CHEF JOHNNY CURIEL TAKES THE REIGNS AT CENTRO MEXICAN KITCHEN Centro Mexican Kitchen is very proud to announce Chef Johnny Curiel as the new Chef de Cocina. His debut menu showcases regional specialties inspired by his extensive travels across Mexico—from Jalisco and Baja, Chihuahua and Veracruz, Yucatán and Oaxaca, each prepared with the very best Colorado ingredients. “Dining out is an adventure,” says Johnny. “A restaurant should either bring you back to a place you’ve already been and loved or take you somewhere entirely new and exciting. SWEET COCONUT + MAPLE GRAIN BOWLS INGREDIENTS Makes 4-6 hearty bowls + 1 tablespoon coconut oil + ¼ cup quinoa + ½ cup white sushi rice or brown short-grain rice + ¾ cups / 5 oz / 140 g rolled oats + 1 ½ cups / 350ml water to start, and a little extra as needed + 1 ½ cups / 350 ml almond milk (or other non-dairy milk) for breakfast bowls, plus ½-1 cup additional liquid for seasoning + Pinch of kosher or sea salt + 2 tablespoons chia seed + 2 tablespoons coconut butter, to taste + 3 tablespoons maple syrup or to taste + Zest of one lemon + To taste: Maldon salt, maybe a bit of lemon juice + To finish: thinly sliced pear or apple, pomegranate seeds, hemp seeds, cashew or almond butter, candied ginger, sprinkle with freshly ground cinnamon, tiny pinch of ground cardamom. INSTRUCTIONS In the bowl of a rice cooker (at least 10 cups in size) combine the coconut oil, grains, water and milk or broth and a pinch of salt. Stir the grains with the liquid, then close the lid and set the rice cooker to “cook” (select mixed grains if your rice cooker has this function). When you’re ready to prepare your meal and season your grains, lift the lid and add the chia seeds and additional ½ to 1 cup of liquid. Stir to incorporate the chia and liquid into the other grains. If you like your grains to have a more “porridge-y” texture, you can add more liquid than indicated here...just keep in mind that you’ll need to increase the amount of flavorings you add next! Now, it’s time to season your grains. With a rubber spatula medium-sized bowl, mix the coconut butter, maple and a touch of water until the coconut butter is smooth. (This will prevent lumps of miso from popping up in your bowl!) Stir well, then top with slices of fresh pear, a small handful of pomegranate seeds, sprinkle of hemp seeds, a spoonful of cashew or almond butter, and pinches of freshly ground cinnamon + cardamom. MUSIC FESTIVALS AND COLORADO GO TOGETHER LIKE HOPS AND IPA’S. As the world-famous Telluride Bluegrass Festival prepares for a 45th annual event, one could argue that Colorado is the birthplace of the modern day music festival. While most of these multi-day music parties take place under the warm summer sun, Winter Wondergrass has taken a uniquely Colorado approach, and friends, it is working. Imagine charging through Steamboat’s champagne powder by day, then sampling craft beer and jamming out with names like; Leftover Salmon, Yonder Mountain String Band and Greensky Bluegrass, through the afternoon and night. For thousands of festival goers, that is heaven on earth. On the eve of their sixth annual event, which will be held February 23-25 in Steamboat Springs, I had a chance to catch up with WWG’s founder, Scotty Stoughton. AM: There are literally thousands of music festivals across the country. Many fail before launch, most that do launch, never see a second year. What is the secret sauce that has contributed to five consecutive sold-out years? SS: At our core, Winter Wondergrass hasn’t been about throwing a party, but about creating a positive and inspiring space where we can bring our kids, share with our elders, connect with people from around the country, and give to the greater goals of re-engaging the human spirit. I’m so proud of our team, which works year-round to identify ways to raise the guest experience. Additionally, we only use products we consume ourselves, no Red Bull, no artificial sodas. Local foods, libations and products are the norm at WWG. AM: Aside from running WWG (Steamboat, Tahoe) and Bonfire Productions, you are also a musician yourself. How has that experience played out with your relationship to the artists you book for WWG? SS: While many of the WWG acts have “made it” professionally speaking, others are still cutting their teeth, and almost all of them are still road warriors. As a musician who has toured across the country in a cold van, playing countless empty rooms, booked the shows, carried the amps, etc, I can relate to the artist we book. We book acts as much for their ethics and commitment to building community than their star power. AM: Out of the many incredible ski towns Colorado has to offer, what did Steamboat Springs bring to the table to make the partnership such a good fit? SS: Our Mission at WWG has always been to produce with our host communities, not for them. We seek communities that are passionate about music, connectivity, have strong environmental values and still remember the essence of a snowy mountain town. We are also attracted to partners that are not afraid to be a little out of the box, have not forgotten what it means to live in a mountain village, are enthusiastic about new ideas and allow us access to on-mountain opportunities. I mean, a farm to table dinner on top of the gondola with Elephant Revival to kick off a festival? Who doesn’t love that? The community of Steamboat Springs has opened their hearts to us and we are dedicated to raising the bar each and every year to fill them back up! AM: One final question - who are you personally stoked on for the 2018 festival as a first-time act to WWG? SS: I’ve been loving the Jon Stickley Trio, Ghosts of Paul Revere, Old Salt Union and the Brad Parson’s Band. They all are absolutely ripping!

STYLE: ROSES AND WHITE TEA WHAT'S THE FLAVOR? Light and effervescent. The rose is subtle yet present, making for a fun and atypical flavor, without a strong underlying vinegar taste. Upstart mentions that after fermentation, the roses almost taste like grapefruit, and I couldn't agree more. The simplicity of ingredients (water, organic cane sugar, rose buds, organic white tea, rose tea blend) made for a refreshing and easy drink. AROMA? When first opened, it reminded me of standing in the middle of a rose garden with a hint of citrus scent to it as well. WOULD TASTE BEST WITH? Light, summery type meals. Hey, we could all use a summer refresher mid-winter. Leafy salads, fruits, quinoa dishes and pasta with a white wine sauce or olive oilbased sauce are all great pairs for this flavor to wash down. OVERALL: I really enjoyed this kombucha. Being brewed with white tea, it was lighter and more delicate than most kombuchas. The rose adds a special touch, especially since I'm typically drawn to more fruit-forward flavors, and it's an ingredient not commonly seen in the brewing world. Though it would be perfect on a hot summer day, I'm hooked on it and will continue to drink it year-round. Upstart is doing great things, and I'm excited to try the rest of their flavors after this great first impression. FINAL COMMENTS: It is often said that the simplest solution is best, and Upstart Kombucha has that nailed down with their short list of ingredients. RENOWNED YOGA INSTRUCTOR AND ENVIRONMENTAL ACTIVIST, AMY IPPOLITI HAS BUILT A LIFE OF DEPTH AROUND THE THINGS THAT TRULY MATTER. After attending her first yoga class at her mother’s suggestion when she was 16, Ippoliti’s passion for yoga has only become more profound. She has traveled around the world leading workshops and teacher training, co-founded the yoga school 90 Monkeys and co-authored the book The Art and Business of Teaching Yoga with her partner, Taro Smith. Additionally, she has graced the covers of Yoga Journal and Fit Magazine, and photography collaborations between Ippoliti and her partner, Smith, have been featured on Yahoo’s homepage. If all of that wasn’t impressive enough, Ippoliti is also an active environmentalist, supporting a number of organizations and setting monthly eco-friendly habits to compliment her 30-Day Yoga Challenge. This month, we had a wonderful conversation with Ippoliti about the influence yoga has had on her life so far and where she sees her practice taking her in the future. Take a deep breath and enjoy. WHAT GOT YOU HOOKED ON YOGA? Around the time I started yoga, I was dealing with popularity drama in high school. Yoga class was a place where I was allowed to simply breathe, be myself and tap into the mystery of self and life. It was so much bigger than the pettiness! WHAT BROUGHT YOU TO BOULDER AND WHAT’S THE BEST PART OF BEING A “BOULDERITE?” I was born and raised in New York City, and I started my career as a yoga teacher there. As a kid, we always were leaving the city to be in nature. By the time I was 30, I had a natural urge to get out of NYC… and I did! My favorite part about living in Boulder is what we call the “Boulder Bubble”—I am very appreciative of our community

My goal is to be able to comfortably do backbends and hip openers into my older years. I want my spine to be healthy and to counteract the time spent on my computer and devices! I never want to stop learning, and I don’t want to have any expectations about what my body can and cannot do as I age. YOU HAVE SO MANY DIFFERENT PASSIONS - CAN YOU TELL US ABOUT THEM? Well, one of my biggest passions in yoga is training teachers! Yoga teachers are like heroes in their local community and deserve to be supported and encouraged. I co-founded 90 Monkeys, our online and in-person school of yoga, to help yoga teachers refine their teaching skills, build their professional skills, and grow as people and leaders so we can help more people live a happier life through this practice. Getting outside is also a big priority. I hike almost daily in the foothills, and thanks to Boulder Cycle Sport, Taro’s bike shops here in Boulder, I have access to (and totally nerd out on) the latest cycling equipment and accessories. I try to get out on a mountain or road bike whenever I can! ENVIRONMENTAL CONSCIENTIOUSNESS HAS BEEN A CENTRAL THEME OF YOUR LIFE. I was a big runner and a gym rat when I first tried a class. I was under the impression that to ‘workout’ I had to sweat and put in hours at the gym. My very first experience was a truly humbling one. I realized this was a practice that challenges my body and mind. More.” The words are by Ido Portal, an influential figure within “movement culture” and the teacher who inspired Zack Finer and Matt JW Bernstein to open Boulder Movement Collective (BMC) in February 2015. Matt and Zack both come from various fitness backgrounds including CrossFit, and upon visiting the Collective, it’s easy to say most people have never been to a gym like this before. BMC is a unique fusion of diverse disciplines including yoga, martial arts, gymnastics, strength conditioning, modern dance and more. While every class is different, the main emphasis is to move in unique and dynamic ways to generate changes not only in the body but also the mind. TYB, BABY! A born and raised Boulderite is doing big things in the athletic apparel arena. This statement might not come off as a surprise, but the details will. Tyler Haney, only 28, is using her outdoor voice to bring in a (much needed) new era of activewear that highlights Doing Things instead of the age-old credo of being better, faster, harder and stronger. New York-based Outdoor Voices (OV for short) flips this belief upside down by redefining activity as playful, social and done on the daily. Haney is the founder of this fast-growing company, and her Boulder roots inspired the brand’s concept. “Activity is baked into Boulder culture, and I grew up playing just about every sport. That focus on daily activity—whatever form it takes—is something that was instilled in me early on, and a lot of the inspiration behind Outdoor Voices,” says Haney. “I created an activewear brand that isn’t about competition or performance; it’s about celebrating activity for the fun of it.” It’s this mentality that has helped her brainchild, OV, gain a cult following known for their color blocking, flattering silhouettes and tonal tops and bottoms—and in only four short years. “We think of our apparel as a uniform for Doing Things—everything you need to get out and be active on a daily basis,” says Haney. Between juggling life-life and gym life, a stylish, well-constructed uniform is a godsend. The fact that it’s not just little black yoga pants is a miracle (hello, muted colors). One thing Haney likes to be clear on is that this isn’t athleisure wear. This is brunch-to-barre, coffee-to-cycle, sweat, drip and get fit wear. “Versatility is great, but everything we make is made to be sweat in,” says Haney. The material is a textured compression created for Haney while she was still studying business at Parsons School of Design, to this day, it remains the core fabric for each aesthetically-pleasing design. After designing the original five kits (sets of top and bottoms that flatter every kind of body type—the signature style being the crop top and two-tone legging), raising 22.5 million dollars of venture capital and graduating, OV was born. Like any business, support is key, and partners like Mickey Drexler to Kirsten Green and, of course, Haney’s mom are a few people mentioned as being a crucial part of an evergrowing team. Haney explains, “My mom was the best kind of coach growing up, and she had this saying ‘TYB, baby. DOING EVERYTHING Beyond clothes and accessories, OV has taken the initiative to open up brick-and-mortar around the country that go beyond a stop and shop. Despite online retail being their main revenue, Haney wants to create a social environment without the Internet and social media (*gasps*). “Our shops are community hubs, and ways for us to bring people together around activities (like jogs, hikes, or dog walks). They’re also a place for people to touch and feel the product, and find the fit or style that’s best for them,” Haney says. “It’s about meeting people and building relationships, and that offline experience is amplified digitally.” Since OV’s fruition, there are currently seven shops across the US, each with a unique design and interior to blend in with the city’s culture. The first store opened in Austin, TX—the original bungalow and spiritual home base— and the last shop opened early December in San Francisco—imagine a tea house and plant nursery all in one. For those seven lucky cities, we envy you. Rumor has it that Dallas has a pop up from fans' enthusiasm. So if you want one here in Boulder, you’re going to have to use your Outdoor Voices.

IN MANY WAYS, MILA IS JUST LIKE ANY OTHER SEVEN-YEAR-OLD GIRL. She smiles constantly and giggles uncontrollably as her mother plays make-believe with her. Today, they’re in a snow-covered field with Olaf (Mila’s favorite character from Frozen). Nearby, her little brother Azlan is running through the forest as a tiger. But Mila is fighting every day for her life. Last fall she was diagnosed with Batten disease, a rare neurodegenerative disease that causes seizures, vision loss, cognitive impairment and early death. It is one of the most devastating diseases that exist. There’s no cure for Batten disease, but Mila’s family is determined to change that, through cutting-edge genetic treatments that may lead to a cure. Mila's symptoms developed slowly. Julia Vitarello, Mila’s mother, explains she started noticing that when she was three, Mila's foot would turn inward, and her gait became more awkward. Then, despite a vocabulary that had been advanced for her age, she began repeating herself, and she wasn't able to find the right words to finish her thoughts. Soon, she started holding books much closer to her face to see what was on the page. Vitarello and her husband, Alek Makovec, were told that Mila would grow out of it, that it was part of development. But Vitarello knew her daughter, and she knew that something wasn’t right. She went to doctor after doctor, searching for answers. When doctors officially diagnosed Mila with Batten disease and Vitarello was told of the prognosis for her daughter, her world came crashing down. Mila has already lost her sight, her speech and much of her ability to walk, but she can still smile and laugh, her personality shining through despite her physical limitations. To help Mila maintain her motor functions as well as she can, she has been practicing adaptive yoga techniques at Iyengar Yoga Center of Boulder. The techniques help Mila with muscle memory and help her body to relax. “Despite losing these abilities, the thing that keeps us strong and keeps us fighting is that Mila is still so present and alert,” Vitarello says. Mila's family is determined to find a way for her, and other children suffering from rare diseases, to survive. They learned that genetic therapies were just recently proving to halt the progress of neurogenerative diseases. So Julia and Alek started Mila's Miracle Foundation to find and fund paths to a cure. Thanks to their hard work and an impressive group of world-renowned scientists in Boston, a brand-new treatment that could stop, or even reverse, Mila's disease is in sight for early 2018. Wiping away tears, Vitarello says, “I had people tell me that Mila could have a bigger purpose in life than we ever imagined. As a mom, it's impossible to think that your child's purpose is more than just being a happy kid. But over the past year, I have realized that Mila's life will have an enormous impact on so many."
