VALETINE’S DAY – BCS CHAMPIONS – FREEDOM CLIMB February is for lovers, and the one day to celebrate with your significant other is going to be February 14 – Valentine’s Day! Flowers, jewelry, chocolates or dinner are some of the usual ways to show how much you care. This year, maybe we can look for some unusual ways to celebrate our feelings? One way may be to look up the variety of ways the day is commemorated around the world. In doing my own research, I found this website - www.stvalentinesday. org. I was intrigued to find how many different ways there are to reaffirm ones love. Additionally, the progression of the festival through time was also enlightening. So, however or wherever you choose to observe the occasion, I wish you and yours a memorable time. Speaking of memories, our cover story is about some local residents who will share their revelations on how they met and fell in love. One couple met on a blind date, another on the job, and one even found each other on J-Date, a Jewish dating website. Their stories are interesting and heartwarming. I trust you will reminisce back on how the one you are with first touched your heart. As for Candy and I, it was a long, long time ago, and she played hard to get. In the end, well, I got my girl. The BCS Championship game was in South Florida and brought in a large economic boost to the area. Unfortunately, this may be the last time we see the event here in our backyard, unless we’re selected

Tina Yeager: Going to the ends of the earth to fight for freedom again by some stroke of luck. With other cities building new megastadiums, the competition is pretty tough for the highly coveted title game. Still, the Crimson Tide rolled to its third championship in four years. The Alabama team is showing they are a dynasty to be reckoned with for some time. As for the Fighting Irish, they can be proud of their accomplishment of making it the championship game for the first time in twenty years. Not one preseason poll had Notre Dame finishing anywhere close to a BCS title. Congratulations to both programs. Maybe a team from the State of Florida will be there next year? I’d like to give a shout-out to two ordinary women who accomplish some extraordinary feats as well. Tina Yeager and Jen Klaassens will climb one of the highest mountains in the world to promote a project which brings freedom to women. The Freedom Climb is a symbolic gesture of the struggle for freedom they face every day. From April 9 to 25, 44 women from all over the world will meet in Nepal and trek to the base camp of Mt. Everest and then

summit the neighbouring peak of Kala Phattar. When the climbers stand at the top of Kala Phattar, they will be declaring life and freedom for those who cannot speak for themselves. w w w. CAVENDISH, the president and CEO of downtown Fort Lauderdale’s Museum of Discovery and Science, is now chairwoman of something called the Giant Screen Cinema Association – whose mission is “advance the business of producing and presenting educational giant screen and immersive cinema experiences globally.” Since MODS has a popular IMAX theater, Cavendish seems quite qualified. Even more impressive: She’s the first woman to chair GSCA.
Bejeweled vacuum cleaner: Cleans up as it cleans you out Does anything sound more unromantic – and more dangerous to your health – than telling your significant other: “Honey, I bought you a vacuum cleaner as a Valentine’s Day gift”? Except if it’s this vaccuum cleaner. The Special Edition Swarovski HYLA GST was recently declared the World’s Most Expensive Vacuum Cleaner by the Guinness World Records. It features 32,000 black, gray, and white Swarovski crystals that took 100 hours of labor to hand-place. Retail price: $21,900. While three have been sold so far – one in Russia and two in Dubai – only one remains. And it’s in Hartmut Gassmann’s offices in Deerfield Beach. That’s where the Parkland resident operates the national headquarters for HYLA U.S. Gassmann. “It’s not so much for selling,” Gassman concedes. “People don’t spend $21,900 for a cleaning system.” But they do spend 10 percent of that. Gassman is the national distributor for a high-end machine that traps dirt and allergens with water instead of filters. Students aren’t the only ones who receive grades. So do their schools. Last month, the Florida Department of Education released its 2011-2012 high school grade results – and 82 of BROWARD’S HIGH SCHOOLS earned an ‘A’ or ‘B’ – compared to 76.3 the year before. All the county’s charter high schools earned a C or higher. Best of all, no Broward high schools received a ‘D’ or ‘F’. Grades were based on,among other things, graduation rates, participation and success in accelerated courses, and postsecondary prep. Facebook is often criticized for ruining your productivity. But one company has made it profitbale for local charities. SETNOR BYER INSURANCE & RISK, based in Plantation, decided to donate $5,000 to the charity that garnered the most votes on their Facebook page. Response was so overwhelming, the firm doubled down – donating $10,000. Half went to Voices for Children (more than 150 votes), while Hispanic Unity got $2,000 (more than 120 votes) and $3,000 was split among other charities. MARK ADLER is the new executive director at Broward Meals on Wheels, succeeding Peggy Miller, who held the post since 2006. The private notfor-profit organization has, since 1985, provided millions of meals and many thousands of hours of nutrition education and in-home assessments in Broward County.

If you’ve always imagined classical music as staid, tuxedo-clad violinists playing music by long-dead coposer, The Symphony of the Americas is determined to change your mind. To celebrate its 25th concert season this year, SOTA LAUNCHED 25 DAYS OF MUSIC. When to Work Out Getting in shape is easier when you do it on a schedule BY DAVID SHERMAN
Being a personal fitness trainer for 15 years has taught me one thing about people: They really don’t want to work out. So whenever someone wants to exercise, regardless of he time of day, I encourage it. But in my experience, there are better times of the day to lace up those crosstrainers than others.
we feel better physically and mentally – and next we are hungry from the workout.
I firmly believe that that body is trainable and will adapt if you give six weeks in a new regime. The same also applies for the way that we eat.
NIGHTS Nighttime is crucial to keeping the eating habits under control. A lot of us are night owls and go to bed too late after sitting around the house picking on the wrong food for a variety of reasons. Well, because we got up an hour earlier and exercised, we’re now going to crash earlier and avoid that extra hour of possible nighttime emotional eating.
If you intend to completely change the way you look and feel, it comes at the price of a commitment! That may mean getting up an hour earlier each morning or sacrificing something else that you would have rather done for working out. It means ordering the fruit for dessert over the chocolate decadence. Remember nothing tastes as good as being in shape feels! MORNING Let’s assume the morning workout is a possibility for you. I’ve had many clients who trained before sunrise… just saying. The first feeling we want to start our day? Gpod energy and circulation. How many times have you woken up feeling like you were in a car accident? That lack of circulation causes inflammation. The cure is increasing blood flow through exercise. So now we have worked out,

What does hunger mean? It means our metabolism is jump-started and the fat-burning is underway. We have a clear head and we feel great about ourselves. Time to eat. We’re more likely to make a good choice because we feel good and don’t want to ruin that feeling. Then one good choice turns into another – and then we end up having a good day.
Working out at night isn’t bad but just keep in mind that we usually get really hungry after workouts and now you are getting into those later hours where we want to cut down on our calories. Also, a good workout will sometimes give you a blast of energy that could keep you up later than you want. I have been known to clean my whole house after a good workout. Tomorrow we start it all over again. Remember it takes 4- 6 weeks to change and develop a new and positive habit, give yourself that time. Zero to 60 – in Three Years By Brandon Ballenger
R
afael Jorge met his wife Susan when they were both teenagers. But he wasn’t allowed to date her until he got another job. It wasn’t his parents or hers who made that rule. It was Marriott. Rafael and Susan were working at a Marriott hotel in Miami. He was 19 and she was 17. Rafael was a supervisor, and Susan recalls, “I was working at one of the restaurants, and I came up to ask him for change to $100.” Rafael didn’t have change, so he went to the front desk to ask. No one there did, either. What kind of upscale hotel doesn’t have change for $100 bill? “I expressed that opinion, and he didn’t like it very much,” Susan says. But Rafael did like her. “As soon as I met her, I absolutely liked her very much,” he remembers. And they became good friends working 12-hour shifts together. “We had a lot of background in common culturally, and the way we were raised in single-parent homes,” Susan says. But they weren’t allowed to date. “We worked there for three years, and strict hotel policy was: They didn’t allow management to fraternize with staff,” Rafael says. Did he ever consider breaking policy? “I mean, you always fantasize,” Refael admits. “But no, I had always been a company guy and had managers under me who had broken one of the commandments, and I wasn’t going to be a hypocrite.” He dated other girls in the meantime, and they would sometimes drop by work. Susan says she didn’t take it personally – she knew
there was a policy, and they remained good friends. Rafael says, “I always hoped it would work out between us, but I never tipped my hand and kept my feelings reserved.” That is, until he took a leave of absence from Marriott to start his own business, Sun Auto Tops, in 1979. (It’s now called Specialty Automotive Treatments.) “I opened it up with my life savings of $20,000 and made first payroll on my Visa,” Rafael says. And he asked Susan out on the first day he was his own boss. But he needed help from his father. “I needed an excuse to ask her out,” Rafael says. “My father was flying in from Venezuela, so I said, ‘I need a date that speaks Spanish and would you mind coming along.’” Rafael spoke the language too, but he claimed she was more fluent. “We had dinner with his father, and it was pleasant,” Susan says. “Then we dropped him off and went off to a nightclub in Miami Beach – and had our first kiss on the pool deck.” Rafael says he knew by the second date, “We were going to spend life together.” After a couple months, Rafael called Marriot and said, “I don’t think I’ll be coming back for a while.” Or ever, as it turned out. Now 32 years later, Specialty Automotive Treatments is a family business with 75 employees. “My daughter Cristina runs the wholesale division and my son Rafael Jr. runs the retail division,” Rafael says. “I’m blessed to work with my kids.” And he has Marriott to thank for them.
Everything Under the Sunroof When Rafael Jorge opened his business in 1979, he was in his mid-20s. It was called Sun Auto Tops because that’s all he offered: aftermarket sunroofs. But slowly over the years, Rafael offered more aftermarket items for cars and trucks, until in 2001, he changed the name of the company to Specialty Automotive Treatments. Now he sells just about any modification you can think of for cars and boats – from leather interiors to wheels, tires, electronics, marine audio/video equipment, body kits and custom exteriors. Up until 2008 – when the business opened a $5 million, 15,000-squarefoot showroom on Sunrise Boulevard in Fort Lauderdale – the company sold products only to dealers. Jorge, who also lives in Fort Lauderdale, says working with those dealers was the key to his success. “Once you have a dealership and you show proper service and etiquette and that you can make them money adding accessories, you have a partner for life. We’ve got dealerships we’ve been serving for 32 years.”

That’s the Ticket By Brandon Ballenger acque and Neil Scherfer met on a double date – but not with each other. And it wasn’t love at first sight. Neil remembers, “A good friend of mine was going out with her, and he needed someone to help him out” – because Jacque wanted to set up one of her friends. So they all saw a movie together. Jacque says “the relationship didn’t go anywhere after a few dates,” but the four stayed friends over the next few years. Neil and Jacque became gradually closer even as they were attending college 1,400 miles apart. Neil was working on a degree in media management at Arizona State, while Jacque was at Tennessee State for nursing. “We stayed in touch through college and hung out during spring break, summer break, stuff like that,” Neil says. About a year before Jacque graduated, they started dating. Neil says the long-distance relationship was “tough, but we saw each other enough to deal with it.” They racked up a huge phone bill for Jacque’s parents. Fast forward another six months. Neil had graduated, returned to South Florida for work, and was moving out of his apartment. Jacque was on spring break and helped him pack. “He had me going through all these boxes trying to find things,” Jacque says. “I thought I was going to open a box and find the ring.” Nope. “I don’t know why I thought that – way too many movies I guess,” she says. Although she was aggravated, she brushed it off when Neil asked her was wrong. A few days later, just before she had to go back to school, Neil said he had to meet some clients and wanted her to come. “We had tickets to the Heat game and were going out to dinner, and we were supposed meet clients of his,” Jacque says. He showed up a little late, acting obnoxious and short-tempered. He didn’t say two words to her parents. They took off in a rush, and as fate would have it, got pulled over by police just a couple minutes later. “Of course, I was aggravated and thinking he deserved this ticket,” she says.

As the cop was approaching the car, Neil asked, “Should I mention that my father’s with the BSO?” She shook her head. Neil rolled down the window. License and registration, the cop said. Let me get it, Neil said. “And by the way, do you know my father Rusty?” Jacque pinched his leg. The cop didn’t care who Neil’s father was and needed to see the registration. Jacque thought the cop was being “kind of a jerk.” Neil handed it over. He went back to his car and came back after a couple minutes. He said there was something wrong with Neil’s license and the car didn’t belong to him. “It’s a company car,” Neil said. You can’t drive it, the cop said. “And then he said, ‘Well, I’m going to be nice. Do you live around here? Are you married?,” according to Neil. If he was married, his wife could drive the car home. “I’m practically married,” Neil said. That’s how he remembers the moment. Jacque’s version is a little different. “He goes, ‘Well [Neil] can’t drive this car. Are you a family member or a wife? And I said I could be his wife with all the shit I put up with,” Jacque says. They agree on what happened next: Neil pulled out a little box and asked, “Will you be my wife?” “She’s like, ‘What the hell?’ – and it didn’t register,” Neil remembers. “I got out and was high-fiving my buddy and she realized, ‘He’s serious.’” “I said, ‘Well, you’re an asshole,’” Jacque remembers. And then she said yes. The cop – he really was one, and he did work with Rusty Scherer – hugged Neil and took off. He convinced her they were already running too late to meet the clients. “Let’s forget the game and just go to Nick’s on South Beach and have a great dinner,” Neil said. “We walk into the restaurant, and I end up seeing all my family and his family and friends,” Jacque says, prompting a genuinely confused question. “What are you all doing eating here?” “She still didn’t click,” Neil says. He had spent three months planning the whole thing with his dad and friends, down to ignoring Jacque’s parents to get her riled up. All except for being late and stressed – that was real. The car got a flat on the way to get her, and he was panicked that timing wit his cop pal had been ruined.

The business helps match clients with caregivers at home, in hospitals, or in nursing homes. Services range from baby nurses to post-surgical care to live-in nurse aides and companions who can help with tasks like dressing and bathing. Scherfer’s husband, Neil, is national account manager at CBS Outdoor, where he sells advertising on billboards and transit from the Palm Beaches to the Florida Keys.

Ten days after slamming into a tree in Tennessee, 47-year-old Jim Clark had lost 25 pounds and showed scars running across his ribs.

“I just heard cracks. It wasn’t the tree.” A Broward businessman’s super-healthy lifestyle of triathlons and free diving almost killed him. Then it saved him. BY RYAN CORTES
L
ast July, Jim Clark was on vacation in Tennessee. He’d taken his wife and two children to visit his parents about an hour south of Nashville. Just after sunup on the last day of that vacation , he felt the need to unwind. So he went on a 50-mile bike ride through the mountains. He never finished it. Clark was two weeks away from competing in an Ironman triathlon – a 2.4-mile swim, a 112-mile bike ride, and a 26-mile run that has killed participants in the past. The 46-yearold Fort Lauderdale entrepreneur had finished one before, so a 50-mile bike ride was a leisurely stroll. But only a few miles before he was back at his parents’ home, he saw a large yellow Labrador in his path. Vlark had been chased by dogs before while riding. It can be scary. But this 80-pound beast just followed him with a wagging tail. “All right, buddy, you have to go home,” Vlark said. The dog refused. That’s when he saw the red pit bull. “I remember his eyes,” Clark says. “I remember him looking at me.” The pitbull took off toward them. “With a vengeance,” Clark remembers. The yellow lab scurried toward Clark’s bike, turning the handles 90 degrees. He went flying down the embankment at 25 mph, flipping twice before slamming into a tree 10 yards away. “I just heard cracks,” Clark says. “It wasn’t the tree.” PAIN: THAT FAMILIAR FEELING Pain was nothing new for Jim Clark. As a 2-year-old, he was diagnosed with asthma. At 5, he was diagnosed with Legg-Calve-Perthes, a degenerative cartilage disease – he spent two years in a wheelchair. “I don’t remember ever feeling pity,” Clark recalls. “I was just dealing with it. That certainly does something to your character, I think. Building some tolerance for bad times, it helps you want to strive and do things.” And strive he did. As an adult, he tore up his ankle while water skiing and his ACL while snow boarding. On his 40th birthday, he injured his back jumping on a trampoline

In June of 2007, Clark had a biking accident with friends, crashing into A1A’s pavement. His friends followed his ambulance ride and went to tell his wife, Linda. She wasn’t surprised.
with his kids. But the pain he felt after this bike crash was something new. After hitting into the tree, a delusional Clark began patting the ground, looking, hoping, to wake up from a dream. “It wasn’t a dream,” he said. “Figured that out in about 20 seconds.” He didn’t yet know that his shoulder had tears in two ligaments, his hip was cracked, and so were eight “My entire left side was just broken. ribs. “My entire left side was I could feel my ribs banging up just broken,” he says. “I against each other. It was like Jello.” could feel my ribs banging up against each other. It was like Jello.” Crawling along, he made his way up the embankment. Short of breath, Clark collapsed in a heap, his head in the road, his legs resting on the lane markers. Twenty minutes passed before a car came and found his bloodied body. Clark couldn’t talk, other than to mutter the word, “Ribs.” While paramedics rushed to the scene, Clark recalled that the pit bull has disappeared, but the yellow lab was still there. THE WORST ISN’T OVER At the hospital, X-rays showed eight broken ribs and a punctured lung. Clark said his shoulder hurt. “We’re not worried about soft tissue,” a doctor replied. “We’re worried about you living.” He was loaded into another ambulance and rushed to an emergency care unit at Vanderbilt University. His 10-year-old son Kelly arrived and had one question: “Is this my dad? It’s kind of really scary to see. It freaked me out.” After a week, doctors were nearly ready to release him. His brother Duane was flying up to drive him and his family home. On that very day, Clark recalls: Doctor comes in and goes, ‘There’s something we just can’t figure out. You have this mass in your lung sac. This gray thing. We don’t know what it is.’” But it’s near the hear, and he might not survive the surgery. Before he’s wheeled into operating room, Clark writes a letter to his children and stuffs it inside a spiral notebook.

Everything went dark again. “Soon as I woke up,” Clark says, “I knew it was the worst-case scenario.” Doctors found a mass staph infection growing on his chest – MRSA, which becomes more resistant to treatment the longer it’s there. They had to screw titanium plates to three of his ribs so they could get the leverage to scrape off the mass. “Everyone that came in the room,” his brother Duane recalls, “they said he would have a much, much better recovery than anyone else because he kept himself in such good health.” Still, it was a close call. Clark’s wife Linda recalls, “I couldn’t get upset or cry in front of him, because he was being really strong and if I did that, then he would know, because there were moments we didn’t think things were going to go very well, so I had to kind of hide everything.” But doctors had reached the infection in time. On Aug. 10, two-and-a-half weeks
after ramming into that tree, Clark was set to go home. When Clark hobbled out of his wife’s car that day, Kelly remembers, “He looked like he had been in the ocean for a month or so. Just drying out there. It was just scary.” Or as his brother Duane described it, “He looked like a P.O.W. because he had lost so much weight.” When Clark got home, he wept. “I try to look for the why, for the reason. I didn’t see any. There was no white light experience. Heaven’s door didn’t open up and invite me in or shut me out. Nothing like that. I felt like I just needed to calm myself down and get through it.” Nearly six months after his accident, Clark was back to his day job — “looking for deals” as he calls it. He’s a local entrepreneur who has flipped businesses in healthcare for the last 15 years. He was also back to riding his bike. He wasn’t in perfect health yet, but his wife Linda understood. “It’s Jimmy, that’s what makes him happy,” she says. “He doesn’t do anything small. And that’s great. But I think he needs to do it in a way that’s safe – especially

when you have a family and you have to be around.” One of his best friends, Mike Bush, the owner of Pivotal Fitness in Fort Lauderdale says that after doctors told Clark he needed to stay on the couch and gia nweight, Clark snuck into the garage at odd hours to pedal on his stationary bike anyway. “That’s totally Jimmy’s mentality,” Bush says. “He’s not supposed to run? Celebrating visionaries who make a difference in the community For the past 15 years, Young At Art Museum has hosted the annual Women of Vision Luncheon to celebrate civic and business leaders who have made a difference in the community. This year, during the 16th annual Women of Vision Luncheon on Wednesday, February 6, Young At Art is honoring community activist Nelly Rice as Young At Art Volunteer of the Year and Chantal Nichtawitz of IKEA Sunrise as Young At Art Corporate Partner of the Year. Broward County Commissioner Lois Wexler will serve as honorary chair. “Both Nelly and Chantal have gone above and beyond with their support of all of our efforts both here in our fabulous new Museum and in years past,” said Mindy Shrago, CEO of Young At Art Museum. “They were an integral part of the team that created unforgettable grand opening events for us as well as volunteering behind the scenes for various programs, special events and fundraising activities.” Beginning at 11 a.m., guests will enjoy tours of the Museum followed by a luncheon in the Museum’s picturesque courtyard, featuring elegant courses of epicurean delights, from creative hors d’oeuvres and soups to an enticing main entrée and gourmet desserts. Ta k i n g place between Friday, March 15, and Monday, March 18, 19 fascinating authors, among them best-selling writers Dave Barry, Bob Spitz and Tess Gerritsen, will speak with South Florida booklovers, donors and students at five events, including the signature fund-raiser, A Night of Literary Feasts. “A Night of Literary Feasts takes place on Saturday at the Hyatt Regency Pier Sixty-Six on Saturday. Exults CEO Zach Hoffman never heads to the office without his 3-year-old Boston Terrier, Kop. And while his recently expanded Fort Lauderdale headquarters has a “living room feel” and a poker table, his job isn’t all fun and games. “When it comes to a day in my work, I’m fully involved and make sure my clients feel serviced,” he says. That might mean sitting in a video conference call with a company offering an online education system to help them develop a marketing strategy, or offering tech support on ExultARC, proprietary software that he calls “the backbone of our Internet marketing platform.” The software gives clients around-the-clock access to reports and trends in their online marketing. “It lets them know how [search] keywords ranking, and where visitors are coming from, and gives them information they can use for other forms of marketing,” Hoffman says.

“We’ve very transparent on the reporting side and keep clients engaged,” he adds, which is a big part of the “value proposition” the company offers. It also does website design, social media marketing, and brand management. Hoffman started the business in 2005 as SEO.cc. (The name changed early in 2012.) Fresh out of the University of Central Florida with a degree in finance and economics, Hoffman was helping his father’s dental practice with online marketing, managing affiliate marketing websites (basically, paid online referrals) and figuring out AdWords, the service that keeps Google flush with cash. He saw the value of that kind of marketing – and capitalized on it – but realizes not everyone does. Search engine optimization, among those who’ve even heard of it, sometimes gets a bad rap. “We definitely see there’s some confusion, and some people don’t get the promise someone might have issued them in the past,” Hoffman says, alluding to scammers. That’s why his company emphasizes transparency and measurable results, along with how important it is to update your website. “What’s funny is for most of our consumers, their cellphone is newer than their website. Some people built a website five years ago and think that’s going to serve them well today,” he says. It’s not all virtual. “Being able to meet and see the physical location is very effective to make sure they’re legitimate. In our industry if a company’s not answering the phone or you have to dial a few numbers that’s sometimes a warning sign there’s nobody really there.” 2. Demand tangible results and updates. “Ask about their reporting platform, what they plan to report and the frequency. You should get measurement on a milestone basis and know they can communicate what’s getting done. ” 3. Look for a focus on mobile. “A few years ago the rate of people accessing the site [by phone or tablet] was 3 to 5 percent and it’s now 15 to 30 percent. It’s a high value situation where you want to have a mobile website with touch access to a phone number, maps, bill pay, or directions.”

My diet suggestions will make it easier to get adequate protein in each day, causing your metabolism to recover, but until that happens; we’ll need to prescribe T3-based thyroid medication. ining on French food in a café that offers an intimate ambiance may be the best way to begin– or reawaken– your love of food. What could be more romantic than a café adorned with sparkling lights, candles, and cabaret piano music playing in the background? The French are in love with history, culture, art, wine – and this is translated into every taste of food that is offered during your dining experience. An intimate evening is guaranteed when you stroll into Café de Paris. Owner Louis Flematti acquired the café in 1962, and much of his success over the last 50 years is due to a consistent presentation of both food and service. makes this dining experience very Parisian. Begin with Coquille St. Jacques, which is classically served in a scallop shell. This creamy dish of scallops, shrimps, and mushrooms is baked to crusty perfection. The Escargot Bourguignon, dripping in butter and garlic, will inspire bread-dipping. And if you love Duck Foiegrass and toasted Brioche, your taste buds will dance with delight over this rich, buttery, and delicate appetizer served with fresh cranberries. What’s better than appetizers that leave you lusting for more? Entrees that are perfect proportions wrapped with love and accompanied by wine offerings chosen by Louis himself. Consider the Beef Wellington. The filet mignon is wrapped in a firm, flaky crust accompanied by bordelaise sauce, vegetables, and a potato au gratin. Veal Oscar rivaled the beef. Topped with crabmeat, the plate was delicately complemented with asparagus, mushroom risotto, and a dab of hollandaise sauce. One should also consider the Chicken Crepe Princesse. This truly

Sauté shrimp in light butter, remove from the pan. Discard the butter, sauté carrots, mushrooms, garlic and shallots until soft, add salt and pepper to taste. SAUCE BEURRE BLANC 1 Cup White Wine 1/2 Cup White Vinegar 1 Cup Heavy Cream 1/2 LB Soft Butter Juice of 1/2 lemon Reduce white wine and vinegar by half, add heavy cream, and reduce by half again. Add soft butter with a whisk, add lemon juice, salt and pepper to taste. Combine vegetable and beurre blanc together. Place rice pilaf on center of plates, arrange 4 shrimp around, scoop beurre blanc and vegetable onto the shrimp and sprinkle chopped parsley on top.
traditional crepe is filled with chicken and mushrooms and is touched with a light velouté sauce. The sauce and term velouté is from the French adjectival form of velour, meaning velvet and is exquis! The Dover Sole also deserves mention and is light, flavorful, and touched with crumbs that dust the plate. A moment is taken between tastings to appreciate the romantic view both inside and outside leading to the street of Las Olas. The café offers several choices for seating to enhance your dining experience. The sidewalk area has cozy bistro style tables that are lit under an expansive awning, and inside, there are several intimate alcoves and four separate dining rooms. A full bar, a spiral staircase, and a grand piano are all part of the main dining rooms character that simply adds to this lovely French bistro. Dessert is absolutely for lovers at Café de Paris. I devoured the fruit tart filled with pastry cream and topped with fresh fruits with little option for sharing. The cheesecake with raspberry sauce was luscious, and the Key Lime pie was scrumptious! There are wonderful desserts offered for two, which include Baked Alaska, Cherries Jubilee, Banana Foster and
Crepes Suzette. Complete your meal with a cappuccino or one of the many exotic coffees offered. While you may not have had an aperitif such as a Pernod or Campari perhaps a digestif, an after-dinner drink, is your fancy. A taste of Grappa or Drambuie will warm you and prepare you for a lovely after dinner walk on the boulevard. Café de Paris has live entertainment seven nights a week. Early dinner
