here is nothing quite like finding the person you want to spend the rest of your life with and knowing beyond a doubt that they are the one. I will never forget calling my mom after Kate and I’s first date, telling her, “I’m marrying her. I guarantee it.” Coincidentally, Kate called her mom that same day and told her that she planned to marry me. While my parents jumped for joy that their prodigal son (who had spent the last four years in Vail) was ready to settle down, Kate’s parents weren’t quite so quick to give their fifth and final daughter to a guy they knew little about. Fortunately, they came around rather quickly. My best friend had already blazed the trail by marrying one of Kate’s sisters.

What does this have to do with beer and dogs? Everything!

Shortly after Kate and I were an official dating item (two weeks), we decided the next logical step would be to adopt a dog together. I was living on a lake at the time, and every lake house needs a lake dog. As we toured the rescue shelter, the employee told us that black labs were the hardest to get rid of, because they were so common. That notion didn’t hold much weight with us, though. Once we laid eyes on Rajah, a slender black lab mix, we knew she was the one. Six months later, we took a trip to Fort Collins and, after an amazing tour of the New Belgium Brewing facility, we were engaged. Beer and dogs actually have a lot of similarities. While some are better than others, it’s hard to find a bad one of either. Cheers, and enjoy the issue!

HOMEMADE HOPS-INFUSED DOG SHAMPOO Perfect for a fresh, deep clean scented with hops. • 1 pint gentle natural dish washing soap • 1 pint hop water • 1 pint apple cider vinegar • 3/4 cups hops • 4 oz. glycerin • 1 tablespoon baking soda 1. Infuse water and hops in a jar for at least an hour. 2. Mix all of the ingredients together and put in a bottle. 3. Grab your pup and suds up. Rinse thoroughly. Voilà!

• 1 cup baking soda • 1 cup cornstarch • 1 tablespoon Apple cider vinegar powder • 5 drops of your favorite essential oil *peppermint and lavender are known to repel fleas* • Jar/container (one with a shaker lid) 1. Combine the baking soda, cornstarch, apple cider vinegar and essential oil; stir well. 2. Place in a container with a tight lid and shaker top. 3. Choose the best-quality fish for this simple ceviche. INGREDIENTS
SERVINGS: 4 • ¼ medium red onion, chopped, plus thin slices for serving • 2 garlic cloves, minced • ¼ habanero chile, seeded • 1 tablespoon chopped peeled ginger • ½ teaspoon sugar • 1/2 tablespoon sea salt, plus more • ⅓ cup coarsely chopped fresh cilantro • 1 pound sea bass fillet, skin, bones, and bloodline removed • 1/2 cup jicama • ½ cup sour ale (we used Upslope Dry-Hopped Wild Ale) • ½ cup (or more) fresh lime juice, strained • 1 avocado, thinly sliced PREPARATION
• Chop onion, garlic, habanero, jicama, ginger, sugar, 1 tablespoon salt, lime and 1/2 cup sour beer. Transfer to a small bowl; stir in cilantro. Cover and chill 1 hour. • Meanwhile, trim fish to create clean edges. Holding your knife at a 45° angle, slice into ¼"-thick pieces; try for one fluid movement per slice to avoid shredding flesh. Transfer to the small bowl with the previous mixture, and let the fish cure in the fridge until ready to serve (at least 20 min). • Arrange fish mixture in a shallow bowl or plate. Season with salt and top with sliced avocado. Serve immediately. STOUT CHOCOLATE BROWNIES Stout Chocolate Brownies INGREDIENTS
• ½ cup stout • 1/4 cup espesso or strong cold brew • 10 ounces 60% bittersweet chocolate chips • 1 cup butter • 1 cup sugar • 1 teaspoon vanilla • ½ teaspoon kosher salt • 3 eggs • 1 cup flour INSTRUCTIONS
• Preheat oven at 250 degrees F. Prepare a 9" X 9" baking pan with parchment paper allowing the paper to hang over the edges and spray with cooking spray. • Bring stout to a boil and reduce to simmer and cook for about 10 minutes or until reduced to ¼ cup. Set aside to cool. • In a double boiler or a small bowl atop a small saucepan filled with 1 inch of water, melt chocolate chips and butter over high heat, stirring occasionally, until melted. • Pour melted chocolate into a medium bowl and cool slightly. Add sugar, vanilla, salt and stout and mix well with a whisk or wooden spoon. Add eggs one at a time, mixing just until combined before adding the next egg. • Fold flour into mixture and pour into baking pan. Bake for one hour or until a toothpick comes out clean. Allow to cool in pan for 2 hours or overnight to firm up for best cutting. Dust with powdered sugar if desired. August 2016 | Boulder Lifestyle

he clock strikes 1 p.m. as the dirt gravel crunches beneath our feet. We just left the air-conditioned office and made our way through the stables, spacious and clean, out onto the 50 acres of land sanctioned as the fields of horse rehabilitation by Colorado Horse Rescue. Carol Brice, director of the nonprofit organization, leads the tour past the first enclosure, which contains an ebony-furred equine by the name of Trouble. The name is eerily reminiscent of the situation; this particular horse suffers from a hairline fracture in one of his legs. “His situation is still a bit tenuous, and we are keeping a close eye on him,” Brice reveals as we move on. The intonation in her voice, however, drips with the inclination of confidence that the horse will see improvements while under the caring nestle of Colorado Horse Rescue. Colorado Horse Rescue began operation in 1986, making this year their 30th anniversary. It was founded by two friends — Sharon Jackson and Jill Pratt — who dreamed of accomplishing exactly what the organization is doing now. They did not have the resources to maintain a facility when they first opened their doors, so they were forced to use whatever stable vacancies they could find. By 1992, their operation was split between an old dairy farm in Wheat Ridge and a boarding stable in Arvada. As awareness of the organization continued to grow thanks to the selfless deeds — both small and large — Jackson and Pratt's dream was realized when Colorado Horse Rescue moved onto the 50 acres of land in Longmont in 2000, where it remains today. “Rescued is my favorite breed,” says Brice with a smile when asked of her favorite breed of equine. The hard work being done at the location is not only by the hands of the employees, but also by the 75 volunteers that commute there every week. Although they all come from different walks of life, all of their hard work paid off when Colorado Horse Rescue won the Nonprofit of the Year in 2015. When asked what kind of impression she wanted to leave on the public, Brice said that she wanted Colorado Horse Rescue to be known as a place of hope, courage, dedication and hard work. here’s a new buzz in Boulder. Java, joe, the sweet, sweet nectar otherwise known as coffee is making an entrance into the brewing world. Specifically, cold brew coffee. But before we start putting our steaming morning mugs into the fridge, read on. Cold brew coffee is made by steeping beans in cold water for a 12–24 hour period. The process differs from that of a hot brew in that the astringents, or what can make a cup of coffee bitter or burnt tasting, are kept within the bean (as in not released or tasted in the final product). Fast forward to the brewing process. Cold brew coffee is making its summertime debut. The length of the cold brew process allows brewers to perfect both the timing and amount of coffee added to their craft beers. Typically though, the cold brew is added after fermentation and filtration. Previously only added to beers such as stouts and porters, coffee spiked brews are now found on the beer list from IPAs to Belgians. “[He] doth protest too much.” Shakespeare’s famous Hamlet line holds true for beer snobs today (meant in the most endearing sense of the words). There are those who believe beer should not be combined with fruit, coffee or anything besides that which it contains. Brewers are, like any creative professional, out to perfect, improve and generally ‘wow’ consumers with their craft. The coffee and beer collaboration is much, much more than a fad. I spoke with Nolan Dutton of Ozo Coffee Roasters on this tasty marriage of sorts. “Craft brewers and craft coffee roasters share in a lot of the same goals and ideas,” he explains. Each industry is experiencing a bit of a growth spurt of its own, so it makes sense that “the concept collaboration is only going to get stronger.” Being a bit of a coffee aficionado myself, Avery Brewing’s IPA collaboration with Ozo Coffee Roasters immediately caught my eye over lunch at the acclaimed brewery and restaurant. Two of my closest allies, my favorite flavors, together in one ice cold glass. I had to try it. Leigh Audin, Special Products Brewer for Avery Brewing Co. is one of the minds behind the brewery’s collaborative efforts. But one of my all-time favorite places I’ve stumbled upon has been surprisingly closer to home, right here in Boulder County. Louisville, Co. is one of the most welcoming, community-centered places I’ve ever been too, and has quickly become a go-to spot for weekend adventuring. If the quaint, flower-adorned sidewalks of old downtown and the charming, tiny houses set back behind white picket fences don’t do it for you, the down-to-earth and intently genuine charisma of the townspeople will. SWEET COW: Shopping sure does work up an appetite! So I head on over across the street to Sweet Cow to alleviate my hankering for something sweet. I’m a go big or go home kind of girl when it comes to ice cream, so I pile my waffle cone high with rich flavors like Oatmeal Cookie and Dutch Chocolate, or lighter more summery flavors like Watermelon Sorbet and Salted Caramel. And because each flavor is made in small batches with only the simplest, locally-sourced ingredients, this is one sweet treat you don’t have to feel guilty about indulging in.
LULU'S BBQ: For lunch, I’m feeling a bit like Texas Hill Country style BBQ. I’m a huge fan of the Spicy Pulled Smoked Chicken Sandwich, which is topped with creamy coleslaw and crunchy fried pickles. Doesn’t get much better than that, folks. Except that there are sides like BBQ pit baked beans, homemade mac-andcheese, and cinnamon butter cornbread too. It definitely brings the relaxed summer vibe to downtown Louisville.

LITTLE HORSE: After devouring my ice cream cone and BBQ sandwich, I head on over to Little Horse to see what hidden gems I can find in this vintage thrift shop. Their collection focuses on the mid-century modern period, with emphasis on uniquely endearing pieces that are handpicked by the owners. I love flipping through their extensive collection of vinyl records and perusing the shelves of vintage typewriters and tchotchkes for my next great find.

TWELVE DEGREE BREWING CO.: After browsing the shelves at Little Horse, I zip on over to Twelve Degree Brewing Co. What strikes me the most about Twelve Degree is its inviting, community-fed atmosphere. I’d recommend the Foxx Rougge if you are into dark, strong flavors, or the Grapefruit Express for a lighter, more summery flavor, but really you can’t go wrong. I’d also highly recommend getting an order of artisan cheese for the table—my favorite being the honey bee goat milk gouda--as well as sample of decadent chocolates. Chocolate and beer?! Yes please. Every shop, restaurant, boutique, and store front here has its own unique story—where it came from and how it’s continuing to shape the community. The sights, the sounds, and, most of all, the people of Louisville will leave your heart fuller than when you arrived.
