crumble and freeze half. 2. Rest roasted meat When cooked, take the meat from the oven, cover with tin foil and a thick cloth and leave for at least 20 minutes. The meat will relax and be wonderfully tender. Even the most expensive cut of meat will be tough if you carve it straight from the oven. 3. Taste the difference Taste frequently at every stage of cooking. Most amateur cooks don’t taste enough. • Don’t over-season; you can add more, you can’t take away. • Experiment with herbs and spices. • If food lacks flavour and you have checked the salt, add lemon juice - it’s a real flavour-enhancer. • Nutmeg enhances almost everything , except tomatoes.

Fill up with meat Rother Valley Organics recommends meat to help you feel full and satisfied

Beetroot haters’ soup Riverford Organics has a different soup for you to try – and the fabulous deep colour from the beetroot shows it is healthy. This soup is perfect for helping you thaw out from the cold. 2 tbsp olive oil 1 onion, chopped 1 potato, peeled and diced 2.5cm piece of fresh ginger, grated Zest of 1 orange, plus extra to serve Juice of 2 oranges 3 medium beetroot, cooked and cut into small dice Sea salt and freshly ground black pepper A little cream or yogurt to serve Heat the oil in a large pan, add the onion and fry until soft but not coloured. Add the potato and ginger and fry for 3 minutes. Add the orange zest and juice, plus the beetroot and water, then bring to the boil and simmer for 20 minutes until the potato is tender. Blend until smooth. Reheat gently and season to taste. Serve garnished, if you like, with a swirl of cream and a little grated orange zest.

Oxtail and butter beans

2lb oxtail, jointed 1 tablespoon soy sauce (dark is best) 2 cloves garlic chopped 2fl oz (50 ml) olive oil 2 pints (1.25ltr) water 2 tomatoes chopped 1 medium onion (or 2 small) 1 sprig of thyme (or 1/2 tea spoon dried) 1 chilli pepper chopped 2 spring onions chopped Salt to taste Coarse black pepper 1 tin butter beans, drained and rinsed Wash and dry the oxtail and marinade in a bowl with the soy sauce and garlic overnight. Heat the oil in a large saucepan and brown the oxtail on all sides. Just cover the meat with water, cover the pan. Bring to the boil and then simmer slowly for 2-3 hours until it's really tender. Remove the meat and turn up the heat to reduce the liquid. Add the chopped onion, tomatoes, chilli and chopped spring onions, sit and continue cooking slowly for 10 minutes until the sauce thickens. King’s Arms returns to former home he King’s Arms has re-opened at its original home in Petersfield’s Festival Hall car park in time for its 10th anniversary this year. After last year’s fire disaster, the club was forced to move temporarily to the Social Club on Station Road. It has now been fully refurbished and has a brand new recording centre for the youngsters to use. “We aim to put together activities, groups and sessions to meet as

many needs as possible,” says Hannah Turner, Operations Manager. Set up in 2000, the King’s Arms provides a safe place for the young people of Petersfield and the surrounding villages. The churches of Petersfield played a large part in setting up this project and continue to support the club in many ways. The local community has also been heavily involved, with volunteers lending their time and donating funds.

Inspiring art embers of Elizabeth FitzRoy Support who provide day services in Petersfield, Waterlooville and Havant, have opened a 10-week art exhibition – “Inspired by Nature” – in the café at Queen Elizabeth Country Park. Proceeds from all artwork sold will help to fund future projects, directly benefiting the members. At the December preview evening £150 was raised through purchases of artwork. The artists studied work by Paul Gauguin, Vincent Van Gogh and Paul Cezanne, who were all inspired by nature. They were

Meridian was put in touch with Navigate Design and Life Magazines, who are extremely familiar with the people and businesses in the area. Navigate and Life Magazines were able to help put together a short film showcasing the vibrancy of this particular market town. The feature aired on TV on Tuesday 21 December and will be broadcast through out Essex, Kent, Sussex, Surrey, Hampshire, Dorset, Wiltshire, Berkshire and Oxfordshire. The film featured people from local businesses in the town. This included

Andrew Woodcraft, Petersfield Branch Manager, said the walk took less than 90 minutes and the team “wore silly boards.” They have raised £540 for Magic Moments. This is the Spicerhaart Group's supported charity, set up in 1998 to raise funds to send children receiving hospice care on a “trip of a lifetime”. Haart of Petersfield is part of Spicerhaart's Central Region, which aims to raise £10,000 towards the group's target of £50,000 this year. “It was great fun to support such a worthwhile cause and we will

Jill Din with Bekim Shillova

mural was installed in La Piazzetta Trattoria Italiana in November. Jill Din (or 'Jaddy') was commissioned to paint the mural by Bekim Shillova, owner of the Petersfield restaurant. Painted in acrylic oils, the mural depicts a panoramic view of Italian olive groves and a farmhouse viewed through an
