Welcome to Boise Lifestyle Magazine! I

grew up in a little town here in Idaho called Aberdeen. The residents of Aberdeen all knew each other by name and supported each other. If you were looking for someone in the fall on a Friday night, you didn’t have to look any farther than the high school football game because the whole town was there. If a student got a perfect score on the ACT, the community buzzed about the student’s success and felt proud that our little town produced such a fine scholar. If there was an accident during church, everyone would know because the clergymen, who were also the volunteer firemen and paramedics, would suddenly run out of church to serve someone else in need.

When I first moved to Boise years ago, I worried that by living in a city I would lose that close knit feeling of a small town community. But I discovered a well-kept secret. oaming the streets of Boise for the first time in April 2004, I fell in love. The daffodils and tulips were in full bloom. Many fellow dog lovers were walking dogs while other dogs peeped out from passenger side windows. The air was fresh, clean and void of humidity. I knew I had found home.

LOCAL TEACHER RECEIVES AWARD Lindsey Bisbee, art teacher at Pioneer School of the Arts, was named the 2014 Idaho Elementary Art Teacher of the Year by the Idaho Arts Educators Association. Pioneer and the West Ada School District are fortunate to have this remarkable educator serving their students. Bisbee joined the staff of Pioneer School of the Arts in 2008. Over her seven years at the school, Bisbee has been a champion of arts education and an integral part of the unique arts-integrated program the school offers. IDAHOAN DESIGNS SUIT FOR SKYDIVING FEAT Ryan Lee, senior design engineer for ILC Dover, the same company that designs the spacesuits for NASA, recently designed the suit that Google Senior Vice President Alan Eustace wore to protect himself from the elements during the record-breaking feat of skydiving from the stratosphere. Eustace set new world records for skydive altitude, fall distance and vertical speed. Lee is from Boise and a graduate of Centennial High School. He has degrees in mechanical engineering and aerospace engineering. Lee recently visited the Discovery Center of Idaho to speak about his experiences as part of the Paragon StratEx Team. Lee lead the design of the suit, assisted Dr. Eustace in suiting up, was the navigator for the chase helicopter and was the first responder at the landing site. DCIdaho.org

IDAHOAN NAMED ‘40 UNDER FORTY’ INDUSTRY LEADER Idaho Potato Commission (IPC) Marketing Manager Jamie Bowen has been chosen as a “40 Under Forty” produce industry leader for 2014 by Produce Business magazine. “I was very excited when I found out that I had won the award – it was awesome,” says Bowen. “I was born and raised in Idaho, and I have a passion for our state and the great things that we offer, like our world-famous potatoes. I’ve worked really hard alongside my excellent team here at the IPC, and I think we’re the strongest we’ve ever been.” The 32-year-old Boise, Idaho native, who earned a business marketing degree from Boise State University, originally beat out around 500 other applicants when she joined the IPC as a marketing assistant more than six years ago. Two years later Bowen was named IPC domestic marketing manager. She has worked tirelessly to help promote the entire Idaho® potato industry through marketing, advertising, attending trade shows and providing other promotional support.

LOCAL DENTISTS GIVES BACK Ustick Dental Office recently provided 70 patients in Boise with over 14,000 dollars in free dental care. Dentists, Vince Rigby and Greg Booth, led a group of eleven staff members and nine volunteers as they completed numerous cleanings, extractions and fillings. Fat Bikes: What You Need to Know Get the Scoop on Riding These Unique Bikes in Idaho Article Sara Westbrook | Photography Provided

Y

ou may have noticed a bike with incredibly wide tires in the local bike shop or while hiking along a trail. As you observed the bike with the heavy duty tires, you may have asked yourself, “What kind of a bike is that?” What is a Fat Bike? Though sometimes known as a “snow bike,” most riders prefer the term “fat bikes” when referring to these cycles with oversized tires. Fat bikes were originally developed around the same time in two different parts of the country: Alaska and New Mexico. Simon Rakower of Fairbanks, Alaska, altered rims that were wide and lightweight to create a larger footprint for gripping the snow. Meanwhile, in New Mexico, Ray Molina developed a wide chevron tire tread for use on sand dunes. Eastside Cycles Service Manager Patrick Wescott explains how fat bikes differ from other types of bikes. “First and foremost, the tires are dif18

ferent: most fat bikes have 3.8- to 4.8inch wide tires, almost twice the size of the average mountain bike tire,” explains Wescott. “Because of tire sizes, the frames have been modified to handle those tires, and still be able to be ridden comfortably and efficiently.” Are Fat Bikes Just for Snow? Westcott says not anymore. “The original thought for these bikes was snow,” he says. “The big tires offer a big footprint to ride on top of the snow, like a snowshoe. With sand needing a similar footprint, that was the next thought for use. Now we find there are no limits to what type of terrain these bikes will conquer--rocks, mud, logs, tree roots, water crossings, singletrack, pumptracks, jump parks, bikepacking.” Wescott doesn’t just service bikes in the shop. He also rides them all over the trails of the Treasure Valley. When people first encounter fat bikes they often

say, “You must have to have strong legs to pedal that thing.” “You will be really surprised how easy they are to pedal.” Wescott clarifies. “My very first trail ride on my fat bike, I achieved my third-best time climbing one of my favorite trails. They pedal very lightly despite how they look.” Why Are Fat Bikes Fun to Ride? The traction is the main attraction to fat bikes. “You have traction for days,” Wescott explains. “With such a big tire, you have such a big footprint contacting the ground and objects on the ground. Could Fat Bike be a Fad? Fat bikes tend to be a polarizing subject in the cycling community. Some argue that fat bikes are just a fad that will eventually fade away, but others see fat bikes as the ultimate bikes for all-terrain riding. The 4th Annual Global Fat Bike Summit taking place January 23-25 in Jackson, Wyoming seems to suggest that fat bikes are here to stay. The Summit plans to focus on bringing together bicycle industry experts and public land managers to discuss how fat bikes can be used on trails while keeping the trails well groomed for public use year-round. Is Idaho a Good Fit for Fat Bikes? Dan Grover of Boise hasn’t always been a mountain biker. Six years ago Grover lived in Colorado, a state many consider a mountain biker’s paradise. “I was inspired by the Garden of the Gods in Colorado Springs,” Grover muses. “I started riding in 2009.”

After moving to Boise, Grover discovered a well-kept secret. Idaho is a mountain biking heaven on earth. With more than 19,000 miles of trails, with varying levels of difficulty, Idaho serves as a playground for cycling enthusiasts. After trying out various trails throughout the valley, Grover is ready to tackle his next cycling challenge—fat bikes. “I would love to try one!” Grover says. “I’ve heard the tires stick to corners better than ordinary mountain bikes because they have lower pressure so you can corner better. That’s why I’m super interested in trying one.” The distinct four seasons here in Idaho are an ideal fit for fat bikes as all-terrain bicycles. ears ago, David Bassiri was the owner of a software company in Boise with a passion for good seafood. “I have lived on the coast in Seattle, Oregon and Alaska,” states Bassiri. “I loved seafood and I missed it. I moved to Idaho to run a software company. I discovered a little restaurant called Reel Foods and I loved it. They were known for their fish and chips. I panicked when I found out they were going to close so I bought the restaurant and then expanded the menu to even more than fish and chips.” Fresh Off the Hook now has two locations, a café style restaurant on Milwaukee and a little more upscale dining room located in the heart of Boise at BoDo. Bassiri and the staff at Fresh Off the Hook want their customers to enjoy the entire dining experience. “We offer gourmet seafood in a casual setting,” shares Bassiri. “I want people to feel comfortable. I have really high quality chefs and our prices are very reasonable. People in Idaho like their own regional flavor. We cook for Idaho. All of our recipes have been developed over the last 20 years for people here in Idaho.” Cooking for Idahoans has served the restaurant well. They have won Boise Weekly’s “Best of Boise” for the past nine years in a row. Bassiri is proud of that record. He happily shares some of the secrets to the restaurant’s success. 20

“The reason we are so popular is that we only do seafood and we do it well. We go through our ingredients quickly so that helps the ingredients stay fresh. We don’t run our company behind the scene.

“People in Idaho like their own regional flavor. We cook for Idaho.” Customers see it in the front. My goal is not to follow in everybody else’s footsteps. Our secret to our success is that you don’t do a couple of things 100 percent better than your competitors, you have to do hundreds of things 10 to 15 percent better. We don’t only focus on providing food, we focus on the entire dining experience. We look at the whole restaurant.” Bassiri goes on to share an analogy about the way the business is run. “We consider restaurants a big airplane. There are thousands of components that make it fly. Every component is important to creating the experience.” Bassiri’s attention to detail is noticeable the moment you walk in the door. The décor is upscale with an urban chic feel. The dining room is immaculate and the food? Only one word is needed to describe the food—exquisite.

“I tell my chefs if people can cook it at home then we shouldn’t serve it,” explains Bassiri. “It should be special. We make a creamy lemon dill sauce on broiled halibut that is a signature dish. It takes a chef to make a dish like that.” The Fish and Chips and Fish Tacos are popular dishes that the regulars crave. The Hot Seafood Salad also gets rave reviews from the regulars who frequent Fresh Off the Hook. Bassiri’s personal favorite is the Baked Salmon. “They just cook the flavors into the fish and it tastes so amazing.” Whether in search of a restaurant for lunch with a co-worker or a romantic dinner for two, Fresh Off the Hook is perfect for either. Be sure to finish off your meal with a slice of Sticky Toffee Pudding Cake. You will not be disappointed. y daughter-in-law took one look at the 2015 Yukon XL and described it as a family truckster. With room for seven, two video screens and a cargo space big enough for a week’s worth of luggage, that’s certainly an apt description. Plus, it can tow 8,000 pounds. There are two models, the Yukon and Yukon Denali. Both come in regular or XL sizes. The XL has a 130-inch wheelbase. The Denali is the brand’s flagship and it is loaded with luxury features and equipment. Prices for the Denali start at $62,680 and range to $65,380 for the XL. Prices for the Yukon XL start at $49,035 for a two-wheel-drive SLE. I drove a fourwheel-drive SLT from GM’s press fleet. It had a base price of $60,435 and a sticker price of $67,270. Because the redesigned Yukon and Yukon XL have roots in the new Sierra pickup truck they continue to be body-on-frame vehicles with V-8 engines and a good thirst for fuel. The four-wheel-drive test truck, with the 5.3-liter V-8 engine, has an EPA-estimated fuel mileage rating of 15 miles per gallon in the city and 22 on the city. In most-

ly city driving I averaged a bit less than 14 mpg, according to the trip computer. Twowheel-drive models are rated at 23 mpg on the highway, which GM says is an improvement of nearly 10 percent. The test truck’s 355-horsepower V-8 was strong and responsive. It has variable valve timing, direct fuel injection and cylinder deactivation. The change from V-8 to four-cylinder operation was barely perceptible on the highway. Full-size, nearly three-ton family haulers like the Yukon XL and Chevrolet Suburban are beloved by the faithful, many of who will hook up a horse or boat trailer. The test vehicle was equipped with the trailer-towing package that included a trailer brake controller. The Yukon’s interior has been refined and it is as comfy as the couch in your family room. The choice of materials rivals that of many luxury cars. A new feature is a front center airbag that deploys from the inside of the driver’s seat. It provides a center cushion between driver and passenger during side-impact crashes.

The gauges are similar to that of the pickup truck, but the rest of the instrument panel is softer and more like that of a car. The 8-inch touchscreen for audio and navigation has a new menu system that seems less intuitive than before. A mid-year update will include an “always on” 4G LTE connection that enables the vehicle to become a mobile hotspot without relying on an individual’s smart phone. GMC will also offer an app shop so owners can download apps for weather, music, news and travel information. One item I really like is the driver’s seat that vibrates if there is danger of hitting an object or another vehicle. The rearview camera is useful for towing because the driver can use it to back up to the trailer hitch. The test car was equipped with second-row bucket seats that are not only more comfortable than bench seats, but they also make it easier for people to get into the third row that is reasonably comfortable for adults. Warranty: Three years or 36,000 miles, with a five-year, 100,000-mile powertrain warranty. Price: The base price of the test car was $60,435. Options included power sunroof, upgraded audio system with navigation and 8-inch touch screen, rear-seat entertainment system, 20-inch polished wheels, trailer tow package, 3.42 rear axle, two-speed transfer case, second-row bucket seats and theft deterrent system. The sticker price was $67,270. At A Glance

Nestled near the Park Center Bridge that connects Park Center to Harris Ranch, the bi-level restaurant features an upstairs patio, a private banquet room, a lively bar area and booths for quieter dining. The owners and operators of the establishment are Barry Werner and John and Kristy Toth. During a recent interview with Kristy she explained that the layout of the restaurant is inviting for groups both large and small. The large menu offers a little bit of something for everyone. When first stepping into the restaurant the large variety of choices the restaurant has to offer starts with choosing where to sit. “We have a banquet room upstairs that seats about 50 people,” explains Kristy. “It is very popular for rehearsal dinners, business events, birthdays and holiday parties. Our upstairs patio offers a great view of the foothills, has an open fire pit and is very relaxing in the summer months.” The choices continue upon glimpsing the menu filled with delicious food made with only the best ingredients. “We offer Double R Ranch USDA Prime grade steaks, bone-in rib-eye steak with our signature tavern rub, local pork from Snake River Farms, fresh ground chuck hamburgers and more,” says Kristy. “We make our soups from scratch, including our house Smoked Salmon Corn Chowder.” The sustainable seafood is one of the things the Tavern is especially known for. “We have local Idaho trout from Hagerman, ID,” shares Kristy. “Copper River Salmon fishing season starts towards the

end of May, so we are one of the few places to carry Copper River Salmon while it lasts. We carry fresh Halibut during the summer as long as the season lasts. Our nightly fresh seafood features are one of our most popular items, allowing the kitchen to use their creativity every day.” Don’t forget the sushi. With a full authentic sushi menu including sashimi nigiri, specialty makis and a sushi for two platter, sushi lovers will walk away from the Tavern feeling satisfied. Start with your favorite roll-out cookie recipe or simply dress up store-bought ones by adding some simple details with icing. Triple your treats by stacking three decorated cookies in different sizes together and attaching them with icing. • Complement with color. A simple piping technique looks stunning when piped in different colors on your cookies. • Get to gifting. Wrap your finished treats in a Valentine’s Day treat bag or box. Divide royal icing into three equal portions, and tint 3 shades of rose. Thin a portion of each shade following recipe directions. Use tip 3 and full-strength tinted icing to outline cookies. Use icing to attach cookies, stacking largest to smallest; place icing decoration on top.

Prepare and roll out dough following recipe directions. Use largest cutter from the 4-piece heart nesting cookie cutter set to cut out shape. Bake and cool cookies. Divide icing into four equal portions. Tint one of each portion light burgundy, dark burgundy and combination of red-red/ Christmas red. Do not add coloring to the last portion. Starting from the top edge of the heart, use tip 102 and icing in dark burgundy, light burgundy, red and white to pipe V-shaped groups of two petals, one piped from left and one from right, to create a row of petals in alternating colors. Repeat with second row between petals in first row. Continue to repeat pattern until cookies are covered in icing.

Common Sense Diet Words Linda Whittig

Y

ou don’t even have to look at a calendar to know a new year is in full swing. Grocery store aisles are stocked with meal replacement drinks, diet center commercials run during prime time and drivers circle like vultures for the closest parking spot to the already packed gym. Yes, the calendar has turned over and with it, many people’s resolves. According to StatisticBrain.com the number one resolution in 2014 was to lose weight. What was the success rate of these resolution makers? 8 percent. Now while the cabbage diet sounds unappetizing and the new Air Diet just sounds stupid, I’m not one to poo-poo these diets without offering an alternative, so without further ado, may I suggest the Common Sense Diet™. Does eating grapefruit morning, noon and night seem logical? What about a diet that promotes bacon and cream over fruits and vegetables? How about one that only includes food that could have been gathered or clobbered by our caveman ancestors? Did it ever occur to anyone that those Paleolithic predecessors were healthier not because of what they ate but because they didn’t eat it in their cars or on the couch while watching CSI reruns? Are we so desperate and impatient for results that we have thrown all common sense out the window? Don’t answer that. Instead I present the Common Sense Diet™: • Consists of foods hunted and gathered from the perimeter of the store where real food lives. • Prescribes a couple hours of preparing foods that will give a jump start to meals the rest of the week i.e. a pot of cooked grain, prepared fresh or roasted vegetables, marinated or precooked meats. 34

• Limits packaged foods to those with ingredients lists that an 8 year old can understand. • Dictates that there’s always a big bowl of fruit on the counter and a fridge loaded with healthy options that are ready to go so that looking in the cupboard where the chips and cookies lurk is less tempting. • Staves off the hangries by keeping smart snacks in purses, backpacks and desk drawers. • Realizes that restaurant portions are almost always large enough to be split with a friend or to save half the meal for another time. • Uses lots of spices and herbs to make nourishment exciting and encourages getting out of the food rut by branching out and trying new things. • Requires ditching your membership to the Clean Plate Club. As much as I sympathize with the fact that there are starving children in Africa, I fail to see how polishing off a super-sized meal here in Idaho is going to change that. Do thousands of people sign on for these wacky diets each year because it’s easier for someone to tell us what to do than to actually exercise our own common sense? I think deep down most of us know that the most successful diets aren’t diets at all. They are lifestyle changes adopted over time. If you swear off chocolate forever, you’re just setting yourself up to be in the 92 percent of resolution makers that fail. A healthy lifestyle is all about moderation, wise choices and yes, some chocolate from time to time. Now THAT makes sense!
