Lifestyle Publications launched Estero Lifestyle Magazine in September, 2010 with our inaugural cover story on six-time U.S. Figure Skating Champion Todd Eldredge. How many of you remember? I can hardly believe that it has been two years! We have uncovered so many interesting people in and around our community. We have delighted in bringing you the area’s finest dining as well as community and philanthropic activities that make the Estero ‘lifestyle’ so meaningful! We have been the voice promoting all that is good in Estero. We have brought to life the excitement on ice of the Florida Everblades, the non-stop successes of Florida Gulf Coast University athletics, the dozens of programs and activities at our area shopping meccas, Germain Arena, our own Estero Community Park and the many, many people who are making a difference in our community. We have strived to offer you the ‘best of the best.’ We hope that you have enjoyed the ride and will continue to do so. We certainly have. This month is no different. Our cover story showcases those in our area who bring us the important facts and details of our weather. Get to know these ‘on-air’ personalities just a little better. As the Lee County School superintendent begins his second year, we share some of his goals and challenges with the state’s ninth largest district. This past year, with the passing of Estero Chamber Founder, Meg Judge, the chamber finds itself refocusing on the next phase of growth. Learn of what is planned and to be expected, as well as those who are now responsible.

The Scoop On Laundry Detergent 5 MONEY SAVING LAUNDRY DETERGENT TIPS TO MAXIMIZE YOUR LOAD BY KRIS ANDERSON

Don’t just fill up the scoop and dump it in the washer. You definitely won’t get the maximum number of loads from the box. For instance, if you use Ultra Tide’s 40load box and fill the scoop for every load, you’ll get just 15 scoops per box. Instead look at the lines on the side of the scoop. The top line, for a full load, is usually well below the lip of the scoop. Highlight the lines with a darkcolored marker to help you avoid the problem in the future. If you have soft water, using half the recommended amount is sufficient.

Too much soap causes clothes to fade faster. Over-use of detergent is actually the leading cause of fading. Clothing may also acquire a thin, filmy layer of soap because your washer can’t thoroughly rinse the fabric. Do you tend to be itchy? It could be you’re wearing your detergent!

Too much soap’s not good for your washing machine, either. Excess soap can gum up the works as soap deposits and lint form in your washing machine. These

can contribute to mold – and its accompanying stench; they can plug up filters and other openings; and they can lead to mechanical breakdowns. In some machines, you may also end up wasting (and spending more for) water as the machine spins into extended cycles in an effort to remove the soap.

Run a test load to see if you’re over-soaping. Run a load with clothes only – no detergent. Do you see suds? That’s an indication of how much detergent you are wearing.

Reduce pollutants by using an all-natural detergent. Many companies have removed phosphate because of its harmful effects on rivers, lakes and other fresh water. However, most companies continue to use other additives, such as optic brighteners, fragrances and

Pack Healthy Lunches For Your Kids PACKING A HEALTHY LUNCH FOR YOUR KIDS DURING THE SCHOOL YEAR IS IMPERATIVE, ESPECIALLY IF YOU WANT THEM ALERT, FOCUSED AND READY TO LEARN. Making wise choices regarding the foods our kids eat has been a hot topic lately. With child obesity rates sky rocketing, even the First Lady is getting involved. But it all starts at home, and although breakfast may be the most important meal of the day, lunch for your kids is also extremely important. Let’s break down the lunch into four components: the main meal, snack, treat and the drink. Your focus should be to provide protein, fiber, healthy fats and a limited amount of calories. THE MAIN MEAL Most parents prepare sandwiches as the main meal. So let’s start with the bread. Stay away from refined carbohydrates, which are mostly found in white breads. These carbohydrates burn quickly and drain the energy out of your kids. Choose whole grains such as whole wheat bread instead. Pack the bread with lean meats like turkey, roast beef and ham, and add a slice or two of lower fat cheese. You can also pack peanut butter and jelly, but use a natural peanut butter made from only peanuts and salt and choose preserves over jelly – they include chunks of real fruit.

THE TREAT Almost every kid looks forward to a “goody” packed away in their lunch. You can provide one and still maintain a healthy balance to the meal. Rice Krispies Treats, Sugar-free Jell-O or low sugar pudding, Clif Kid Z Bars in chocolate brownie or chocolate chip varieties (they have more calories but are packed with protein and whole grains), or a mini 3 Musketeers bar are smart choices. A small portion of dark chocolate is also a good choice if your child likes dark chocolate. THE DRINK Many parents don’t dwell on the drinks they give their kids the way they do other aspects of their meals, and

THE SNACK This is the perfect time to introduce fruits and vegetables to your child’s lunch. Grapes, sliced carrots, celery sticks with peanut butter, apples, orange slices, bananas, blueberries and strawberries. You get the idea. If you want to give them two snacks choose a

it’s a mistake. Many juice drinks and water-based drinks are loaded with sugar and calories and are destitute of any nutritional value. If you don’t want to give your kids plain water than try low-fat milk or chocolate milk, lightly sweetened iced teas, or low calorie, low sugar drinks like Minute Maid Fruit Falls. Another great option is V8 V-Fusion Light with 50% less calories and sugar but still offering a combined serving of vegetables and fruit. Mary Childs of Estero buys large bottles of “light” fruit drinks and pours the contents into reusable water bottle containers. “I can’t stand all the extra waste that juice boxes or water containers create,” remarked Mary. “I save money by buying in bulk and get the drinks that are good for my kids, plus it’s better for the environment.” There you have it, a few good ideas to help keep your kids healthy, energized and feeling good during the school day. And they might even help you to feel good knowing that you are making the right choices for your kids.

DROP AND GIVE ME 10 … MINUTES OF EXERCISE The guideline for daily exercise is working out – cardio and strength training – for at least 20 minutes a day. But if you don’t have the time you can always break down your exercise routine in 10 minute intervals. Let’s look at a series of exercises that you can perform for 10 minutes each day. Speed walking: This is not a leisurely walk in the park. Speed walking is what it sounds like; exerting yourself as you walk, pumping your arms and moving your legs rapidly. Machines: You can use a treadmill, elliptical trainers, rowing devices, stationary bikes, Stairmasters, or tread climbers. Walk up the stairs: If you have stairs in your home, use them. Walk briskly up the stairs and slower back down. Jumping rope, jumping jacks, dancing, running in place: use your imagination!

Concert Series At Koreshan State Historic Site Russian-born pianist Bella Gutshtein had a longtime dream of creating a “moment in history” concert series, where listeners could not only submerge in classical music but also in the literature and perhaps even the architecture of the age. “I’m always looking for a setting in nature,” she adds. “Music and nature go together.” Mike Heare, park services specialist for Koreshan State Historic Site, had long been looking for ways to draw new visitors to the park. Many Estero residents pass by the sign for Koreshan every day but have never ventured inside its gates. “I’ve had people for tours this summer who have lived here forty years and have never been here,” he said. “People don’t realize this is the beginning of Estero, and we have so much for them to see.” When Heare met Gutshtein in early 2004, he sensed her passion could reenergize the historic site which once was the cultural center of Estero. He invited Gutshtein to visit the 1905 Koreshan Art Hall and play on the Koreshans’ 1885 Steinway grand piano. Both the piano and the hall were in need of repair, but Gutshtein fell in love with the venue immediately. “I said, ‘Give me this theatre!’”

she recalled. “This is exactly what I want.” So was born the Estero Concert Series at Koreshan. Years in the making (the Art Hall had to be renovated), the concert series started quietly last season with just three Sunday events in February, March and April. Russian chamber music was performed by Gutshtein on piano and a string quartet featuring musicians from the Naples Philharmonic Orchestra, including her husband, Boris Sandler, on violin. The couple runs the Russian Cultural Center of Naples, a nonprofit dedicated to providing education and events centered around Russian culture. The buzz of a world-class concert experience in Estero grew rapidly. Each concert date was sold out, with the Art Hall holding a maximum crowd of eighty. In May, the Estero Community Improvement Fund agreed to sponsor this season’s concert series and partnered with the Southwest Florida Community Foundation to apply for a grant to expand the new cultural opportunity at Koreshan. This season, concerts will begin in November and run through April, with a possibility of multiple dates each month to meet the demand,

Gutshtein said. Guest musicians will be brought in from Europe, and concerts may feature literary readings along with music, she added. Gutshtein and Sandler have played in many prestigious venues around the world, but Koreshan offers something unique. “The walls are speaking to you,” she said, noting the rich wooden panels and the original stage built by Cyrus Teed and his followers. Teed’s globe and book on Cellular Cosmogony -a theory of the universe within the Earth -- sit prominently to the left of the platform. “The energy is very amazing here,” Gutshtein said. “When you come here, you feel very calm. People should come out of here enlightened.” Heare is thrilled Gutshtein and Sandler are reviving the tradition of cultural life in Estero which was started with the Koreshans. “They are keeping right in the spirit of the Koreshans by having the music in here,” he said. “I’m absolutely thrilled to have them here. What they’re doing is marvelous for this community.” The Estero Concert Series at Koreshan begins November 17. New Direction: Estero Chamber Of Commerce BY LAURA J. CUMMINGS

Estero Chamber of Commerce Founder Meg Judge led the organization with a strong voice through the community’s era of rapid growth. In the year since her passing, the Chamber’s board of directors has regrouped, refocused and redirected the organization to better serve local businesss owners in a sluggish economy. y. The Chamber announced d its new officers in July, with th Debi Montenieri at the helm. m. Montenieri has been a Chamber ber director since being recruited by Judge in 2005. “I’ve seen the area and watched it develop and grow,” ow,” d t said Montenieri, vice president of Nova Wealth Management. “We understood what its needs were, and what its needs are now. It’s important to have that history.” Chamber Vice President Jeff Maas also has been with the organization for eight years. While Judge focused Chamber initiatives on building infrastructure and rapport with legislators, the chamber now needs to refocus on supporting Estero businesses, he said. “I don’t think we’re as politically directed as we used to be,” Montenieri explained. “We’ve redirected our focus and offered more networking opportunities for people.” In addition to the monthly Business After Hours, the Chamber has added two new events to help local business operators network and grow. Rise & Shine Estero is a morning social mixer, providing networking opportunities before delving into the workday. The Chamber also has added a monthly Lunch & Lean event, bringing in guest speakers on relevant topics such as crime prevention and purpose driven profit.

Area business leaders are responding positively to the Chamber’s new direction. Membership numbers have grown 20 percent in the last year and a half, with about 220 current members, Maas said. One of the new members is Tony Pastore, an insurance agent with Aflac. “The people are great,” he said. “Everybody is so passionate in Estero.” The Estero Chamber seems to be coming into its own while also reaching out to its neighbors to promote regional economic development. Instead of a kingdombuilding mentality, local Chambers are now working together for a common goal: economic prosperity. The Estero Chamber joined the Bonita Springs/Estero Economic Development Council last year, and several members also sit on regional planning boards. “Economically, everybody needs to

come together here,” said Chamber director Capt. Morgan Bowden of the Lee C t Sheriff’s Sh iff’ Department. The shift from a single, outspoken leader to a shared leadership model has been challenging yet fulfilling for chamber directors. “Meg did phenomenal work here to get Estero on the map, and now it’s our job to continue it,” said Chamber director Susan Lindenmuth of Estero Fire Rescue. While the Chamber charges ahead, its founder’s vision will never be forgotten. To honor Judge’s contributions to Estero, the Chamber is planning its Second Annual Meg Judge Memorial Golf Tournament for October 18, at Estero Country Club at The Vines. “Our survival and evolution has indeed been a team effort,” Montenieri said at the Chamber’s annual luncheon in June. “We’re still here, and I think Meg would be very proud.” LP

There’s no business like show business! Just ask sixteen year-old Cypress Lake High student Sabrina Golba. Competing on-line recently, she won the opportunity to appear on an episode of season four of the tv sitcom, iShine KNECT. This also entitled her to audition in-person for the full season. “Sabrina auditioned at the iShine studios in Nashville, Tennessee with high hopes and a great deal of enthusiasm,” her proud father Leo Golba gleamed. “The audition monologue was performed by her humorous and childlike alter ego, “Angelica.” Not long after that audition, she was contacted by Brad Mathias, president of Bema Media, notifying her that she had won a spot on the show for season four!” OMG… talk about excitement! The season begins airing in January 2013. “Angelica” was created about a year ago when Sabrina escaped to her room instead of helping her parents with household chores. Sabrina currently attends Living Waters Community Church in Bonita Springs, where she’s active in the youth group as well as personal charitable initiatives, including sponsoring a child in Asia. “He is so sweet! I love sending and receiving letters from him!” She gives to radio station “Way-FM,” and tithes 10% of her paycheck to her church. Ready For Meet The Challenge BY LAURA J. CUMMINGS

In the summer of 2011, Joseph Burke moved from Key West to Fort Myers to head up one of the largest public school systems in the state. With more than 83,000 students in kindergarten through twelfth grade, Lee County Schools rank ninth in the state and fortieth in the nation for size. The school system includes an ethnically diverse student population and an above average poverty level, with 70 percent of students receiving free or reduced priced lunches. Burke manages a budget of about $1.38 billion and a staff of nearly 10,000 full and part-time employees. The school district is the second largest employer in Lee County, following close behind Lee Memorial Health System. As Burke heads into his second year at the helm of Lee Schools, he faces many challenges, including a budget deficit, a high teacher turnover rate and lower than predicted FCAT scores, resulting in the district’s overall grade slipping from an “A” to a “B” this year. Under tougher FCAT standards, the number of Lee County schools designated as “A” or “B” fell from 90 to 80 percent. In his role as superintendent, Burke is challenged to juggle the interests of students, parents, teachers, staff, taxpayers and politicians in Tallahassee. area of communication. Board members Don Armstrong and Thomas Scott disagreed, commending Burke for his vision. “Not only has he brought a lot of positive things, he’s actually thought outside the box, he’s reached out to the community in different ways, he’s trying to gauge community input... he recognizes that the school district belongs to the community,” Armstrong said in his review. District goals this school year include raising student achievement, especially in math, and developing an improved compensation model for teachers to help with retaining the best educators. “Continuous improvement and continuous growth is what we have to have,” Burke said. Parents who have long complained about the number of standardized tests and “teaching to the test” might be surprised to learn Burke agrees with them. While teachers rely on tests to measure student achievement, Burke plans to reduce the volume of standardized testing required by Lee County. Another thing people might be surprised to learn is who Burke turns to for leadership. “There’s a pretty substantial spiritual strain in my life and my background, and it’s something that is really important to me,” he said. “I’m always trying to stay in touch with the higher power that keeps us all going.” When he’s not running the district, you might find Burke playing cards, watching a theater production, working out or reading a book. While he mostly reads educational literature, he likes to sneak a novel in every now and then. His most recent pick: “The Litigators” by John Grisham. LP

Robert Van Winkle has been Director of Weather Services and Chief Meteorologist at WBBH in Fort Myers since 2003. He recently moved to the morning shift at NBC2, starting his day at 4:30 a.m. In August 2004, Van Winkle was the first meteorologist to detect a shift in the track of Hurricane Charley, giving Southwest Florida residents a few extra hours to prepare before Charley made landfall. Why did you choose to become a meteorologist? I started my career in meteorology when I joined the U.S. Navy. I was trained and worked on the aircraft carrier USS Nimitz. I can’t say that I always wanted to be a weatherman, but the training and on-the-job experience in the Navy really suited me. I was the designated weather briefer on the Nimitz and did the TV news when we were at sea. I also found myself giving weather briefs to Rear Admirals and Captains at the ripe age of 21. It was a pretty cool start to a career in weather.

How do you keep your audience engaged now that there are so many online weather applications at people’s fingertips? There is a great deal of weather to see online. I try to keep our audience engaged by giving them something they don’t get online… and that is my ‘take’ on what’s happening. Anybody can look at the weather online, but an explanation and an interpretation of the online noise is what my job is all about.

What might people be surprised to know about you? I love winter sports and like to ride my snowboard. It kills me that I haven’t been able to go lately. In my free time (which isn’t much) I also paint and decorate old furniture, picture frames, bird houses and cigar boxes. I’m a frustrated artist!

Can you share some interesting weather facts people may not know? On average, lightning is responsible for more weather-related deaths in Florida than

What are some of the ways you use your celebrity status to share your passions? I volunteer at Allen Park Elementary School and visit a group of very special kids as often as I can. I also do other school visits during the year. My next career will probably be a teacher in an ESL or Special Needs classroom.

What does a perfect weather day look like for you? Well, over 300 days a year we can be outdoors and enjoy the beaches, the nature preserves, the bike paths, the rivers and lakes… so … any day I can be outside and lap up the Florida weather is a great day for me.

Before becoming a Broadcast Meteorologist, John Patrick had a career as a radio personality in Western and Central Pennsylvania. He is now Chief Meteorologist for ABC7 and is known to his viewers as JP. Patrick has won the Associated Press’ “Best Weathercast” award for the last five years in a row. As he brings viewers the weather each day, Patrick’s mantra is: “Never be boring.” What piqued your interest in choosing to become a meteorologist? I’ve had a very unorthodox career path, because the career found me rather than the other way around. After going to college for Communications, I worked for over a decade as a radio personality. While working in Johnstown, PA, for a company that owned both the TV and radio stations, the TV News Director asked if I would move to the TV station to do weekend weather. I went back to school for another three years to graduate as a Broadcast Meteorologist. Describe what a day in the life of a meteorologist looks like. After six years on the morning news, I now work on ABC7’s evening news, so I’ve turned into a bit of a night owl and late riser. I try to get one or two things done around the house before I go into the station around 2:30. After looking at the weather forecast models, the other staff meteorologists and I chat about the models. I then put my forecast together. I fill out a computer spread sheet with my forecast data. I also build any special graphics that will help me tell the day’s weather story. I then go on TV with Storm Warn 7 weather at 5, 6, 7 and 11 p.m. (We get new forecast model guidance between our 7 and 11 p.m. news). After a hard day’s work, I like to kick back and end the day with an hour of Craig Ferguson.

How has technology enhanced your ability to perform your job better over the last five to ten years? ABC7 has access to the best technology out there. We share Southwest Florida’s ONLY Live Doppler Radar with our sister station at Waterman Broadcasting, NBC2. This allows us to track storms in Southwest Florida in real time. Storm Warn 7 Live Doppler Radar is in our back parking lot! Forecast model guidance has gotten much better also. ABC7’s in-house forecast model has a three-kilometer resolution, MUCH better than the 15 kilometer resolution of the forecast model available just a couple years ago. That allows me to pinpoint more precisely where, for example, afternoon sea breeze storms will pop. This leads to a more accurate forecast. In the past, the summers would have sunny days until midafternoon when there was a brief rain shower. Now it seems that there’s more rain in the a.m. and late afternoon. Has there been a shift in the weather patterns? From late spring through early summer, we’ve been transitioning out of a La Niña weather pattern, which has given Southwest Florida a milder and drier than normal first half of 2012, to a more neutral weather pattern, with a bit more rain. The transition has allowed for the Atlantic ridge of high pressure, or the Bermuda High, to drift south on

occasion. When that happens, Southwest Florida gets a westerly, onshore wind. In this pattern, the sea breeze moves over land early in the day, bringing its rain showers in the morning, and the afternoon thunderstorms go deep inland. We’ve seen that quite often this year. Does your audience ever give you a hard time when the weather report is inaccurate? I’m not going to be one of those meteorologists that say, “I never get the forecast wrong!” Anyone who says that is full of bologna. Sometimes, we get bad forecast guidance from the various models, which can lead to an inaccurate forecast. This happens with tropical systems more often than we’d like. When there’s a day that a forecast doesn’t verify as accurately as I’d like, I make darn sure to not run any errands. What might people be surprised to know about you? I post weather updates, but I’ve also posted dishes I’ve cooked, beach barbecues I’ve hosted, remodeling projects I’ve done, etc. But something people may not know is that I am the only TV meteorologist in Southwest Florida to be both certified by the American Meteorological Society and hold the seal of approval from the National Weather Association.

At the end of Coconut Road, nestled along Estero Bay, sits the magnificent Hyatt Regency Coconut Point Resort. While many Estero residents have visited for a conference -and some may even have enjoyed a “stay-cation” amid the lush gardens, inviting pools and luxurious spa -- this grand hotel also offers one of Estero’s best kept secrets: an awardwinning seafood restaurant. Tarpon Bay is slightly more casual than the Hyatt’s other restaurant, Tanglewood, featuring a relaxed ambience perfect for special occasions. A screened-in terrace overlooking the water and white-paneled walls give the restaurant the feel of an Old Florida beach cottage. Even when humidity stifles the enchantment of al fresco dining, the beauty of the natural setting -- along with some dazzling water features -is still visible from nearly anywhere in the restaurant. The Captain’s Room is especially impressive, seating parties of up to eight and featuring a fabulous view from its floor-to-ceiling windows on three sides. As we followed the hostess to our table, she paused for us to admire some beautiful red snapper on ice, along with eight kinds of ceviches. These raw seafood delights are “cooked” while marinating in citrus juice. Paired with flavorful chiles and fresh herbs, each ceviche dish is bursting with flavor. The raw bar also includes a selection of the freshest oysters and clams on the half shell. As we struggled to choose between salmon, lobster or conch ceviche, our server, Candace, suggested we start big with the Tarpon Seafood Launch, a three-story appetizer featuring jumbo Gulf shrimp cocktail, chilled ceviche, crab legs, sushi-grade tuna and a selection of east and west-coast oysters. While we were waiting for this monumental

appetizer to arrive, we enjoyed an assortment of breads dipped in Green Olive Tapenade, a savory olive spread made with capers, garlic, shallots and the “secret ingredient” of honey for a touch of sweetness. The Tarpon Salad featured a delightful blend of dried cranberries, avocado and shaved ricotta on a bed of local greens, served with Pepper Vinaigrette. The restaurant also offers an array of flatbreads made from honey-and-sea-saltinfused dough and topped with cheeses and herbs, some harvested from Tarpon Bay’s own herb garden. Another appetizer, Lobster Mac-N-Cheese, is a grown up version of the childhood classic, featuring fresh Maine lobster, bellarine pasta and lobster cream with Boursin and cheddar cheeses. Our tower of chilled seafood soon arrived, and we feasted with our eyes first. As my husband loaded oysters with Tabasco, I sampled the ceviche. The diversity of flavors was quite pleasing to the palate: tropical grouper with papaya and mango, spicy conch with habanero peppers and Asian salmon with sweet Thai chili sauce and almonds. After working through the Seafood Launch, we could hardly wait to see the main course. Tarpon Bay is known for its award-winning


presentation, whether it be lobster shooting up from the “sea” (a rippled blue glass plate) or the restaurant’s signature dish, Crispy Whole Snapper, served fried with head and tail intact and sitting upright, curved around a mound of wok seared julienne vegetables. Other signature dishes include grouper wrapped in tarpon-cured bacon and Rustic Tarpon Pappardelle -featuring Diver Scallops, Maine Lobster and the local catch, served with Forest Mushrooms and Brown Butter Americaine. For the land lubbers, Tarpon Bay offers Chicken and Brie Roulade, Berkshire Pork Chop Cuban and Poblano Butter Slow Poached Ribeye. Our dining companion enjoyed the seven-ounce Organic Harris Ranch Black Angus Filet while I admired the Whole Poached Maine Lobster. The newest presentation of this tasty dish features a no-work lobster hugging a grilled corn fritter, topped with celery leaf salad, middleneck clams, mirepoix and brown butter emulsion. Accented with a bright orchid, this dish is almost too lovely to eat... almost! After admiring Tarpon Bay’s offerings, it’s little wonder Head Chef Noel Willhite and his team have earned the Open Table Best Diners Award for 2012. Tarpon Bay also has been named Best Hotel Restaurant by Gulf Shore Life Magazine. Of course, no meal is complete without dessert, no matter how stuffed you are with seafood. Struggling to choose between the Chocolate Lava Cake, S’mores Crème Brûlée and Key Lime Cheesecake, Candace again came to our rescue with a lovely dessert platter featuring bite-sized portions of all three, along with house-made ice cream in three flavors. Tarpon Bay loves to celebrate special occasions, often personalizing dessert platters with a chocolate drizzling of “Happy Anniversary” or “Congratulations” to newlyweds or college graduates. Manager Florian Ratz and his staff go to great lengths to create a pleasurable dining experience. To cap off a fine meal, we sipped on cappuccino and enjoyed one last treat: a Norman Love chocolate.

i i COCONUT GRILLED TUNA » For this dish we explore the complex flavor of coconut. Fresh coconut is easy to find in Florida, and is a rarity in most home kitchens. Once the technique of opening a coconut is discovered, you will unlock a world of possibilities and flavor profiles. In our restaurant, we pair it with black garlic for a unique cleansing of the palate. INSTRUCTIONS: » With the back of a heavy knife or with a steel, holding the coconut loosely in the palm of your hand, and over an empty bowl, strike the coconut in the center, rotate and hit again in the center. Repeat until coconut cracks open. Reserve coconut water. Using a large spoon, ‘shuck’ the meat out of the shell of the coconut. Reserve half the meat. Puree

chimichurri. Grill at high heat for one minute on both sides so there are nice grill marks, but the tuna is still rare. Let cool slightly and slice thin. Dress with a little more chimichurri and the coconut salad. This dish goes great served with leafy green and bitter vegetables, such as bok choy, kale, or swiss chard. Roast or sautéed vegetables and serve alongside Tuna salad.

another thing... CUTTING THE GRASS. AND THE BS. BY BRUCE TURKEL

A comedian on late-night television did a funny bit about a guy who hoisted his lawn mower up to trim his shrubs. After the blade hit a hidden branch in the hedge and flipped over, the lawn mower chopped off one of his arms. That wasn’t the funny part. Once the one-armed homeowner recovered, he found a lawyer to sue the lawn mower manufacturer. Why? Because the box did not include a warning that the product should not be used as a hedge trimmer. Believe it or not, the homeowner won the suit. That wasn’t the funny part, either. The funny part was that the lawn mower did come with a warning not to pick it up and use it as a hedge trimmer. Where was the warning? It was the words “Lawn mower” printed on the side of the box. Last month I was at a conference in Indianapolis and went to grab breakfast. I lowered half a bagel into the toaster and looked for something to spread on it. Here’s what I found: The peanut butter label pointed out that the peanut butter had peanuts in it. Funny, I thought the word “peanut” made that pretty clear. And the cream cheese label said that it contained dairy. Really? I was pretty sure that both the words “cream” and “cheese” suggested that there would be some dairy involved. I have a friend whose son has a potentially fatal peanut allergy so I understand it’s critical to know when peanuts are present. And my daughter is a committed vegan, so I also understand the importance of knowing when there’s dairy in a dish. And finally, the lawn mower story reminds us all of legal liability. But c’mon, what’s more obvious than peanuts in peanut butter or dairy in cream cheese? In the effort to communicate clearly, we sometimes become masters of the obvious and tell people what they already know — that our law firm handles legal cases, our accounting company files taxes or our motivational speech is about motivation. And in the effort to communicate we sometimes tell people what they don’t care about at all — how many computers we own, how many locations we have or how many years we’ve been in business. But while we’re busy saying all this, what we don’t say is how what we do will make our prospects’ lives better. Why our law firm provides peace of mind. Why our accounting firm helps assure their family’s future. How our motivational speech will help our audiences achieve their goals. Now I already know what you’re thinking, “Sure Bruce,

that’s great for everyone else but I’m — big sigh — different. You see, my business is unique…” Really? Your business is too special to narrow down? Then let’s talk about Volvo. Volvo is in a lot of businesses. They’re in transportation, manufacturing, research and development, metallurgy, engineering, upholstery, design, import/export, logistics, just to name a few. Plus, they operate retail stores for both new and used products, sales and service, and accessories. Volvo operates under the governmental regulations of the hundreds of countries, states, and municipalities they operate in. They work in multiple languages, with multiple consumers, multiple currencies, and in multiple industries. And don’t forget that they don’t just make consumer automobiles. Volvo also builds busses and trucks and provides engines and engineering for other companies. Yet, despite this incredible amount of complexity, they still describe themselves with one word: safety. Volvo knows they don’t have to sell transportation or even getting from point A to point B because that’s not what people are buying. Sure that’s what Volvo’s cars do. But there’s that pesky master of the obvious stuff again. Even though Volvo’s business is as complicated as it can be, they don’t sell what they do, they sell what they do for you. You’re a better parent, a better spouse, and a better human being because you buy and use Volvo’s products. By buying their cars, you’re telling the world that you care about the people you love and people you’ve never even met before. Pretty good messaging for a company that makes cars, eh? Cream cheese says “dairy.” Peanut butter says “peanuts.” Volvo says “safety.” And lawn mower says “cutting grass.” What does your brand say? LP
